Abstract

Gagal ginjal kronik (GGK) merupakan penyakit penurunan fungsi ginjal yang bersifat progresif dan tidak dapat kembali. Hemodialisa merupakan salah satu terapi pengganti ginjal untuk penderita GGK. Perubahan pola hidup akan terjadi pada pasien yang menjalani hemodialisa salah satunya pengaturan dietnya. Diet merupakan pengendalian makan sebagai upaya mencegah ketidakseimbangan cairan dan elektrolit dan menghindari kenaikan residu metabolisme protein. Faktor keberhasilan kepatuhan diet salah satunya adalah dukungan keluarga. Tujuan penelitian ini untuk mengetahui hubungan penelitian Cross Sectional, penelitian ini dilaksanakan di RS USU. Populasi penelitian adalah seluruh pasien gagal ginjal kronik yang menjalani hemodialisa di RS USU sebanyak 62 orang. Teknik pengambilan sampel menggunakan purposive sampling dengan jumlah sampel 30 orang. Instrumen data yang digunakan untuk dukungan keluarga adalah kuesioner dan untuk kepatuhan diet adalah food recall 2x24 jam. Hasil penelitian menunjukkan bahwa terdapat hubungan dukungan keluarga dengan kepatuhan diet pada pasien gagal ginjal kronik yang menjalani hemodialisa di RS USU dengan nilai p-value 0,049 (p<0,05) artinya semakin baik dukungan keluarga maka semakin patuh pasien dengan kepatuhan diet.Kata Kunci: Gagal Ginjal Kronik, Kepatuhan Diet, Dukungan Keluarga

Abstract

Introduction: Food insecurity remains a global challenge for public health, particularly among children. In Indonesia, where childhood malnutrition persists despite progress, regional disparities in food access, exacerbated by dietary shifts and income inequalities, underscore the importance of understanding how household food insecurity impacts child nutrition. Objective: to analyze the association between household food insecurity and nutritional status of Indonesian under-five children. Method: Data were collected from children participating in the 2014 Indonesia Family Life Survey (IFLS). The 17 items of the Food Frequency Questionnaire (FFQ) were used in the food consumption score analysis to assess food insecurity based on the World Food Program (WFP) concept. Height and weight were measured to determine z-scores of weight-for-lengths. A multinomial logistic regression model was used to test the hypothesis. Result: The study included 4,391 children aged 1-5 years. Multinomial logistic regression revealed that children from moderately and severely food-insecure households had significantly higher odds of being wasted, overweight, or obese compared to food-secure households. The analysis highlighted the dual burden of malnutrition, with food insecurity associated with both undernutrition and overnutrition. Conclusion: Household food insecurity is strongly linked to both undernutrition and overnutrition in Indonesian children, presenting a dual burden of malnutrition. Public health interventions should target improving food security and ensuring access to diverse, nutrient-rich diets to reduce malnutrition in vulnerable populations.

Abstract

Anak usia sekolah mempunyai peranan yang sangat besar dalam menentukan masa depan bangsa namun kelompok ini merupakan salah satu kelompok rentan masalah gizi. Berdasarkan observasi yang dilakukan di desa Bagan Asahan Pekan, status gizi kurang pada anak sekolah dasar sebesar 11% dan diatas rata-rata nasional. Tujuan penelitian ini adalah untuk menganalisis hubungan asupan protein dan pola makan dengan status gizi anak keluarga nelayan. Metode penelitian ini menggunakan desain cross sectional, dan dilakukan di Desa Bagan Asahan Pekan. Teknik pengambilan sampel menggunakan simple random sampling, sampel sebanyak 73 orang. Pengumpulan data menggunakan kuesioner Semi Quantitativ Food Frequency Questionnaire, status gizi dengan mengukur berat badan dan tinggi badan. Analisis data menggunakan uji rank spearman dan regresi linear berganda. Hasil penelitian menunjukkan asupan protein siswa baik sebesar 31.5%. Pola makan yang terbentuk adalah pola makan prudent dan western. Status gizi baik sebesar 79.5%. Uji rank spearman menunjukkan ada hubungan signikan antara asupan protein, pola makan prudent, dan pola makan western dengan status gizi. Analisis uji regresi linear berganda terdapat hubungan signikan antara asupan protein dan pola makan dengan status gizi anak sekolah. Nilai Adjusted R Square sebesar 0,639 menunjukkan asupan protein dan pola makan mempengaruhi status gizi sebesar 63.9%.

