Abstract

Peran dan partisipasi perempuan dalam pembangunan sangatlah penting. Tidak dapat dipungkiri peran perempuan dalam menjaga kestabilan perekonomian dan kesejahteraan keluarga sangatlah besar. Eksistensi perempuan dapat ditunjukkan dengan keterlibatannya dalam sebuah kelompok, diantaranya kelompok wanita tani (KWT). Di Kota Surakarta terdapat 65 KWT yang masih eksis dan aktiv, diantaranya adalah KWT Ngudi Makmur yang berlokasi di Kelurahan Joglo, Kecamatan Banjarsari. KWT Ngudi Makmur sudah menjalankan kegiatan di sektor pertanian sejak tahun 2018, dan terus berkembang, pada pertengahan tahun 2023 melakukan budidaya ikan lele sebanyak 2000 ekor. Budidaya ikan lele KWT Ngudi Makmur ini sudah disertifikasi oleh Dinas Perikanan Jawa Tengah untuk Cara Budidaya Ikan yang Baik (CBIB), namun demikian lele yang dihasilkan ketika dijual harganya belum bisa lebih tinggi dari harga lele di pasaran. Kondisi ini memotivasi KWT untuk mengembangkan usaha olahan ikan lele, diantaranya menjadi nugget dan bakso ikan. Pengabdian masyarakat ini dilaksanakan dengan tujuan meningkatkan pengetahuan dan ketrampilan KWT Ngudi Makmur dalam mengembangkan usaha pengolahan ikan lele. Hasil yang telah dicapai telah terlaksana kegiatan pelatihan pengolahan ikan lele menjadi nugget dan bakso, pendampingan pengembangan usaha dengan pemberian hibah alat, pendampingan produksi dan pemasaran sehingga meningkatkan nilai jual ikan lele serta mengoptimalkan peran KWT dalam meningkatkan kesejahteraan keluarga dalam penyediaan pangan bergizi dan pendapatan. This condition motivated KWT to develop a catfish processing business, including fish nuggets and meatballs. This community empowerment was carried out with the aim of increasing the knowledge and skills of KWT Ngudi Makmur in developing a catfish processing business. The results that have been achieved include training activities on processing catfish into nuggets and meatballs, business development assistance by providing equipment grants, production and marketing assistance. thereby increasing the selling value of catfish and optimizing the role of KWT in improving family welfare in providing nutritious food and income. Abstract

This study aims to develop a structural model to assess knowledge, attitudes, and COVID-19 preventive practices among food handlers (FH) and food delivery workers (FDW) in Greater Jakarta, Indonesia. Given the region's high population density, the risk of COVID-19 transmission is heightened, making preventive practices essential. Data were collected from 675 respondents using a questionnaire consisting of 36 items. The data were analyzed using partial least squares structural equation modeling (PLS-SEM). Results revealed that both knowledge (β= 0.959 for FH; β= 0.756 for FDW; p<0.05) and attitude (β= 0.546 for FH; β= 0.410 for FDW; p<0.05) positively impacted COVID-19 preventive practices. Attitude emerged as a crucial predictor, explaining a higher variance in FH prevention practices (R²= 0.346) than in FDW (R²= 0.174). The findings underscore the importance of strengthening attitudes toward preventive measures like hand washing, mask-wearing, and physical distancing, particularly among FDWs, to enhance safe food delivery practices. The structural model and insights provide a valuable framework for developing targeted interventions and strengthening public health preparedness for future pandemics or similar crises.

Abstract

Food safety culture (FSC) can be defined as how a group or organization of individuals achieve food safety in their thoughts and behaviors. Extending FSC implementation to downstream industries can assure quality and safety in the food supply chain. However, food distributors often lack a thorough understanding of good warehouse practices (GWP) and good distribution practices (GDP), even though both are essential to ensure the quality and safety of food. The inspection report by Indonesian Food and Drug Authority (Badan Pengawas Obat dan Makanan – BPOM) from 2017−2021, more than 30% of distribution facilities did not conform to the standard. This study evaluated employees' perception of FSC, analyze the Strengths, Weaknesses, Opportunities, and Threats of FSC implementation, and develop strategies for implementation in a food distribution company (PT XYZ). The research employed quantitative and qualitative methods. The quantitative study involved a questionnaire completed by 350 respondents, revealing that 82.13% of the employees perceived a positive perception of FSC. Meanwhile, the qualitative study included a focus group discussion with 21 informants, that identified key weaknesses and threats to FCS implementation. The Internal Factor Evaluation−External Factor Evaluation (IFE−EFE) analysis identified seven strengths, 11 weaknesses, seven opportunities, eight threats, and nine alternative strategies for the implementation of food safety culture at PT XYZ. The strategy with the highest total attractive score (TAS) of 6.91, based on quantitative strategic planning matrix (QSPM), was the periodic implementation of “Gemba program” to monitor food safety practices.

