Abstract

Posyandu is one of the Efforts the health community’s Power Stems (UKBM) which is managed and organized from, by, for and with communities in implementing health development. UKBM can empower communities and provide convenience to the public in obtaining basic health services to accelerate the decline in the death rate of mothers and babies. This research aims to know the mother’s knowledge, the relationship with the level of participation of the community in the village of Posyandu Baya Betung working area Pandan River Subdistrict health centers Tebelian Regency Sintang. This type of research is observational design with Cross Sectional (Pieces of latitude). The research was carried out in the village of Baya Betung working area Pandan Tebelian River Subdistrict health centers on December 29, s/d January 3, 2015. The respondents in this study were the mother of a toddler. How to use data collection interviews using questionnaire instruments. The results showed no relationship between mother’s knowledge (p = 0.05) with the level of participation of the community in the village of Baya Betung working area Pandan River Subdistrict health centers Tebelian Regency Sintang. It is recommended to provide guidance about the benefits to mother and toddler posyandu layout posyandu is close to the community.

Abstract

Keju merupakan makanan yang dihasilkan melalui proses koagulasi dengan bantuan bakteri ataupun enzim. Mahalnya bakteri dan enzim sebagai koagulan dapat digantikan dengan penggunaan sari jeruk lemon yang mengandung pektin. Penelitian ini bertujuan untuk mengetahui daya terima keju terhadap warna, rasa, aroma, dan tekstur keju subtitusi sari kacang hijau dan sari jeruk lemon sebagai koagulasi dengan konsentrasi yang berbeda.Jenis penelitian ini adalah eksperimen yaitu pembuatan keju subtitusi sari kacang hijau  untuk mengetahui daya terima panelis dengan uji friedman. Hasil penelitian uji organoleptik keju dengan subtitusi sari kacang hijau menyatakan bahwa ada pengaruh terhadap warna, rasa, aroma. Dari hasil penelitian uji organoleptik diketahui bahwa produk terpilih adalah keju subtitusi sari kacang hijau formulasi 37,5 % : 45 %. Dalam pembuatan keju subtitusi kacang hijau perlu penurunan komposisi dari sari lemon agar rasa tidak terlalu asam, serta perlu adanya peningkatan subtitusi sari kacang hijau agar kadar protein dapat tercapai dan perlu adanya pengujian zat gizi melalui uji laboratorium.

Abstract

Salah satu pemanfaatan limbah tempurung kelapa dengan menjadikan tempurung kelapa sebagai adsorben arang aktif. Arang aktif merupakan arang yang telah mengalami proses dengan pemanasan tinggi atau dengan direaksikan menggunakan bahan-bahan kimia, sehingga pori-pori yang dimiliki menjadi terbuka dan mampu menjadi adsorben atau zat penyerap pada permukaan. Tujuan dari penelitian ini adalah untuk mengetahui pengaruh adsorben arang aktif tempurung kelapa terhadap kualitas minyak goreng bekas berdasarkan uji kadar air dan indeks bias cahaya. Penelitian ini menggunakan Pre-Post Test design. Sampel adalah tempurung kelapa yang didapatkan dari penjual kelapa dan minyak goreng kemasan tropical yang dibagi menjadi 3 kategori, yang pertama minyak yang tidak mengalami proses pemanasan, ke 2 minyak B dengan 1 kali penggorengan dan minyak C dengan 3 kali penggorengan. Hasil penelitian terdapat perubahan kadar air pada minyak setelah diberi arang aktif tempurung kelapa minyak B 0,1% sudah sesuai dengan standar SNI sedangkan untuk minyak C 0,5% belum memenuhi standar SNI. Untuk rata-rata indeks bias setelah minyak diberikan arang aktif mendekati garis normal dan nilai indeks bias masih dibawah standar SNI. Terdapat pengaruh arang aktif terhadap kualitas minyak goreng bekas dengan adanya perubahan kadar air dan indeks bias cahaya pada minyak

