Abstract

Coconut (Cocos nucifera L.) is one of Indonesia's agricultural products with potential. The most valuable coconut product is coconut oil, which can be obtained from the flesh of fresh coconuts or from copra. Virgin Coconut Oil (VCO) or pure coconut oil is the result of processing from the coconut plant in the form of a clear liquid with a distinctive coconut smell and has a long shelf life. Pure coconut oil or VCO has many benefits for body health, such as natural antibacterial, antiviral, anti-fungal and anti-protozoal properties. This study aims to compare the effect of tempe yeast, bread yeast, tape yeast, and without yeast on variations in the ratio of grated coconut and water (1: 1; 1:1,5; 1:2), on the amount of VCO produced. The experiment was carried out again and then the average volume of VCO produced by each yeast was taken. The average VCO results obtained ratio 1:1 were 209.5 ml for adding bread yeast, 153.5 ml for not using yeast, and 150.5 ml for adding tempeh yeast. Meanwhile, adding tape yeast produce the smallest yield 89 ml . Based on the ratio of grated coconut and water (1 kg: 1 liter) the optimum yield is 1:1. While the minimum yield is 1:1,5 ratio. The most VCO obtained is by adding baker's yeast to thick coconut milk in the second fermentation process. The order of highest yield based on the addition of yeast is bread yeast, tempeh yeast, and tape yeast. The yield of VCO yeast tempeh was slightly better than the yield without adding yeast. The organoleptic results and some of the VCO test results based on SNI 7783-2008 have fulfilled the specified requirements.

Abstract

High organic pollutant in tofu wastewater (TWW) raises a negative impact on environmental sustainability and health. Therefore, the TWW must be treated before it is discharged into the environment. Microbial electrolysis cell (MEC) is one of the green technologies that can be used to treat wastewater and generate hydrogen as well. This work tries to investigate the performance of MEC based on the decrement of organic pollutants in TWW. Some important parameters of organic pollutants in TWW such as chemical oxygen demand (COD), biological oxygen demand (BOD), total suspended solids (TSS), total dissolved solids (TDS), total solid (TS), and pH were evaluated before and after MEC operation. The results showed that the COD and BOD levels decreased around 56% and 35% while pH increased from 7.90 to 7.16. Additionally, the TSS, TDS, and TS decreased by around 35.0%, 45.5%, and 33.2%. In addition, the optimum hydrogen yield (YH2) and hydrogen production rate (QH2) were obtained at 114 ± 0.1 mL H2/g COD 360 ± 20 mL H2/L/d. Overall, the MEC system could be used to reduce the level of organic pollutants in TWW and generated H2 at the same time.

Abstract

This study investigates the efficiency of maceration and ultrasonic extraction methods for obtaining antioxidants from Arabica, Robusta, and Liberica green coffee beans. Ultrasonic extraction demonstrated higher yields and enhanced antioxidant activity, with Liberica exhibiting the most potent radical scavenging potential (lowest IC50 values), followed by Robusta and Arabica in 45.3706 ppm, 46.6647 ppm, 49.4257 ppm. Formulated serums derived from these extracts were evaluated for compliance with SNI 16-4399-1996 standards. Both methods produced serums with acceptable texture, homogeneity, pH levels, and active ingredient retention. However, ultrasonic-derived serums displayed superior microbial safety profiles, with significantly lower total plate counts. Viscosity analysis revealed higher values for maceration-derived serums, while Sun Protection Factor (SPF) evaluation indicated that serum of Liberica extract provided the highest UV protection. These findings emphasize the potential of ultrasonic extraction and Liberica green coffee beans in developing high-value cosmetic and pharmaceutical products, paving the way for further research into optimized extraction techniques and broader applications.

Abstract

Corn is a well-cultivated food crop that is grown extensively worldwide. The used portion of corn is its seeds, which are rich in oil. The objective of this study is to separate and characterize tocopherol from corn oil in Dompu, Sumbawa by employing spectroscopic techniques such as ultraviolet (UV) spectrophotometry, ultra-performance liquid chromatography (UPLC), nuclear magnetic resonance (NMR), and liquid chromatography-mass spectrometry (LC-MS). Subsequently, the in-vitro antioxidant activity of the tocopherol was assessed. 1 kilogram of dry maize kernels subjected to 70% ethanol extraction yielded 30 grams (35 ml) of corn oil. The purified isolate obtained from the fractionated extract, using radial chromatography, demonstrated the presence of tocopherol. The isolated sample exhibited the presence of beta-tocopherol. Beta-tocopherol's anti-aging properties were assessed by conducting an in-vitro antioxidant activity test utilizing the tyrosinase enzyme. The IC50 value obtained was 83.954±2.849 ppm. The IC50 value indicates that beta-tocopherol possesses significant antioxidant activity, making it suitable for usage as a primary ingredient in cosmetics and pharmaceutical products.

Abstract

Squalene, a natural isoprenoid, plays a critical role in sterol biosynthesis and exhibits various health benefits, including antioxidant, anti-inflammatory, and antitumor properties. Found in sources such as shark liver oil, amaranth, olive oil, and microbial species, its demand has surged across pharmaceutical, cosmetic, and food industries. However, traditional extraction methods, predominantly from shark liver, raise sustainability concerns. This study explores alternative sources and production strategies, focusing on plant-based and microbial synthesis of squalene. Amaranth seeds and olive oil were highlighted as promising renewable sources due to their high squalene content. Advances in synthetic biology and metabolic engineering have enabled microbial platforms, such as genetically modified yeasts and microalgae, to produce pharmaceutical-grade squalene sustainably. Moreover, the development of innovative extraction techniques, such as supercritical CO₂ extraction, enhances yield and purity while minimizing environmental impact. The research further emphasizes squalene’s potential as a precursor for cholesterol, hormones, and vitamins, alongside its role in improving human health through applications in vaccines, cardiovascular protection, and cancer prevention. Future work should prioritize optimizing extraction methods, exploring untapped natural sources, and scaling microbial production to address the growing global demand sustainably.
