Abstract

AbstrakKeong kowoe adalah salah satu jenis moluska yang banyak dijumpai disungai, danau, rawa dan memiliki kandungan asam lemak yang baik untuk perkembangan otak dan mencegah penyakit jantung.Penelitian ini bertujuan untuk mengetahui nilai sensori, kandungan proksimat dan asam lemak pada keong kowoe dengan metode pengolahan yang berbeda.Penelitian ini menggunakan metode deskriptif, dengan 3 perlakuan. Penelitian ini meliputi uji sensorik, analisis proksimat dan asam lemak metode GC.Penilaian sensori meliputi aroma, warna, Flavor (keong), umami (gurih, enak), Saltiness (Asin) dan Tekstur. Hasil penelitian menunjukkan nilai tertinggi aroma (5), warna (5,4) dan umami (5,3) ditunjukan pada metode pengasapan, untuk flavor (7,1) dan tekstur (5,9) ditunjukkan pada metode oven, sedangkan saltiness (4,6) ditunjukkan pada metode sun drying. kadar air (17,64%) tertinggi ditunjukkan pada metode pengasapan, untuk kadar protein (52,29%), lemak (11,52%) dan serat kasar (1,79%) ditunjukkan pada metode sun drying, sedangkan kadar abu (20,26%) ditunjukkan pada metode oven.  Nilai tertinggi asam lemak jenuh (63,96%) ditunjukkan pada metode oven, sedangkan asam lemak tak jenuh tunggal (21,61%) dan asam lemak tak jenuh jamak (31,68%) ditunjukkan pada metode pengasapan. Kata kunci: Asam lemak, pengasapan, proksimat, sensori, sun drying AbstractKowoe snail is one type of mollusk that is often found in rivers, lakes, swamps and have fatty acids whichare good for brain development and prevent heart disease. This study aims to determine the sensory value, proximate content and fatty acids in kowoe snails with different processing methods.This research used a descriptive method, with             3 treatments. This research including sensory test, proximate analysis and fatty acid GC methods. Sensory evaluation including aroma, color, flavor (snail), umami (savory, tasty), saltiness (salty) and texture. The results showed thatthe highest value of aroma (5), color (5.4) and umami (5.3) showed that of by smoking method, for flavor (7.1) and texture (5.9) showed that of by oven drying method, while saltiness (4.6) showed that of by sun drying method. The highest of moisture content (17.64%) showed that of by smoking method, for protein (52.29), lipid (11.52%) and crude fiber content (1.79%) showed that of by sun drying method, while ash content (20.26%) showed that of by oven drying method. The highest value of saturated fatty acids (63.96%) showed that of by oven drying method, while monounsaturated fatty acids (21.61%) and polyunsaturated fatty acids (31.68%) showed that of by smoking method. Key words: Fatty acids,proximate, sensory, smoking, sun drying

Abstract

Improving the management of coastal areas and small islands needs to have the support of the State of Indonesia as the world's maritime axis area because it has abundant fisheries and marine wealth. The study was conducted in Muna Regency in April-June 2021 with the determination of the location of purposive sampling in the archipelago. Research uses qualitative and quantitative approaches with data collection methods including observations, interviews and document studies using SWOT analysis. The results of the study showed the Muna Regency government in improving the management of coastal areas and small islands provides convenience and support both namely financial access, coaching, counseling and assistance for fishing communities.

Abstract

Kelurahan Matabubu kecamatan Poasia kota Kendari memiliki kelompok masyarakat yang memelihara ternak ayam kampung super karena jenis ayam ini mudah pemeliharaannya dan daya adaptasinya baik terhadap kondisi lingkungan yang ektrim. Akan tetapi sistem pemeliharaan yang dilakukan oleh masyarakat pada umumnya masih bersifat tradisional. Kegiatan penerapan bimbingan teknis ini merupakan program bina desa yang bertujuan untuk mengoptimalkan pemberdayaan potensi masyarakat, khususnya bimbingan teknis tentang cara beternak ayam kampung super secara intensif. Metode kegiatan yang dilakukan dengan ceramah dan diskusi mengenai potensi, dan tatacara pemeliharaan ayam kampung super yang menguntungkan. Hasil kegiatan menunjukkan bahwa materi bimbingan teknis  yang ajarkan mendapat respon positif dan cukup memuaskan dari para peserta mengingat selama ini belum pernah dilakukan kegiatan serupa. Umumnya para peserta ingin mengadopsi materi penyuluhan dan mereka sangat aktif dalam demonstrasi tentang pemilihan bibit, penyusunan ransum ternak, pencegahan penyakit, tatalaksana pemeliharaan, pembuatan kandang dan peralatan, teknik pasca panen dan cara pemasaran yang menguntungkan. Disimpulkan bahwa para khalayak sasaran yang terdiri dari para masyarakat di Kecamatan Landono sangat antusias dan aktif dalam kegiatan bimbingan teknis ayam kampung super. Secara umum para peserta pelatihan berkeinginan untuk menjadikan usaha beternak ayam kampung super sebagai mata pencaharian pokok.