Abstract

The right diet is needed in the treatment of Diabetes Mellitus. The dietary standards used must be by their nutritional adequacy. This study aims to determine the effectiveness of the use of aluminum cup serving tools for standard measuring devices in the Diabetes mellitus diet. The portion measurement instrument is designed by 1P, 1 1 / 2P, and 2P standards. The study was conducted at a laboratory scale in 2018 with a quasi-experimental approach. Data analysis uses Analysis of Variance (ANOVA) with α = 5%. The results show that the average effectiveness of 1P portion accuracy is 99%, 1½ P for 101%, and 2P about 99.6%. There was no difference in effectiveness compared to using a scale and there were differences in measurements using bowls and spoons. Standard portion of 1P measuring instruments 114% effectiveness bowl and 113% spoon, standard 1½ P portion for 107% bowl and 105% spoon, and 2P standard portion for measuring the effectiveness of the portion of the bowl is 104% and 103% spoon. Using a measuring device Aluminum cup portions, both 1P, 1.5P, and 2P parts can determine the value of food and nutritional adequacy standards of patients with Diabetes Mellitus.

Abstract

The present study aims to analyze of relationship of the implementation of balanced nutrition messages family and behavior family nutrition awareness with under five years child nutritional status in West Kalimantan Province. The study uses Health Research Data Base of West Kalimantan Province in year 2007 with the design of cross-sectional study. The total of 1992 household samples were recruited in the study with criteria having child aged 6 to 59 months. Weight for height, weight for age and height for age indicators were used to measure child nutritional status. The results showed that three messages did not meet criteria as required by the Indonesian Food Guideines. Three messages did not meet criteria as required by the Indonesian Food Guidelines. They were eat food withr energy needs requaired, eat half of food sources of carbohydrate for energy needs and eating one of  fourth of food sources of fat for energy needs. Logistic multiple regression analysis showed that failure to follow the the Family Nutrition Awareness had 1.21 risk for children to became stunting than family to follow to guideline properly.

Abstract

The present study aims to analyze of influence maternal education to under five years-old children in West Kalimantan Province. The study uses Health Research Data Base of West Kalimantan Province in year 2007 with the design of cross-sectional study. The total of 1992 household samples were recruited in the study with criteria having child aged 6 to 59 months. Weight for height, weight for age, and height for age indicators were used to measure child nutritional status. The results showed that Logistic multiple regression analysis showed that maternal education under level of junior high school had 1.28 risk for children to become stunting and 1.27 risk for children to become underweight than maternal education level of above junior high school.

Abstract

Stunting occurs in a chronic small intestinal inflammation syndrome, called pediatric environmental enteropathy, resulting in increased intestinal permeability and the entry of immune cells into the intestinal epithelium. The purpose of this study was to study the types of prebiotic food formulas and their effects on LAZ in stunting children. This type of research is a quasi-experimental design with a pretest-posttest control group design. Held in Sei Ambawang District, Kubu Raya Regency 2019. Samples of stunting children aged 12-24 months were 40 children. The sampling technique was used for purposive sampling. The intervention given is prebiotic formula food given for 30 days. Data processing for LAZ, nutrient intake, and t-independent test statistical analysis each using WHO Anthro 2005, Nutri survey, and SPSS software. The results showed there were differences in LAZ before and after in the group given MF-2 food formula in stunting children (p= 0,034), whereas in the group who received MF-1 showed no difference (p= 0,114). Based on LAZ differences between the two groups after the intervention with independent t-test did not show significant differences (p > 0,05). In conclusion, MF-1 and MF-2 did not differ in increasing LAZ in stunting children, but each group showed MF-2 had an effect on increasing LAZ.

Abstract

Remaja adalah orang muda yang berusia antara 10-19 tahun. Masa remaja merupakan masa peralihan yang mulai berpikir kritis, namun masih dipengaruhi oleh kondisi emosi yang masih labil. Remaja mulai mencari perhatian dalam lingkungannya sebagai upaya mendapatkan status dan peranan. Masalah gizi pada remaja muncul dikarenakan perilaku gizi yang salah, yaitu ketidakseimbangan antara konsumsi gizi dengan kecukupan gizi yang dianjurkan. Salah satu faktor determinan status gizi adalah faktor kebiasaan makan pada diri seseorang dan lingkungan sekitarnya.Tujuan penelitian ini untuk mengkaji beberapa hasil penelitian dan jurnal-jurnal dengan tema hubungan aktivitas fisik dan pola makan terhadap status gizi pada remaja. Penelitian ini merupakan penelitian kualitatif dengan metode literature review yang menekan pada ulasan rangkuman dan pemikiran penulis tentang beberapa sumber pustaka. Penelitian menunjukkan bahwa adanya hubungan aktivitas fisik dan pola makan terhadap status gizi pada remaja. Remaja diharapkan lebih memperhatikan lagi pola makan dan aktifitas fisik supaya tidak mempengaruhi status gizi.

