Abstract

MSME baster is a business that is engaged in food, especially meatballs. This MSME baster needs to regulate foodprocessing which aims to avoid chemical microbial contamination and others. Starting from raw materials, processing to consumption by consumers, attention is also given to maintaining product safety. The method used indesigning the layout of production facilities at MSME Baster is the integration of Scor, six sigma and Haccp. TheScore method was chosen because it performs and decomposes the process, can measure the supply chain objectivelybased on existing data and can identify improvements that need to be made to create competitive advantage, the SixSigma method to identify problems in the production process and describe the shortcomings in terms of time, money, customers and opportunities, Haccp can reduce the level of risk to morbidity and mortality associated with theconsumption of unsafe food. From the results in the process of making meatballs, there are 3 types that have beendescribed at the determining stage, namely rotten material, material contaminated with fungi, material contaminatedwith the Pareto diagram, it is known that 39% can cause harm to food is control that comes from the upper limit(UCL) of 0.06271 (LCL) of 0.038 with P (average proportion) of 0.07348363, which means that what happened to thecompany the average proportion was 0.07 or 7%

Abstract

PT. XYZ is a company engaged in the manufacture of private-label cosmetics and skincare products in Indonesia. However, of these private labels or ‘Maklon’ products, only four out of the 151 available Maklon manufactured products have current Halal certification. This large uncertified percentage of Maklon products has given rise to a concern about the Halal bonafides of these products, which understandably leaves significant doubts regarding their suitability for personal use in consumer’s minds. As a consequence, in an attempt to ensure potential customers of the Halal quality of the cosmetics and other products produced at the Company’s facility, process researchers have deployed a Fuzzy Failure Modes and Effects Analysis. This approach has been chosen in order to determine the level of Halal risk priorities during the production of the Company’s products, and the outcomes have been subjected to a Fault-Tree Analysis to develop appropriate recommendations to transparently mitigate any potential risks. In essence, the purpose of this research was to (i) determine the critical control points influencing Halal certification, (ii) determine the priority level within the process needed to ensure strict control procedures, and (iii) to provide practical strategies to decrease the possibility of Halal risk profile.

Abstract

AbstractIndonesian food products need to comply with halal regulations, including the ones from fisheries-based agro-industry. The absence of halal certificates will limit the market and consequently will lead to the risk of lower productivity performance. This study aims to identify sources of risk in the fisheries agro-industry based on Indonesia’s Halal Assurance System called Sistem Jaminan Produk Halal (SJPH). It conducts risk assessments and develops strategies to increase the productivity performance of the industry based on the identified risks. The criteria considered in the risk identification including commitment and responsibility, raw material, production process, final product as well as monitoring and evaluation. The research used Failure Mode Effect Analysis (FMEA). The data was collected through observation, interviews, and questionnaires. All identified risks were then evaluated and eliminated based on the Risk Priority Number (RPN). The research was conducted on ten fisheries-based agro-industries in the Sidoarjo Regency, East Java, Indonesia. The study shows that there are 22 sources of risk, with the highest-ranked one is training activity. The recommended strategy to increase the halal-based productivity performance is strengthening the commitment of all involved stakeholders, increasing human resources' knowledge, improving facilities and infrastructure as well as strengthening monitoring and evaluation using management information systems. Keywords: FMEA, halal, risk management, SJPH AbstrakProduk pangan di Indonesia perlu memenuhi ketentuan halal, termasuk produk agroindustri perikanan.
