Abstract

Reason for consumers to buy and consume honey as a health supplementBackground: During the COVID-19 pandemic, people believed honey was a supplement to increase body endurance. Research on consumer perceptions regarding specific health benefits has never been done. The market's production and demand for honey have not balanced, giving rise to the potential for selling fraudulent honey. It is necessary to identify the public perception regarding the health benefits of honey using one of the determinants of the theory of planned behavior and consumer knowledge regarding labels on honey products. Objective: This research was conducted to determine the factors related to consumer behavior in buying and consuming honey as a health supplement. Methods: Quantitative research using a cross-sectional survey design. Online data collection was done by distributing questionnaire links through social media in October-November 2021 in various regions of Indonesia. A total of 426 research subjects were selected using the accidental sampling technique. The data were analyzed using the Spearman correlation test. Results: Consumer knowledge about honey product labels is categorized as sufficient (48.13%) and less (44.12%). Gender and education were significantly related to the purchase of honey (p=0.0308; p=0.0101), and gender was associated with consumption behavior (p=0.0086). Perception of overall and specific health benefits (improves immunity, diabetes, cancer, heart, cough, and asthma, accelerates healing after illness, reduces the frequency of diarrhea, lower blood pressure, lower levels of fat and cholesterol in the body) were significantly related to the behavior of buying and consuming honey (p=0.0001). Knowledge is significantly related to honey consumption behavior (p=0.0363). Conclusion: Honey buying and consumption behavior in Indonesia is related to consumer perceptions of overall and specific health benefits. It is necessary to review honey labels currently on the market and increase consumer knowledge about honey product labels.

Abstract

Background: The prevalence of stunting in Yogyakarta province has decreased in 2022, although it hasn't reached the target of 14%. The Taburia supplementation program, implemented by the Indonesian government in 2010, aimed to address this issue, but its effectiveness remains a concern. Therefore, in 2017 jelly candy with fortification of Taburia and prebiotics fructooligosaccharides was developed as well as an organoleptic test in preschool and kindergarten children. Subsequently, in 2022, the production of the same jelly candy, named "Previmin" was upscaled and carried out in a factory. Production on a factory scale can change the nutritional contents and organoleptic properties of the product. Objectives: To evaluate the organoleptic properties, acceptability, and nutritional content of factory-scale "Previmin” jelly candy. Methods: This was true experimental study carried out in Kalurahan Sumberarum, Kapanewon Moyudan, Sleman District, Yogyakarta to evaluate the organoleptic properties and acceptability of jelly candy "Previmin'' on 59 toddlers. The production process was conducted by PT Natural Food Success, whereas nutritional content analysis was carried out in BBSPJIA Laboratory Bogor. Results: Based on organoleptic tests, the color, flavor, taste, and texture score were above 5 points hence respondents liked "Previmin”. As many as 75% of respondents could consume the product hence Previmin's acceptability was good. Nutritional content, heavy metals, and microbial count have good results and comply with SNI standards. Conclusions: Most toddlers like and can consume "Previmin” jelly candy. "Previmin” jelly candy contains a good source of macronutrients and micronutrients as well as has complied with SNI standards.

Abstract

Background: Globally, the incidence of stunting in children under five has declined over the past few decades. However, there are regional and in-country disparities. In Indonesia, the prevalence of stunting increased from 25.7% to 30.8% between 2013 and 2018. This upward trend is associated with negative consequences such as reduced academic potential, increased risk of noncommunicable diseases, increased healthcare costs, and reduced productivity. Maternal nutrition literacy is a contributing factor to stunting. Therefore, strengthening maternal nutrition literacy can help reduce stunting. Objectives: This study aims to examine the relationship between maternal nutrition literacy and maternal nutrition knowledge with the incidence of stunting in children under five. Methods: The literature search was conducted using databases, namely PubMed, Scopus, and ScienceDirect, and followed the Preferred Reporting Items for Systematic Reviews and Meta-Analyses (PRISMA) and Population, Intervention, Comparison, Outcome, and Study Design (PICOS) frameworks. Discussion: Only 13 out of 630 articles were eligible. Among them, four articles showed a significant correlation between nutrition knowledge and literacy with the incidence of stunting in lower-middle-income countries. In upper-middle-income countries, seven articles showed a significant correlation between nutrition literacy and knowledge with the incidence of stunting. Conclusions: There is a significant relationship between nutrition literacy and nutritional knowledge with the incidence of stunting. Nutrition literacy and knowledge can be related to infant and young child feeding, selection and preparation of nutritional and healthy foods, child growth and development, stunting prevention, access to health services, food security, and traditional food nutrition knowledge.

