Abstract

  Elementary school students are one of the vulnerable groups to nutritional and health problems. Nutritional status is the condition of the body which is the end result of the balance between nutrients that enter the body. Intake of macronutrients is the intake needed in relatively large amounts, including carbohydrates, fats, and protein. In addition to food intake, there are other factors that affect nutritional status, namely nutritional knowledge. Objectivethis research to determine the relationship between intake of macronutrients and nutritional knowledge with the nutritional status of school students in Kelapa Lima District. This research design uses a descriptive correlation with a cross sectional approach. Analysis of the data used is the fisher's exact test. From the results of the study, it was found that the frequency of nutritional status of students based on BMI according to age (BMI/U) in the undernutrition category was 6 people (2.3%), 18 people (6.8%) were overweight and 4 people were obese (1,5%). The carbohydrate intake of students in the more category was 6 people (2.3%) and the less category was 102 people (38.3). The protein intake of students was more than 47 people (17.7%) and less than 75 people (28.2%). The fat intake of students was more than 18 people (6.8%) and less as many as 95 people (35.7%). There were 79 (29.7%) students with enough nutritional knowledge and 52 students (19.5%) lacking knowledge. The results of the analysis stated that there was no relationship between carbohydrate intake, protein intake, fat intake and nutritional knowledge with nutritional status. Based on the results of the analysis, there is no relationship between carbohydrate intake, protein intake, fat intake and nutritional knowledge with nutritional status.

Abstract

Adolescence is a stage of very rapid growth (growth spurt). This period is called the Golden period because during this period teenagers experience many biological changes, namely changes in body weight, height and body proportions. Teenagers really need twice as much nutritional intake for their growth and development. The nutritional status of adolescents is directly influenced by infectious diseases and food intake, and one of the indirect factors that can influence nutritional status is nutritional knowledge. The aim of this research is to analyze the relationship between nutritional knowledge and infectious diseases and the nutritional status of adolescents aged 15-18 years. The research used is quantitative research with a correlational analysis design with a cross sectional study approach. In this study, stratified random sampling was used to determine the sample, with a total sample of 131 people conducted at SMA Negeri 2 Kupang City from November 2023 to June 2024. The results of the univariate research showed that the majority of teenagers' nutritional knowledge was in the category of good nutritional knowledge, namely 63 people (48.1%), the number of teenagers who experienced infectious diseases in the last month was 78 people (59.5%) and 81 teenagers (61.8%) had good nutritional status. The results of the Fisher exact test analysis p-value = 0.702, which means there is no relationship between nutritional knowledge and the nutritional status of adolescents and the p-value is 0.831, meaning that infectious diseases also have no relationship with the nutritional status of adolescents.

Abstract

The period between childhood and adulthood, known as adolescence, is marked by a number of social, mental, and physical changes. Rapid increases in height and weight are indicators of adolescent physical development. Due to changes in body composition and nutrient excess or deficiency, nutritional needs increase during this phase. To determine the relationship between parental characteristics and nutritional knowledge with students' consumption of vegetables and fruits at Mercusuar Kupang Christian High School, the research instruments were questionnaires and the study was quantitative research using the observational method with a cross-sectional design. To see the relationship between parental characteristics and nutritional knowledge with students' vegetable and fruit consumption, the data was analyzed using the Chi-Square Test. The results of the univariate analysis showed that 53 students (43.8%) had good knowledge, 55 students (45.5%) had sufficient knowledge, and 13 students (10.7%) had poor knowledge. The most common educational background of the fathers was high school graduates, with 60 people (49.6%), while the most common educational background of the mothers was high school graduates, with 58 people (47.9%). Regarding the parents' occupations, the most common occupation for fathers was self-employed, with 53 people (43.8%). For mothers, the most common occupation was homemaker, with 53 people (43.8%). Based on bivariate analysis, there was no significant correlation between the mother's education level and vegetable consumption (p-value 0.937), no significant correlation between the father's education level and vegetable consumption (p-value 0.127), and no significant correlation between nutrition knowledge and vegetable consumption (p-value 0.137) and fruit consumption (p-value 0.137). However, for fruit consumption (p-value 0.885), there was a relationship between the father's occupation and vegetable consumption (p-value 0.005 ≤0.05), but there was no relationship with fruit consumption (p-value 0.682). There was no significant relationship between the mother's occupation and vegetable consumption (p-value 0.997), while for fruit consumption (p-value 0.434). Suggestion: For Mercusuar Kupang Christian High School, continue to provide education and motivation to adolescents so they can apply existing nutrition knowledge more effectively. The results of this research are expected to be used as a consideration for making policies on school children's nutrition services, such as establishing a canteen at school that offers affordable vegetables and fruits.Keywords: Student knowledge, Education, Parental occupation

