Abstract

ABSTRAK Proses penilaian status gizi yang dilakukan oleh kader di posyandu dapat menjadi sumber data awal dalam mengidentifikasi masalah gizi pada balita khususnya stunting. Pengukuran panjang atau tinggi badan di posyandu di wilayah kerja Poskesdes Bandar Setia masih menggunakan alat metline yang kurang cocok untuk melakukan pengukuran panjang atau tinggi badan. Meningkatkan pengetahuan dan keterampilan kader terkait penilaian status gizi balita dan interpretasinya. Tim pengabdian memberikan pendampingan mengenai cara melakukan penilaian status gizi yang tepat beserta interpretasinya terutama untuk mengukur panjang atau tinggi badan dalam menentukan stunting atau tidaknya balita yang diukur. Selain itu, tim pengabdian memberikan alat pengukur tinggi badan dan lingkar kepala untuk melengkapi alat pengukuran status gizi yang sudah tersedia di posyandu. Setelah mengikuti kegiatan pendampingan tersebut, pengetahuan dan keterampilan kader terkait cara penilaian status gizi meningkat. Harapannya setelah dibekali cara penilaian dan pelaporan status gizi balita, para kader dapat membantu mengidentifikasi baduta yang berisiko mengalami stunting di posyandu masing-masing untuk diberikan intervensi pencegahan stunting. Pengetahuan dan keterampilan kader terkait penilaian status gizi balita dan interpretasinya meningkat. Lebih lanjut kegiatan ini diharapkan dapat membantu program pemerintah dalam menurunkan prevalensi stunting di Indonesia, khususnya di Desa Bandar Setia. Kata Kunci: Balita, Kader Posyandu, Stunting  ABSTRACT The nutritional assessment by cadres in Posyandu might provide preliminary information for identifying nutritional problems in under-five children, particularly stunting. Measurement of length or height at the posyandu in the Bandar Setia Poskesdes working area still uses a tape measure which is unsuitable for measuring length or height. Improve the knowledge and skills of cadres related to the nutritional assessment of under-five children and their interpretation. The team provided assistance on how to conduct a proper nutritional assessment and its interpretation, especially for measuring length or height in determining whether or not the measured toddler is stunted. In addition, the team provided height and head circumference measuring devices to complement the nutritional status measurement tools already available at the posyandu. After participating in the mentoring activities, the cadres' knowledge and skills related to nutritional assessment increased. It is anticipated that after learning how to assess and report the nutritional status of toddlers, cadres can help identify under-fives at risk of stunting in their respective posyandu to be given stunting prevention interventions. The cadres' knowledge and skills related to the assessment of the nutritional status of children under five and its interpretation increased. Furthermore, this activity is expected to help government programs in reducing the prevalence of stunting in Indonesia, especially in Bandar Setia Village. Keywords: Children, Posyandu, Stunting

Abstract

Background: The increasing prevalence of obesity has become a significant public health concern in Indonesia, particularly among urban workers who often lead sedentary lifestyles and adopt unfavorable dietary patterns. Objectives: To analyze the correlation between dietary patterns, physical activity levels, and obesity among urban workers in Indonesia. Methods: Major dietary patterns were derived using principal component analysis from a 17-item food frequency completed by urban workers in the fifth wave of Indonesia Family Life Survey (IFLS). Self-reported physical activity is assessed by the International Physical Activity Questionnaire (IPAQ). Height and weight were measured to determine nutritional status based on Body Mass Index (BMI), which is then categorized into obese and non-obese urban workers. The association between dietary patterns, physical activity levels, and obesity was analyzed using logistic regression. Results: A total of 10,381 urban workers participated in the study. Four major dietary patterns were identified: a Western dietary pattern characterized by a high intake of fast food, meat, sugary snacks, dairy, and soft drinks; a prudent dietary characterized by fruit and vegetables; a modern dietary pattern characterized by instant noodles, fried snacks, and eggs consumption; and a traditional Indonesian pattern characterized by rice, vegetables, sambal (chili sauce), and fish consumption. Participants adhering to the Western dietary pattern had higher odds of obesity. In contrast, those adhering to the prudent dietary pattern and active physical activity showed lower odds of obesity. Conclusions: Western dietary patterns are associated with an increased risk of obesity, while prudent dietary patterns and active physical activity are inversely associated with obesity in Indonesian urban workers.

