Abstract

Stunting merupakan masalah kesehatan masyarakat yang masih tinggi di Indonesia, termasuk di Desa Buti, Gorontalo, yang disebabkan oleh kekurangan gizi kronis pada 1000 Hari Pertama Kehidupan (HPK). Rendahnya literasi gizi, terbatasnya pemanfaatan pangan lokal, serta minimnya peluang usaha menjadi faktor utama penyebab. Metode yang digunakan pada Program Kuliah Kerja Nyata Profesi Kesehatan (KKN-PK) dilaksanakan melalui tiga tahap: (1) persiapan (survei awal, pendataan balita stunting, rekrutmen peserta), (2) pelaksanaan (edukasi gizi, pelatihan pembuatan minuman herbal berbahan jagung, jahe merah, sereh, dan lengkuas, serta uji organoleptik), dan (3) keberlanjutan (pendampingan kader PKK dan posyandu, distribusi leaflet, monitoring, serta publikasi hasil kegiatan). Hasil yang diperoleh dari Program ini meningkatkan pengetahuan gizi masyarakat secara signifikan (skor post-test 82% dibandingkan pre-test 55%). Selain itu, tercipta prototipe minuman herbal fungsional yang disukai masyarakat, serta peningkatan kapasitas kader PKK dan posyandu sebagai agen edukasi gizi. Masyarakat juga memperoleh keterampilan baru dalam pengolahan pangan lokal. Kesimpulan: Program berhasil meningkatkan literasi gizi, mendorong pemanfaatan pangan lokal, serta membuka peluang usaha berbasis komunitas. Keberlanjutan program diharapkan melalui penguatan kelompok usaha desa, integrasi dengan kegiatan posyandu, serta dukungan pemerintah desa, sehingga Desa Buti dapat mewujudkan “Desa Bebas Stunting dan Mandiri Gizi.

Abstract

Stunting merupakan salah satu permasalahan gizi kronis yang masih menjadi tantangan kesehatan masyarakat di Provinsi Gorontalo, khususnya di Kelurahan Hunggaluwa, Kecamatan Limboto. Rendahnya asupan zat gizi makro dan mikro, terutama protein dan kalsium, menjadi faktor risiko utama terjadinya stunting pada anak. Program Kreativitas Mahasiswa bidang Pengabdian kepada Masyarakat (PKM-PM) ini bertujuan untuk memberdayakan kader Posyandu melalui peningkatan pengetahuan dan keterampilan dalam memproduksi cookies fortifikasi berbasis daun kelor (Moringa oleifera) dan tulang ikan lele (Clarias gariepinus) sebagai upaya pencegahan stunting dengan memanfaatkan bahan pangan lokal bernilai gizi tinggi. Metode pelaksanaan kegiatan meliputi tahap observasi, sosialisasi, pelatihan, pendampingan produksi, uji organoleptik, serta evaluasi peningkatan pengetahuan kader menggunakan metode pre-test dan post-test. Hasil kegiatan menunjukkan peningkatan pengetahuan kader sebesar 42% setelah pelatihan, disertai kemampuan kader dalam memproduksi cookies fortifikasi secara mandiri. Uji organoleptik menunjukkan bahwa produk cookies memiliki karakteristik sensori yang baik dengan tingkat penerimaan sebesar 85% responden. Selain meningkatkan kapasitas kader Posyandu, kegiatan ini juga berpotensi mendorong pengembangan wirausaha pangan lokal bergizi di masyarakat. Program ini diharapkan dapat menjadi model pemberdayaan kader Posyandu yang berkelanjutan dalam mendukung pencegahan stunting melalui inovasi pangan lokal dan edukasi gizi keluarga.Stunting is a chronic nutritional problem that remains a major public health challenge in Gorontalo Province, particularly in Hunggaluwa Village, Limboto District. Insufficient intake of macro- and micronutrients, especially protein and calcium, is a key risk factor for stunting in children. This Student Creativity Program in Community Service (PKM-PM) aimed to empower Posyandu cadres by improving their knowledge and skills in producing fortified cookies made from moringa leaves (Moringa oleifera) and catfish bones (Clarias gariepinus) as an effort to prevent stunting through the utilization of locally available, nutrient-rich food sources. The program methods included observation, socialization, training, production assistance, organoleptic testing, and evaluation of cadres’ knowledge improvement using pre-test and post-test assessments. The results demonstrated a 42% increase in cadres’ knowledge following the training, along with enhanced skills in independently producing fortified cookies. Organoleptic evaluation indicated that the developed cookies had favorable sensory characteristics, with an acceptance rate of 85% among respondents. In addition to strengthening the capacity of Posyandu cadres, this activity also has the potential to promote the development of community-based nutritious local food entrepreneurship. This program is expected to serve as a sustainable model for empowering Posyandu cadres in supporting stunting prevention through local food innovation and family nutrition education.

Abstract

Corn cobs and corn leaves (Zea mays L.) are abundant agricultural wastes with potential bioactive value. This study aimed to evaluate the extraction efficiency, phytochemical profile, and antioxidant activity of corn cob and corn leaf extracts obtained using solvents of different polarities, and to assess their relevance as supportive herbal resources for health promotion. Samples were extracted using ethanol, acetone, and n-hexane, followed by phytochemical screening and antioxidant evaluation using the DPPH method. The results demonstrated that ethanol extracts produced the highest yields and exhibited very strong antioxidant activity, indicated by low IC₅₀ values. These findings suggest that polar phytochemicals, particularly phenolic and flavonoid compounds, are the main contributors to the antioxidant potential of corn waste materials. Overall, this study provides scientific evidence supporting the valorization of corn agricultural waste as a sustainable source of antioxidant-rich herbal materials with potential relevance for oxidative stress management.

Abstract

This study aimed to evaluate the antioxidant activity of collagen extracted from catfish (Clarias sp.) using DPPH and ABTS assays. The research procedures included sample preparation, collagen extraction using an acid-based method, and antioxidant analysis at concentrations ranging from 20–100 ppm. The degree of hydrolysis (DH) was measured to determine the effectiveness of Alkalase in producing bioactive peptides. The results showed that higher enzyme concentrations led to increased DH, with the highest value of 62.42% obtained at 3% Alkalase. Antioxidant activity increased with sample concentration, with maximum inhibition values of 78.57% (DPPH) and 85.00% (ABTS) at 100 ppm. The ABTS assay exhibited higher sensitivity than DPPH. These findings indicate that catfish collagen has strong potential as a safe and natural antioxidant source suitable for further development in food, pharmaceutical, and cosmetic applications.
