Abstract

The increasing prevalence of overweight and obesity among adolescents is a global public health concern. This study aims to analyze the relationship between the frequency of junk food consumption and overweight among students at SMA Negeri 1 Kejuruan Muda, controlling for sociodemographic confounding variables. A cross-sectional design was applied, involving 64 students selected through random sampling. Data collection included sociodemographic characteristics, frequency of junk food consumption using the Food Frequency Questionnaire (FFQ), and overweight status measured by Body Mass Index-for-age (BMI/U) using WHO AnthroPlus software. Statistical analysis was conducted using SPSS version 29, with descriptive data presented as mean and standard error for numerical data and frequency and proportion for categorical data. Logistic regression with an etiological framework was used to analyze the association between junk food consumption and overweight. The results revealed a significant association between the frequency of junk food consumption and overweight (p=0.037). Students who consumed junk food more frequently were 3.817 times more likely to be overweight than those with lower consumption frequencies, even after controlling for sociodemographic variables. These findings indicate that frequent junk food consumption is an independent risk factor for overweight among adolescents. It is recommended to implement school-based nutrition education programs to reduce junk food consumption and promote healthier eating habits.

Abstract

Background: Goat milk offers more superior health benefits than cow milk, while mung beans possess high nutrient contents and promote probiotic growth. Enhancing goat milk yogurt with mung bean extract through fermentation can improve product quality and consumer acceptance by mitigating the off-flavors. Objectives: To determine the physicochemical, microbiological, and sensory characteristics of goat milk yogurt with mung bean extract enrichment. Methods: A Completely Randomized Design (CRD) was employed with four different formulation ratios of goat milk and mung bean extract at 100%:0%, 85%:15%, 70%:30%, and 55%:45%. Physicochemical properties, such as pH, acidity, ash, total solids, protein, fat, and total sugar were analyzed. on the total amount of lactic acid bacteria (LAB) was counted as microbiological analysis component. Sensory evaluations were conducted using hedonic and hedonic quality tests. All parameters were analyzed using a one-way ANOVA, and the best formulation ratio was determined using the De Garmo method. Results: pH of the product was 3.96 to 4.12, as acidity increased along with a higher mung bean extract. Ash, protein, fat, and total solids content varied moderately across samples, influencing the nutritional profiles of the yogurt. The amount of LAB peaked at 8.95 Log CFU/ml in the 85%:15% formulation ratio. Sensory evaluations showed the highest score of texture and overall assessments in the 85%:15% formulation ratio by achieving optimal tanginess, sweetness, and texture balance. Conclusions: Enriching goat milk yogurt with mung bean extract can significantly influence the physicochemical, microbiological, and sensory characteristics. The formulation of 85% goat milk and 15% mung bean extract provides the more enhanced nutritional value, probiotic potential, and consumer acceptance.

Abstract

Stunting remains a significant nutritional challenge in Indonesia, particularly in Papua, where the prevalence reached 24.8% in 2023. Developing nutrient-rich local food products is one approach to combating stunting. This study aimed to evaluate the sensory acceptability of sprinkles made from snakehead fish, mung beans, and pumpkin as a preventive measure against stunting in toddlers. The sprinkle product was formulated using various combinations of snakehead fish flour, mung beans, and pumpkin, and its acceptability was assessed through hedonic testing by semi-trained panelists. The results indicated that the F25 formula (45 g snakehead fish, 30 g mung beans, 10 g pumpkin) received the highest score for taste attributes and was selected as the preferred formula. This formula is expected to be further developed as a functional food product that can contribute to the prevention of stunting in toddlers in Indonesia by increasing protein intake and other essential nutrients.