Abstract

Tinuknuk is a special sauce from Simalungun Regency, North Sumatra Province, tinuktuk warms the body and is believed to be able to cure various internal diseases, especially to help post-natal recovery. This study aims to determine the optimal nutritional value of the main components, namely red ginger with black pepper in the ratio composition: 70:30%, 60:40%, 50:50%, 40:60%, and 30:70% using the method oven at a temperature of 105℃. Then the ash content, protein content, and salt content were tested. The results showed that the ash content was 6.98%, respectively; 6.91%; 6.90%; 6.84%, and 6.73%. The salt content is 0.57%, respectively; 0.57%; 0.57%; 0.57%, and 0.57%. The protein content was 10.43%, respectively; 10.93%; 12.43%; 11.81%, and 10.62%.

Abstract

ABSTRACTThe aims of this research was to formulate and improve the nutrient content and define of makassar traditional snack which was enriched with Pupae-mulberry (Pury) powder. Experimental study was conducted and proximate analysis was used to determine nutrient content of the product and acceptance test was used by hedonic test of 25-32 semi-trained panelists. This research produced three kinds of traditional snacks, namely Rampari sponge cake, Deppatori Pury, and Pury sticks. Based on organoleptic test product Deppatori was selected to develop further by mixing basic substances consist of rice flour, glutinous rice flour, brown sugar, sesame and water with pupae-mulberry (pury) powder. The formulas were F1 (pury powder 5%), F2 (pury powder 10%), and F3 (pury powder 15%). The study showed that by hedonic scale, the panel preferred F2 because the addition more than 10% of Pury powder will make texture harder. Hedonic quality scale indicated that F2 had characteristics yellowish brown color, taste and flavor close to neutral. Nutrient content of Deppatori Pury 10% (per 100 g) was water 7.92 g, ash 1.19 g, protein 5.80 g, fat 25.99 g, carbohydrates 67.02 g, energy 484 kcal, calcium 74.14 mg, iron 1.96 mg, phosporus 97.23 mg, respectively and result of microbiology test was 390 cfu/g. Protein contribution of Deppatori-Pury 10% per 100 g serving size to RDA of elderly was 9.4-10.4%. Therefore, two serving size is recommended for Deppatori-Pury as future food to reach 20% RDA protein.Keywords: acceptability, deppatori, makassar’s snack, pury powderABSTRAKTujuan penelitian adalah melakukan formulasi dan meningkatkan kandungan zat gizi serta daya terima kue-kue tradisional Makassar yang diperkaya tepung pupae-mulberry (Pury). Penelitian ini merupakan studi eksperimental yang melakukan analisis kandungan zat gizi secara proksimat dan uji penerimaan panelis (organoleptik) menggunakan uji hedonik oleh 25-32 orang panelis semi terlatih. Pembuatan kue tradisional menghasilkan tiga jenis produk yaitu bolu-sponge Rampary, Deppatori-Pury, dan Pury-Stick. Berdasarkan hasil uji organoleptik, satu produk perlu dikembangkan lebih lanjut yaitu Deppatori yang memiliki tingkat kesukaan terendah. Formulasi Deppatori-Pury dilakukan dengan mencampurkan bahan dasar yang terdiri atas tepung beras, tepung ketan, tepung pury, gula merah, wijen, dan air. Formula Deppatori-Pury terdiri atas F1 (tepung pury 5%), F2 (tepung pury 10%), dan F3 (tepung pury 15%). Pada uji hedonik, panelis lebih menyukai F2 yakni formula dengan penambahan tepung pury sebesar 10%, karena penambahan tepung pury yang semakin banyak akan membuat tekstur semakin keras. Hasil uji mutu hedonik juga menunjukkan bahwa F2 memiliki karakteristik warna cokelat kekuningan, rasa dan aroma yang netral, serta tekstur yang padat agak keras. Kudapan Deppatori-Pury 10% per 100 g mengandung kadar air 7,92 g, abu 1,19 g, protein 5,80 g, lemak 25,99 g, karbohidrat 67,02 g, energi 484 kkal, kalsium 74,14 mg, besi 1,96 mg, fosfor 97,23 mg. Hasil uji mikrobiologis 390 cfu/g. Kontribusi protein Deppatori-Pury 10% dengan takaran saji 100 g terhadap AKG untuk kelompok lansia sebesar 9,4-10,4%, sehingga untuk mencapai kadar protein 20% dari AKG dianjurkan untuk dikonsumsi sebanyak dua kali takaran saji sebagai makanan masa depan.Kata kunci: daya terima, deppatori-pury, kue makassar, tepung pury