Abstract

Nutritional problems are still a serious impact on the quality of human resources in Indonesia, especially the problem of double nutrition in children under five. Underweight is one of the serious nutritional problems that need to be addressed in addition to stunting. The handling of undernourished children under five is done by providing additional food (PMT). One of the local ingredients that can be made is dry noodles, which are high in micronutrients. Making noodles can be modified from local ingredients, including yellow sweet potato where sweet potato (Ipomoea batatas L) is a type of tuber that has many advantages. Noodles can be enriched with nutrients by adding micronutrients sourced from local peatlands, namely snakehead fish and red ferns. Snakehead fish has a protein content of 25.2%, and contains albumin 62.24 g/kg (6.22%). While the red fern contains the minerals Calcium and Iron 291.32 mg per 100 mg of material, allowing it to prevent anemia. This study aims to determine the Substitution of Noodles Source of Micronutrients Local Food Ingredients on Peat Land on Nutritional Quality and Acceptability of Underweight Toddlers Age 24-59 Months in the District of Rasau Jaya. The design of this research is pure experimental (true experiment. The number of panelists is 30 people. Statistical test using Friedman statistical test to analyze the differences in substitution of yellow sweet potato, snakehead fish and red fern on organoleptic quality (color, taste, aroma, and texture). Test results acceptability based on the average amount according to color, aroma, taste, and texture on dry noodles as a whole obtained the highest results in treatment 1, namely F1 with a total of 451. The best value was obtained in treatment P1, where the best treatment was the treatment with the highest NP value, namely P1 of 0.78 with the following characteristics: color 3.83 (somewhat like), aroma 3.97 (somewhat like), taste 3.53 (somewhat like), texture 3.53 (somewhat like), Like) Friedman test results showed that there was no effect of the addition of yellow sweet potato, snakehead fish extraction and red fern extraction on d I accept the color, taste, aroma and texture of dry noodles.

Abstract

Sambas merupakan salah satu kabupaten di Provinsi Kalimantan Barat memiliki berbagai masalah kesehatan, salah satunya terjadinya stunting pada balita. Penyebab stunting menurut hasil evaluasi program Kemeterian Kesehatan adalah praktek pengasuhan yang kurang baik, masih terbatasnya layanan kesehatan termasuk layanan ANC-Ante Natal Care (pelayanan kesehatan untuk ibu selama masa kehamilan) Post Natal Care dan pembelajaran dini yang berkualitas, masih kurangnya akses rumah tangga/keluarga ke makanan bergizi, dan kurangnya akses ke air bersih dan sanitasi. Tujuan penelitian mengetahui hubungan ketersediaan bahan pangan, praktik pemberian makanan, hygiene sanitasi lingkungan dan asi eksklusif terhadap kejadian stunting di wilayah perbatasan dan kepulauan kabupaten sambas. Metode penelitian studi case control, populasi adalah balita usia 24-59 bulan dan sampel sebanyak 200 orang. Lokasi penelitian di kabupaten Sambas. Hasil penelitian tidak ada hubungan yang bermakna (p≥0,05) antara IMD dengan kejadian stunting di wilayah dataran tinggi, sedangkan wilayah pesisir terdapat hubungan yang bermakna (p≤0,05). tidak ada hubungan yang bermakna (p≥0,05) antara praktik pemberian ASI dengan kejadian stunting baik di wilayah dataran tinggi maupun di wilayah  pesisir. tidak ada hubungan yang bermakna (p≥0,05) antara praktik pemberian makan dengan kejadian stunting baik di wilayah dataran tinggi maupun di wilayah  pesisir. Kesimpulan Tidak ada hubungan antara IMD, ASI ekskluif dan Praktik Pemberian makanan dengan kejadian stunting baik di wilayah dataran tinggi maupun di wilayah  pesisir.
