Abstract

The purpose of the study to determine the effect of the addition of soybean oil with different levels of the organoleptic characteristics and the effect of increased omega-6 content of pasteurized milk. Research material that is derived from cow's milk a cow shed in the Faculty of Animal Husbandry and Agriculture,  Diponegoro University and soybean oil from one of the markets in the city of Semarang. The addition of soybean oil into a fresh cow's milk, then pasteurized using LTLT (63oC, 30 min). The results showed the addition of soybean oil can increase the content of omega-6 in pasteurized milk. Signifcantly of the addition of soybean oil to the organoleptic odor, whereas taste and color are not significant. Increased levels of omega-6 highest in pasteurized milk obtained from the addition of soybean oil as much as 0.45% with ratio 3.2: 1. Increased levels of omega-6 still has not reached 4: 1. The addition of antioxidants in milk pasteurization aims to prevent oxidation. Feed silage tend to increase the risk of oxidation, the milk used should not be obtained from cows fed silage.

Abstract

Penelitian ini bertujuan untuk mengetahui efek asam hypoiodous (HIO) pada aktivitas antioksidan dan total mikrobia pada salak Pondoh selama penyimpanan pada suhu ruang. Metode eksperimen yang digunakan untuk penelitian ini adalah rancangan acak kelompok dua perlakuan dan tiga kali ulangan dengan total sampel sebanyak 45 salak Pondoh dengan minimum usia panen adalah sekitar 5 bulan dengan berat sebesar 65±7 g per salak. Penyemprotan HIO dilakukan satu kali perhari dan dengan volume sebanyak 0,5 ml. Setelah penyemprotan, dilakukan penyimpanan pada suhu ruang selama 12 hari. Pengukuran aktivitas antioksidan dan total mikroba dilakukan setiap dua hari sekali. Analisis data menggunakan Shapiro-Wilk, Independent t-test, dan Mann-Whitney. Hasil penelitian menunjukkan bahwa selama penyimpanan, telah terjadi peningkatan aktivitas antioksidan pada salak mulai dari 21,7±1,72% hingga kisaran 82,4% untuk tanpa dan dengan perlakuan HIO serta terdapat peran HIO yang sangat nyata dalam menurunkan total mikroba pada salak pondoh HIO. Kesimpulannya, HIO dapat digunakan untuk agen yang dapat meningkatkan antioksidan serta dapat digunakan untuk menekan perkembangan mikroba pada salak.Hypoiodous Acid Effect on Antioxidant Activity and Total Microbes in Salak Pondoh in Room Temperature of StorageAbstract This study was aimed at analyzing the influence of hypohiodous acid or HIO on antioxidant activity and total microbes in salak pondoh during storage at room temperature. This study used a group randomized design with two treatments and three replications. Each group consisted of 45 salak Pondoh which was harvested at 5 months age with size 65±7 g/salak. The spraying of 0.5 ml of HIO was done everyday for entire of salak surface, then salak was stored at 25ºC for 12 days. The measurement of antioxidant activity and total microbes was performed every two days. Data were analized using Shapiro-Wilk, Independent t-test, and Mann-Whitney. Result indicated that HIO was able to increase antioxidant activity from 21.7±1.72 to about 82% for control and HIO treated salak. HIO was also inhibit growth total microbes significantly. As conclusion, HIO might be used as an agent to increase antioxidant activity and inhibit total microbe in salak.