Abstract

Masa remaja adalah proses peralihan dari masa kanak-kanak menuju usia dewasa yang ditandai dengan berbagai perubahan fisik, mental, dan sosial. Remaja memerlukan asupan zat gizi yang cukup, baik dari segi kualitas maupun kuantitas, untuk mendukung pertumbuhannya. Salah satunya adalah vitamin dan mineral yang diperoleh dari sayur dan buah. Penelitian ini bertujuan untuk menganalisis faktor-faktor yang berhubungan dengan konsumsi sayur dan buah pada remaja. Penelitian dilaksanakan dari bulan Januari sampai April 2025 di SMA Kristen Mercusuar Kupang. Responden dalam penelitian ini sebanyak 121 orang. Variabel bebas yang diteliti adalah jenis pekerjaan dan tingkat pendidikan orang tua, serta pengetahuan gizi remaja. Data penelitian diuji menggunakan uji chi-square. Hasil uji statistik menemukan ada hubungan antara pekerjaan ayah dengan konsumsi sayur (p-value = 0,005), sedangkan variabel-variabel yang tidak berhubungan dengan konsumsi sayur dan buah, yaitu pengetahuan gizi, pendidikan orang tua dan pekerjaan ibu. Remaja perlu dukungan orang tua agar mampu memenuhi konsumsi sayur dan buah dalam sehari.

Abstract

Menurut Unicef dalam kerangka kebijakan gerakan seribu hari pertama kehidupan, penyebab langsung masalah gizi yang pertama adalah konsumsi makanan yang tidak memenuhi jumlah dan komposisi zat gizi yang memenuhi syarat gizi seimbang yaitu beragam, sesuai kebutuhan, bersih, dan aman. Faktor penyebab langsung kedua adalah penyakit infeksi yang berkaitan dengan tingginya kejadian penyakit menular terutama diare dan penyakit pernapasan akut (ISPA). Prevalensi stunting secara nasional tahun 2013 adalah 37,2%, yang berarti terjadi peningkatan dibandingkan tahun 2010 (35,6%) dan 2007 (36,8%). Sedangkan pada tahun 2018 prevalensi stunting adalah 30,8% yang artinya telah tejadi penurunan jika dibandingkan tahun 2013, namun masalah stunting masih menjadi masalah utama di Nusa Tenggara Timur sehingga perlu terus dilakukan penelitian lanjutan terutama pada kelompok umur yang berisiko seperti bayi dan balita. Tujuan penelitian ini yaitu untuk menganalisis perbedaan konsumsi pangan dan karakteristik keluarga balita stunting dan tidak stunting di Kota Kupang. Metode yang digunakan adalah cross sectional study, lokasi penelitian di wilayah kerja Puskesmas Oesapa dengan total sampel sebanyak 96 balita. Hasil analisis menggunakan uji chi-square, menunjukkan bahwa terdapat perbedaan konsumsi pangan antara balita stunting dan tidak stunting di Kota Kupang (p = 0,012). Hasil analisis terhadap karakteristik keluarga antara lain terdapat perbedaan pekerjaan ayah (p=0,006) dan pola asuh perawatan kesehatan (p=0,001) pada balita stunting dan tidak stunting di Kota Kupang. Sedangkan hasil analisis terhadap Pendidikan orangtua, pendapatan keluarga, usia balita, jumlah anggota keluarga, jumlah saudara kandung, dan pengetahuan ibu balita menunjukkan tidak terdapat perbedaan pada balita stunting dan tidak sunting di Kota Kupang.

Abstract

Stunting is a nutritional problem that adversely affects the quality of life of children in achieving optimal growth and development according to their genetic potential. An important period in child development is the toddler period, because during this time basic growth will affect the child's further development. A mother does not easily face the problem of stunting in her child, so good emotional intelligence is needed. Lack of adaptability in dealing with changes can cause psychosocial problems, one of which is anxiety. Mothers who are unable to adapt to changes in themselves who are married and have stunted toddlers can affect a mother's anxiety level. The purpose of the study was to determine the relationship between emotional intelligence and maternal anxiety to the incidence of stunting. The research method uses a cross sectional design. The sampling technique was accidental sampling, a total sample of 370 toddlers in Kupang City. Data analysis using chi-square test (p value <0.05).  The results showed that there was a relationship between maternal anxiety and the incidence of stunting with a p value = 0.000 and there was no relationship between maternal emotional intelligence and the incidence of stunting with a p value = 0.787