Abstract

Nutrition problems remain a major public health concern, particularly among young adults. Common nutritional issues include undernutrition (wasting) and overnutrition (overweight and obesity), which can impact academic performance and overall health. Stress levels and sleep quality are known to influence nutritional status, yet limited studies have explored these factors among university students. This study aims to analyze the relationship between stress levels, sleep quality, and nutritional status among students of the Nutrition Study Program. A cross-sectional study was conducted in August 2024 involving students from the 2021 to 2023 grade students. A total of 72 respondents were selected using a proportional sampling technique. Data collection was carried out using a demographic questionnaire, the Perceived Stress Scale-10 (PSS-10) to assess stress levels, and the Pittsburgh Sleep Quality Index (PSQI) to measure sleep quality. Nutritional status was determined based on Body Mass Index (BMI) calculations. Data analysis was performed using descriptive statistics, chi-square tests, and logistic regression analysis. The chi-square test showed a significant association between stress levels and nutritional status (p = 0.000) and between sleep quality and nutritional status (p = 0.000). Logistic regression analysis further confirmed that stress levels (p = 0.000) and sleep quality (p = 0.004) were significant predictors of nutritional status. These findings highlight the importance of managing stress and improving sleep quality to maintain a healthy nutritional status among students. Future research should explore intervention strategies to mitigate the impact of stress and poor sleep quality on student in nutrition study program. Masalah gizi tetap menjadi perhatian utama dalam kesehatan masyarakat, terutama di kalangan dewasa muda. Permasalahan gizi yang umum terjadi meliputi gizi kurang (wasting) dan gizi lebih (kelebihan berat badan dan obesitas), yang dapat memengaruhi kinerja akademik dan kesehatan secara keseluruhan. Tingkat stres dan kualitas tidur diketahui berperan dalam status gizi, namun masih sedikit penelitian yang mengeksplorasi faktor-faktor ini di kalangan mahasiswa. Penelitian ini bertujuan untuk menganalisis hubungan antara tingkat stres, kualitas tidur, dan status gizi pada mahasiswa Program Studi Gizi. Penelitian ini menggunakan desain studi potong lintang (cross-sectional) dan dilaksanakan pada Agustus 2024 dengan melibatkan mahasiswa angkatan 2021 hingga 2023. Sebanyak 72 responden dipilih menggunakan teknik proportional sampling. Pengumpulan data dilakukan menggunakan kuesioner karakteristik demografi, Perceived Stress Scale-10 (PSS-10) untuk mengukur tingkat stres, dan Pittsburgh Sleep Quality Index (PSQI) untuk menilai kualitas tidur. Status gizi ditentukan berdasarkan perhitungan Indeks Massa Tubuh (IMT). Analisis data dilakukan menggunakan statistik deskriptif, uji chi-square, dan regresi logistik. Hasil uji chi-square menunjukkan ada hubungan yang signifikan antara tingkat stres dan status gizi (p = 0,000) serta antara kualitas tidur dan status gizi (p = 0,000). Analisis regresi logistik mengonfirmasi bahwa tingkat stres (p = 0,000) dan kualitas tidur (p = 0,004) merupakan prediktor signifikan terhadap status gizi. Temuan ini menyoroti pentingnya pengelolaan stres dan peningkatan kualitas tidur untuk menjaga status gizi yang sehat pada mahasiswa. Penelitian lebih lanjut diperlukan untuk mengeksplorasi strategi intervensi guna mengurangi dampak stres dan kualitas tidur yang buruk pada mahasiswa program studi gizi.

Abstract

Non-communicable diseases (NCDs) are a growing public health concern globally and in Indonesia, strongly associated with poor nutrition and unhealthy lifestyles. Schools are effective platforms for health promotion through sustainable nutrition education. The program was conducted at SMA Swasta Utama, Medan (March–July 2025) with 10 teachers and 36 students, involving preparatory coordination, development of educational tools, and delivery of nutrition education through lectures and multimedia discussions. Knowledge improvement was assessed using pretest–posttest with the Wilcoxon paired test, while teachers also received training in anthropometry, blood pressure monitoring, biochemical testing, and the Productivity Risk Self-Assessment Tool (PRISAT), supported by the provision of self-monitoring equipment. Results showed significant knowledge improvements in both groups, with clear shifts from poor to moderate and good categories (p<0.05). Teachers achieved greater gains than students, reflecting their role as facilitators and role models in health education. PRISAT screening revealed most teachers were low risk, though some were categorized as high risk, underscoring the importance of early detection. This program demonstrates the effectiveness of integrating nutrition education and health monitoring to strengthen school-based NCD prevention.