Abstract

Penyakit tidak menular (PTM) merupakan penyebab kematian global utama, sehingga memerlukan strategi pencegahan yang efektif melalui deteksi dini dan edukasi gizi. Kegiatan pengabdian ini bertujuan untuk meningkatkan pengetahuan gizi di kalangan guru dan siswa di MTs Al Washliyah 19 Percut sekaligus memberikan pelatihan untuk meningkatkan keterampilan guru dalam deteksi dini risiko PTM menggunakan Productivity Risk Self-Assessment Tool (PRISAT). Selama lima bulan, program ini menerapkan edukasi gizi berbasis sekolah yang berkelanjutan melalui sesi interaktif, evaluasi pretest-posttest, dan penyediaan alat penilaian status gizi dan kesehatan. Hasil pengabdian menunjukkan peningkatan yang signifikan dalam pengetahuan guru dan siswa tentang gizi seimbang (p<0,05). Pelatihan PRISAT yang berfokus pada guru berhasil membekali guru dengan keterampilan untuk melakukan penilaian risiko dini serta pemantauan status gizi dan kesehatan secara mandiri. PRISAT terbukti menjadi alat yang efektif dan dapat digunakan untuk mengidentifikasi risiko PTM dan mempromosikan perilaku makan yang lebih sehat. Program ini menawarkan model yang dapat direplikasi untuk mengintegrasikan pendidikan gizi terstruktur dengan pelatihan praktis, dengan menekankan pentingnya dukungan berkelanjutan untuk mempertahankan dampak jangka panjangnya.

Abstract

Background: Inadequate nutritional intake is often influenced by lack of knowledge among adolescents regarding the quantity and types of food they should consume, impacting their nutritional status. With technology being an integral part of modern life, it can be leveraged to improve adolescents' dietary practices by enhancing their knowledge of balanced nutrition. Objectives: To develop the self-dietary assessment application, Diary NutriMe, as a nutritional assistance tool for overweight adolescents to improve their nutritional knowledge and dietary intake. Methods: This study employed the Rapid Application Development (RAD) method. The feasibility assessment of the Diary NutriMe application was conducted by material and media experts using a checklist questionnaire with a Likert scale ranging from 1 (poor) to 5 (excellent), categorized into five levels: highly feasible to not feasible. The implementation involved improving nutritional knowledge among 36 overweight/obese adolescent students. Results: The application features included a login system, nutritional status calculation, nutrient requirement estimation, food intake records, physical activity logs, a collection of nutrition education materials, and a chat feature. The material feasibility assessment received an average score of 90.7%, categorized as highly feasible, while the media feasibility assessment received an average score of 86.7%, also categorized as highly feasible. Statistical analysis using a T-test indicated no significant difference in respondents' knowledge (p-value=0.51). However, there was an increase in the average nutritional knowledge score by 7.7 points before and after using the Diary NutriMe application. Conclusions: The Diary NutriMe application is highly feasible as a nutritional assistance tool for adolescents with overweight conditions.