Abstract

During infancy growth and development are the most important components of the growth and development process. This period determines the child's success in the future. The descriptive analytical research approach was used to investigate the relationship between maternal characteristics and early weaning with the nutritional status of toddlers in Oepura Village, Kupang City. The time frame for this study was January through may of 2024 in Oepura Village, Kupang City. In this study, toddlers made up the sample. When the study was conducted, 136 respondents were obtained. The instruments used were standard anthropometric tables, analytical scales and questionnaires. The Fisher-Exact statistical test was used to evaluate the relationships between the variables. The findings demonstrated that there was no connection between maternal knowledge (p-value = 0.120), maternal education (p-value = 0.324), maternal occupation (p-value = 0.071), and early weaning (p-value = 0.735) with the nutritional status of toddlers in Oepura Village, Kupang City. It is advised that health professionals regularly counsel moms of toddlers in order to increase their level of expertise

Abstract

Stunting is a condition of chronic malnutrition accompanied by disease complications, which has negative impacts, both short and long term. In the short term, children will be at risk and susceptible to infectious diseases, while in the long term, in adulthood they will be at risk of suffering from chronic diseases. Low income affects household nutrition. The incidence of stunting cannot be separated from habits, cultural beliefs, knowledge and perceptions of local communities regarding fulfilling family nutrition. These beliefs have an influence on child care. The aim of this research is to identify the role of fathers in the incidence of stunting in South Central Timor Regency. This type of qualitative research uses focus group discussion (FGD) methods and in-depth interviews. The respondents involved for the qualitative approach were government figures (village heads and sub-district heads), religious leaders, traditional leaders, health services, community health centers and fathers with toddlers totaling 7 people from each village. The results obtained on average are that fathers know the direct causes of stunting, not because of their knowledge but because fathers are less aware of their child's parenting patterns. Parenting patterns regarding monitoring children's meal times, personal hygiene and providing diverse and nutritious food are lacking. On average, a father is busy earning a living, many even work outside the city so their children are entrusted to their grandparents, there is a lack of control in the family so there are many early marriages under the age of 20, the family economy is weak so people have less purchasing power to earn money. nutritious food ingredients. The conclusion from this research is that the role of fathers is one of the causes of stunting in South Central Timor Regency.

Abstract

Abstrak Status gizi ibu menjadi salah satu faktor yang menentukkan pertumbuhan perkembangan janin termasuk berat dan panjang saat lahir. Salah satu upaya yang dapat dilakukan adalah dengan pemberian makanan tambahan (PMT) yang kaya Fe. PMT dapat disajikan dalam bentuk makanan pokok maupun selingan dengan bahan baku pangan lokal. Produk PMT yang baru adalah pemberian Cookies kaya Fe dengan formulasi penambahan bayam merah dan kacang merah. Cookies menjadi pilihan karena berbahan dasar tepung terigu yang sudah dikenal masyarakat luas, dapat langsung dikonsumsi, kadar airnya rendah sehingga tahan lama, teksturnya digemari karena renyah, dan mudah dibuat, disamping membantu mencukupi kebutuhan energi dan zat besi untuk ibu hamil.Tujuan penelitian ini adalah untuk mengetahaui pengaruh subtitusi tepung bayam merah dan tepung kacang merah terhadap uji organoleptik dan kandungan gizi cookies. Jenis penelitian ini menggunakan Rancangan acak lengkap (RAL) dengan 4 perlakuan P1 (30 % & 5 %), P2 ( 40 % & 10 %), P3 (50 % & 15 %). Hasil penelitian didapatkan ada perbedaan aroma dan tekstur pada perlakuan P1, P2 dan P3 dimana P Value < 0.05, dan tidak ada perbedaan kualitas untuk rasa dan warna pada perlakuan P1, P2 dan P3 dimana P Value > 0.05. untuk hasil uji kandungan gizi terdapat perbedaan yang nyata dimana dalam perlakuan P1 sampai P3 kandungan protein lebih tinggi pada perlakuan P3 dengan nilai 8.89 kal/100 gr bahan makanan.

Abstract

Nutritional problems remain a major public health issue in Kupang City, particularly in the working area of the Manutapen Public Health Center. The low level of community knowledge, especially among housewives and Posyandu cadres, regarding the processing of nutritious local food is one of the main factors contributing to the high prevalence of stunting and undernutrition among children. Meanwhile, the coastal area of Kupang has abundant fish resources that are available throughout the year. However, the utilization of fish as a local food ingredient remains limited to simple traditional preparations such as frying or boiling, which have not yet optimized its nutritional and economic potential. This community service activity was carried out to enhance the capacity and self-reliance of the community through the empowerment of housewives and Posyandu cadres. The training activities included education on balanced nutrition, cooking demonstrations, and hands-on practice in preparing various fish-based products such as nuggets, meatballs, and shredded fish. The results showed a significant improvement in participants’ knowledge, skills, and motivation to use fish as a nutritious, healthy, and economically valuable local food source. Furthermore, many participants expressed interest in developing fish-based products as home-based businesses, which could potentially increase household income and strengthen local food security in the community.
