Abstract

Introduction: Food waste (FW) is a serious problem and significantly impacts the environment, economy, and social. Globally, the average FW reaches 121 kg/ capita/year, and households are the main contributors to FW. Several countries have implemented various strategies to prevent household FW. This review aims to explore the household FW prevention policies and their potential to be implemented in Indonesia. Discussion: Three strategies have been widely applied worldwide, including economic incentives, regulations, as well as FW awareness and behavior campaigns. In this case, the economic incentives include landfill tax, incineration tax, and Pay-As-You-Throw (PAYT). Many laws and regulations have been implemented related to waste management, food, economics, and those regulations are either directly or indirectly related to FW. The awareness and behavior change campaign is the most widely applied strategy to prevent household FW globally. Conclusion: Well-designed policies and regulations supported by education and awareness campaigns are the potential strategies for household food waste reduction and prevention in Indonesia.

Abstract

Abstrak: Kewirausahaan sosial penggerak PKK menentukan keberhasilan organisasi kemasyarakatan. Sampai saat ini, potensi PKK dengan kewirausahaan sosial yang dimiliki dikembangkan secara optimal. Tujuan pengabdian kepada masyarakat ini adalah mengidentifikasi potensi kewirausahaan sosial PKK, menganalisis peningkatan kewirausahaan sosial penggerak PKK dan meningkatkan pengetahuan mengenai pola hidup bersih dan sehat (PHBS). Kegiatan dilaksanakan di Kelurahan Kampung Kajanan, Buleleng, Bali mulai Juni sampai Oktober 2022. Pelatihan terhadap 25 orang Penggerak PKK dilaksanakan untuk meningkatkan pengetahuan, sikap, dan kemampuan mengenai peran PKK dalam pembangunan, kewirausahaan sosial, PBHS, menu bergizi, beragam, seimbang, dan aman (B2SA). Data mengenai PKK, kewirausahaan sosial, komunikasi efektif, dan menu B2SA dikumpulkan melalui pelatihan, pendampingan, dan observasi. Monitoring dan evaluasi dilakukan melalui pendampingan secara offline dan online. Hasil evaluasi memperlihatkan bahwa pengetahuan peserta tentang kewirausahaan sosial meningkat sebesar 72% dan pengetahuan peserta tentang PHBS dan menu B2SA meningkat sebesar 32%. Komunikasi antara pengurus dan anggota PKK semakin efektif. Unsur kewirausahaan sosial Penggerak PKK yang meningkat adalah rela berkorban, tekun, ulet, dan relasi sosial yang harmonis. Abstract: Social entrepreneurship is essential to support PKK program. To date, the PKK social entrepreneurship has not been considered as important for development. This paper aims to identify PKK social entrepreneurship potential, analyze the increase of the PKK social entrepreneurship, and knowledge about clean and healthy lifestyles (PHBS). The community services program was organized in Kampung Kajanan, Bali from June to October 2022. The training approach was applied to increase knowledge and attitude of PKK members on social entrepreneurship, PBHS, and nutritious, diverse, balanced, and safe menus (B2SA). Data was collected through pre-test and post-test, mentoring, and observation. The participants were 25 PKK members. Primary data was obtained from activities carried out during the program, including knowledge about PKK, social entrepreneurship, and the B2SA menu. The data were analyzed to see the intervention results. Monitoring and evaluation is carried out through consultation was conducted offline and online. The results show that there is an increase in knowledge about social entrepreneurship, the B2SA menu and communication. Social entrepreneurship of PKK is caring to others, responsible, and good social relations.

Abstract

Stunting is a condition in toddlers who experience failure to thrive due to chronic malnutrition which causes children to be shorter than their cohort. The Indonesian Ministry of Health's Basic Health Research in 2018 reported that the prevalence of stunting in the South Lampung Regency was above the WHO standard of 20%, although it decreased from 43.01% in 2013 to 29.08% in 2018. This study aims to identify spatial distribution pattern of stunting prevalence in the South Lampung Regency. The methods included Moran's Index, Moran's Scatterplot, Local Indicator of Spatial Association (LISA) and correlation analysis. The results showed that there was a spatial autocorrelation to the prevalence of stunting in South Lampung Regency with the spatial distribution pattern being clustered. The grouping of areas in the high-high (HH) cluster is mostly located in villages in Kalianda District with one of the contributing factors being the joint use of water from inappropriate sources. Clean water provision is expected to reduce stunting prevalence in the South Lampung Regency.

