Abstract

Bahan pangan organik memiliki kandungan gizi dan komponen fungsional yang lebih tinggi dibanding non-organik serta tidak mengandung residu kimia dan logam berat. Kacang merah dan kedelai merupakan sumber protein nabati yang kaya serat pangan dan senyawa fungsional serta memiliki Indeks Glikemik rendah. Pati jagung berperan dalam memperbaiki sifat tekstural dan reologi produk pangan. Penelitian ini ditujukan untuk : 1) mengkaji karakteristik tepung komposit organik berbasis kacang merah, kedelai, dan jagung sebagai bahan pensubstitusi terigu dalam pembuatan cake; 2) mengkaji sifat fisikokimia dan sensori cake yang dihasilkan. Rasio tepung komposit organik kacang merah : kedelai : jagung yaitu 65% : 25% : 10%. Proporsi tepung komposit organik sebagai pensubstitusi terigu yaitu 0-100%. Hasil penelitian menunjukkan bahwa : 1) Tepung komposit organik memiliki kadar protein, lemak, dan serat pangan yang lebih tinggi dibanding terigu, sedangkan kadar karbohidrat dan patinya lebih rendah. Komposisi tersebut menyebabkan kemampuannya mengikat air yang tinggi pada suhu ruang dibanding terigu; sedangkan terigu memiliki kemampuan gelatinisasi (yang dilihat dari profil pasta dan viskositas) yang lebih baik; 2) Semakin tinggi proporsi substitusi terigu pada pembuatan cake menyebabkan peningkatan kadar air, abu, protein, dan serat pangan; sedangkan kadar karbohidratnya menurun. Secara sensori, terjadi penurunan pada tingkat kelembutan, kesukaan terhadap aroma, rasa, penerimaan secara keseluruhan; serta peningkatan pada intensitas warna. Substitusi terigu tidak berpengaruh besar pada sifat tekstural cake (kekerasan, elastisitas, dan daya kohesif); 3) Substitusi terigu dengan tepung komposit organik berbasis kacang-kacangan seperti kacang merah dan kedelai dapat dilakukan untuk memperbaiki nilai gizi cake terutama protein hingga taraf 50%, dan untuk meningkatkan penerimaan konsumen, produk cake dapat dikembangkan menjadi muffin. Kata kunci : cake, tepung komposit organik, kacang merah, kedelai, jagung

Abstract

Aquatic environment of Jakarta Bay have already been highlighted due to its heavy metals contamination which may lead into food safety concern of fisheries products derived from this region. This research aimed to investigate bioaccumulation level of heavy metals (Pb, Cd, and As) in fish and mussels from Jakarta Bay, as a human risk assessment of seafood consumption. Samples of mussels and fish were taken from Penjaringan, Tarumanegara, Cilincing, and Tanjung Pasir district. Bioaccumulation of heavy metals was analyzed by Inductively Coupled Plasma -Mass Spectrometry technique. Results of the study revealed that metals bioaccumulation in fisheries products were varied, with As (Arsenic) as the highest metal contaminant (0.68 mg/kg, dry weight). Furthermore, estimated daily intake (EDI), target hazard quotient (THQ), total target hazard quotient (TTHQ), and safety limits prescribed by various agencies, showed that consumption of fisheries products from Jakarta Bay considered as relatively safe for human health in total of food ingestion rate of fish 57.34 g/day. These results are expected to serve as a baseline to construct preventive and palliative policies for food safety of fisheries products from Jakarta Bay.

Abstract

Identification of persistent and emerging organic contaminants in green mussels (Perna viridis), various fishes, banana shrimp (Penaeus merguiensis) and sediment samples from Jakarta Bay has been employed. A non-target GC-MS screening approach has identified more than 60 individual organic compounds from the whole fractions either non-polar, semi-polar or acidic-polar compounds. The substances comprised as persistent organic pollutants (POPs) including DDT (dichlorodiphenyl trichloroethane) and its metabolites as well as high molecular weight polycyclic aromatic hydrocarbons (HMW-PAHs). Noteworthy, a number of emerging contaminants detected in the present study have never been reported previously either from the same location or from Asian waters. They include some priority contaminants of non-persistence halogens and emission of technical products, such as di-iso-propylnaphthalenes (DIPNs) dichlorobenzene (DCB), dichlorodiphenyl chloroethene (DDMU) and phenylmethoxynaphthalene (PMN). In general, the concentration order of the priority organic contaminants was sediment green mussel fishes shrimp. Further analysis based on the spatial distribution, individual concentrations and bioavailability suggested that some contaminants are applicable as molecular marker for the assessment of anthropogenic emission in Jakarta Bay, i.e. DIPNs, linear alkylbenzenes (LABs), phenylmethoxynaphthalene (PMN), PAHs, dichlorobenzene, DDT and its metabolites.

