Abstract

Permasalahan utama yang dihadapi oleh pengrajin growol di desa Nomporejo adalah rendahnya daya tarik dan nilai jual produk growol, serta terbatasnya jangkauan pemasaran. Untuk mengatasi masalah ini, dilakukan kegiatan pengabdian kepada masyarakat (abdimas) dengan fokus pada pelatihan pengemasan, pelabelan, dan penggunaan WhatsApp Business untuk pemasaran. Pelaksanaan kegiatan ini melibatkan beberapa langkah strategis. Pertama, diberikan pelatihan mengenai teknik pengemasan dan pelabelan yang menarik, dengan tujuan untuk meningkatkan daya tarik visual dan persepsi nilai produk growol. Kedua, dilakukan pelatihan penggunaan WhatsApp Business, yang dirancang untuk memperluas jangkauan pasar dan meningkatkan penjualan growol melalui platform digital yang mudah diakses dan digunakan oleh para pengrajin. Hasil dari kegiatan abdimas menunjukkan peningkatan signifikan dalam berbagai aspek. Pengemasan dan pelabelan yang lebih baik berhasil meningkatkan daya tarik dan nilai jual produk growol, membuatnya lebih kompetitif di pasar. Selain itu, penggunaan WhatsApp Business terbukti efektif dalam memperluas jangkauan pemasaran, meningkatkan visibilitas produk, dan akhirnya meningkatkan penjualan. Respon positif dari pengrajin growol di desa Nomporejo menunjukkan bahwa pelatihan ini tidak hanya relevan tetapi juga diapresiasi oleh komunitas lokal. Kesimpulannya, kegiatan abdimas ini berhasil mencapai tujuannya. Peningkatan daya tarik dan nilai jual growol melalui pengemasan dan pelabelan yang lebih baik, serta perluasan jangkauan pemasaran dengan WhatsApp Business, telah memberikan dampak positif terhadap penjualan dan penerimaan produk di pasar. Pelatihan ini mendapat respon yang baik dari para pengrajin, menunjukkan keberhasilan program dalam memberdayakan komunitas lokal dan meningkatkan kesejahteraan mereka melalui peningkatan keterampilan pemasaran dan pengemasan produk.

Abstract

Physical exercise is the main factor in improving the performance of athletes. Physical exercise may cause fatigue and increase the risk of injury. Most athletes have experienced injuries during training or competing, such as muscle pain, sprains, muscle tension, bruises, and minor injuries. The majority of athletes lack knowledge regarding the management of injuries through appropriate nutritional interventions. The importance of proper nutrition therapy education as one of the solutions to reduce the risk of sports injury. The purpose of this study was to observe the change in knowledge about proper nutritional therapy in dealing with injuries in young soccer athletes at PSS Sleman Development Center. The study was conducted in July 2022. The provision of education was given at the Macanan Field, Prambanan, Yogyakarta. The respondents were 22 U-16 athletes at PSS Sleman Development Center. Athletes were given a knowledge questionnaire before and after the provision of education. Data were analyzed using statistical software with descriptive analysis and Wilcoxon Signed Rank Test. The increase in athletes' knowledge was measured from the knowledge score before giving education, which was 86,36 and after being given education increased to 89,09 with an average difference of 2,73 (p=0,366). The maximum score after providing education is 100 with a minimum score of 60. Providing education to athletes can increase athlete's knowledge and understanding of the importance of proper nutritional intake in reducing the risk of sports injury.

Abstract

Background: Foods high in dietary fiber can provide good glycemic control for diabetics. Growol cookies have been developed as a healthy snack high in dietary fiber.Objectives: Colors and texture examination of Growol cookies need to be done to see the potential for product development.Methods: There are five variants of cookies: negative control growol cookies (cookies A), positive control growol cookies (cookies B), inulin-modified growol cookies (cookies C), 3% glucomannan-modified growol cookies (cookies D), and 7% glucomannan-modified growol cookies (cookies E). Color and texture were examined in triplicate using a chromameter and texture analyzer. Difference tests were carried out using ANOVA and Kruskal-Wallis.Results: There was no difference in brightness among cookies, but there was a difference in the a-value which describes the red color (p=0,001), and the b-value which describes the yellow color among cookies (p=0,038). There were differences in hardness in the first bite (p=0,004) and second bite (p=0,005), cohesiveness (p=0,032), gumminess (p=0,005), fracture (p=0,001), springiness (p=0,035), crispiness peak (p=0,021), crispiness (p=0,005), and crunchiness (p<0,001) among cookies.Conclusion: Colors and textures of cookies B, cookies C, and cookies D tend to be similar to control cookies, so these cookies have the potential to be developed for diabetics.