Abstract

Anemia pada anak sekolah masih menjadi masalah yang harus segera ditangani di Indonesia. Menurut laporan Riset Kesehatan Dasar (Riskesdas) 2013, prevalensi anemia untuk anak usia sekolah di Indonesia adalah 26.4%. Penelitian ini bertujuan untuk menentukan faktor-faktor risiko (karakteristik subjek, karakteristik keluarga, densitas protein dan asupan zat besi, kecukupan protein dan zat besi, frekuensi konsumsi pangan sumber heme, pola konsumsi enhancer dan inhibitor zat besi serta frekuensi sarapan) terhadap kejadian anemia. Desain penelitian yang digunakan adalah cross sectional yang dilakukan pada bulan Januari - Juni 2018. Penelitian ini dilakukan pada anak sekolah dasar kelas 4 - 6 di Temanggung. Sampel sebanyak 318 siswa dipilih menggunakan metode simple random sampling. Analisis data dilakukan secara univariat, bivariat dengan uji chi square dan multivariat dengan regresi logistik. Hasil analisis multivariat menunjukkan bahwa frekuensi sarapan, frekuensi konsumsi telur, frekuensi konsumsi hati ayam, dan konsumsi obat cacing merupakan faktor risiko terjadinya anemia pada anak sekolah dasar di Temanggung.

Abstract

Kota Bogor telah berhasil dalam percepatan penurunan prevalensi stunting (capaian di bawah target 10%) melalui program konvergensi Taleus Bogor. Pandemi COVID-19 menjadi tantangan dalam pelaksanaan intervensi spesifik dan terlihat pada realisasi capaian indikator pelayanan gizi dalam tiga tahun terakhir (tahun 2020 – 2022). Terdapat capaian indikator yang perlu ditingkatkan (realisasi capaian <95%), yaitu ibu hamil risiko KEK, persentase balita wasting, bayi usia < 6 bulan mendapat ASI Eksklusif, cakupan D/S, dan bayi dengan BBLR. Diperlukan strategi akselerasi pencegahan stunting berupa penguatan surveilans gizi, intensifikasi konvergensi program/kegiatan terkait intervensi sensitif oleh TPPS, peningkatan jumlah dan kapasitas tenaga pelaksana gizi (TPG), penguatan peran dan keterampilan kader.

Abstract

Food waste (FW) dalam 20 tahun terakhir semakin meningkat, Rumah tangga adalah kontributor terbesar FW. Tahun 2022 FW Kabupaten Bogor 77 kg/kap/tahun. Nasi, sayur, dan buah kontributor terbesar total FW. Kebijakan penurunan FW rumah tangga di Kabupaten Bogor perlu disusun dan dilaksanakan. Regulasi yang disusun dengan baik dapat mendukung keberhasilan kampanye kesadaran dan perubahan perilaku. Kedua upaya tersebut merupakan strategi yang potensial untuk pencegahan dan penurunan FW rumah tangga di Indonesia termasuk di Kabupaten Bogor.

Abstract

Background: Sustainable diets play a powerful catalyst in unlocking and scaling health and climate solutions. Many studies on the diets focus only on health and environmental concerns, but barely consider related socio-cultural and economic determinants.Objective: The present systematic review provides an overview of socio-cultural and economic determinants on sustainable diets across income countries.Methods: Electronic databases, including MDPI, PubMed, Science Direct, and The Lancet Planetary, were performed. The systematic review was conducted following the PRISMA principles. Human studies among all population groups in income countries were included, and require at least one socio-cultural and economic determinant on sustainable diet. The search focused on studies that were peer-reviewed and published in English between 2010 and 2024. The Newcastle-Ottawa scale and its modified version were used to assess the methodological quality (risk of bias).Results: Forty-two of the 2,443 articles identified attained the inclusion criteria. Almost all included studies were cross-sectional (n=39; 92.8%) and 3 cohort studies. The publications covered 56 country-based study settings, five of which were conducted as multi-site studies. Most studies focused on high-income countries, mostly in Europe, Central Asia, and North America. All included studies found 15 socio-cultural and economic determinants; 10 studies of socio-cultural determinants and 5 studies of economic determinants on sustainable diets. The systematic review found that socio-cultural and economic determinants on sustainable diets were divided into external drivers (ethnicity, gender, cultural belief, spiritual belief, geographical settings, political ideology, and food price) and personal drivers (educational level, nutritional knowledge, marital status, household size, income level, occupation, food expenditure, and household food security status).Conclusion: Addressing the social, cultural, and economic determinants is prerequisite for transforming more-sustainable diets. Food sustainability and food and nutrition security are aligned at the individual and household level. Comprehensive strategies targeting multiple levels, and multiple settings are required to enhance dietary changes on sustainable diets.Keywords: Determinant; economic; food choice; socio-culture; sustainable diets

