Abstract

Fishery product diversification refers to the variety of processed fishery products. One of the fishery commodities that can be used as a raw material for diversification products is red tilapia. Red tilapia meat can be used as a raw material for making roulade.  This research aims to determine the optimal percentage of carrageenan flour addition in the production of red tilapia fish rolls to yield the most preferred product by panelists. The study was conducted at the Fishery Product Processing Laboratory of Building 2, Faculty of Fisheries and Marine Sciences, Padjadjaran University. The research method employed was experimental, with four treatments of carrageenan flour addition: 0%, 0.75%, 1%, and 1.25%. The observed parameters were the preference levels for red tilapia fish rolls from all treatments, consisting of appearance, aroma, taste, and texture preferences. Preference level observations were conducted through assessments by 20 semi-trained panelists. Research results indicate that the 1% carrageenan flour addition was most preferred by panelists, with average preference scores for appearance (6.5), aroma (6.6), taste (7.1), and texture (7.6).

Abstract

The Nusantara Fisheries Port (PPN) Kejawanan in Cirebon City is an important infrastructure that supports the fisheries sector in the northern coastal region of West Java. As a distribution center for fish catches and a driver of the capture fisheries economy, this port is regulated by various regulations, including Law Number 45 of 2009 and Regulation of the Minister of Marine Affairs and Fisheries Number 8 of 2012, which requires the existence of basic, functional, and supporting facilities. This study aims to evaluate the level of facility utilization in PPN Kejawanan using a descriptive method by collecting primary data through observation and interviews, as well as secondary data from port managers. The results of the study show that the PPN Kejawanan has fulfilled 19 of the 22 required facilities, or around 86%, with most of the facilities functioning optimally. However, there are several facilities that are not yet available, such as jetty piers and fishermen's guesthouses. These results indicate the need to increase the utilization of facilities to ensure better port services and support the economic growth of the fisheries sector in PPN Kejawanan.

The opportunity to utilize online applications is also applied in food sales based on the use of online applications, especially for sellers in the category of Micro, Small and Medium Enterprises (MSMEs). Activities that utilize online applications are called Electronic Commerce (E-Commerce) where physical contact is not required between sellers and buyers. Online applications are one of the things that can support economic progress, but the use of online applications for sales is still limited depending on the area, areas with poor internet conditions usually rarely use online applications for sales. The purpose of this study was to determine how much the marketing of fishery products (Pecel lele) using online applications along the Jatinangor highway which is an area with a high percentage of students and high potential for internet use. The conclusion of this study shows that most of the pecel lele stalls along Jalan Raya Jatinangor have used online applications for sales and fifty percent of pecel lele stalls stated that turnover from using online applications tends to be higher than conventional sales. The conclusion of this study is that in 12 catfish pecel stalls located along the Jatinangor highway, 75% of all stalls have online applications for sales and 25% do not have online applications for sales. In the turnover obtained, 6 out of 12 catfish pecel stalls get higher turnover profits, 3 out of 12 catfish pecel stalls have decreasing turnover profits, the remaining 3 stalls that do not use online applications do not experience changes in turnover profits, namely sales do not increase or decrease.

Abstract

Abstract

This study aims to analyze business income, profit-sharing systems, and the income of payang fishermen at the Nusantara Fisheries Port (PPN) Palabuhanratu, Sukabumi Regency. The research employs a quantitative descriptive method involving 17 payang fishing boats as samples chosen through random sampling. Primary data were collected via structured interviews, while secondary data came from official documents of PPN Palabuhanratu. The results reveal that the average net income per trip during the off-season, moderate, and peak seasons were IDR 3,500,440, IDR 4,310,359, and IDR 4,130,308, respectively. The profit-sharing system applied is a 2:1 distribution, with two parts for the boat owner and one part for the fishermen, plus an additional 5% for the helmsman. The boat owners earn between IDR 28–61 million per month, helmsmen earn IDR 3.5–7.7 million, and crew members earn IDR 1.2–2.7 million monthly. Compared to the 2024 Sukabumi minimum wage of IDR 3,351,883, only helmsmen during the moderate and peak seasons earn above the standard, while the crew members remain below the minimum wage across all seasons. Factors affecting fishermen’s income include season conditions, number of trips, catch volume, fish prices, and profit-sharing patterns. These findings indicate that the income of payang fishermen remains seasonal and unstable, especially for crew members, necessitating policy efforts to improve their welfare.
