Abstract

Penelitian ini bertujuan untuk mengembangkan bahan ajar berupa buku saku agar hasil belajar mahasiswa meningkat pada mata kuliah makanan kontinental pada materi appetizer. Metode penelitian yang digunakan adalah metode 4-D. Penelitian ini dilakukan di Program Studi Pendidikan Tata Boga Universitas Negeri Medan. Hasil uji validitas dengan validator media memperoleh dengan nilai 0.89 dengan kategori sangat tinggi, hasil uji validitas isi buku saku memperoleh nilai 0.809 sangat tinggi dan untuk hasil validitas bahasa memperoleh nilai validitas 0.87 dengan kategori sangat tinggi. Secara umum uji validitas buku saku dinyatakan valid dan dapat diuji cobakan ke mahasiswa sebagai pengguna. Selanjutnya uji kepraktisan buku saku melalui respon mahasiswa diperoleh nilai 84.06 dengan kategori sangat praktis dan uji kepraktisan buku saku dengan respon dosen diperoleh nilai 78,08 dengan kategori praktis. Jika dirata-ratakan diperoleh nilai 81,07 % dengan kategori praktis, artinya buku saku makanan kontinental pada materi appetizer yang dikembangkan dilihat dari kemudahan penggunaan, kemenarikan sajian dan manfaat praktis  digunakan mahasiswa. Untuk uji efektivitas diperoleh nilai gainscore 0.67 dengan kategori sedang. Kesimpulan hasil pengujian adalah penggunaan buku saku makanan kontinental pada materi appetizer yang dikembangkan sangat layak dan efektif sebagai bahan ajar dan digunakan untuk mendukung perkuliahan juga berkontribusi untuk perkembangan ilmu pengetahuan pada bidang tata boga.

Abstract

Ibu hamil merupakan golongan rawan kekurangan gizi karena pada saat hamil terjadi peningkatan asupan seiring bertambahnya kebutuhan pada ibu dan janin. Salah satu masalah gizi yang sering ditemukan pada ibu hamil ialah memiliki kadar hemoglobin yang rendah. Tablet tambah darah atau zat besi yang diberikan bertujuan untuk meningkatkan sirkulasi darah dan kadar hemoglobin pada ibu hamil sehingga dapat mencegah ataupun mengobati anemia. Penelitian ini bertujuan untuk melihat hubungan konsumsi tablet tambah darah dan penambahan berat badan dengan status gizi ibu hamil. Penelitian ini menggunakan cross-sectional study. Penelitian dilakukan pada bulan Juli-September 2023 di Puskesmas Duri Kota. Populasi penelitian adalah ibu hamil trimester II dan III. Sampel penelitian dipilih menggunakan simple random sampling sebanyak 40 ibu hamil. Data dikumpulkan melalui wawancara kuesioner serta pengukuran antropometri dan kadar hemoglobin. Analisis data bivariat dilakukan menggunakan uji chi-square diperoleh hasil bahwa terdapat hubungan yang positif dan signifikan antara konsumsi tablet tambah darah (p-value = <0,001) dan penambahan berat badan (p-value = <0,001) dengan kadar hemoglobin. Sebanyak 42,5% ibu hamil yang tidak memenuhi konsumsi tablet tambah darah memiliki kadar hemoglobin tidak normal dan sebanyak 40% ibu hamil yang memiliki penambahan berat badan tidak sesuai memiliki kadar hemoglobin tidak normal. Perlu bagi ibu hamil untuk memperhatikan asupan dan ketaatan untuk mengkonsumsi tablet tambah darah.

Abstract

Gagal ginjal kronik (GGK) merupakan penyakit penurunan fungsi ginjal yang bersifat progresif dan tidak dapat kembali. Hemodialisa merupakan salah satu terapi pengganti ginjal untuk penderita GGK. Perubahan pola hidup akan terjadi pada pasien yang menjalani hemodialisa salah satunya pengaturan dietnya. Diet merupakan pengendalian makan sebagai upaya mencegah ketidakseimbangan cairan dan elektrolit dan menghindari kenaikan residu metabolisme protein. Faktor keberhasilan kepatuhan diet salah satunya adalah dukungan keluarga. Tujuan penelitian ini untuk mengetahui hubungan penelitian Cross Sectional, penelitian ini dilaksanakan di RS USU. Populasi penelitian adalah seluruh pasien gagal ginjal kronik yang menjalani hemodialisa di RS USU sebanyak 62 orang. Teknik pengambilan sampel menggunakan purposive sampling dengan jumlah sampel 30 orang. Instrumen data yang digunakan untuk dukungan keluarga adalah kuesioner dan untuk kepatuhan diet adalah food recall 2x24 jam. Hasil penelitian menunjukkan bahwa terdapat hubungan dukungan keluarga dengan kepatuhan diet pada pasien gagal ginjal kronik yang menjalani hemodialisa di RS USU dengan nilai p-value 0,049 (p<0,05) artinya semakin baik dukungan keluarga maka semakin patuh pasien dengan kepatuhan diet.Kata Kunci: Gagal Ginjal Kronik, Kepatuhan Diet, Dukungan Keluarga