Abstract

A comprehensive study on exposure assessment of the priority organic contaminants via seafood consumption has been conducted to the coastal population of Jakarta Bay. Seafood is essential food source in Indonesia and also important income for the majority of coastal populations. A number of 152 respondents from 4 districts surounding the bay were interviewed to record their frequency and pattern on seafood consumption. In the same time, 13 seafood species were collected directly from Jakarta Bay during the dry and wet seasons for the assessment of organic contaminants. A non-target GC/MS screening identified more than 40 organic contaminants in which 6 of them are potentially considered as priority contaminants including 3 groups of carcinogenic contaminants i.e. dichlorodiphenyl-trichlorethane (DDT) and its metabolites (DDXs), dichlorobenzenes (DCB) and carcinogenic PAHs (PAH4). Further exposure analysis suggested cumulative health risk of these contaminants was less than official minimal risk level (MRL) and therefore categorized safe for the corresponding population. However, attention must be paid since additional exposure of either from the different food category or other exposure route may contribute to significantly elevate the health risk on the population as well as potential exposure of emerging contaminants.

Abstract

Liberica coffee is one of the coffee species in commercial trade in Indonesia. The coffee is produced in Tanjung Jabung Barat Regency, Jambi, Indonesia which distributed into 5 sub-districts (Betara, Bram Itam, Kuala Betara, Pengabuan, Senyerang). Information about liberica coffee from Jambi is still limited, thus more exploration is needed. The objectives of this study were to characterize the morphology of the leaf and fruit, the physicochemical characteristics which include the dimension (length, width, thickness), mass, bulk density, colour (L*, a*, b*), moisture contents, TSS (total soluble solids), pH, and antioxidant capacity (DPPH IC50, FRAP) of green and roasted (commercial level) liberica coffee from the above 5 sub-districts. The studies showed that liberica coffee from 5 sub-districts in Tanjung Jabung Barat Rgency, Jambi had various leaf and fruit appearances which were characterized by various size and colour of coffee cherries. Green coffee from different sub-districts owned various physicochemical (width, volume, mass, bulk density, moisture content, TSS) and antioxidant capacity of green coffee. Green coffee from Betara and Pengabuan were associated with high TSS, L* and b* value, while green coffee from Bram Itam and Senyerang were associated with high mass, moisture content and a* value. The highest anti-oxidant capacity was produced by green coffee from Betara and Kuala Betara (DPPH IC50). Meanwhile, roasted coffee produced from green coffee from the 5 sub-districts with similar roasting level (similar L*) produced similar a*, b* value, mass and TSS. However, physicochemical characteristics (length, width, volume, bulk density, moisture content) and antioxidant capacity of these roasted beans varied.

Abstract

Stunting in toddlers is still occurring in Indonesia. Heavy metals, especially lead (Pb), can cause calcium metabolism disorders. Drinking water has the largest contribution to Pb exposure. The research objective was to conduct a risk assessment of Pb from drinking water in toddlers in Indonesia. The Pb risk assessment was carried out by testing Pb levels in drinking water, extracting consumption data from the Individual Food Consumption Survey in 2014 and Basic Health Research in 2013, calculating Pb exposure, characterizing Pb risk, and predicting the correlation of Pb exposure from drinking water to the toddler nutritional status based on length/height-for-age. The average Pb exposure ranged from 0.026-0.082 μg/kgbw/day and the margin of exposure value ranged from 28.05-8.79 thus the risk of Pb from drinking water for toddlers was low. Correlation value between Pb exposure and the toddler nutritional status based on length/height-for-age in provinces with Pb levels more than limit of detection for children aged 0-11, 12-23, 24-35 and 36-47 months was 0.004; -0.038; -0.109 and -0.231, respectively. The resulting correlation from 0.004 to -0.231 were weak therefore Pb exposure from drinking water is unlikely causing stunting in Indonesian toddlers.

