Abstract

Background: The students at school age are categorized into a risky period toward health problems. The health condition of students at elementary school affects the student's achievements. The education on nutrition given to them effectively shifts toward healthy eating behavior. Some efforts were made to provide nutrition education for elementary school-aged children through attractive media to support accessible materials conveyed. One engaging medium that is "attractive" to children as a medium of instruction is the quartet card.Objective: To analyze the effect of nutritional education on healthy snacks using a quartet card as the media to improve elementary students' nutrition knowledge. Research Methods: The research method used in this study is a literature study by finding the supporting theoretical references relevant to the study. The data used in this study were secondary data obtained from journals, documentation books, and the internet in the last five years with the keywords healthy snacks, elementary school children, and quartet cards. The collected data were then analyzed according to a descriptive qualitative research method Research Result: The results of the study found a significant effect on the student's knowledge of nutrition using quartet cards in which the elementary school students, in fact, significantly achieve the goals of conducting nutritional education efforts. Conclusion: The quartet card media is quite effective in increasing the knowledge of elementary school children because it can increase children's attention, concentration, and imagination. Then the child is expected to start learning to apply what is known so that, in the end, it can form good knowledge. In addition, the quartet card media also has a role as a learning medium designed to convey messages through the images presented in it.

Abstract

Upaya pencegahan stunting salah satunya melalui pemberdayaan masyarakat, yaitu optimalisasi peran kader posyandu. Program pendampingan kader yang dilakukan memperkenalkan makanan yang berbasis pangan lokal berupa kelor dan tempe sebagai bahan yang ditambahkan dalam pembuatan bakso. Sasaran 5 (lima) orang kader di satu posyandu .Metode yang digunakan Demostrasi . Bakso “AyTeke” merupakan bakso yang berbahan dasar ayam yang ditambahkan tempe dan kelor dengan kandungan gizi/ 100 gram adalah Kalori 210 Kkal, protein 16,8 g, Lemak 10,5 g,KH 12,5 g. Bakso “AyTake” dapat menjadi salah satu alternatif sebagai makanan  tambahan lokal   untuk anak stunting yang bernilai gizi tinggi

Abstract

Background: Physical changes in the elderly include changes in the aorta and systemic blood vessels that affect blood pressure. Increased blood pressure in the elderly is a health problem that must be handled properly. The management of hypertension can be done by giving the DASH diet, in this case this study provides an interlude to the DASH diet. Research Methods: This type of research uses a quasi-experimental research design with a randomized pre-test-post-test control group design. Subjects were divided into two groups, namely the treatment group and the control group.Research Results: Most of the subjects in this study were elderly aged 70-74 years (33.3%) in the treatment and 75-80 years (50%) in the control. The research subjects were mostly female, namely 27 elderly (75%). The average body weight for the treatment group was 54.24 kg and the control group was 48.48 kg. The mean blood pressure in both groups before the intervention was higher than the mean blood pressure after the intervention. The results of the paired-t test statistic showed that there was a difference in the mean of systolic (0.000) and diastolic (0.000) blood pressure before and after the intervention. Meanwhile, the two-group difference test showed that there was no difference in systolic and diastolic blood pressure before the intervention. However, after the intervention, there was a difference in systolic and diastolic blood pressure. Furthermore, there was an effect of the DASH diet interlude on Systolic blood pressure (p = 0.000) and Diastolic blood pressure (p = 0.034) after the DASH diet snack was given.Conclusion: there is an effect of giving a DASH diet interlude on systolic blood pressure (p=0.000) and diastolic blood pressure (p=0.034) after giving the DASH diet snack.

Abstract

One of the social problems solving the direct impact on the community is overcoming household food security due to the COVID-19 pandemic. This study aims to analyze household food security during the COVID-19 pandemic and link it to the nutrient intake and nutritional status of children under five in the Kupang district area. This cross-sectional study is based on a survey conducted on the Timorese population in Kupang, East Nusa Tenggara, Indonesia, from May to October 2021. Data on household dietary diversity was collected through the 24-hour food recall using the household dietary diversity score (HDDS). The study sample was taken from Timorese population families with toddlers under five years, and 1,444 families voluntarily participated in this study. Subjects were taken at each public health using a simple random method. This study analyzes the Spearman correlation test with the HDDS and the proportion of food expenditure. A 63% of households had a balance of less cost (<50%) with an average of 63.9. Generally, households (90.4%) had a pretty good diet diversity score. Food groups that were relatively highly consumed by most households included cereals (100%), sugar and sweeteners (90.2%), oils and fats (93.7%), seasonings, and spices (89.4%). A significant effect with p<0.05 was on HDDS during the COVID-19 pandemic. The food consumption score is another indicator widely used in determining household food security. Therefore, it is necessary to revalidate tests in further studies of these indicators.