Abstract

Penelitian ini bertujuan untuk mengetahui aktivitas antioksidan saat sebelum dan setelah pengeringan buah Okra. Analisis fisik meliputi analisis warna dan PSD (Particle Size Distribution). Analisis kimia meliputi uji pH, conductivity dan TDS (Total Disolve Solid). Uji aktivitas antioksidan dilakukan dengan metode DPPH. Analisis data warna menggunakan uji korelasi. Data PSD, uji pH, konduktivitas, TDS, dan aktivitas antioksidan disajikan secara deskriptif. Hasil penelitian menunjukkan bahwa pengeringan buah Okra menjadi tepung Okra, tidak merusak aktivitas antioksidan. Proses pengeringan tepung Okra meningkatkan derajat kecerahan Okra dengan hasil uji statistik nilai L* <0,0001 dan a* 0,0002 (p<0,05). Distribusi ukuran partikel tepung Okra lebih kecil sehingga mudah larut dalam air. Buah Okra memiliki pH yang lebih asam yang mengakibatkan konduktivitasnya menjadi lebih tinggi sehingga padatan yang terlarut (kation, anion, mineral) juga semakin tinggi. Kesimpulannya, aktivitas antioksidan tepung buah Okra dapat diidentifikasi baik sebelum maupun setelah pengeringan dan proses pengeringan dapat berhasil memelihara aktivitas antioksidannya.This study aims to determine the physical, chemical, and antioxidant activities before and after drying the Okra fruit. Color analysis and PSD (Particle Size Distribution) were measured for physical analysis. pH test, conductivity, and TDS (Total Disolve Solid) was also measured as chemical analysis. Antioxidant activity was tested using DPPH. Color data was analyzed using correlation test. PSD data, pH test, conductivity, TDS, and antioxidant activity were presented descriptively. The results showed that drying Okra fruit to produce Okra flour did not damage antioxidant activity. The drying process of Okra flour brightening the color of the Okra fruit and in accordance with the statistical test that was resulted value of L* <0.0001 and a* 0,0002 (p <0.05). The particle size distribution of Okra flour was categorized as small. A much more acidic pH and higher in conductivity were found in the fresh Okra. As conclusion, antioxidant activity of Okra flour could be determined and the drying may be applied since able to maintain antioxidant activity in Okra flour.

Abstract

Pemanfaatan susu kerbau Indonesia masih sangat terbatas dan hanya diolah menjadi beberapa makanan tradisional seperti dali dan dadih serta masih sedikit yang digunakan sebagai kefir.Penelitian bertujuan untukmengembangkan teknologi pengolahan susu kerbau menjadi produk kefir. Bahan utama yang digunakan dalam penelitian ini adalah susu kerbau segar dari Sumatera Utara dan kefir grain. Waktu inkubasi yang digunakan adalah selama 48 jam dengan periode pengamatan 12 jam. Parameter yang merupakan karakteristik fisik yang diamati adalahtotal padatan, solid non fat (SNF), berat jenis, pH, dan viskositas, serta ditambah dengan pengamatan total mikroba. Data dianalisis menggunakan uji Analysis of Variance (ANOVA) dengan taraf signifikansi 5% dan apabila terdapat perbedaan maka dilanjutkan dengan uji Duncan. Hasil penelitian menunjukkan adanya peningkatan yang sangat tajam pada SNF dan berat jenis. Disamping itu, adanya penurunan terjadi pada nilai total padatan. Seiring dengan lamanya inkubasi, viskositas dan total mikroba tampak meningkat. Nilai pH tampak sangat tajam penurunannya. Kesimpulannya, kefir berhasil diproduksi pada suhu ruang dan menunjukkan adanya perubahan sifat fisikokimia serta sifat mikrobiologis yang sangat spesifik.Physical Characteristic and Total Bacteria on Kefir made of Buffalo's Milk in Room TemperatureAbstractIn recent decades, utilization of Indonesian buffalo’s milk is limited to produce traditional foods such as Dali and Dadih (traditional’s name of curd) and has not been well developed to produce kefir. This research was aimed at producing kefir that was made of buffalo’s milk. Fresh buffalo’s milk from Sumatera Utara and kefir grain were used in this research. Kefir was made from the fortification kefir grain into buffalo’s milk then this mixture was incubated for 48 hour without additional heating control or in room temperature. Total solid, solid non-fat (SNF), specific gravity, pH, viscosity were analyzed as physic parameters and total bacteria was also studied. Data were analyzed using the Analysis of Variance (ANOVA) test using a significance level of 5% Duncan test was applied when significant result was obtained. Solid non-fat and specific gravity were remarkably decrease in its value while viscosity and total bacteria showed an increase. Significant decrease was found in pH value. As conclusion, the production of kefir was successfully achieved using buffalo’s milk and showing very specific value in physico and microbial properties.