Abstract

Introduction: Workplace nutrition interventions have emerged as a pivotal strategy for enhancing employee health by addressing dietary behaviors and reducing the risk of non-communicable diseases. This systematic review evaluates the effectiveness of workplace-based nutrition interventions in improving nutritional outcomes and health indicators among employees. Methods: Using the PRISMA framework, a comprehensive search was conducted across PubMed, ScienceDirect, Scopus, and Google Scholar for studies published between 2020 and 2024. Eligible studies included randomized controlled trials (RCTs) and quasi-experimental designs targeting workplace-based nutrition interventions. A total of 10 studies met the inclusion criteria and were systematically analyzed for outcomes related to dietary behavior, physical activity, and health indicators. Risk of bias assessments were performed to ensure the validity of findings. Results: The findings revealed that dietary interventions, particularly those emphasizing adherence to structured diets like the Mediterranean diet, consistently led to significant improvements in health markers, including reductions in LDL cholesterol and body fat percentage. Interventions combining dietary modifications with physical activity yielded comprehensive benefits, such as weight loss and improved dietary adherence. However, variability in study designs, sample sizes, and contextual factors limited the generalizability of results. Many studies lacked follow-up data to assess the long-term sustainability of health outcomes. Conclusion: Workplace nutrition interventions promote employee health, especially when combining dietary and physical activity components. However, challenges such as methodological heterogeneity, short-term focus, and limited exploration of demographic and contextual factors must be addressed. Future research should prioritize standardized methodologies, conduct longitudinal assessments, and implement tailored interventions that consider workforce diversity and workplace culture. These findings provide actionable insights for policymakers and employers seeking to design sustainable workplace health initiatives that enhance employee well-being and organizational productivity.

Abstract

Peningkatan prevalensi overweight dan obesitas di kalangan remaja merupakan masalah kesehatan masyarakat global. Penelitian ini bertujuan untuk menganalisis hubungan antara frekuensi konsumsi junk food dan kegemukan pada siswa di SMA Negeri 1 Kejuruan Muda dengan mengontrol variabel perancu sosiodemografi. Desain penelitian yang digunakan adalah cross-sectional, melibatkan 64 siswa yang dipilih secara random sampling. Pengumpulan data meliputi karakteristik sosiodemografi, frekuensi konsumsi junk food menggunakan Food Frequency Questionnaire (FFQ), dan status kegemukan diukur dengan Z-score Indeks Massa Tubuh menurut umur (IMT/U) menggunakan software WHO AnthroPlus. Analisis statistik dilakukan menggunakan SPSS versi 29, dengan data deskriptif disajikan dalam bentuk rata-rata dan standar error untuk data numerik serta frekuensi dan proporsi untuk data kategorik. Analisis regresi logistik dengan kerangka etiologi digunakan untuk menganalisis hubungan antara konsumsi junk food dan kegemukan. Hasil penelitian menunjukkan bahwa terdapat hubungan signifikan antara frekuensi konsumsi junk food dan kegemukan (p=0,037). Siswa yang lebih sering mengonsumsi junk food memiliki peluang 3,817 kali lebih tinggi untuk mengalami kegemukan dibandingkan dengan mereka yang jarang mengonsumsinya, bahkan setelah mengontrol variabel sosiodemografi. Temuan ini menunjukkan bahwa frekuensi konsumsi junk food merupakan faktor risiko independen untuk kegemukan pada remaja. Disarankan untuk mengimplementasikan program edukasi gizi berbasis sekolah guna mengurangi konsumsi junk food dan mempromosikan kebiasaan makan yang lebih sehat.

Abstract

Background: Goat milk offers more superior health benefits than cow milk, while mung beans possess high nutrient contents and promote probiotic growth. Enhancing goat milk yogurt with mung bean extract through fermentation can improve product quality and consumer acceptance by mitigating the off-flavors. Objectives: To determine the physicochemical, microbiological, and sensory characteristics of goat milk yogurt with mung bean extract enrichment. Methods: A Completely Randomized Design (CRD) was employed with four different formulation ratios of goat milk and mung bean extract at 100%:0%, 85%:15%, 70%:30%, and 55%:45%. Physicochemical properties, such as pH, acidity, ash, total solids, protein, fat, and total sugar were analyzed. on the total amount of lactic acid bacteria (LAB) was counted as microbiological analysis component. Sensory evaluations were conducted using hedonic and hedonic quality tests. All parameters were analyzed using a one-way ANOVA, and the best formulation ratio was determined using the De Garmo method. Results: pH of the product was 3.96 to 4.12, as acidity increased along with a higher mung bean extract. Ash, protein, fat, and total solids content varied moderately across samples, influencing the nutritional profiles of the yogurt. The amount of LAB peaked at 8.95 Log CFU/ml in the 85%:15% formulation ratio. Sensory evaluations showed the highest score of texture and overall assessments in the 85%:15% formulation ratio by achieving optimal tanginess, sweetness, and texture balance. Conclusions: Enriching goat milk yogurt with mung bean extract can significantly influence the physicochemical, microbiological, and sensory characteristics. The formulation of 85% goat milk and 15% mung bean extract provides the more enhanced nutritional value, probiotic potential, and consumer acceptance.

