Abstract

Chicken meat is perishable food so it has a short shelf life. Nowadays, it has emerged Smart packaging equipped with smart label. Smart label based on extract anthocyanin purple sweet potato is solution to be used a determination the level of chicken meat freshness. The purpose of this study was to develop a smart label prototype based on anthocyanin extract and to determine its feasibility to determine the level of chicken meat freshness. Extract purple sweet potato anthocyanin was obtained by maceration method using methanol 96% solvent acidified with HCl 1%. The results of the anthocyanin extract had a pH of 5.58 ± 0.013 and value of anthocyanin 62.79 ± 0.558 mg / 100 g. The smart label shows the level of the chicken meat freshness  with a change in color, where the purple color indicates the fresh chicken meat, the faded purple color indicates that the chicken is stay fresh, and the bluish purple smart label indicates the chicken is not fresh. The results of the feasibility of smart labels on pH stability experienced a color change in both acidic and alkaline situations, but were more stable in acidic conditions.

Abstract

Labu kuning LA3 adalah labu unggul hasil penyilangan yang karakteristiknya mudah rusak selama proses penyimpanan. Salah satu alternatif untuk memperpanjang masa simpan adalah mengolahnya sebagai chip atau irisan kering. Tujuan penelitian ini untuk mengetahui pengaruh konsentrasi vitamin C dan suhu pengeringan terhadap karakteristik mutu fisik dan kimia chip labu kuning. Percobaan menggunakan Rancangan Acak Lengkap (RAL) dengan dua faktor yaitu konsentrasi vitamin C (0,4%, 0,5%, dan 0,6%) dan suhu pengeringan (40oC, 50oC, dan 60oC). Chip labu kuning yang dibuat dengan perbedaan konsentrasi vitamin C dan suhu pengeringan memberikan pengaruh yang nyata terhadap nilai rendemen, higroskopisitas, kecerahan, kadar air, kadar vitamin C, dan kadar beta karoten. Produk chip labu kuning LA3 terbaik adalah produk yang dibuat dengan dengan konsentrasi vitamin C 0,5% dan pengeringan dengan suhu 40oC. Chip labu kuning yang menghasilkan karakteristik mutu terbaik dari perlakuan yang ada, memiliki karakteristik nilai rendemen sebesar 5,48%; higroskopisitas 12,79 %, kecerahan 94,27, kadar air 11,49 %, kadar vitamin C 2,47 %, dan kadar beta karoten sebesar 13,20 mg/100 g bahan.

Abstract

The availability and price of animal feed have become big obstacles in developing animal husbandry, especially for broiler chickens. Broiler chicken requires more than 40 chemical ingredients for its feed supplementation by protein content of 19.5-21%. A strategy could be conducted by combining tofu solid waste and rice bran as the main ingredients in animal feed production. Tofu solid waste and rice bran showing the protein content of 17.4% and 12%, lipid content of 5.9% and 12.1%, and crude fiber content of 16.8% and 13%, respectively. The utilization of those components fulfilling the necessity of animal feed. They also have a relatively cheap price and easy to obtain, so they are highly potential to be used as substitution for animal feed. Partners in this program were two chicken farmers (Firqin Fatahillah and Miqdad Mauladi) located in Tlogosari village, Tlogosari sub-district, Bondowoso regency. The problems coped by the farmers were : (a) a high price of animal feed which resulting in the low value of benefit, (b) the minimal processing method of excrement of chickens, (c) the high risk of production of chicken broiler threathened by some diseases and price fluctuation. The solution for those problems were (1) the application of science and technology in the production of fermented animal feed made from tofu solid waste and rice bran, (2) the application of zero waste principles, (3) the application of risk management.

Abstract

Plastic waste into one of global-scale environmental problems. Types of plastic in circulation in the community is a synthetic plastic from raw petroleum are limited in number, could not be renewed, and the synthetic plastic raw material petroleum difficult degraded by microorganisms or difficult overhauled in biodiversity (nonbiodegradable) thus leading to a buildup of plastic waste which have an impact on environmental pollution so that required the development of plastic that is environmentally friendly and sustainable, known as bioplastic (biodegradable plastic). The research method used was experimental research methods using different treatment. Treatment 1 uses only the base of cassava starch as control (P0), treatment of cassava starch base material 2 added powder tobacco stem 1 gram (P1), treatment of cassava starch 3 basic ingredients added to tobacco stems 2 grams of powder (P2). This research aims to test the ability of biodegradable film bioplastic produced with the help of bacteria EM4. From the test results obtained that the film made from bioplastic starch cassava powder tobacco stem with the addition of biologically degraded on the 6th day.

