Abstract

Calcium is an essential micronutrient for children to the postmenopausal women. In practice, consumption of calcium-rich foods sourced from animal protein foods for family members, especially children, is still low. Egg shells contain calcium which can be fortified into nuggets to produce calcium-rich nuggets. Thus, the high benefits of egg shells will be obtained and reduce the negative environmental waste impact. Kota Baru Village, Geragai Subdistrict, Tanjung Jabung Timur Regency was chosen as the location for community service because apart from being an UNJA’s integrated laboratory village, this area is one of the location for stunting reduction in Jambi Province. This community service project has target of producing nugget products with the addition of egg shell flour, as well as increasing the knowledge and skills of village business group members. Evaluation of participants' knowledge and skills was carried out using pre-test and post-test questionnaire and checklist of nugget-making procedures. The results of this community service showed that there was a difference in 10 participants' knowledge compared to before the training (test score from 72 to 88). The hedonic test showed that more participants really liked the eggshell and carrot nuggets formulation in terms of smell, texture, and taste. Processing of nuggets with the addition of eggshell flour can be an alternative local food source of animal protein which is also of economic value.

Abstract

The acceleration of stunting reduction is stated in the Perpres No. 72 Tahun 2021. Jambi Province has prevalence of stunted toddlers as 22.4%. Kerinci Regency has been stated as the second highest prevalence of stunted toddler in Jambi, namely 26.7%. The risk factors for stunting are closely related to fulfilling optimal nutrition during pregnancy, breastfeeding and children under two years of age (First 1000 Days of Life). Fulfillment of nutrition comes from availability and access to nutritious food. The aim of this community service activity is to provide DASHAT (Healthy Kitchens Overcoming Stunting) assistance based on family farming in Jujun Village, Kerinci with the target group is the First 1000 Days of Life, namely pregnant women, breastfeeding mothers and toddlers. This activity includes: (1) FGD (Focus Group Discussion) integration of DASHAT and family farming as a solution to overcome stunting; (2) Education of DASHAT implementation sourced from family farming; and (3) Demonstration of local food menu processing from animal protein foods. The community service activities which has been implemented is capable to increase the understanding of TP-PKK cadres in the application of DASHAT (test score increase of 6.7 points) and demonstrate the processing of local food menus to prevent stunting, like gulai ikan sebarau.

Abstract

Optimal early childhood growth and development will determine their health status in the future. Implementing Integrative Holistic Early Childhood Education (PAUD-HI) is an effort to optimize children's growth and development by paying attention to various children's characteristics. Apart from that, implementing balance diet in early childhood is expected to be able to establish optimal nutritional status in children. PAUD Group 2 Bungo Selango, located in Sungai Gelam District, Muaro Jambi Regency, has not implemented PAUD-HI optimally due to various risk factors. Kindergarten teachers have never received early childhood balance diet education. This community service activity aimed to optimize the implementation of PAUD-HI and implement balance diet in PAUD Group 2 Bungo Selango. In this community service activity, they are given health education and demonstrations related to the application of balance diet in holistic and integrative kindergarten learning. The results of community service activities showed that there is an increase in target’s knowledge before and after being given education which is not significantly different (Sig.>0.05). It is necessary to get used to implementing balance diet (consuming variety of foods, physical activity, clean and healthy lifestyle, and controlling ideal body weight) in holistic and integrative kindergarten learning.

Abstract

Optimal children’s nutritional status is an indicator of achieving child growth according to their age. Optimizing nutritional status is supported by providing nutrition intake to meet children's daily nutrition needs. Kindergarten students need  nutritionally, healthy and safe food. Providing balanced nutritious food supplies for kindergarten students requires knowledge, attitudes and good practices from parents, as well as implementation of nutritionally balanced meal that are integrated into the kindergarten learning curriculum from the school. Harapan Bunda Kindergarten, which is located in Talang Belido Village, Sungai Gelam District, Muaro Jambi Regency, has never received nutrition promotion regarding the nutritious food for kindergarten students. The food supplies for kindergarten students brought by their parents also do not implement balanced diet. This community service activity aimed to organize nutritional promotion of balanced nutritious food to optimize the nutritional status of kindergarten students with the targets are teachers and parents. The results of community service activities showed that there is an increase in target’s knowledge before and after being given education which is not significantly different (Sig.>0.05). It is necessary to get used to implementing balance diet on children's meal which contain carbohydrate foods, protein foods, vegetables, fruit, and drinking water consumption (1200-1500 ml per day)..