Abstract

Stunting remains a significant nutritional challenge in Indonesia, particularly in Papua, where the prevalence reached 24.8% in 2023. Developing nutrient-rich local food products is one approach to combating stunting. This study aimed to evaluate the sensory acceptability of sprinkles made from snakehead fish, mung beans, and pumpkin as a preventive measure against stunting in toddlers. The sprinkle product was formulated using various combinations of snakehead fish flour, mung beans, and pumpkin, and its acceptability was assessed through hedonic testing by semi-trained panelists. The results indicated that the F25 formula (45 g snakehead fish, 30 g mung beans, 10 g pumpkin) received the highest score for taste attributes and was selected as the preferred formula. This formula is expected to be further developed as a functional food product that can contribute to the prevention of stunting in toddlers in Indonesia by increasing protein intake and other essential nutrients.

Abstract

Nutrition problems remain a major public health concern, particularly among young adults. Common nutritional issues include undernutrition (wasting) and overnutrition (overweight and obesity), which can impact academic performance and overall health. Stress levels and sleep quality are known to influence nutritional status, yet limited studies have explored these factors among university students. This study aims to analyze the relationship between stress levels, sleep quality, and nutritional status among students of the Nutrition Study Program. A cross-sectional study was conducted in August 2024 involving students from the 2021 to 2023 grade students. A total of 72 respondents were selected using a proportional sampling technique. Data collection was carried out using a demographic questionnaire, the Perceived Stress Scale-10 (PSS-10) to assess stress levels, and the Pittsburgh Sleep Quality Index (PSQI) to measure sleep quality. Nutritional status was determined based on Body Mass Index (BMI) calculations. Data analysis was performed using descriptive statistics, chi-square tests, and logistic regression analysis. The chi-square test showed a significant association between stress levels and nutritional status (p = 0.000) and between sleep quality and nutritional status (p = 0.000). Logistic regression analysis further confirmed that stress levels (p = 0.000) and sleep quality (p = 0.004) were significant predictors of nutritional status. These findings highlight the importance of managing stress and improving sleep quality to maintain a healthy nutritional status among students. Future research should explore intervention strategies to mitigate the impact of stress and poor sleep quality on student in nutrition study program. Masalah gizi tetap menjadi perhatian utama dalam kesehatan masyarakat, terutama di kalangan dewasa muda. Permasalahan gizi yang umum terjadi meliputi gizi kurang (wasting) dan gizi lebih (kelebihan berat badan dan obesitas), yang dapat memengaruhi kinerja akademik dan kesehatan secara keseluruhan. Tingkat stres dan kualitas tidur diketahui berperan dalam status gizi, namun masih sedikit penelitian yang mengeksplorasi faktor-faktor ini di kalangan mahasiswa. Penelitian ini bertujuan untuk menganalisis hubungan antara tingkat stres, kualitas tidur, dan status gizi pada mahasiswa Program Studi Gizi. Penelitian ini menggunakan desain studi potong lintang (cross-sectional) dan dilaksanakan pada Agustus 2024 dengan melibatkan mahasiswa angkatan 2021 hingga 2023. Sebanyak 72 responden dipilih menggunakan teknik proportional sampling. Pengumpulan data dilakukan menggunakan kuesioner karakteristik demografi, Perceived Stress Scale-10 (PSS-10) untuk mengukur tingkat stres, dan Pittsburgh Sleep Quality Index (PSQI) untuk menilai kualitas tidur. Status gizi ditentukan berdasarkan perhitungan Indeks Massa Tubuh (IMT). Analisis data dilakukan menggunakan statistik deskriptif, uji chi-square, dan regresi logistik. Hasil uji chi-square menunjukkan ada hubungan yang signifikan antara tingkat stres dan status gizi (p = 0,000) serta antara kualitas tidur dan status gizi (p = 0,000).