Abstract

Comorbid (disease) comorbidities experienced by patients at the start of treatment can increase the risk of death. The most common co-morbidities reported to date are old age, hypertension, cardiovascular disease, diabetes, stroke, obesity, smoking, lung disease, and chronic kidney disease. Purwomartani Village is one of the Yogyakarta areas that have health problems with various comorbidities. The incidence of comorbidities in Indonesia is quite high, one of which is in Padukuhan Kadisoka, Purwomartani Village. The majority of people with comorbidities do not realize that they have years of risks and dangers if they are not controlled properly, and this can even increase the risk of death. This has an impact on high medical costs due to the length of treatment. This community service aims to detect non-communicable diseases through screening activities in people with comorbidities. The types of activities carried out at this service are in the form of screening for nutritional status which includes measuring weight, height, abdominal circumference, body mass index (BMI), blood pressure screening, and simple laboratory examinations which include checking blood sugar levels while, cholesterol, and acid tendon. This screening activity was carried out on 31 respondents from the Kadisoka Purwomartani Sleman Hamlet community. The results of the examination showed that most of the respondents had abdominal circumference in the obese category of 27 respondents (87.1%), BMI for the majority of the obese degree 1 category were 14 respondents (45.2), most of the blood pressure including hypertension were 14 respondents (45, 2%), blood sugar levels were mostly normal for 24 respondents (77.4%), uric acid levels were mostly hyperuricemia for 16 respondents (51.6%) and cholesterol levels, for the most part, were hypercholesterolemia namely 21 respondents (67.7%) . The results of this screening are expected to increase public awareness about the dangers of death, especially in people with comorbidities. This service will then be followed up by the service team and the Kalasan Health Center to be able to maximize the use of Posbindu as a means of screening for non-communicable diseases for the prevention and control of PTM through Posbindu activities.

Abstract

Many young athletes have undernourished nutritional status, lack of knowledge, and improperselection of nutritional intake. It has an impact on the success of athletes when conducting games.One of the contributing factors is the suboptimal use of educational media for athletes.Educational media, Cakram is one of the alternative media that needs to be developed and appliedto young athletes. Cakram Asupan Makan dan Cairan Atlet (CAMCA) is an educational mediainnovation that makes it easier for athletes. This study aims to analyze the level of mediaacceptance of Cakram Asupan Makan dan Cairan Atlet (CAMCA) conducted on experts in thefield of Sports Nutrition as a solution to athletes' health independence, especially optimizing thenutritional status of adolescent athletes. This research was a quantitative descriptive study. Thisresearch began with the manufacture and development of cakram by looking at the level ofacceptance of Cakram Asupan Makan dan Cairan Atlet (CAMCA) media by experts in the field ofSports Nutrition. Data were analyzed descriptively. Abstract

One of the causes of improper nutritional intake of athletes is that athletes have not received education/knowledge about nutrition in sport performance for athletes. Inadequate nutritional intake of athletes is one of the triggers for fatigue and risk of injury. This activity aims to increase to knowledge and attitudes of athletes regarding proper nutritional intake and proper handling of injuries in athletes. Community service activities are carried outthrough education and simulation of food and drink selection in handling injuries to athletes, as many as 22 PS Sleman Development Center athletes who are members of the U-16 groups on 7 July 2022 at Macanan Squarem Prambanan, Yogyakarta . Community service activities are carried out in several stages in their implementation, starting from preliminaru studies,coordination with coaches, making materials, simulating food dan drink selection in handling athlete’s injuries. The increase in knowledge was measured from the average value of the pretest before being given educational on question number 2, which was 72,64 and after being given education it increased to 81,72. The increase in knowledge was measuredfrom the average value of the pretest before being given educational on question number 5, which was 90,8 and after being given education it increased to 95,34. The maximun posttest score at the end of session after being given education is 80 with a minimum score of 20. Nutrition education activities for athletes are expected to be carried out on an ongoing basisas an effort to assist appropriate nutritional interventions for athletes, especially when athletes experience injuries. Abstract