Abstract

Abstrak Status gizi merupakan hasil keseimbangan antara asupan zat gizi dari makanan dan pengeluaran energi melalui aktivitas fisik. Penelitian ini bertujuan untuk mengetahui hubungan antara perilaku makan dan aktivitas fisik dengan status gizi remaja di SMA Negeri 1 Sei Rampah. Penelitian ini menggunakan desain observasional dengan pendekatan cross-sectional. Penelitian dilaksanakan di SMA Negeri 1 Sei Rampah pada bulan November 2022 hingga Februari 2023, dengan jumlah sampel sebanyak 71 remaja yang dipilih melalui teknik simple random sampling. Pengumpulan data dilakukan melalui pengukuran antropometri dan pengisian kuesioner. Analisis bivariat menggunakan uji Rank Spearman, sedangkan analisis multivariat menggunakan regresi linier berganda. Hasil penelitian menunjukkan bahwa 50,7% remaja memiliki perilaku makan yang kurang baik, 90,10% memiliki tingkat aktivitas fisik sedang, dan 43,70% memiliki status gizi kurang. Uji Rank Spearman menunjukkan adanya hubungan yang signifikan antara perilaku makan dan aktivitas fisik dengan status gizi (p = 0,000). Hasil regresi linier berganda menunjukkan bahwa perilaku makan dan aktivitas fisik berhubungan signifikan dengan status gizi remaja (Y = -1,906 + 0,062 perilaku makan + 0,002 aktivitas fisik; p = 0,000), dengan perilaku makan sebagai faktor yang paling dominan. Dengan demikian, terdapat hubungan antara perilaku makan dan aktivitas fisik dengan status gizi remaja di SMA Negeri 1 Sei Rampah. Hasil ini mengindikasikan bahwa program edukasi gizi dan promosi gaya hidup aktif di lingkungan sekolah dapat menjadi strategi yang efektif untuk mencegah dan mengatasi masalah gizi pada remaja. Intervensi yang berkelanjutan dan berbasis sekolah perlu dikembangkan untuk meningkatkan kualitas perilaku makan dan aktivitas fisik sebagai upaya mendukung perkembangan remaja yang optimal. Abstract Nutritional status is the result of a balance between nutrient intake from food and energy expenditure through physical activity. This study aims to examine the relationship between eating behavior and physical activity with the nutritional status of adolescents at SMA Negeri 1 Sei Rampah. The research employed an observational design with a cross-sectional approach. The study was conducted at SMA Negeri 1 Sei Rampah from November 2022 to February 2023, involving 71 adolescents selected through random sampling. Data collection was carried out through anthropometric measurements and questionnaire completion. Bivariate analysis was performed using the Spearman rank test, while multivariate analysis used multiple linear regression. The results showed that 50.7% of adolescents had poor eating behavior, 90.10% had moderate physical activity levels, and 43.70% had poor nutritional status. The Spearman rank test indicated a significant relationship between eating behavior and physical activity with nutritional status (p = 0.000). The multiple linear regression analysis revealed a significant relationship between eating behavior and physical activity with adolescents’ nutritional status (Y = -1.906 + 0.062 eating behavior + 0.002 physical activity; p = 0.000), with eating behavior being the most dominant factor. Thus, there is a significant relationship between eating behavior and physical activity with the nutritional status of adolescents at SMA Negeri 1 Sei Rampah. These findings suggest that nutrition education programs and the promotion of active lifestyles within the school environment can be effective strategies to prevent and address nutritional problems among adolescents. Sustainable, school-based interventions should be developed to improve the quality of eating behavior and physical activity as part of efforts to support optimal adolescent development.