Abstract

Necessary approaches are needed to reduce the impact of rejected exported Indonesian seafood due to chemical contamination. This study aims to prioritize food and chemical pairs in the rejected fishery products. The rejection data from three major export destinations: the United States, the European Union, and Japan in 2017-2019 were used. Combinations of food and chemicals were developed and screened, followed by constructing a risk matrix to prioritize the pairs based on health and economic impact. Based on the health impact, a tuna–histamine pair was considered medium risk along with other commodities pairing with heavy metals. Tuna is the most exported seafood and suffers from the most loss; hence it has the highest score for severity and likelihood of economic impact. The combination of health and economic-based prioritization suggested that tuna–histamine was the top priority for immediate mitigation. The second priority consisted of shark–mercury, swordfish–mercury, octopus–cadmium; mahi-mahi–histamine was the third priority. This prioritization can assist risk managers in determining the order of commodities be acted upon based on health and economic considerations to enhance global market access.

Abstract

Sago (Metroxylon) is one of the local food species with development potential. Lingga Regency is one of the potential locations for sago development. However, no research on the morphological characteristics and production of sago in Lingga Regency has been conducted. The purpose of this research is to determine the morphological characteristics and production of sago in Lingga Regency. This study's sago plants came from six sago-producing villages. Before and after the sago trees were harvested, morphological characteristics and production were observed, with random sampling at each research site. Field observations on the potential of sago stands were conducted at the study site using the transect method with a single plot. Based on morphological characters there are two types of sago in Lingga: spiny and thornless sago. The morphological characteristics and sago production vary greatly between research sites. Sago stands have a production potential ranging from 3.37 to 14.55 tons ha-1. Because they have a starch content of more than 200 kg stem-1, the majority of sago accessions in Lingga are superior accessions with the potential to be further developed. Superior sago comes from the villages of Musai, Pekaka, Keton, and Teluk.

Abstract

Refined palm oil contains contaminants such as 3-monochloropropane diol ester (3-MCPDE) and glycidyl ester (GE) which are formed from diacylglycerol (DAG) and chloride (Cl) as precursors during processing. There is a need to control the levels of precursors especially during the bleaching stage using selected bleaching earth (BE). Reducing the number of precursors after the bleaching stage will minimize the formation of 3-MCPDE and GE in bleached palm oil (BPO) for the next refinery stage. The research consisted of three stages: (1) characterization of raw materials consisting of CPO, BE types 1, 2, 3, 4, and 5; (2) study on the effect of BE type; and (3) study on the concentration effect of selected BE for reducing DAG and Cl by chemical analysis of oil quality. The results showed that degummed palm oil (DPO) contained DAG of 6.70%, free fatty acid 5.66%, carotene 424.31 mg/kg, P 20.30 mg/kg, and Fe <0.021 mg/kg. The five types of BE have different physicochemical properties on which the effect will be seen on BPO. The second stage results showed that BE-4 was selected as the most potential BE. Using BE-4 of 2.5% was proven to reduce total Cl as 3-MCPDE precursors in the resulted BPO sample. The Cl level decreased to 3.05 mg/kg with the largest decrease percentage of 55.80% compared to DPO sample. BE-4 concentration of 2.5% has been able to withstand and prevent the increase of DAG as a precursor to GE contaminants during bleaching process. Abstract

Kebar grass (Biophytum petersianum Klotzsch.) has long been known by the locals of West Papua as medicinal plant that improves fertility. The objectives of this research were to identify and determine the antioxidant activity of kebar grass crude extract through conventional method and to analyze for its antioxidant activity. Extraction method used was conventional method, performed by mixing dry kebar grass with water and boiled until the volume shrunk to 1/3 of initial volume. Analized parameters were crude extract yield, qualitative phytochemical, total phenol and antioxidant activity. Research result showed extract crude yield value of 18.32±0.01%. Qualitative phytochemical contents were dominated by flavonoid, tannin, and saponin. Total phenolic content (TPC) of crude extract was 147±1.24 mgGAE/gdw (0.688±0.01 mgGAE/gfw). Crude extract antioxidant parameter was measured as the value of inhibition, AEAC, TEAC, and IC50 where each value respectively was as followed 42.0±0.047%, 69.93±2.19 mgAE/gdw (8.30±0.26 mgAE/gfw), 65.70±1.54 mgTE/gdw (7.80±0.18 mgTE/gfw) and 0.129±0.003 mgdw (257.75±4.90 mg/L). The contribution of kebar grass TPC content to antioxidant activity is 47.38% (equal to ascorbic acid) and 44.51% (equal to trolox) which means that almost half of kebar grass crude extract’s phenolic compound act as antioxidant. The results of this research can show that the kebar grass has potential as a source of multiple antioxidants, which acts as an analogue of vitamin C and vitamin E.  The antioxidant activity of the kebar grass extract can be the scientific basis for the use of kebar grass as a medicinal plant for infertility problems (curative) and as a functional food ingredient for antioxidant sources that prevent a decrease in reproductive performance (preventive).
