Abstract

Body Mass Index (BMI) is a commonly used indicator to assess nutritional status, which can be influenced by nutrient intake from food consumption. This study aims to analyze the relationship between energy and macronutrient intake and BMI. A cross-sectional design was applied using data from the 2019 Non-Communicable Disease Risk Factor Cohort Study (FRPTM), involving 1,018 subjects selected purposively from a total of 1,218 respondents. The data analyzed included sociodemographic characteristics, BMI, and 1x24-hour dietary recall. Descriptive and bivariate analyses were conducted using the Kruskal-Wallis test, followed by the Mann-Whitney test for variables showing significant differences. The results indicated significant associations between BMI and gender, energy intake (low vs. high), fat intake (adequate vs. high), and carbohydrate intake (low vs. adequate and low vs. high). These differences may be influenced by variations in metabolism and intake levels. In conclusion, BMI is affected not only by energy and macronutrient intake but also by other contributing factors.

Abstract

Blood from the slaughter of cattle and chicken, is an economically valuable waste that can not be disposed into the environment. Its application in animal feed requires careful consideration of the composition and potential impact. The Indonesian Ulema Council issued a Fatwa regarding the Law on Livestock Animals Fed with Unclean Items. From a Sharia perspective, the feed composition is crucial, since it needs to be free from unclean ingredients to prevent animals from becoming classified as Al-Jallalah (Livestock Animals Fed with Unclean Items). To ensure compliance with the religious guidelines, it is necessary to implement a quarantine (Al-Istibra) or purification period (Istihalah). Therefore, this study aimed to analyze the halalan thayyiban supply chain in the management of blood from slaughtering ruminants (cattle), poultry (chicken), and pig for feed. Implementation of good practices in managing blood from slaughterhouses was assessed. The suitability of feed labels, including the presence of prohibited ingredients, adherence to good practices, and the application of Al-Istibra or Istihalah in cattle and chicken farms, as well as catfish farming units, was evaluated through questionnaire interviews and conformity scores. The results showed that 2 out of 7 (seven) objects received lower scores due to the limited effectiveness of the Waste Water Treatment Plants (WWTPs) and unclear regulations regarding the use of blood. Based on the suitability value of the feed label, 1 (one) out of 8 (eight) objects received a lower score for failing to meet technical requirements. The feed was contaminated, and there were no operational procedures for implementing Al-Istibra or Istihalah.

Abstract

Tanaman aren (Arenga pinnata Merr.) merupakan tanaman palem yang menghasilkan nira sebagai bahan baku utama pembuatan gula aren. Gula aren menjadi produk penting bernilai ekonomi tinggi, namun proses produksinya masih dilakukan secara tradisional sehingga hasil dan mutu seringkali bervariasi. Penelitian ini menggunakan metode observasi, wawancara dan dokumentasi langsung dengan pengrajin Ibrahim di Desa Jada Bahrin, Kabupaten Bangka, Provinsi Kepulauan Bangka Belitung. Hasil penelitian menunjukkan bahwa proses produksi gula aren terdiri dari beberapa tahapan, yaitu penyadapan nira aren, perebusan nira hingga kental, penghilangan buih dan kotoran selama pemasakan, pendinginan, serta pencetakan menjadi gula aren padat. Proses pengolahan masih sederhana menggunakan peralatan tradisional seperti wajan, tungku, serok, dan cetakan bambu, sehingga konsistensi mutu produk sangat bergantung pada keterampilan pengrajin.

Abstract

ABSTRACTWaterleaf shoot (Talinum triangulare (Jacq.) Willd) is consumed as vegetable that contains some metabolites. The purpose of this research was to investigate the effect of organic fertilizer on shoot production and its metabolites i.e. protein, vitamin C, flavonoid, and peroxidase enzyme (POD) activity at 10, 12, and 14 weeks after planting. This experiment was conducted at Leuwikopo Experimental Station, Bogor, Indonesia from November 2012-February 2013. The organic fertilizers applied were cow manure (CM) (12.3 ton ha-1), rock phosphate (RP) (1.5 ton ha-1), and rice-hull ash (RH) (5.5 ton ha-1). These organic fertilizers were combined into four treatments by using minus one test method and one control. Each treatment was repeated three times. The result showed that combination of organic fertilizer had the same effects on shoot production and metabolite content of waterleaf. It showed that the amount of organic fertilizers was not significantly sufficient to contribute nutrients to the plant. Keywords: flavonoid, POD activity, repeated harvesting, Talinum triangulare, vitamin C