Abstract

Segara Anakan and its surrounding which is located in Cilacap Regency Central of Java, is the study area for this research. This region, like other estuaries, has a unique ecosystem which is protected and surrounded by the mangrove forest that can cause very dynamic development. In the upland, there are three big rivers flow; Citanduy, Cibeureum, and Cimeng. The main issue in this region is that the lagoon to become narrowing because of rapid sedimentation process. Landsat MSS, TM, and ETM of the years 1978, 1995, 1998, and 2003 are remote sensing data used in this research. An analysis in term of correlation between landuse/landcover changes and sedimentation was carried out by looking at their changes in the upper land especially along the rivers that have big contribution to the sedimentation in the lagoon. The result shows that there is high relation between landuse/landcover changes in the upper land and sedimentation around the lagoon.

Abstract

Teripang (Holothuria sp.) hidup di perairan Indonesia dan tersebar luas di daerah Perairan Papua. Teripang diperdagangkan dan diekspor dalam bentuk kering untuk dikonsumsi karena dipercaya mengandung senyawa bioaktif yang memberikan dampak positif bagi kesehatan. Proses pengolahan dapat memengaruhi karakteristik kimia dan potensi bioaktivitas pada suatu bahan pangan. Informasi mengenai pengaruh pengolahan teripang dari perairan Papua Barat terhadap karakteristik kimia dan aktivitas antioksidannya belum dilaporkan. Penelitian ini bertujuan untuk menentukan karakteristik kimia dan aktivitas antioksidan teripang segar dan olahannya secara tradisional. Sampel teripang segar disiapkan dengan membuang isi perutnya. Teripang rebus diolah dengan merebus teripang segar di dalam air laut selama 15 menit. Teripang asap yang diperoleh dari nelayan merupakan teripang segar yang telah direbus dalam air laut selama 1,5-2 jam, diasap selama 8 jam, dan dikeringkan di bawah sinar matahari selama 8 jam. Hasil identifikasi spesies menunjukkan bahwa teripang segar dan rebus yang diperoleh dari perairan Papua Barat adalah Holothuria atra, sementara teripang asap (Holothuria sp.) sulit diidentifikasi secara spesifik. Teripang mengandung kadar air 10-84%, protein 47-55%, lemak 3-4%, dan abu 27-35%. Kadar air, protein, dan lemak teripang mengalami penurunan setelah diberi perlakuan perebusan dan pengasapan; sedangkan kadar abu mengalami peningkatan. Hasil analisis antioksidan dengan metode DPPH menunjukkan bahwa teripang segar memiliki nilai IC50 189,3 mg/L, teripang rebus 58,36 mg/L, dan teripang asap 49,28 mg/L. Proses pengolahan teripang di Papua Barat mampu meningkatkan aktivitas antioksidan.

Abstract

Bacillus cereus is a heat-resistant spore-forming bacterium that has been linked to outbreaks of foodborne illnesses. Rendang is a traditional Indonesian food made from beef heated in coconut milk and seasoning consisting of various kinds of spices (bumbu rendang) which is thought to inhibit germination of bacterial spores. This research aimed to determine the fate of B. cereus spores during heating and storage of rendang. Spores of B. cereus were inoculated into rendang mixture (beef, bumbu rendang, coconut milk) and control (beef and coconut milk) to achieve a spore concentration of 5 log CFU/g. Rendang mixture or control was heated for 6 h to produce rendang with water content of 35.77% (db) and aw of 0.90. For storage study, rendang after heating was inoculated with 5 log CFU/g spores and stored at room temperature for 4 days. The number of total bacteria and spores was enumerated using total plate count (TPC) method. The number of B. cereus spores decreased during heating in rendang and control, but the decrease rate was slightly faster in rendang than that in control. At the end of heating, spores were reduced by 5 log cycles to <1 log CFU/g in rendang and control. The number of B. cereus spores in rendang and control decreased insignificantly during storage at room temperature. However, the total number of B. cereus in control showed an increase, suggesting possible germination, which was not observed in rendang. This research suggests that spices in bumbu rendang may contribute to inactivation of B. cereus spores during heating and inhibition of their germination during storage.

Abstract

Objective: The buffalo population in Indonesia has generally increased in the last decade except in some regencies. This is because the farming activity is majorly dominated by smallholder farmers. Therefore, this study aims to obtain information about the reproductive performance of buffalo cows in small farms at Sukoharjo Regency, Central Java, Indonesia. It was conducted from April-September 2021 using a total of 33 respondents with 62 buffalo cows spread in Tawangsari, Sukoharjo, Mojolaban, Grogol, Baki, and Kartasura.Methods: The research method used is a survey method with the technique of determining the location and sampling used is purposive sampling. The materials used were buffalo farmers as respondents spread across 6 sub-districts. Mating system was natural mating. The data was collected from this sample include gestational age, age at first calving, service per conception (S/C), calving interval (CI) and post partum mating. The data obtained are then recorded and tabulated for the calculation of the average and standard deviation which is then presented as a percentage based on each parameter.Results: The results showed that the average length of gestation was 324.2±29.0 days, age at first calving 3.7±0.9 years, service per conception 1.1±0.4 times, calving interval 467.1±85.8 days, and post-partum mating was 128.5±69.3 days.Conclusions: It can be concluded that the reproductive performance of buffalo cows in smallholder farms at Sukoharjo Regency is relatively good.