Background: Nutrition problems in preschool children (underweight, stunted, overweight) are a concern in Indonesiamay impact family food intake, especially for children under five years. Low dietary diversity is associated with an increased likelihood of double-burden malnutrition. Objective: This study aimed to determine the relationship between household dietary diversity and the nutritional status of preschool children in Allifa’s Early Childhood Institution. Method: This research was an observational study with a cross-sectional design. The sampling method was purposive sampling in 85 families with preschool children. Household dietary diversity was measured by the Household Dietary Diversity Questionnaire (HDDS). Several indices including weight for age Z-score (were used to calculate the nutritional status of preschool children. Family characteristics were measured by interview using a structured questionnaire, which included age, education level, occupation of the head of household, and number of family members. Data were analyzed using Fisher’s exact test. Subjects were 54.1% female and 45.9% male. The mean age of preschool children was 59,13±14,97 months. Results: Most of the children were 4 years old. The proportion of underweight preschoolers was 5.9%, stunted 12.9%, and overweight 15.3%. The median HDDS score was 10.82±1.356. Most subjects had a high household dietary diversity status (92.9%). Household dietary diversity status was not significantly associated with underweight (p=0.657; 95% CI=0.049-4.357), stunted (p=0.318; 95% CI=0.078-1.923), and overweight (p=0.756; 95% CI=0.369-4.234) incidence. Conclusion: household dietary diversity is not associated with nutritional problems in preschool children.  Keywords: Household Dietary Diversity, Nutritional Status, Preschool Children

Abstract

Indonesia menempati peringkat ke-5 dengan jumlah penyandang diabetes mellitus (DM) sekitar 19,5 juta orang dan diprediksikan akan meningkat menjadi 28,6 juta pada tahun 2045. Lebih dari 90% kasus DM merupakan DM tipe 2. Pengendalian kadar glukosa darah dan perbaikan sensitivitas insulin dapat dilakukan dengan konsumsi makanan tinggi serat pangan. Serat pangan mampu memperbaiki profil digesta yang akan berefek pada kontrol glukosa darah. Salah satu produk tinggi serat pangan adalah cookies growol. Penelitian ini bertujuan meninjau efektivitas cookies growol sebagai produk pangan tinggi serat terhadap profil digesta (pH, kadar air, dan berat digesta) tikus DM. Penelitian true-experimental praklinik hewan coba dengan rancangan pre-posttest control group menggunakan 10 tikus jantan Sprague-Dawley yang diinduksi DM Tipe 2 dan dibagi menjadi 2 kelompok. Kelompok pertama (K1) tidak diberikan intervensi sedangkan kelompok kedua (K2) diberikan intervensi cookies growol sebagai selingan pakan selama 28 hari. Setelah 28 hari, tikus diterminasi menggunakan ketamin kemudian dilakukan pengambilan digesta. Pengujian pH, kadar air, dan berat digesta menggunakan pH meter, oven pengering, dan timbangan analitik. Uji efektivitas pemberian cookies growol terhadap profil digesta dilakukan menggunakan Independent Sample T-Test. Hasil penelitian menunjukan tidak terdapat perbedaan signifikan pada berat digesta antara kelompok K1 (2.55±0.28 gram) dengan kelompok K2 (2.49±0.35 gram) (p=0,785). Pengaruh nyata terdapat pada kadar air digesta antara kelompok K1 (44.47±1.74%) dengan kelompok K2 (51.51±0.91%) (p<0,001) dan pH digesta antara kelompok K1 (6.13±0.02) dengan kelompok K2 (6.18±0.02) (p=0,015). Kesimpulan dari penelitian ini adalah cookies growol terbukti meningkatkan kadar air dan mempertahankan pH digesta dalam kondisi asam, namun tidak signifikan untuk meningkatkan berat digesta. Abstract

