Abstract

In this activity, food safety outreach was carried out regarding the use of cooking oil for repeated frying. Cooking oil is a triglyceride compound which has a high boiling point. The use of cooking oil in society is often used repeatedly. This means that the chemical content in cooking oil can undergo oxidation and hydrolysis processes so that the quality of the oil becomes damaged. The formation of peroxide compounds means that oil will become a precursor to the formation of an unhealthy condition for those who consume it. Therefore, this socialization was carried out to increase public knowledge. The socialization activities were carried out during real work lecture activities for Andalas University students for the 2023 period. The socialization was carried out using the lecture and question and answer method. As a result of this activity, it is known that there has been an increase in community knowledge, which is indicated by the establishment of very good communication activities between the community and the real work lecture team from Andalas University. It is hoped that this activity will be carried out again with a different food safety topic.

Abstract

Community Service Program-Community Empowerment Learning (KKN-PPM) is one of the activities that must be carried out because it is one of the requirements for student graduation as an Andalas University student. This Community Service Program (KKN) is carried out one of which aims to advance education and student welfare at various levels. The programs carried out are socialization, introduction, and preparation of students to face college entrance exams, socialization to students in elementary schools about the impact of playing excessive cellphones and helping elementary school students in the preparation of Marching Band for the celebration of Independence Day on August 17, 2023. This initiative not only engages students in arts and culture, but also strengthens the spirit of patriotism and patriotism among students. Overall, the KKN program is an effective instrument in supporting student development in various aspects, making it one of the valuable assets in the world of Indonesian education, especially in Nagari Batahan, Ranah Batahan District, West Pasaman Regency.

Abstract

The "Ideals and Hands of Hope" Workshop program was designed to provide 6th grade students of SDN 02 Sungai Tanang with an understanding of the importance of having goals. This workshop, entitled "The Importance of Ideals and Hands of Hope," aims to remind students of the urgency of having ideals and hopes as a guide in life. Goals not only provide focus, but also give meaning to every step of life. Through interactive activities, students will express their ideals, forming commitment and hope for a better future. The "Ideals and Hands of Hope Workshop" program is intended to provide education on the significance of having ideals in life through interactive and fun activities. The students will be asked to put paint on their palms, then stick them back onto a white cloth or banner by writing their names, goals, and ages. This is considered a commitment and hope for the future. By using this creative approach, it is hoped that students will be able to stimulate positive thinking towards their dreams and life goals.

Abstract

This community service activity aims to assist rendang business actors who are members of IKABOGA in Padang City in determining the heat adequacy number (F0) in the sterilization process of packaged rendang. Determining the correct F0 number is very important to ensure food safety, extend product shelf life, and maintain rendang quality. Assistance methods include theoretical training, F0 calculation simulations, sterilization practices, and preparation of Standard Operating Procedures (SOPs). The results of the activity showed an increase in business actors' understanding of the F0 concept, as well as the implementation of a more measurable and safe sterilization process. Laboratory tests showed that rendang products sterilized with the appropriate F0 value were proven to be free from pathogenic microorganisms, while the quality of taste, texture, and aroma were maintained. This activity is expected to help business actors improve product quality and competitiveness, and comply with applicable food safety standards.

Abstract

Utilizing limited land for agricultural activities in urban areas is an effective alternative solution in providing healthy food for families, while reducing household costs. Aquaponic systems, which integrate fish and plant farming in a mutually beneficial recirculating ecosystem, utilize natural bacteria to convert fish waste and feed residues into nutrients for plants. Thus, aquaponics allows plants and fish to grow together in one cycle, maximizing the use of a small area of land. This service activity aims to help the Women Farmers Group (KWT) find the right solutions and strategies in overcoming the problem of limited land. One of these efforts is the creation of an innovative device in the form of a simple aquaponics system for the Jirak Serumpun Women Farmers Group, using the Deep Flow Technique (DFT) method. The aquaponics program implemented in Mata Air Village, Padang Selatan Sub-district, Padang City, has had a positive impact on the community. This training not only provides economic and social benefits, but also offers an effective solution in utilizing narrow yards productively and economically.

Abstract

Indonesia has great potential in the fisheries sector, especially in processing tuna fish which has high economic value. However, most of the products are still marketed in the form of raw fillets without further processing. This study aims to analyze the financial feasibility of developing tuna fish sauce products using crude bromelain enzyme as a fermentation catalyst. This study uses a financial analysis approach with the Net Present Value (NPV), Internal Rate of Return (IRR), and Payback Period (PP) methods to assess business profitability. The results of the analysis are expected to provide a comprehensive picture of the potential added value, cost efficiency, and business prospects of this fishery product diversification. Thus, this study can be an important reference in making investment decisions in the fishery product processing sector.

