This study evaluates the effects of fish feed formulated with BSFL and tofu waste on the growth performance, proximate composition, and fatty acid profile of red tilapia (Oreochromis niloticus). Experimental diets included: commercial feed, dried BSFL, and a combination of BSFL:tofu waste. Fish were reared for eight weeks under controlled conditions. Treatment with BSFL:tofu waste exhibited superior growth performance, with the highest weight gain (102.88%) and length gain (33.75%). Proximate analysis revealed significant variations across treatments, with a combination of BSFL:tofu waste achieving the highest caloric value (110.71 cal/g) and fat content (3.75%) while maintaining protein levels comparable to commercial feed. Fatty acid analysis showed a combination of BSFL:tofu waste enhanced total fatty acid content (77.92%), predominantly polyunsaturated fatty acids (PUFAs), increasing from 37.34% in commercial feed to 47.04%. Essential fatty acids, including DHA and linoleic acid, were elevated in a combination of BSFL:tofu waste, indicating improved nutritional quality. Cholesterol levels remained unaffected among treatments. These findings suggest that combining BSFL and tofu waste can enhance fish feed quality, optimize growth performance, and improve the nutritional value of red tilapia. Future research should explore refining feed formulations to maximize nutrient stability and sustainability for broader aquaculture applications.

Abstract

Program pelatihan dan sosialisasi mengenai pemanfaatan SIJAKA (sirih merah, jahe merah, dan kayu manis) sebagai minuman fungsional antidiabetes bertujuan untuk meningkatkan pemahaman dan praktik masyarakat dalam mengelola diabetes secara alami. Desa Sukamaju yang terletak di Kecamatan Cigudeg, Kabupaten Bogor memiliki peluang untuk mengembangkan produksi minuman fungsional berbahan dasar SIJAKA, namun potensi ini belum dimanfaatkan secara optimal. Program ini dirancang untuk meningkatkan taraf kesehatan masyarakat serta mendorong pertumbuhan ekonomi lokal melalui pendirian fasilitas produksi minuman fungsional SIJAKA. Pelaksanaan kegiatan melibatkan kader Posyandu dan PKK melalui kegiatan penyuluhan dan pelatihan. Metode yang digunakan mencakup pengisian kuisioner pre-test dan post-test guna mengevaluasi tingkat pengetahuan peserta sebelum dan sesudah pelatihan. Hasil pelatihan menunjukkan adanya peningkatan pemahaman masyarakat terkait minuman fungsional SIJAKA, meskipun sebelumnya pengetahuan mereka masih terbatas. Pelatihan ini juga mengungkapkan bahwa 79,31% peserta mengenal sirih merah dan jahe merah sebagai herbal potensial, sedangkan 72,41% mengetahui manfaat kayu manis. Hasil ini menunjukkan adanya peningkatan kesadaran akan potensi herbal dalam mengelola diabetes. Selain itu, mayoritas peserta (92,11%) menunjukkan ketertarikan yang tinggi terhadap pelatihan dan ingin lebih memahami manfaat serta cara pembuatan SIJAKA. Program ini terbukti mampu meningkatkan antusiasme dan wawasan masyarakat terhadap SIJAKA, serta memiliki potensi untuk dijadikan sebagai contoh bagi desa-desa lainnya. Secara keseluruhan, program ini memberikan dua manfaat utama, yaitu peningkatan kualitas kesehatan masyarakat dan penguatan ekonomi lokal, meskipun masih terdapat kendala dalam mendorong masyarakat untuk memproduksi dan mengonsumsi SIJAKA secara mandiri.

Abstract

Daun sirih merah (Piper crocatum) dan kulit kayu manis (Cinnamomum burmanii) berkhasiat sebagai tanaman obat. Tanaman tersebut memiliki kandungan senyawa yang berperan sebagai antioksidan. Penelitian ini bertujuan menentukan aktivitas antioksidasi formula campuran ekstrak daun sirih merah dan kulit kayu manis dengan metode Thiobarbituric acid (TBA) dan metode 1,1- diphenyl-2-picrylhydrazyl (DPPH). Proses ekstraksi daun sirih merah dan kulit kayu manis dilakukan secara terpisah dengan pelarut air. Ekstrak air daun sirih merah dicampur dengan kulit kayu manis dengan perbandingan 5:0, 4:1, 3:2, 2.5:2.5, 0:5. Hasil penelitian menunjukkan formula 3:2 konsentrasi 200 ppm (61%) memiliki daya hambat yang sama dengan vitamin E terhadap pembentukan malondialdehida. Sementara itu, Formula 2.5:2.5 konsentrasi 25 ppm (59%) memiliki daya hambat yang sama dengan vitamin E terhadap penghambatan radikal DPPH.