Abstract

Isoflavon merupakan kelompok senyawa isoflavonoid dengan fungsi fisiologis yang bermanfaat bagi tubuh manusia. Bioaktivitas fisiologis isoflavon berasal dari potensinya sebagai antioksidan dan fungsinya yang bermanfaat bagi kesehatan seperti antikanker, antidiabetes, dan antiinflamasi. Isoflavon dalam bentuk tak terkonjugasi atau aglikon dianggap lebih aktif daripada bentuk glukosida. Sprouting merupakan salah satu metode pengolahan untuk meningkatkan bioavailabilitas isoflavon dengan mengubah isoflavon dari glukosida menjadi bentuk aglikon. Pada penelitian ini profil isoflavon dan aktivitas antioksidan yang dipengaruhi oleh perkecambahan selama 48 jam dilakukan pada bagian kecambah yaitu kotiledon (KTL) dan hipokotil (HPL). Hasil penelitian ini menunjukkan bahwa bagian hipokotil mengandung isoflavon aglikon lebih tinggi daripada bagian kotiledon, terutama daidzein. Aktivitas antioksidan dilakukan dengan metode scavenging radikal DPPH (1,1-diphenyl-2-picrylhydrazyl) untuk ekstrak bagian kecambah seperti kotiledon dan hipokotil. Hipokotil memiliki kapasitas antioksidan tertinggi (nilai IC50 1839,113 ppm), yang secara signifikan lebih baik dari kotiledon dan memiliki perbedaan yang signifikan (p<0,05). Perkecambahan meningkatkan aktivitas antioksidan dan kadar isoflavon yang lebih tinggi di hipokotil, terutama untuk isoflavon daidzein.

Abstract

Anemia and stunting remain a major challenge in public health issues, especially in pregnant women and toddlers. Cucurbita moscatta ‘Butternut’ (Labu susu), which is rich in essential micronutrients uch as Beta Carotene (provitamin A), folic acid, iron, and zinc, can be processed into highly potent functional foods. Aside from being an excellent source of alternative carbohydrates, it can also meet the micronutrient needs to support the prevention of Anemia and stunting. This activity was carried out at the Community-Friendly Green Open Space (RTH - Ruang Terbuka Hijau) in the Bener sub-district, Tegalrejo district, Yogyakarta City, with the aim of analyzing the taste acceptability of processed bottle gourd products among the target groups. The implementation methods included socialization, taste testing, and acceptability analysis of three processed products based on Bottle Gourd: Nutrient-Rich Baby Porridge, High-Protein Mud Cake (Kue Lumpur), and Compote for Pregnant Women (Kolak Ibu Hamil). The activity involved 50 panelists who assessed the color, aroma, taste, texture, and overall acceptance of the three processed products using a six-level hedonic scale. The results showed that all three products were well-received. For all indicators ( Color, Aroma, Taste, and Texture), all products received scores above 4.6, and the overall acceptance was above 5. The overall acceptance score for the High-Protein Mud Cake (5.22 ± 0.6), the Kolak for Pregnant Women (5.18 ± 0.7), and Nutrient-Rich Baby Porridge (5.00 ± 0.8). The conclusion of this research is that panellists “like” and “accept / receive” all three products. This activity had a positive impact on increasing public knowledge regarding the diversification of local food and served as a strategic rocessed products; step in the effort to prevent anemia and stunting at the family level through the fulfillment of essential micronutrients.