Abstract

The objective of the study was to analyze the risk factors for anemia among pregnant women in Indonesia. The study design was a cross-sectional study. All of data used in this study was from Basic Health Research 2013, Ministry of Health. The data collected include age, education, birth number, parity, pregnancy spacing, antenatal care, and nutritional status (chronic energy deficiency). The number of subjects was 452 pregnant women. The chi-square test was applied to analyze correlation on dependent and independent variable. Logistic regression was applied to analyze determinants of anemia in pregnant women. The results showed that there were 38.1% pregnant women in Indonesia who had anemia (Hb<11 g/dl). The prevalence of pregnant women with anemia in rural and urban were 37.9% and 38.2% respectively. Bivariate analysis showed that age, education, birth number, parity, pregnancy spacing, and antenatal care were not significantly associated with anemia. Main determinant of anemia in pregnant women was nutritional status (chronic energy deficiency; OR=1.975; 95%CI:1.279-3.049).

Abstract

This study aimed to determine the effect of high-protein milk intervention on weight gain and renal function in malnourished children. This research is a randomized controlled trial (RCT). A total of 52 wasting children (BAZ -3<SD<-2) aged 3-12 years were selected by simple random sampling from five primary schools (6-12 years) and two Community Health Center (children below 6 years). Subjects were divided into two groups; control group (26) and intervention group (26). The intervention group was given high-protein milk (HPM) 3x25 g each day for 12 weeks. Body weight, serum creatinine, and urea were measured at week 0 (baseline), 6th (midline), and 12th (endline). The study showed that the body weight of the intervention group significantly increased by 1.54 kg after 12 weeks of high-protein milk consumption. Serum urea and creatinine levels in the intervention group also significantly increased (p<0.05). The increase in serum urea and creatinine levels in the intervention group were still within the normal range (normal serum urea level 15-43 mg/dl and normal creatinine level 0.6-1.2 mg/dl). This suggests that significant increases in urea and creatinine levels of the intervention group were normal because of increased protein intake and body muscle mass and it did not lead to renal function abnormalities.

Abstract

Anak usia sekolah mempunyai peranan yang sangat besar dalam menentukan masa depan bangsa namun kelompok ini merupakan salah satu kelompok rentan masalah gizi. Berdasarkan observasi yang dilakukan di desa Bagan Asahan Pekan, status gizi kurang pada anak sekolah dasar sebesar 11% dan diatas rata-rata nasional. Tujuan penelitian ini adalah untuk menganalisis hubungan asupan protein dan pola makan dengan status gizi anak keluarga nelayan. Metode penelitian ini menggunakan desain cross sectional, dan dilakukan di Desa Bagan Asahan Pekan. Teknik pengambilan sampel menggunakan simple random sampling, sampel sebanyak 73 orang. Pengumpulan data menggunakan kuesioner Semi Quantitativ Food Frequency Questionnaire, status gizi dengan mengukur berat badan dan tinggi badan. Analisis data menggunakan uji rank spearman dan regresi linear berganda. Hasil penelitian menunjukkan asupan protein siswa baik sebesar 31.5%. Pola makan yang terbentuk adalah pola makan prudent dan western. Status gizi baik sebesar 79.5%. Uji rank spearman menunjukkan ada hubungan signikan antara asupan protein, pola makan prudent, dan pola makan western dengan status gizi. Analisis uji regresi linear berganda terdapat hubungan signikan antara asupan protein dan pola makan dengan status gizi anak sekolah. Nilai Adjusted R Square sebesar 0,639 menunjukkan asupan protein dan pola makan mempengaruhi status gizi sebesar 63.9%.