Abstract

The rising demand for halal products, especially within the cosmetics industry, has increased the need for cosmetic products to comply with Islamic laws. One of the challenges in achieving halal certification is the determination of the source of the active ingredients used in cosmetic products, such as enzymes. According to Islamic laws, enzymes derived from pigs or other animals that are not slaughtered are not considered halal. To ensure that the enzymes used in cosmetics are derived from halal sources, it is necessary to use enzymes generated from microorganisms through fermentation, provided that the raw materials and growth medium comply with Islamic laws. Additionally, halal cosmetics must meet regional and international standards, including the Indonesian Ulema Council’s Fatwa and the Malaysian Cosmetic and Personal Care Standards. This research provides a comprehensive review of the role of enzymes in selecting halal compliance cosmetic ingredients, focusing on the source of enzymes as a means of assessing the halalness of cosmetic products. It is essential to utilize halal enzymes such as those derived from plants to provide Muslim consumers with assurance when using cosmetic products.

Abstract

Asam urat jika diproduksi secara berlebih oleh tubuh dapat mengakibatkan pembengkakan, rasa nyeri dan kaku dipersendian. Pembentukkan asam urat di tubuh dapat dihambat dengan cara menginhibisi kerja enzim xantin oksidase. Penelitian ini bertujuan mengidentifikasi senyawa aktif sirih merah yang dapat menginhibisi aktivitas enzim xantin oksidase melalui penambatan molekuler (in silico). Metode in silico yang dilakukan yaitu penambatan terarah (site directed docking) dengan menggunakan AutoDock Tools 1.5.6. Ukuran pusat penambatan molekuler sebesar x=26,7853; y= 9,9800; z= 113,3917 dengan nilai dimensi x=14 ; y=14 ; z=18. Senyawa aktif sirih merah terpilih adalah asam protokatekuat, sofalkon, dan 2-(3,4-dimetoksi fenil)-6-etoksi-7- metoksi-1-naftol karena mempunyai nilai ∆G dan Ki yang lebih kecil dibanding allopurinol. Selain itu, senyawa-senyawa aktif tersebut memiliki interaksi residu asam amino yang kuat terhadap sisi aktif xantin oksidase.

Abstract

Alzheimer's Disease (AD) is one of the consequences of impaired functioning of acetylcholine which can be hydrolyzed by the enzyme acetylcholinesterase. Alzheimer's treatment is carried out using two approaches, namely compounds (acetylcholinesterase inhibitors) and noncholinergics (antioxidants). There are commercial drugs that can slow the progression of Alzheimer's, but their use can cause excessive side effects. The use of herbal plants as a cure for Alzheimer's disease has been proven to be safer and does not cause excessive side effects. Herbal plants that can be used and developed are black tea, red betel, curcuma, and cinnamon. This study determined that extracts of black tea, red betel leaf, curcuma, and cinnamon's formula have the best antioxidant activity and level of inhibition of the acetylcholinesterase enzyme. F1 (cinnamon), F5 (cinnamon, black tea, red betel, and curcuma), F6 (cinnamon and black tea), and F11 (cinnamon, black tea, and curcuma) were the best formulations in each type of sample based on inhibitory AChE enzymes and antioxidants activity. Abstract

Red ginger (Zingiber officinale Roxb. var. Rubrum) contains phenolic compounds that have potential to reduce blood glucose levels (antihyperglycemic) in patients with diabetes mellitus. This study aimed to determine the inhibitory activity toward α-glucosidase, antioxidant activity in reducing DPPH free radicals, and total phenolic content of aqueous extract of red ginger. The red ginger was extracted using water solvent at 100 oC for 15 minutes. Analysis of antioxidant activity, inhibitory activity of α-glucosidase, and total phenolic content using the spectrofotometry. Antioxidant activity showed that the extracts from the first, second and third replicates were not significantly different (p<0.05). α-glucosidase inhibition activity showed that the 1st replicate extract had the highest value of 97.729% and was significantly different (p<0.05) from the 2nd and 3rd replicate extracts and acarbose. The total phenolic content showed that the 2nd replicate extract had the highest value, namely 27,624 mg GAE/g extract and was significantly different (p<0.05) from the 1st and 3rd replicate extracts. The 1st, 2nd, and 3rd replicates of red ginger aqueous extract has the same antioxidant activity and equivalent glucosidase inhibitory activity as acarbose.