Abstract

Seafood product is an important commodity in the global trade market, however, seafood fraud has been increasingly reported. Therefore, a method to specifically identify species of seafood products is needed. DNA methods gain many interests for detection of seafood fraud due to its robustness. This study was aimed to determine the effectiveness of several methods for isolation of DNA from fresh and processed seafood. The DNA isolation methods used in this study were the CTAB DNAzol, TianGen, Qiagen, and Fasmac.. DNA concentration and purity were determinedusing nanodrop spectrofotometry and electrophoresis. DNA isolation showed that the DNA concentration of fresh seafood products was higher than the processed seafood products. DNA isolation using CTAB method have higher levels of DNA purity (1.60-2.00) than using commercial kits in all samples. The commercial kits offer a simple procedure and minimize the possibility of environmental contaminants.

Abstract

Perikanan hiu dan pari di Indonesia, termasuk Tanjung Luar di NTB, menghadapi tantangan besar karena populasi hiu dan pari yang terus menurun. Hiu sangat rentan terhadap penangkapan berlebih dan kepunahan karena faktor seperti kematangan seksual yang lambat dan fekunditas yang rendah. Daging dan sirip hiu umunya diminati konsumen; namun, produk hiu lainnya tidak dicatat secara terpisah dalam statistik perdagangan, sehingga sulit untuk diidentifikasi berdasarkan indikator morfologi. Sebagai alternatifnya dapat menggunakan metode DNA barcoding. Penelitian ini bertujuan untuk mengidentifikasi spesies hiu langka yang terdaftar di CITES yang telah mendarat di pelabuhan NTB menggunakan metode DNA barcoding. Penelitian yang dilakukan meliputi tahap isolasi DNA, amplifikasi DNA, sekuensing dan analisis bioinformatika. Hasil sekuensing DNA dan analisis bioinformatika menunjukkan spesies Sphyrna lewini dan Carcharhinus falciformis teridentifikasi pada sampel dengan tingkat kemiripan 99-100%. Hasil ini menunjukkan ikan hiu yang termasuk dalam daftar CITES masih kerap ditangkap dan dimanfaatkan, sehingga perlu dilakukan regulasi yang lebih tegas dan transfer pengetahuan kepada masyarakat agar spesies hiu yang tergolong terancam punah dapat dilestarikan.

Abstract

Penelitian ini bertujuan untuk: (1) mengkaji pertumbuhan kambing peranakan ettawa, dan (2) Mengkaji komposisi karkas kambing peranakan ettawa. Materi penelitian ini menggunakan 12 ekor kambing peranakan Ettawa jantan dengan kisaran umur 6 bulan sampai 11 bulan serta dibagi menjadi 12 petakan kandang individu. Bahan yang digunakan terdiri dari pakan (dan daun bakau), air, garam, dan obat-obatan.Hasil penelitian menunjukkan bahwa: (1) Pemberianpakan bakau dan pakan campuran (lamtoro + bakau) belum mampu meningkatkan tingkat konsumsi pakan, pertambahan bobot badan dan konversi pakan. (2) Pemberianpakan yang berbeda tidak memberikan pengaruh yang nyata pada bobot potong, bobot karkas, dan persentase karkas. Sedangkan pada bobot potongan karkas, hanya bobot rusuk (rack) yang menunjukan perbedaan yang nyata. (3) Pemberian pakan yang terbaik diperoleh pada perlakuan P4 (lantoro 75% + bakau 25%).  Olehnya itu, perlu dilakukan penelitian lebih lanjut mengenai pertumbuhan dan produksi karkas kambing peranakan etawa dengan pemberian berbegai jenis hijauan makanan ternak dengan penambahan pakan tambahan atau pakan komersial sehingga dapat meningkatkan pertambahan bobot badan dan bobot karkas kambing peranakan ettawa. Kata kunci:  Pertumbuhan,  kambing ettawa, pertambahan bobot, karkas, pengaruhnyata.