Abstract

This study aims to analyze and find out from videos-based social media to virtual stores that create consumerism culture through social media TikTok Shop on Bangka Belitung millennial female students. This research is attractive because the development of features in the Tiktok application, namely Tiktok Shop, can construct consumptive behavior. This study used the descriptive qualitative method. The data collection technique was carried out by unstructured interviews with purposive sampling method. The results of this study (1) indicate that consumption patterns on TikTok Shop social media are in the form of intensity in watching live streaming and short video product reviews from buyers, (2) assume that online shopping is effective and efficient, and (3) become more trusting in the authenticity of goods because promotional media will see goods directly. This consumption pattern creates a consumer culture through the TikTok Shop social media. There are 3 driving factors for the millennial generation to create consumer culture, which are: (1) Lifestyle, (2) Mass Industry, (3) Symbolic significancy of goods. This study hoped that the public will not be trapped in false awareness and not be easily persuaded by advertisements. Capitalists have succeeded in playing a role in confusing between wants and needs and creating consumptive behavior.

Abstract

Introduction: The prevalence of stunting among children aged 24-60 months is a critical public health concern including in the Puskesmas Siempat Rube working area. Inadequate maternal knowledge about balanced nutrition and inappropriate feeding practices can contribute to the incidence of stunting. Objective: To analyze the relationship between maternal knowledge of balanced nutrition and maternal feeding practice on the incidence of stunting in children aged 24-60 months in the Puskesmas Siempat Rube working area. Method: This cross-sectional study was conducted in December 2023. The research sample consisted of 43 participants selected using purposive sampling. Balanced nutrition knowledge scores were categorized into poor, sufficient, and good; meanwhile, the higher the score for feeding practice, the better the mother's feeding practice was assumed. Height was assessed based on the TB/U indicator and categorized into stunting and not stunting. Hypotheses were analyzed using logistic regression tests, with statistical significance set at p < 0.05. Result: The prevalence of stunting in this study was 69.8%. Most mothers had insufficient knowledge of balanced nutrition (90.7%), and the average feeding practice score was 58.4. Maternal knowledge of balanced nutrition and maternal feeding practice are significantly related to the incidence of stunting in children aged 24-60 months in the Puskesmas Siempat Rube working area (p < 0.05). Maternal knowledge of balanced nutrition and maternal feeding practice act as protective factors against the incidence of stunting. The odds of children aged 24-60 months experiencing stunting were 0.056 times lower if their mothers had sufficient knowledge of balanced nutrition compared to mothers with poor knowledge. Similarly, each 1-point increase in a mother's feeding practice score could reduce the incidence of stunting by 0.910 times compared to mothers with a feeding practice score one point lower. Conclusion: Maternal knowledge of balanced nutrition and maternal feeding practice are significantly associated with the incidence of stunting in children aged 24-60 months in the Puskesmas Siempat Rube working area.