Abstract

Wheat flour is the raw material that often used by food industrial. Small and Medium Entyties has a significant contribution to Indonesian economy growth. Common problems faced by SMEs is often the price fluctuations of wheat flour and difficult to obtain wheat flour sustainability as raw material by affordable price, so it must be made supply chain management of wheat flour to handle the problems in order to increased of SMEs based wheat flour. The aim of this research is to analyze the supply chain system of wheat flour, analyze strengths and weaknesses in the supply chain, formulated supply chain strategy of wheat flour to increase the competitiveness of SMEs based wheat flour in Jember. This research was conducted in three stages, namely preliminary stage through literature, alternative determination stage using SWOT and strategy selection stage using AHP. The results is a good strategy to increase the competitiveness of SMEs based wheat flour in Jember is to increase the productivity of SMEs based wheat flour.Keywords: supply chain, wheat flour, Small and Medium Entyties (SMEs) based wheat flour, SWOT, AHP

Abstract

Opaque soap is a solid soap product. It was made from a mixture of oil and the addition of alkaline compounds to form a saponification process. Solid soap preparations made with the addition of tobacco extract as an active ingredient that contains nicotine compounds, which include toxic alkaloids are weakly basic. In addition, tobacco extracts chosen to produce products that were beneficial to society. The purpose of this study was to provided wider use of tobacco and to know the characteristic of opaque soap preparations with the addition of tobacco extracts. The research method was a single completely randomized design (CRD) with descriptive analysis. In this study, the formulas of opaque soap were A0 (no addition of tobacco extract), A1 (1.2 g of tobacco extract), A2 (2.4 g of tobacco extract), and A3 (4.8 g of tobacco extract). The observed parameters were chemical and microbiological characteristics. All variations of opaque soaps had a pH of 9.51-9.77, water content of 13.15%-14.35%, free alkali 0.056-0.0584, antibacterial (E. coli inhibition zone proved by clear zone) about 8.60-21.50 mm; and nicotine levels 0-383.67 mg/100g. From the results due to chemical and microbiological characteristics, all of the opaque soap with additional tobacco extract was in accordance with the Indonesian National Standards (SNI 3532-2016) so that soap was safe for use by the public. Abstract

Agroindustry is an industry that processes agricultural products from raw materials. Agroindustry increase the added value of agricultural commodities. Virgin coconut oil (VCO) product have high economic value because it has many benefits for health and beauty care as well. One of the industries processing coconut into a VCO product in Jember on an SME (Small Medium Enterprises) scale is located in Sukorejo, Jember Regency. The economic feasibility showed that its VCO industry business had a positive NPV. The BC Ratio value less than 1, which means that cash in flow was bigger than cash out flow, in the present value called Break Even Point (BEP), that is, total cost equals total revenue. IRR value that is generated is greater > 6% loan interest, and the last payback period (PBP), which is produced shows the value (less than) <10 years. In accordance with the specified time period of 5 years and 4 months. From the results of the analysis, it can be said that the VCO industry in Sukorejo, Sumbersari District was feasible to do. Abstract

PT. J.A. Wattie is local plantation which process robusta coffee in Jember. The main problem of Indonesian coffee is quality, which can not fulfill the requirement of international market quality. The several factors that influence coffee quality are harvest, sanitation, productionprocesses, place and equipment. Statistical quality control is method to control production process stability, where PT. J.A. Wattie did not apply in coffee productionprocess. The objectives of this research are identify quality output at each stage of processes; observe the correlation of production process and coffee quality based on statistical quality control.Grading and hulling processes according to control chart showed that the process was under control because data plot to be present in interval upper and lower control limit. Pulping and washing processes were out of control because some data plot to be present in outside of upper control limit or lower control limit.Washing process showed other pattern because more than four (4) data make increasing or decreasing pattern. Increasing or decreasing patterns can be indicator of abnormality processes. Abnormality of washing and pulping processes were resulted from the pulper and washer. The rare maintance of pulper and washer can be factor that makes abnormality process.Keywords: coffee, robusta, quality, statistical quality control

Abstract

Seaweed (Eucheuma cottonii) is sea commodities that processed become various food products. Based on this fact, it needs to be explored, especially product with high added value, practice, and was be like by people. Seaweed product that explored in this research is seaweed dodol. The research point is to determine the composition of seaweed dodol with high quality, which are to study the effect of coconut milk and sugar and then economic analysis. The result showed that addition of coconut milk was not give effect on moisture content, Aw, pH and hardness of seaweed dodol. Otherwise, the addition of sugar was significantly affected on Aw, pH and hardness of dodol. Sugar was not significantly effected by moisture. Dodol made by composition of coconut milk 30 % and high sugar (1:3) was a good dodol. The result of economic analysis shown that dodol industry have good prospect. Abstract

Industrial layout or production facility is a setting for placing facilities position which considering space limitation in placing machines, flow of material removal etc. Generally the optimal layout design is take a part in determining the efficiency and effectiveness of production activities or maintain the viability of an Industrial. Basically the main goal of this research is to produce an optimal layout of production facilities, one of which is to evaluate the existing layout. The refore we need an optimal facility layout design according to a good material flow patterns, by following the order of process. Direct observation at PDP Gunung Pasang Panti Jember Region, showed less precise placement of production facilities and material flow, causing the displacement of material handling distances become longer and eventually impact on Total Movement becomes high. To determine the layout of each department production facilities in a manner that is efficient use of time study method. As for planning the layout by using layout verification results by comparing the existing layout as a parameter events. The results showed a more efficient layout verification with Total Movement initial displacement distance of 2650.44 meters to 2469.46 meters or the distance may be shortened by 6.83%. As for the time of the original conveyance of 422.5 seconds to 392.8 seconds or experiencing a savings of 7.03%.Keywords: layout, time study method, total movement
