Abstract

This study aims to determine the effect of adding Eucheuma cottonii seaweed flour on the preference level of dogol shrimp (Metapenaeus monoceros) nuggets. Dogol shrimp nuggets have high protein content but are low in fiber, so adding seaweed flour as a dietary fiber source is expected to improve the nutritional value and product quality. The research used an experimental method with four treatments of seaweed flour addition to dogol shrimp nuggets: 0% (control), 1.5%, 2.5%, and 3.5%. Hedonic testing was conducted with 25 semi-trained panelists as replicates to evaluate sensory attributes (color, aroma, taste, and texture). Based on panelist preference level and Bayes test results, the priority product was subsequently analyzed through proximate analysis (moisture, protein, fat, and ash), crude fiber content, and texture testing (Texture Profile Analysis). The research showed that adding seaweed flour significantly affected the increase in fiber content. The treatment with 1.5% seaweed flour addition was the best treatment with moisture content values of 61.11%; protein 8.47%; ash 1.84%; fat 1.78%; crude fiber 2.15%; and texture analysis values of hardness 4,315.7523 gForce; fracturability not detected; springiness 0.8487%; cohesiveness 0.5813%; gumminess 2,500.1247 gForce; chewiness 2,110.6553 gForce; and resilience 0.2553%. Abstract

Ikan kembung merupakan salah satu komoditas perikanan yang banyak digemari masyarakat Indonesia. Beberapa alasan penyebabnya ialah karena ikan ini tingkat ketersediannya cukup tinggi, mudah ditemukan di pasaran dan memiliki karakteristik flavor yang disukai oleh masyarakat. Penelitian ini bertujuan untuk mengidentifikasi senyawa flavor volatil pada ikan kembung segar. Sampel dalam penelitian ini adalah daging ikan kembung segar yang senyawa volatilnya diekstraksi pada suhu 40oC menggunakan metode Solid Phase Micro-Extraction (SPME) dan diidentifikasi menggunakan alat Gas Chromatography/Mass Spectrometry (GC/MS). Selain itu, analisis proksimat juga dilakukan pada sampel daging ikan kembung (kadar air, abu, lemak, dan protein). Hasil analisis komponen volatil menunjukkan bahwa terdapat 27 senyawa volatil pada sampel daging ikan kembung segar dimana sebagian besar senyawa volatil yang terdeteksi berasal dari kelompok senyawa hidrokarbon, aldehida, alkohol, dan keton. Hasil analisis proksimat menunjukkan bahwa ikan kembung segar yang diteliti memiliki kandungan air, abu, lemak dan protein sebesar 74,2%; 1,66%; 1,38% dan 20,91% secara berurutan.

Abstract

Tilapia as a food ingredient has a high nutritional content, one of which is protein content. Tilapia meat can be processed into flour, which can then be used as an ingredient to increase the nutritional content of dried sus. This study aims to determine the amount of tilapia meat flour added to produce dried sus that is most favored by panelists. The method used was an experimental method with 0%, 10%, 15%, and 20% tilapia meat meal addition. The parameters observed were the hedonic test and the proximate test. The results showed that the addition of tilapia meat flour to the most preferred dry sus was the 15% treatment with an average value of appearance of 8.0; aroma of 7.7; texture of 8.4; taste of 7.9; criterion weight of 0.57 and alternative value of 8.8. The resulting proximate test is water content of 4.86; ash content of 2.91%; protein content of 12.35%; fat content of 31.95%; and carbohydrate content of 45.52%.

Abstract

Tulang ikan patin dapat dimanfaatkan dalam bentuk tepung untuk memperkaya gizi produk. Donat dengan penambahan tepung tulang ikan patin merupakan langkah untuk memenuhi kebutuhan pasar akan camilan yang tidak hanya enak, tetapi juga bergizi. Tujuan dari penelitian ini untuk menentukan konsentrasi terbaik tepung tulang patin pada pembuatan donat berdasarkan karakteristik sensori, daya mekar, komposisi kimia, dan kandungan kalsium. Perlakuan fortifikasi tepung tulang patin, yaitu 0; 2,5; 5; dan 7,5% berdasarkan berat tepung terigu. Parameter yang dianalisis meliputi tingkat kesukaan, kadar kalsium, proksimat, dan kemekaran donat. Hasil menunjukkan bahwa perbedaan perlakuan konsentrasi tepung tulang ikan patin tidak berpengaruh nyata (p>0,05) pada parameter ketampakan dan aroma, namun berpengaruh nyata (p<0,05) pada rasa dan tekstur. Perlakuan terbaik pada konsentrasi tepung tulang ikan patin 2,5% dengan nilai ketampakan (7,00), aroma (5,80), rasa (6,60), dan tekstur (6,28). Donat yang dihasilkan lebih disukai untuk parameter ketampakan, agak suka untuk rasa dan tekstur. Donat dengan perlakuan 2,5% memiliki daya kembang 15,77%; air 24,16%; abu 1,02%; protein 21,12%; lemak 6,94%; karbohidrat 44,35%; dan kalsium 255,30 mg/100 g. Fortikasi tepung tulang ikan patin dapat meningkatkan kadar abu, protein, dan kalsium donat.