Abstract

Anemia defisiensi besi (ADB) merupakan jenis anemia yang paling umum terjadi pada remaja perempuan dibandingkan kelompok umur lainnya. ADB dipengaruhi berbagai faktor seperti sosioekonomi, sosiodemografi, kondisi fisiologis dan patologis, pola makan, serta asupan zat gizi termasuk protein. Tujuan penelitian ini menganalisis hubungan antara asupan protein dan kejadian anemia pada siswi SMA Negeri 11 Medan dengan mengontrol variabel sosiodemografi. Penelitian ini menggunakan desain potong lintang pada 68 orang siswi SMA Negeri 11 Medan. Data asupan protein (g/hari) dikumpulkan menggunakan semi-quantitative food frequency questionnaire (SQ-FFQ), sedangkan data kejadian anemia diperoleh melalui pengukuran kadar hemoglobin darah kapiler. Data karakteristik sosiodemografi dikumpulkan melalui wawancara menggunakan kuesioner. Uji beda Mann-Whitney digunakan untuk menganalisis perbedaan karakteristik responden, sedangkan regresi logistik kerangka konsep etiologik digunakan untuk menganalisis hubungan antara asupan protein dan kejadian anemia dengan dan tanpa pengontrolan variabel karakteristik sosiodemografi. Semua analisis dianggap bermakna jika nilai p<0,05. Asupan protein (g/hari) responden yang mengalami anemia signifikan lebih rendah dibandingkan siswa yang tidak mengalami anemia (p<0,05). Karakteristik sosiodemografi tidak berbeda signifikan antara responden yang mengalami anemia dan tidak anemia (p>0,05). Asupan protein berhubungan secara bermakna dengan kejadian anemia sebagai faktor protektif pada siswi kelas XI SMA Negeri 11 Medan, baik sebelum maupun setelah pengontrolan dengan variabel sosiodemografi. Temuan ini menekankan pentingnya mencukupi asupan protein untuk mencegah anemia pada remaja. This study aimed to analyze the relationship between protein intake and the incidence of anemia in female students at SMA Negeri 11 Medan by controlling for sociodemographic variables. This study used a cross-sectional design on 68 SMA Negeri 11 Medan female students. Protein intake (g/day) was collected using a semi-quantitative food frequency questionnaire (SQ-FFQ), while the incidence of anemia was obtained by measuring capillary blood hemoglobin levels. Sociodemographic characteristics were collected through interviews using a questionnaire. The Mann-Whitney test was used to analyze differences in respondent characteristics. In contrast, logistic regression within the etiological concept framework was used to explore the relationship between protein intake and the incidence of anemia with and without controlling for sociodemographic characteristics. All analyses were considered significant if the p-value <0.05. Those with anemia consumed considerably less protein (g/day) than those without anemia (p < 0.05). The sociodemographic characteristics of anemic and non-anemic subjects did not significantly differ from one another (p > 0.05). Protein intake was a protective factor against anemia in female class XI students at SMA Negeri 11 Medan before and after considering sociodemographic characteristics. Abstract

Khalilah Islamic Daycare merupakan salah satu daycare di Kota Medan dan diawasi oleh seorang psikolog anak. Program kegiatan di khalilah Islamic Daycare meliputi pemberian stimulus sesuai usia tumbuh kembang, pembekalan tauhid, dan adab sehari-hari. Beberapa penelitian menunjukkan risiko yang diakibatkan stunting yaitu penurunan prestasi akademik, meningkatkan risiko obesitas, lebih rentan terhadap penyakit tidak menular, dan peningkatan risiko penyakit degeneratif. Anak-anak yang terhambat pertumbuhannya sebelum berusia dua (2) tahun memiliki hasil yang lebih buruk dalam emosi dan perilakunya pada masa remaja akhir. Oleh karena itu stunting merupakan faktor penurunan kualitas sumber daya manusia yang selanjutnya. Berhubungan dengan anak-anak yang diasuh di Khalilah merupakan anak-anak balita, diperlukan untuk pemberian informasi mengenai asupan gizi dan pengukuruan pertumbuhan pada balita untuk selanjutnya dapat mendeteksi dini dengan pembuatan raport kesehatan anak. PKM ini dilakukan dengan pendekatan sosialisasi dan metode demonstrasi pemeriksaan antropometri. Kegiatan ini direncanakan dilakukan dengan beberapa tahapan, yaitu: (1) pemaparan materi tentang stunting pada anak prasekolah, (2) pemeriksaan antropometri pada anak-anak prasekolah (3) pemaparan materi tentang asupan gizi yang baik, (4) pendampingan terhadap tim pengajar dan orang tua dalam penggunaan makanan yang sesuai (5) review terhadap pelatihan yang telah dilaksanakan serta menarik kesimpulan. Kegiatan PKM ini diharapkan dapat memberikan pengetahuan dan pemahaman melalui kegiatan penyuluhan dan demonstrasi mengenai gizi pada anak usia prasekolah untuk selanjutnya melakukan deteksi dini dengan pembuatan raport kesehatan anak.