Abstract

Penelitian ini bertujuan untuk mengetahui perubahan kadar H2O2 yang berpotensi menjadi pencemar lingkungan beserta parameter kualitas air fermentasi mocaf (AFM) lainnya setelah diberikan perlakuan aerasi. Limbah mocaf  yang diberikan perlakuan aerasi mengalami penurunan kadar H2O2 lebih besar dari non aerasi. Berdasarkan uji beda T-test antara perlakuan aerasi dengan non aerasi kadar H2O2 memiliki perbedaan yang signifikan (sig. p= 0,018, p<0,05).  AFM non aerasi mengalami penurunan L* sebesar 5,9%, sedangkan perlakuan aerasi menurun lebih besar dengan persentase penurunan sebesar 15,8%. TDS AFM tidak mengalami perbedaan yang signifikan antara perlakuan aerasi dengan non aerasi (P= 0,226 ,p>0,05) demikian juga dengan pameter turbiditas (P= 0,117, P>0,05) dan OD 610 nm (P= 0,987, P> 0,05).

Abstract

This study aimed to analyze the magnification of visual image upon SEM analysis for determining the optimum view in order to obtain proper information of SEM image in ginger emulsion. The treatment in this research are without carrageenan, with iota carrageenan and with kappa carrageenan. Emulsion of ginger Graphical display testing according to using the Scanning Electron Microscope (SEM) method. The research showed that ginger emulsion with and without carrageenan were able to be seen clearly and the particle size were able to detected at a range 0.5-5 µm. The sample with iota carrageenan provided the information of separation among particles and it could not be seen clearly on the sample with kappa carrageenan. The low magnification of 250 times provided beneficial information to obtain the environment of particle.

Abstract

The quality of emulsion such as total dissolved solids, may be determined by type of emulsifier. Carrageenan is a polysaccharide from red seaweed (Rhodophyceae) and it is well known as emulsifier, however the application of carrageenan has not widely used in traditional beverage in Java Island, Indonesia. Therefore, the purpose of this research was to determine the effect of carrageenan in turmeric emulsion on its total dissolved solids. Distribution of total dissolved solids was tested using total dissolved solid-meter. Iota and kappa carrageenan were used. As a result, carrageenan might increase total dissolved solid at 58±3.4% and iota had reached higher total dissolved solid than kappa. As conclusion, total dissolved solid might be elevated by the addition of carrageenan.

Abstract

Snake fruit (Salacca edulis Reinw.) is an indigenous fruit of Indonesia that has weakness as easily-damaged fruit, therefore it has a short shelf life at room temperature. During storage, total acid may be changed in snake fruit. The purpose of this study was to determine the change of total acid in snake fruit during storage at room temperature. The total acid was calculated by titration method using malic acid calculation. Based on the results of the study showed an increase in total acid when snake fruit was stored in room temperature. As conclusion, the total acid was able to be detected in snake fruit during room storage and its change could be determined.

Abstract

This research was done to detect total yeast on small scale kefir industry in Semarang, Central Java, Indonesia. The total plate count method was used to analyze total yeast in mango flavored kefir. This research used mango flavored kefir since this products was the top demand by consumer among kefir flavored products that was produced in this manufacture. Kefir from manufacture was transferred to laboratory using container box to provide buffer in the temperature decrease. As result, total yeast in mango flavored kefir was 1,21±0,06x105 CFU/ml. This total yeast was in the range of the Standard Codex 243-2003 which required a minimum total of 104 CFU/ml. The 1 log unit differences should provide the awareness to manufacture to maintain kefir in low temperature to minimise the multiplication of total yeast resulting the appearance of unwanted flavor. As conclusion, the mango flavored kefir was analyzed in total yeast successfully and in the range of Standard Codex of kefir

Abstract

Salak pondoh (Salacca edulis reinw) is one of horticulture product that easily to decay. Decaying aroma is one of indicators for qualities loss of salak pondoh. The purpose of this research is to detect the decay aroma of salak pondoh during the storage of 15 days. The preservation was categorized into three stages of preservation time: early, middle, and last day. All salak was preserved in room temperature at aseptic condition with detected humidity at 50-60%. According to the obtained data, it was detected that decay aroma was detected in 80% of salak in last stage of preservation. Amazingly, 5% of salak at this stage was not detected its decay aroma. As conclusion, decay of salak could be determined by the decay aroma and mostly it was appeared in the last stage of preservation.