Abstract

Based on sorts of conventional planar microstrip receiving wires, the adsorption exhibitions of comparing level confront to confront conformal microstrip radio wires are talked about and reenacted in this paper. In plan, each kind of microstrip 2.4 GHz square radio wire has three executives. For each kind of microstrip 2.4 GHz square radio wire, the measurement of the conductor square is 60mm x 60mm, and double equal accepting wires are identical taken on the superficies of the dielectric material, which is on the indicator transmit square radio wire. Abstract

Livestock is an agricultural sector that has a great opportunity to be developed. The research was conducted in October to December 2020 aimed to find out the role of agricultural extensionists in the availability of beef cattle seedlings in Muna Regency. The study using survey method with the determination of research samples determined deliberately (Purposive) connects research variables in the form of human resource availability and public perception of beef cattle development with the number of respondents 150 people. The results showed that the Availability of Human Resources (HR) Muna Regency for PKB 3 people, PPL 37 people and IB officers 30 people, while for public perception the availability of Bali cow seedlings as much as 32.85% said available, 50.35% quite available, and not available 16.8%.

Abstract

The livestock sector is a potential in the provision of animal origin food and is a source of income for farmers. The research was conducted in Muna Regency from October to December 2020 aimed to see the pattern and system of livestock maintenance using survey methods by determining samples using purposive sampling as many as 150 respondents spread in Muna Regency. The type of data used in the form of primary data and secondary data is obtained from the results of research and literature studies through the help of quisioners. The data obtained is then analyzed descriptively. The results showed that livestock maintenance system is divided into 3 intensive parts as much as 4%, semi-intensive 49,9% and extensive 46,1% with a maintenance pattern of 96,009% nurseries, and 3,991% fattening.

Abstract

ABSTRACT Quality assurance and food safety have an important role in the supply of food. Chicken meat is one of the foodstuffs of animal origin that continues to experience an increase in demand every year. The provision of chicken meat in Kendari City still depends on traditional markets through poultry slaughterhouses. This study aimed to evaluate the implementation of Good Hygiene Practices at poultry slaughterhouses located in traditional markets in Kendari City. The research was focused on worker competence, chicken meat products, and the production environment. Data collection was carried out through observation and interviews with 39 merchants from seven traditional markets in Kendari City. The results of this study indicated that 69.23% (27/39) of the respondents were in the productive age group, namely 21-40 years, while 48.72% (19/39) of the respondents' educational level were high school equivalents. In the whole production process, the poultry slaughterhouse did not separate clean and dirty rooms in handling carcasses. Meanwhile, on the environmental aspect, there were still poultry slaughterhouses without waste treatment and supervision. The results of this study concluded that the poultry slaughterhouses in traditional markets in Kendari City had not implemented Good Hygiene Practices thoroughly. Keyword: Good hygiene practices, poultry slaughterhouse, traditional market ABSTRAK Penjaminan kualitias dan keamanan pangan memiliki peranan penting dalam penyediaan bahan pangan. Daging ayam merupakan salah satu bahan pangan asal hewan yang terus mengalami peningkatan permintaan setiap tahunnya. Penyediaan daging ayam yang di Kota Kendari masih bergantung pada pasar tradisional melalui tempat pemotongan ayam. Penelitian ini bertujuan untuk mengevaluasi penerapan Good Hygiene Practices yang dilaksanakan pada tempat pemotongan ayam yang terletak di pasar tradisional Kota Kendari. Penitian difokuskan pada kompetensi pekerja, produk daging ayam serta lingkungan produksi. Pengumpulan data dilakukan melaui observasi dan wawancara pada 39 pelaku usaha dari 7 pasar tradisional yang terdapat di Kota Kendari. Hasil penelitian ini menunjukkan bahwa 69,23% (27/39) responden berada pada rentan usia produktif yaitu 21-40 tahun, 48,72% (19/39) tingkat pendidikan responden adalah SLTA sederajat. Pada proses produksi keseluruhan tempat pemotongan ayam tidak memisahkan antara ruang bersih dan ruang kotor dalam penanganan karkas. Sedangkan pada aspek lingkungan, masih ditemukan TPA yang berprodusi tanpa pengolahan limbah serta tanpa pengawasan. Hasil penelitian ini menyimpulkan bahwa tatalaksana pemotonan ayam di pasar tradisonal Kota Kendari belum menerapkan prosedur Good Hygiene Practices secara menyeluruh.