Abstract

Excessive sugar consumption is a major contributor to increased calorie intake and the rising prevalence of obesity, particularly through sweetened ready-to-drink (RTD) teas. This study aimed to optimize formula of reduced sugar RTD tea using steviol glycoside as sweetener, in combination with maltodextrin and xanthan gum, through a mixture design approach. Steviol glycoside next called as stevia is a zero-calorie natural sweetener with a sweetness intensity approximately 300 times of sucrose. Maltodextrin was employed as filler, while xanthan gum was added to improve mouthfeel. The optimized formulation achieved a 2% reduction in sugar content using 0.009% stevia, 0.029% xanthan gum, and 1.962% maltodextrin. A reference product was formulated based on the most popular RTD jasmine black tea in the Indonesian market, which contains 7.7% (b/v) sugar per 100 mL. Result of spectrum descriptive analysis (SDA) sensory evaluation, conducted before and after ultra-high temperature (UHT) processing, showed no significant differences in sweetness, mouthfeel, astringency and jasmine aroma attributes. Compare to reference, in 100 mL product, sugar content was reduced from 7.68 to 5.78%, while total calorie slightly decreased from 30.71 to 30.13 kcal. In addition, the cost is slightly more expensive by IDR 126 per 350 mL package.

Abstract

The snack industry has shown a stable increment for years and still has great potential for further increase. Potato chips rank second in sales volume in the snack industry, with an increase of 10.7% in 2022 compared to the previous year, propelling the manufacturers to compete in launching competitive  products in the market. To minimize the failure rate of new products, the knowledge of ideal sensory profile and attributes of potato chips is needed. Check-all-that-apply and ideal profile method are consumer perspective-based sensory profiling methods that provide a better understanding of a product’s sensory profile and ideal attributes. Three of the most consumed potato chips brands were used as benchmarks to determine the ideal sensory profile of potato chips with beef BBQ flavor. The result showed that the ideal attributes of potato chips consist of beef aroma and flavor, smokey aroma and flavor, savory taste, hardness, and crispness. These findings might help in developing more ideal-like potato chips and positively affecting consumers’ overall liking of the product. The result of sensory profile testing with consumers, particularly IPM, strongly correlated with the scoring attributes test conducted by selected panelists. There were sensory profile differences observed among the three samples used, which could be attributed to variations in raw materials and the processing technology used during production.

Abstract

Stunting is an important sign of chronic malnutrition that exists in early life with greater infection risk and with many long-term effects, including the need for physical work. Stunting is a problem for the Indonesian people to produce a generation that has global competitiveness. In general, this study aims to determine the effect of food consumption on the adequacy and balance of nutrition between stunted and normal children in 5 provinces in Indonesia. Specifically, this study aims to (1) lassify toddlers based on height according to age in the stunting and normal categories, (2) get a profile of stunting and normal toddler food consumption, (3) analyze data on nutrient intake and food contribution in the stunting group and normal, (4) analyze data on the adequacy and balance of nutrition from food intake in stunting and normal children under five in 5 provinces in Indonesia. This study used secondary data of food consumption data from SKMI 2014 and anthropometric data from Riskesdas 2013 of West Java, Central Java, East Java, West Nusa Tenggara and East Nusa Tenggara provinces. There were 2,039 samples from 5 provinces, 38.4% of them were stunting toddlers. Food consumption of toddlers with normal height was higher than stunting toddlers for eggs and egg products and lower for sugars. Intake of calcium and vitamin A in normal toddlers was significantly higher than stunting toddlers and lower for vitamin C. Both stunting and normal children groups showed deficiency, sufficiency and excess in nutrient intake. Imbalance nutrient intake for both stunting and normal children reached 100%.

Abstract

The 3-monochloropropane-1.2-diol ester (3-MCPDE) and glycidyl ester (GE) are chemical contaminants detected in vegetable oils and food products containing vegetable oils including formula products. This study aimed to assess the exposure and risk of 3-MCPDE and GE from infants formula products in Indonesia. Prediction of 3-MCPDE and GE levels of formula products was carried out probabilistically using data levels of 3-MCPDE and GE vegetable oil. Estimated daily intake (EDI) of 3-MCPDE and GE of formula products were obtained by multiplying the predicted data by consumption data while risk assessment is done by comparing EDI value with toxicology reference value. The predicted values of 3-MCPDE and GE levels of formula products ranged from 213.60-285.65 and 772.89-922.73 μg/kg. The exposure value of 3-MCPDE and GE of formula products based on Individual Food Consumption Survey (IFCS) was 1.53-2.40 and 5.54-7.11 μg/kgbw/day, while based on serving consumption was 3.31-6.68 and 10.88-21.62 μg/kgbw/day. Results of risk assessment indicated that 3-MCPDE was above 100% (health risk) in exception that of the age group 6-12 months based on IFCS with a value of 76.98-84.34%, the average GE with the T25 margin of exposure (MoE) was 1838-471 which was below 25.000. EFSA defined MoE T25 at 25.000 as GE's low risk to health.