Abstract

Choux pastry is a baked product that generally has low fiber content due to its primary ingredient, wheat flour, which contains minimal dietary fiber. Incorporating alternative ingredients rich in fiber can enhance its nutritional value. One such ingredient is Eucheuma cottonii seaweed flour, which is high in dietary fiber and offers potential for innovation in the utilization of fishery-based products. Dietary fiber plays an important role in binding water, improving digestion, and reducing the risk of certain diseases such as cancer. This research aimed to determine the optimal level of Eucheuma cottonii seaweed flour addition to choux pastry based on consumer preference. The study was conducted in December 2024 at the Fishery Product Technology Laboratory, Faculty of Fisheries and Marine Sciences, and at the Chemistry Application Laboratory and PPBS Service Building, Faculty of Mathematics and Natural Sciences, Padjadjaran University. An experimental method was used with four treatments: 0% (control), 7.5%, 10%, and 12.5% seaweed flour. Organoleptic tests (appearance, aroma, taste, and texture) were performed by 25 semi-trained panelists, and proximate analysis was conducted. The results showed that the choux pastry with 10% seaweed flour was the most preferred, with organoleptic scores of 7.8 for appearance, 7.6 for aroma, 7.5 for texture, and 7.7 for taste. Proximate analysis indicated that the 10% seaweed flour choux pastry contained 0.3% crude fiber, 2.9% moisture, 2.28% ash, 27.43% fat, 11.27% protein, and 56.09% carbohydrates.

Abstract

Ink is a fishery by-product that has the potential to be utilized as a natural colorant due to its melanin and melanoprotein pigment content, which is nutritionally valuable. This study aimed to determine the optimal concentration of squid ink as a natural colorant in popping boba based on consumer preference levels and chemical composition, and to evaluate its economic value. The research employed an experimental method using a completely randomized design (CRD) consisting of five squid ink concentrations (0%, 0.5%, 1%, 1.5%, and 2%) with three replicates. The parameters observed included hedonic tests (appearance, aroma, texture, and taste), chemical analysis (moisture, ash, protein, fat, and carbohydrates), and economic value. The results showed that the addition of 2% squid ink produced the most preferred popping boba, with appearance, aroma, texture, and taste scores of 7.9, 6.8, 7.9, and 7.1, respectively. The best popping boba formulation had a moisture content of 70.52%, ash content of 0.14%, protein content of 0.04%, fat content of 0.02%, and carbohydrate content of 29.34%. Therefore, fortifying popping boba with 2% squid ink provides an appealing color while also enhancing its nutritional value.

Abstract

Kecimpring merupakan makanan ringan tradisional berbasis singkong yang memiliki kandungan protein rendah sehingga perlu dilakukan upaya fortifikasi untuk meningkatkan nilai gizinya. Penelitian ini bertujuan untuk menganalisis pengaruh penambahan daging ikan nila salin (Oreochromis niloticus) terhadap mutu sensori dan kandungan gizi kecimpring serta menentukan konsentrasi terbaik yang dapat diterima konsumen. Penelitian ini menggunakan metode eksperimental dengan empat perlakuan penambahan daging ikan nila salin, yaitu 0% (kontrol); 2,5%; 5%; dan 7,5% dari berat singkong. Uji organoleptik dilakukan terhadap 25 panelis semi terlatih dengan parameter warna, aroma, rasa, dan tekstur menggunakan skala hedonik 1-9, sedangkan analisis proksimat dilakukan untuk menentukan kadar air, abu, protein, lemak, dan karbohidrat. Hasil uji hedonik menunjukkan bahwa penambahan daging ikan nila salin berpengaruh nyata (p<0,05) terhadap penerimaan panelis dengan perlakuan 7,5% memperoleh skor tertinggi pada parameter warna (7,96), aroma (7,56), rasa (7,96), dan tekstur (7,24). Analisis proksimat menunjukkan peningkatan kadar protein dari 4,60% (kontrol) menjadi 6,90% pada perlakuan 7,5%; serta perubahan kecil pada kadar air, abu, lemak, dan karbohidrat. Penambahan daging ikan nila salin sebesar 7,5% direkomendasikan sebagai konsentrasi terbaik dalam menghasilkan kecimpring berbasis singkong dengan mutu sensori terbaik dan nilai gizi lebih tinggi, sehingga berpotensi dikembangkan sebagai pangan lokal fungsional bernilai tambah.