Abstract

Penyuluhan merupakan upaya berencana untuk transformasi perilaku sekelompok orang di berbagai bidang pembangunan, termasuk pengetahuan dan kesadaran akan gizi berimbang dan pola hidup sehat. Penelitian ini bertujuan untuk menganalisis perubahan perilaku yang terjadi dalam hubungannya dengan implementasi penyuluhan sensitif gizi dan penerapan pola hidup sehat. Metode riset aksi diterapkan dengan melibatkan 30 Tim PKK Kelurahan Kampung Kajanan, Kecamatan Buleleng, Bali dan 26 partisipan penyuluhan kesehatan gigi dan mulut. Teknik wawancara mendalam, diskusi kelompok terfokus, dan penyuluhan interaktif dilakukan untuk memperoleh data. Data sekunder dikumpulkan melalui telaah dokumen yang relevan. Terdapat dua tipe kuesioner yang digunakan. Pertama, kuesioner mengenai perubahan pengetahuan mengenai pola hidup sehat, pengemasan produk Usaha Mikro Kecil Menengah (UMKM), promosi melalui sarana digital digunakan untuk memperoleh informasi dari 30 partisipan Tim Penggerak PKK. Kedua, kuesioner mengenai perubahan pengetahuan setelah 26 partisipan mengikuti penyuluhan kesehatan gigi dan mulut. Data kualitiatif dianalisis secara deskriptif, sedangkan data kuantitatif diolah menggunakan statistik deskriptif. Uji-t dilakukan untuk mengetahui tingkat signifikansi perubahan perilaku sebelum dan sesudah penyuluhan. Hasil penelitian memperlihatkan bahwa terdapat perubahan perilaku secara nyata sebelum dan sesudah penyuluhan sensitif gizi. Kesadaran masyarakat akan pola hidup sehat dan kesehatan gigi meningkat, begitu pula dengan minat melakukan promosi pemasaran produk melalui sarana digital. Keberlanjutan implementasi penyuluhan sensitif gizi, pola hidup sehat, dan peningkatan kapasitas UMKM memerlukan dukungan dana, sarana prasarana, pendampingan baik dari pemerintah maupun swasta.

Abstract

The study aims to analyze the relationship between economic and food consumption variables with stunting prevalence among Indonesian children. The unit of analysis for this cross-sectional study was secondary data set from 2019 for 34 provinces obtained from Statistics Indonesia, the Food Security Agency, and the Ministry of Health of the Republic of Indonesia. In the majority of provinces (88.24%) the stunting prevalence was still categorized as serious public health problem with the prevalence of 30% or higher. The economic outlook in 2019 showed an economic growth, decrease in Gini ratio and the unemployment rate in 34 provinces. However, the poverty rate was very diverse between provinces and concentrated in eastern Indonesia. There were 17 provinces that had higher food than non-food expenditures. There were 31 provinces with normal energy adequacy level and 28 with normal protein adequacy level. However, there was no provinces reached maximum score in Desirable Dietary Pattern (DDP) as the indicator for food diversity, signaling that none of the provinces achieved adequate diversity in food consumption in 2019. The multivariate linear regression with backward elimination technique showed that seven of independent variables were qualified for the final model with R2 of 0.7406. The three variables significantly correlated with stunting prevalence (p<0.05) were food expenditure, protein adequacy level, and DDP score. Hence, these variables can be categorized as causal factors for stunting at provincial level analysis which can feed the food and nutrition policy and its monitoring and evaluation strategy. However, further analysis is needed to determine the direct and indirect relationship between economic factors, food expenditure, and food consumption with the prevalence of stunting among children in Indonesia so that stunting prevention and alleviation programs can be more precise and optimal.

Abstract

The objectives of this study were to analyze the food security condition, to analyze the external and internal factors that affect food security and to formulate strategies for improving food security in Tangerang Selatan. The primary data was collected by conducting a focus group discussion and questionnaire filling with purposive sampling technique. Descriptive method on secondary data such as food availability was used to analyze the food security condition. Internal Factor Evaluation (IFE) matrix and External Factor Evaluation (EFE) matrix were used to formulate strategies. Strengths, Weakness, Opportunities, and Threats (SWOT) matrix was used to determine the alternative strategies and Quantitative Strategic Planning Matrix (QSPM) was used to determine among feasible alternative strategies. The results showed that the most important internal factor is commitment of the regional leader and the most important external factor is geographical location of Tangerang Selatan. The total weighted score IFE matrix of 2.86 is average and EFE matrix of 2.81 is above the average. The SWOT matrix showed that the government of Tangerang Selatan may need to “improve food availability” because of “food price volatility”. The QSPM sum total attractiveness scores of 3.76 indicate that the government of Tangerang Selatan should “improve triple helix relations among university, industry, and government” as the strategy to improve food security in South Tangerang.Keywords: EFE matrix, food security, IFE matrix, QSPM, SWOT