Latar belakang: Singkong atau ubi kayu (Manihot esculenta crantz) merupakan salah satu makanan sumber karbohidrat. Tingginya kandungan karbohidrat tidak tercerna seperti serat pangan dan pati resisten pada singkong berpotensi sebagai sumber prebiotik. Potensi tepung singkong sebagai sumber prebiotik sudah pernah dilakukan sebelumnya perlu dilakukan kajian lebih luas terhadap bakteri lainnya untuk semakin membuktikan peranan singkong sebagai sumber prebiotik. Tujuan: Penelitian ini bertujuan untuk menganalisis secara in vitro skor aktivitas prebiotik tepung singkong terhadap bakteri saluran cerna Lactobacillus bulgaricus, Streptococcus thermophilus dan Lactobacillus acidophillus dibandingkan Escherichia coli. Metode: Penelitian ini merupakan jenis penelitian observational laboratory study yang menganalisis potensi prebiotik pada tepung singkong  melalui analisis skor aktivitas prebiotik. Substrat yang digunakan adalah tepung singkong, inulin dan glukosa. Isolat bakteri yang digunakan adalah Lactobacillus bulgaricus, Streptococcus thermophilus, Lactobacillus acidophillus dan Escherichia coli. Media untuk inokulasi bakteri adalah MRS Broth dan M9. Media penumbuhan  mikrobiologi yang digunakan adalah MRS Agar dan Nutrient Agar  Hasil: Hasil penelitian menunjukkan bahwa skor aktivitas prebiotik dari yang  tertinggi hingga terendah pada tepung singkong terdapat pada bakteri Lactobacillus bulgaricus (0,16), Lactobacillus acidophillus (-0,17) dan Streptococcus thermophilus (-0,26). Pada inulin semua hasil akhir menunjukkan angka positif dimulai dari yang tertinggi hingga terendah yaitu pada bakteri Lactobacillus bulgaricus (0,64), Lactobacillus acidophillus (0,33) dan Streptococcus thermophilus (0,28). Kesimpulan: Tepung singkong memiliki potensi prebiotik terhadap bakteri Lactobacillus bulgaricus, namun tidak memiliki potensi prebiotik terhadap bakteri Streptococcus thermophilus dan Lactobacillus acidophillus.

Abstract

Kurangnya konsumsi serat dapat mengakibatkan berbagai dampak yang memicu obesitas. Mayoritas konsumsiserat orang Indonesia mengalami penurunan. Tepung garut dan tepung kacang merah memiliki kandungan serat larut sebesar 5,03% dan 1,36% dalam 100gram bahan. Penggunaan tepung garut dan tepung kacang merah dalam bentuk cookies merupakan salah satu solusi penanganan obesitas, mengingat cookies merupakan makanan ringan yang disukai banyak kalangan. Tujuan penelitian untuk mengetahui perbedaan sifat sensori dan kadar serat pangan pada penggunaan tepung garut dengan tepung kacang merah pada pengembangan cookies penanganan obesitas. Penelitian eksperimen dengan Racangan Acak Sederhana (RAS) dengan tiga formulasi cookies, yaitu cookies A (tepung terigu 150 gram, tepung garut 0 gram, tepung kacang merah 0 gram), cookies B (Tepung terigu 0 gram, tepung garut 100 gram, tepung kacang merah 50 gram), cookies C (tepung terigu 0 gram, tepung garut 75 gram, dan tepung kacang merah 75 gram). Uji sensori dilakukan menggunakan uji hedonik berdasarkan tingkat kesukaan warna, aroma, rasa dan tekstur terhadap 30 panelis. Serat pangan diuji menggunakan metode multienzim. Pada uji sensori kategori warna 93,3% panelis lebih menyukai cookies A, kategori aroma 93,3% panelis menyukai cookies A dan B, kategori rasa 80% panelis menyukai cookies A dan C, sedangkan kategori tekstur 88,3% panelis menyukai cookies A. Berdasarkan hasil Kruskal Wallis diketahui warna (p=0,154), aroma (p=0,933), rasa (p=0,750) dan tekstur (p=0,003). Pada uji laboratorium menghasilkan kadar serat pangan paling tinggi terdapat pada cookies C sebanyak 7,16%, dilanjutkan cookies B 4,94% dan paling rendah pada cookies A 3,10%, dengan hasil uji LSD (p <0,001). Ada perbedaan secara nyata pada tekstur, tetapi tidak ada perbedaan warna, aroma dan rasa diantara varian cookies. Pada kadar serat, ada perbedaan secara nyata kadar serat pangan pada variasi penggunaan tepung garut dan tepung kacang merah pada pengembangan cookies penanganan obesitas.