Abstract

Penelitian ini bertujuan untuk mengetahui : (1) Hasil belajar siswa yang menggunakan model pembelajaran kooperatif tipe Group Investigation pada mata pelajaran Bakery Pastry; (2) Hasil belajar siswa yang tidak menggunakan model pembelajaran kooperatif tipe Group Investigation pada mata pelajaran Bakery Pastry; (3) Pengaruh model pembelajaran kooperatif tipe Group Investigation terhadap hasil belajar Bakery Pastry. Populasi dalam penelitian ini adalah seluruh siswa Kelas XI Tata Boga SMK Pariwisata Imelda Medan. Teknik pengambilan sampel secara Total Sampling sehingga jumlah sampel 63 siswa. Teknik pengumpulan data menggunakan tes dan pengamatan hasil praktek. Teknik analisis data menggunakan deskripsi data, tingkat kecenderungan dan uji persyaratan analisis menggunakan uji normalitas, uji homogenitas, dan uji hipotesis menggunakan uji t. Hasil penelitian menunjukkan bahwa tingkat kecenderungan hasil belajar siswa yang menggunakan model pembelajaran kooperatif tipe Group Investigation pada mata pelajaran Bakery Pastry termasuk kategori cenderung tinggi sebesar 58,06 persen dan tingkat kecenderungan hasil belajar siswa yang tidak menggunakan model pembelajaran kooperatif tipe Group Investigation pada mata pelajaran Bakery Pastry termasuk kategori cenderung tingggi sebesar 31,25 persen. Berdasarkan hasil uji t terdapat pengaruh yang signifikan pada model pembelajaran kooperatif tipe Group Investigation terhadap hasil belajar Bakery Pastry dengan nilai (thitung>tTabel) (8,21>1,671) pada taraf signifikan 5 persen. Artinya model pembelajaran kooperatif tipe Group Investigation berpengaruh terhadap hasil belajar siswa pada mata pelajaran Bakery Pastry.

Abstract

AbstractThe purpose of this activity is to empower the potential owned by the partner community. The activities are conducted from July to November 2017. Activity partners are Ati Rohati and home industries Wahyuni. Location of activity in Suka Meriah Village Siosar Kec. Brand Kab. Karo. This village is an area where the relocation of people affected by eruption of Mount Sinabung. Located 110 km from Unimed. Methods of implementation of activities are education, production training, business management training, machine use and mentoring. Output t of this activity is 1) Potato Sticker Machine and 2) Potato Stick. Specifications of potato sticks are: 1) Have nutritional content: Carbohydrates, Proteins, fats, iron, and fiber; 2) Durable and hygienic. Results of activities obtained are partners have knowledge of potato stick processing, actively participating partners, skilled partners using potato sticker printing machine. Abstract

Bandrek (Ginger Drink) is a traditional drink that has a great demand by consumers because of the health benefits. Most of the traditional beverage production is still produced on a household scale, such as the instant ginger drink produced by the household business “Frenss”. The household businesses that produce ginger drink should apply good food production methods so that the products produced are safe and their nutritional value is also maintained. Lumban Pinggol Village, Pangururan District, Samosir Regency is one of the tourist areas in the Lake Toba area in North Sumatra. One of the residents' efforts is to work on making ginger drink Instant. The processing method for instant ginger drink is still manual, even though the ginger drink produced reaches 50 kg each day. Therefore, the solution offered to partners was to design a ginger grinding machine. The implementation method consists of empowerment, mentoring, strengthening capital as well as monitoring, coaching and evaluation. In addition, to improve product quality, more attractive packaging designs and online marketing are needed. The results of this PKM activity are as expected. This can be proven by the fulfillment of targets and the enthusiasm and enthusiasm of the partners when listening to / paying attention to the material presentation and processing practices, so that with this PKM activity the partner's income will increase.