Abstract

Formulasi minuman fungsional ekstrak sirih merah dengan penambahan berbagai ekstrak rempah telah diteliti memiliki aktivitas antioksidan, namun hasil penerimaan konsumen masih rendah pada uji sensori karena rasanya pahit. Teknologi mikroenkpasulasi dan nanoenkapsulasi diketahui dapat melindungi komponen bioaktif dan dapat meningkatkan kualitas sensori pangan. Penelitian ini bertujuan untuk mengembangkan minuman fungsional berdasarkan ekstrak daun sirih merah menggunakan teknik mikroenkapsulasi dan nanoenkapsulasi dengan membandingkan ukuran partikel, kadar fenol, aktivitas antioksidan dan sensori dengan minuman ready to drink (RTD). Maltodekstrin 10% digunakan sebagai penyalut pada pembuatan minuman mikroenkapsulasi, sedangkan gum arab dan maltodekstrin digunakan untuk penyalut pada minuman nanoenkapsulasi. Ukuran partikel diuji menggunakan metode Particle Size Analyzer (PSA), total fenolik diuji dengan metode Folin- Ciocalteu, aktivitas antioksidan diuji dengan metode DPPH, dan evaluasi sensori diuji dengan tingkat hedonik (kesukaan). Hasilnya menunjukkan bahwa minuman fungsional minuman nanoenkapsulasi memiliki rata-rata ukuran partikel paling kecil yaitu sebesar 107,9 nm. Kandungan fenolik tertinggi pada minuman RTD sebesar (782,30 ± 2,54 mg GAE / g). Aktivitas antioksidan tertinggi terdapat dalam minuman mikroenkapsulasi yaitu (107,54 ± 0,83 μg / mL). Minuman fungsional nanoenkapsulasi memberikan tingkat hedonik (2,73 ± 1,19) yang lebih disukai dibandingkan minuman mikroenkapsulasi dan RTD. Teknik mikroenkapsulasi dapat meningkatkan aktivitas antioksidan dan teknik nanoenkapsulasi dapat menurunkan aktivitas antioksidan.

Abstract

Red betel (Piper crocatum) has antihyperglycemic activity for diabetic treatment. The purpose of this study was to investigate the activity of DPPH free radical scavenging, the α-glucosidase inhibitory activity, and total phenolics of the aqueous extract of P. crocatum (1st extract, 1st extract residue, and 2nd extract residue). The infundation method was used with spectrophotometric test techniques. The red betel leaves extract in all extracts and extract residues had a small of α-glucosidase inhibition activity ranging from 0.76% - 1.43%. Meanwhile, the antioxidant activity of DPPH and total phenolic levels showed significantly different results (p<0.05) in the 1st extract, 1st extract residue, and 2nd extract residue. The highest antioxidant capacity and total phenolic content were found in the first extract, it were 59.64 ± 0.18 mg AAE/g extract and 55.50 ± 0.14 mg GAE/g, respectively. Gradual extraction reduced DPPH free radical scavenging activity, α-glucosidase inhibition activity and phenolic total content.

Abstract

Penelitian terhadap pemanfaatan salak khususnya salak Sidempuan sebagai inhibitor α-glukosidase belum dilakukan. Penelitian ini bertujuan mengukur kadar proksimat (air, abu, protein kasar, lemak kasar, serat kasar, dan karbohidrat), menganalisis komponen fitokimia, kandungan total fenolik dan aktivitas penghambatan α-glukosidase pada ekstrak air dan etanol daging buah salak Sidempuan. Kadar total fenol diukur menggunakan metode Folin Ciocalteu. Aktivitas penghambatan α-glukosidase diukur menggunakan substrat pNPG. Kadar karbohidrat, air, abu, lemak kasar, protein kasar, dan serat kasar berturut-turut sebesar 86.35%, 6.57%, 3.60%, 1.44%, 1.24%, dan 0.82%. Kedua ekstrak mengandung senyawa flavonoid dan saponin. Ekstrak etanol 70% daging buah salak Sidempuan memiliki kandungan total fenol sebesar 10.6 mg GAE/g ekstrak, lebih tinggi dibandingkan ekstrak air sebesar 5.55 mg GAE/g esktrak. Ekstrak etanol daging buah salak Sidempuan memiliki konsentrasi inhibisi (IC50) sebesar 13.69 mg/L. Konsentrasi ini lebih kecil dibandingkan ekstrak air yaitu 4160.56 mg/L, namun masih lebih besar dibandingkan akarbosa yaitu 1.15x10-3 mg/L sebagai kontrol positif.