Abstract

In West Nusa Tenggara the prevalence of stunting is placed seventh with a frequency of 33.49%, whereas the prevalence of stunting in Indonesia is 30.8%, according to Riskesdas 2018. A useful strategy for raising awareness and preventing stunting problems is to use KIA book media to facilitate brainstorming sessions for 1000 HPK. To ascertain the impact of counseling on 1000 HPK (First Day of Life) participants' knowledge of reducing stunting at the Narmada Community Health Center Working Area through the use of the KIA book media and the brainstorming approach. Nonequivalent Control Group Design is the research method utilized in quasi-experimental design studies. There were 112 research targets as the research subjects. A questionnaire was the tool utilized. The independent sample t-test and the paired sample t-test were used to test the data. Findings from Research. There were four people (7.14%), eighteen people (32.14%), and thirty-four people (60.71%) who knew about pregnant women before treatment for the poor category. Following the intervention, it rose to fall into one of three categories: less than none, moderate (consisting of 11 individuals/19.64%), and good (consisting of 45 individuals (80.36%). The results of statistical tests utilizing the paired sample t-test show that there is a significant influence between the usage of KIA book media at 1000 HPK and brainstorming approaches, with a p value of 0.000 < 0.05. Pregnant women's knowledge increased after counseling with the brainstorming method using KIA book media, according to the analysis's results, which also indicate a substantial difference in the women's knowledge before and after counseling.

Abstract

The level of knowledge or lifestyle can lead to a pattern of multiple nutritional problems. Indonesia currently has a triple burden of nutrition problems, namely stunting, wasting and underweight as well as micronutrient deficiencies such as anemia. Data from the EPPBGM results of the Madapangga Health Center in August 2022 there were 2058 toddler targets, from these data showed 227 people (11.03%) targets experiencing underweigh, 157 people (7.63%) stunting, and 233 people (11.32%) wasting. The purpose of this study was to determine the effect of nutrition counseling using media contents of my plate on the level of nutritional knowledge of mothers of toddlers participating in nutrition classes.The research method used is a quasi experiment design with a Non Equivalent Control Group Design. Activities were carried out in February-March 2023, for 3 weeks with 3 meetings in each group with 60 research subjects consisting of 30 people in the treatment group and 30 people in the control group. The analysis used in this study was the Independent t test on 60 respondents in two classes, to determine the effect before and after providing nutritional counseling. The intervention provided was in the form of providing counseling with the "My Plate Contents" media for the treatment group and providing counseling without the "My Plate Contents" media for the control group. Data collection used questionnaires to measure the level of knowledge.Based on the results of the study, the level of knowledge of mothers of toddlers increased after being given nutritional counseling using media contents of my plate obtained p < 0.05, namely 0.026 < 0.05. Based on the Independent t Test test, it was concluded that there was an influence before and after counseling on the knowledge of mothers under five. So that the conclusion is that there is a significant effect of nutrition counseling using "Media Isi Piringku" on the level of nutritional knowledge of mothers participating in nutrition classes in the work area of the Madapangga Health Center, Bima Regency.

Abstract

Ampas tahu merupakan salah satu limbah yang dihasilkan dalam produksi tahu. Salah satu wilayah yang ada di Kota Mataram yang merupakan sentral Home Indutri tahu tempe adalah Abian Tubuh. Pemanfaatan Ampas tahu oleh pengrajin tahu hanya dibuat krupuk. Dalam kegiatan pengabdian masyarakat ini bertujuan meningkatkan pengetahuan dan ketrampilan pengrajin tahu dalam pengembangan produk berbasis ampas tahu dalam pembuatan Nugget. Pendampingan yang dilakukan meningkatkan pengetahuan pengrajin dalam pengembangan produk berbasis ampas tahu.

Abstract

Kurangnya pengetahuan gizi pada remaja merupakan salah satu penyebab kekurangan gizi secara tidak langsung. Upaya pencegahan hal ini dapat dilakukan dengan memberikan penyuluhan gizi dengan media yang dapat menarik minat remaja untuk mempelajarinya, seperti media video. Penelitian ini merupakan penelitian quasi-eksperimental dengan rancangan non-equivalent control group pretest posttest. Jumlah populasi dalam penelitian ini sebanyak 1172 siswa dari 10 SMA di Wilaayah Kerja Puskesmas Selong. Sampel dihitung menggunakan rumus Notoatmodjo 2005 diperoleh hasil 322 siswa terbagi menjadi 2 kelompok yaitu 163 siswa kelompok intervensi dan 159 siswa kelompok kontrol. Data yang diperoleh dianalisis menggunakan tes Wilcoxon. Hasil pengetahuan dan sikap meningkat setelah diberikan media video masing-masing sebesar 49% dan 28%. Hasil ini dibuktikan melalui penggunaan uji parametrik (Independent T-test) diperoleh nilai p-value=0,000 (p<0,05) artinya ada pengaruh yang signifikan. Terjadi peningkatan pengetahuan dan sikap remaja terkait gizi seimbang pada remaja setelah diberikan penyuluhan gizi dengan media video. Namun, tidak ada perbedaan antara konseling melalui video dan leaflet.

