Abstract

The development of community farming center (SPR) of cattle beef to consolidate the potential of people's cattle beef to be managed optimally to increase the production and welfare of farmers in realizing national beef self-sufficiency. Jember Regency as one of the centers of cattle beef in East Java Province has a policy to develop SPR in a number of sub-districts but still faces a number of problems that is determining which district will be chosen as SPR location. This research aims to design the model of determining SPR cattle beef location using fuzzy inference system technique. A number of key criteria in location determination are explored then designed into decision support models using the Matlab fuzzy tool box. The results showed that there are three key criteria for determining the location of SPR development of cattle beef, namely 1) potential  Feed from plants; 2) population of cattle beef; and the availability of facilities and infrastructure. Decision support model is built with fuzzy inference system technique using Triangular Fuzzy Number (TFN) representation model and MAMDANI inference method. The number of rules built as many as seven rules with the operator or and and and. Model simulation results show that the locations that are categorized as Very Suitable for SPR development of cattle beef are Silo, Sumberjambe, and Ledokombo Subdistricts, While sub District Gumukmas, Sumberbaru, Puger, Wuluhan, Kencong, Bangsalsari, Mumbulsari, and Jenggawah, fall into the Suitable category.

Abstract

Kober Mie Setan is the restaurant that so famous in various circles from students to the general public range because it has its characteristics that can make people feel curious and want to visit to try the product. Kober Mie Setan Jember Restaurant getting more crowded thus giving an impact on the length of the existing queue. To overcome the problems that occur in a queue, then there is a  need for analysis to identify and measure a queue, and optimization is needed to a queue that is less than optimal in service. The purpose of this research was to determine and analyze the queuing system model applied in Kober Mie Setan Jember Restaurant and formulate recommendations for queuing system improvements that can reduce queue length and minimize queuing costs. The method used is a calculation with queuing theory and simulation using ARENA. The data used are the arrival time data, server service time, and queue costs. The results show that the queuing system model in Kober Mie Setan Jember Restaurant in the current condition is Single Channel Multi-Phase. The number of facilities at the cashier is 1 facility with 2 employees and the kitchen facility is 1 facility with 6 employees. Queue discipline used is FIFO (First In First Out). The level of the arrival of customers with Poisson distribution and customer service time with Exponential distribution. Based on the results of several improvement scenarios, the most optimal scenario is by adding 1 cashier facility and 1 kitchen employee. Recommended queue models suitable for cashier facilities are (M/M /2); (FIFO/∞/∞) and kitchen facilities are (M/M/1); (FIFO /∞/∞), with a Multi Channel-Multi Phase queuing system. Costs incurred for the addition of facilities based on selected scenarios are Rp249,833,- per hour which is the most minimal cost.

Abstract

The demand for amplang crackers is now increasing. However, the price of its raw material, mackerel fish, is generally higher compare to other fishes, causing the higher cost of this type crackers production. Effort to explore other fish as an alternative raw material is required to overcome the problems. Catfish is one of the choices to be used as raw material since this fish is more available in a market in a lower price, but the protein properties of this fish is different to mackarel, which will be possible to affect the nature of the crackers obtained. To produce catfish amplang crackers to be similar to common amplang product, it is necessary to find out the right composition of catfish and tapioca flour used. Therefore, the purpose of this research was to characterize physico-chemically and organoleptically, the catfish amplang crackers made under different ratio of fish flesh and starch. The experiment was designed using completely randomized design. Physico-chemical data obtained were analyzed using ANOVA, while the organoleptic test data were examined using chi-square method. The effectiveness test was carried out to find the proper ratio of raw materials composition used. The results showed that the higher the ratio of the fish flesh and the starch composition, the lower the texture value of the crackers as an indication of the decrease of its crispness. Although the lightness of the crackers was lowered by the addition of more starch to the dough, its linear expansion and hygroscopicity were not affected. The results of organoleptic test showed that the panelist was prefer to a higher crispness of crackers. The most preferable cracker was the one with 1:2.25 ratio of catfish flesh and starch, showing the characteristic of 1.80% moisture, 2.08% ash, 5.75% protein, 23.55% fat, and 66,93% carbohydrate.