Abstract

Corn is an agricultural commodity that is widely grown by farmers. The abundant corn harvest during the main season has caused the selling price of corn to decline. These conditions prompted the Community Service team to implement the PKM program for processing corn emping chips for partners. The partners of this activity are 1) Mekar Jaya Farmers and Nainggolan Farmers are located in Siopat Sosor Village, Pangururan Sub-District, Samosir District. The objectives of this activity are 1) Designing a corn emping chips machine; 2) to improve product quality partners need to make more attractive packaging; 3) Assistance in production and marketing processes. This PKM activity begins with providing knowledge, technology and business management as well as online marketing. Corn farmers can take advantage of their agricultural products by processing corn emping chips. Corn emping chips are made from boiled corn which is flaked using a corn flakes machine with a capacity of 50 kg / hour, then dried in the sun and when it's dry it is ready to be fried and then enjoyed. Corn emping chips are one of the most valuable corn processed products. Corn emping chips are a food diversification product that can support the development of rural agro-industries and can increase the income of corn farmer families.

Abstract

Stunting is a nutritional problem that occurs in Indonesia. Stunting is a condition of physical growth failure caused by chronic nutritional problems that occur for a long time. This study aimed to determine the relationship between energy and protein intake with the incidence of stunting. This study used a cross-sectional study design with a sample of 41 toddlers. The results obtained were analyzed using the Spearman Rank correlation test and multiple linear regression tests. There is a positive and significant relationship between energy intake and the incidence of stunting, as shown by the correlation coefficient of 0,72 (p-value = 0,00); in other words, the better the nutritional status (not stunting). There is a positive and significant relationship between protein intake and stunting as indicated by a correlation coefficient of 0,79 (p value = 0,00), in other words, the better the nutritional status (not stunting). Based on the results of multiple linear regression tests, a coefficient of determination of R Square = 0,79 was obtained, which means that the variables of energy intake and protein intake affect the incidence of stunting by 79%.

Abstract

Introduction: This study aims to determine the relationship between dietary patterns and healthy, clean-living behavior with scavenger’s nutritional status in Batam City. Methods: This study used a cross-sectional design. The location was conducted at Garbage’s Final Disposal Site (TPA) Telaga Punggur in Batam City in December-February 2023. A sample size of 79 Scavengers was obtained using simple random sampling—data collection using anthropometric measurements and questionnaires. Bivariate analysis was performed with the Spearman rank test, and multivariate analysis was performed with multiple linear regression tests. Results: The study's results showed poor dietary patterns (83,5%). Clean and healthy living behavior was in the poor category (82,3%)—the nutritional status of Scavengers was in the skinny nutritional status category (32,9%). The Spearman rank test shows a significant relationship between dietary patterns and nutritional status and a significant relationship between healthy, clean-living behavior and nutritional status (p=0,002, 0,021). Conclusion: Multiple linear regression test shows there is a significant relationship between the dietary pattern and healthy, clean-living behavior with nutritional status of Scavengers Y = 14,358 + 0,137X1 + 0,074X2 (p=0,003), that meaning there is a relationship between the dietary pattern and healthy clean-living behavior with the nutritional status of Scavengers in Batam City.

Abstract

Lack of nutrition education media related to the benefits of fruits and vegetables for elementary school children so that knowledge related to fruits and vegetables is still lacking. One of the efforts that can be done is to create a nutrition education media. This study aims to develop educational media for snake ladder nutrition based on Adobe Flash CS6 to increase nutritional knowledge about fruits and vegetables in elementary school children and to determine the feasibility of nutrition education media for snake ladder fruit and vegetables based on adobe flash CS6 for elementary school children. This research is an R D research with the ADDIE development model (Analysis, Design, Development, Implementation, and Evaluation) conducted at SDN 104196 Tandam Hulu II. The sample in this study was a sample of the validity of the material and media, namely lecturers and teachers, totaling 3 people, and a trial sample containing 5 people, as well as a large group trial sample consisting of 28 people. The results of the validity test carried out by media experts were 93 with 93% eligibility and the category was very feasible. The results of the validity test conducted by two material experts were 94% and 96% with a very feasible category. And the results of the feasibility test of students with the eligibility category of 90.22% with the appropriate category.