Abstract

Latar Belakang: Indonesia adalah negara kepulauan terbesar di dunia yang sebagian besar wilayahnya berupa perairan. Melimpahnya kekayaan laut tersebut nyatanya belum dimanfaatkan secara optimal. Hal itu disebabkan oleh berbagai faktor diantaranya masih rendahnya konsumsi ikan masyarakat. Berdasarkan data BPS tahun 2017, Kabupaten Lombok Utara merupakan Kabupaten yang memiliki tingkat konsumsi ikan rendah, salah satu desa yang tingkat konsumsi ikannya rendah adalah Jambianom Tanjung. Dengan adanya permasalahan ini maka perlu adanya upaya yang dilakukan salah satu upaya tersebut adalah dengan melakukan kampanye gemar makan ikan untuk mengetahui perbedaan frekuensi konsumsi ikan remaja putri di kampung nelayan Jambianom Tanjung. Gemarikan adalah upaya yang dilakukan untuk memotivasi masyarakat agar mengkonsumsi ikan secara teratur dalam jumlah yang baik bagi kesehatan agar terbentuk manusia yang sehat, cerdas dan kuat. Tujuan: Untuk mengetahui perbedaan konsumsi ikan sebelum dan sesudah diberikan kampanye gemar makan ikan (GEMARIKAN) pada remaja putri di kampung nelayan jambianom Tanjung Lombok Utara Metode: Metode dalam penelitian ini yaitu pra-exsperimen dengan rancangan one group pretest and posttest design. Penelitian ini dilaksanakan pada bulan Maret 2022. Populasi penelitian ini adalah remaja putri yang jarang mengkonsumsi ikan di kampung nelayan Jambianom Tanjung yang memenuhi kriteria inklusi dan eksklusi. Cara pengambilan sampel menggunakan metode tehnik non probability. Besar sampel dalam penelitian ini sebanyak 20 orang yang termasuk dalam sampel jenuh. Analisis data menggunakan uji statistic berupa uji Wilcoxon. Hasil : Hasil penelitian pada variabel perbedaan konsumsi ikan, menunjukkan kampanye gemar makan ikan dengan media berupa E-Book Resep terbukti efektif hal ini ditandai dengan adanya perbedaan konsumsi ikan pada remaja putri dari yang semula <1x seminggu menjadi 3-5x seminggu dengan peningkatan point konsumsi/ peningkatan rata-rata asupan sebesar 13.8 point (dari 8.2±2,4 menjadi 22.0±4.7). Simpulan: Pada variabel tingkat konsumsi ikan, kampanye gemar makan ikan dengan media berupa E-Book Resep terbukti efektif hal ini ditandai dengan adanya perbedaan frekuensi konsumsi ikan pada remaja putri dari yang semula <1x seminggu menjadi 3-5x seminggu dengan peningkatan point konsumsi/ peningkatan rata-rata asupan sebesar 13.8 point (dari 8.2±2,4 menjadi 22.0±4.7). Abstract

Background: White bread is a food product made from a mixture of simple ingredients such as wheat flour, granulated sugar, eggs, margarine, yeast. To increase the nutritional value of white bread, white bread products have been developed to substitute pumpkin flour which are high in protein and rich in dietary fiber, anti-oxidants, minerals, vitamin A, vitamin C and vitamin E for elementary school children.  Research Objectives: To identify the organoleptic properties (color, aroma, taste and texture) and nutritional content (energy, protein, fat, carbohydrates, fiber and vitamin A) in selected substitute white bread as a snack product for elementary school children.  Research Method: This research uses an experimental or experimental method with a Completely Randomized Design (CRD). Organoleptic properties were tested using the hedonic test method with 15 panelists.  Results: The results of the organoleptic study of white bread products substituted with pumpkin flour revealed that the best treatment was t1 with 10% pumpkin flour substitute. The nutritional value of 1 portion weighing 50 grams of yellow pumpkin bread is 225.05 kcal energy, 5.3 grams protein, 5.7 grams fat, 41.75 grams carbohydrates, 0.18 grams fiber, 61.66 mg vitamin A.  Conclusion: Pumpkin white bread with the best treatment is t1 (10% substitution of pumpkin flour for total wheat flour). You get a yellow color with a distinctive aroma of white bread and pumpkin with a slightly sweet and savory taste and a soft texture. The nutritional value of 1 portion weighing 50 grams of yellow pumpkin bread is 225.05 kcal energy, 5.3 grams protein, 5.7 grams fat, 41.75 grams carbohydrates, 0.18 grams fiber, 61.66 mg vitamin A.