Abstract

Corn drying is a crucial process in maintaining the quality of the harvest and reducing the risk of contamination by fungi. Traditional drying methods that rely on sunlight often have constraints on efficiency and quality of results. Solar dryer technology is present as an innovative solution that is more effective and environmentally friendly. This activity aims to evaluate the effectiveness of solar dryers in the corn drying process in Aur Serumpun Farmer Group, Simpang Village, Pasaman Regency. Evaluation methods include measuring water content before and after drying, time efficiency analysis, and farmer satisfaction surveys. The results of the activity showed that solar dryers were able to reduce the water content of corn to <14% in a shorter time compared to conventional methods. In addition, farmers reported labor efficiency and improved crop quality. Thus, solar dryers can be adopted as an alternative technology to improve agricultural productivity and sustainability

Abstract

Oral health is an important aspect in maintaining children's health, especially during their growing years. Dental health problems, such as cavities, are still often found in children in Indonesia, which basically arise due to a lack of knowledge and proper brushing habits. This study aims to increase the awareness and understanding of students of SDN 08 Padang Sago regarding the urgency of maintaining oral health through educational activities. The program included the delivery of information about oral hygiene, demonstration of how to brush teeth properly, and tooth brushing practice accompanied by KKN UNAND students. The results of the training showed that about 80% of the students initially did not understand the importance of oral health, but after attending the counseling, they were able to understand and practice the correct way to brush their teeth. This program is designed to be an effective starting point in instilling healthy habits in caring for teeth and mouth from an early age. It is also suggested that this activity be continued so that it becomes a habit for students to take care of their dental health regularly

Abstract

This study aimed to develop an IoT-based data logger prototype to improve data acquisition and monitoring during the sterilization process. Achieving an adequate heat sufficiency value, commonly known as the F0 value, was crucial for effective sterilization, and a thermocouple sensor was typically employed for temperature recording. The research involved designing, constructing, and testing the prototype with a focus on enhancing durability and functionality. Key improvements included adding waterproof sealants to prevent leakage, integrating connectors for enhanced connectivity, and coating the sensor's connector end to ensure long-term performance. Performance evaluation compared the improved IoT data logger with a conventional data logger in terms of heat penetration measurement. Results showed that the IoT prototype recorded heat penetration data with comparable accuracy to the conventional system, confirming its reliability for practical application. The bias for the difference was less than 10%. This innovation demonstrated the potential for improved monitoring in sterilization processes, contributing to enhanced process control and product safety.

Abstract

Kegiatan pengabdian kepada masyarakat ini bertujuan untuk meningkatkan keterampilan serta pendapatan anggota Kelompok Wanita Tani (KWT) di Kelurahan Mata Air melalui pelatihan pembuatan produk olahan berbasis ikan nila, yaitu nugget ikan. Permasalahan utama yang dihadapi oleh kelompok mitra adalah belum optimalnya pemanfaatan hasil panen dari kegiatan budidaya ikan nila serta masih terbatasnya pengetahuan dan keterampilan dalam mengolah hasil panen menjadi produk yang bernilai ekonomi tinggi. Oleh karena itu, kegiatan ini dirancang untuk menjawab kebutuhan mitra melalui pendekatan pemberdayaan yang aplikatif dan berkelanjutan. Metode pelaksanaan kegiatan terdiri dari beberapa tahapan, yaitu sosialisasi program kepada anggota KWT, pelatihan teknis pembuatan nugget ikan nila, pendampingan dalam proses produksi, serta evaluasi dan monitoring hasil kegiatan. Hasil pelatihan menunjukkan adanya peningkatan signifikan dalam pemahaman dan keterampilan anggota KWT dalam mengolah ikan menjadi produk siap konsumsi dengan cita rasa yang baik, dan potensi pasar yang menjanjikan. Kegiatan ini tidak hanya meningkatkan kapasitas individu, tetapi juga memberikan dampak positif terhadap pemberdayaan ekonomi perempuan, memperkuat ketahanan pangan keluarga, serta membuka peluang wirausaha baru berbasis potensi lokal yang berkelanjutan. Kata kunci: Pemberdayaan perempuan, Kelompok wanita tani, Ikan nila, Produk olahan, nugget ABSTRACT This community service activity aims to improve the skills and income of members of the Women Farmers Group (KWT) in Mata Air Village through training in making tilapia-based processed products, namely fish nuggets. The main problem faced by the partner group is the suboptimal utilization of harvests from tilapia cultivation activities and the still limited knowledge and skills in processing the harvest into products with high economic value. Therefore, this activity is designed to address the needs of partners through an applicable and sustainable empowerment approach. The implementation method of the activity consists of several stages, namely program socialization to KWT members, technical training in making tilapia nuggets, assistance in the production process, and evaluation and monitoring of activity results. The training results showed a significant increase in the understanding and skills of KWT members in processing fish into ready-to-consume products with good taste, and promising market potential. This activity not only increases individual capacity, but also has a positive impact on women's economic empowerment, strengthens family food security, and opens up new entrepreneurial opportunities based on sustainable local potential
