Abstract

The problem of undernutrition during pregnancy is still a focus of attention, these problems include anemia and Chronic Energy Deficiency (CED). CED can have a negative impact on the mother and the fetus. One way to meet nutritional needs is to provide additional food. This study aims to find out the Physicochemical Contents and Characteristics of Pempek Made from Tilapia Fish, Moringa Leaves, Spinach and Kalakai as an Alternative Food Supplement for Pregnant Women with Choronic Energy Deficiency.The proportion for making pempek was made by adding 60% tilapia fish and 40% spinach, moringa or kalakai leaves. The data collected in this study were physicochemical characteristics (carbohydrates, protein, fat, crude fiber, ash, and moisture content) obtained from laboratory tests, sensory characteristic tests (color, flavor, texture, and taste) obtained by organoleptic tests using the hedonic method scoring scale. The results showed that there were differences in the color parameters (p=0,009), aroma (0,001), taste (0,001), and texture (0,008). The results of the proximate analysis showed that the highest carbohydrate content was in pempek tilapia kalakai (37,82 g), the highest protein content was in pempek tilapia moringa leaves (9,79 g), and the highest fiber content was in pempek tilapia spinach (0,7 g) and the iron content was highest in pempek tilapia moringa leaves (2,8 mg). In the preference level test, the highest score was obtained for pempek tilapia spinach with an average value of 0,626. Pempek tilapia kalakai spinach ang moringa leaves can be used as alternative snacks for pregnant women to prevent the birth of stunted.

Abstract

Background: Indonesia ranks first with the most cancer cases in Southeast Asia. Degenerative diseases such as cancer occur due to the induction of free radicals, substances that can counteract and prevent damage caused by free radicals are called antioxidants. Objectives:To determine the effect of the proportions of kersen leaf extract and soursop leaf extract on the antioxidant activity and acceptability of yogurt. Methods: This research is experimental with a true experimental design (posttest with control group design). This research consists of 2 stages. The first stage, namely the introduction, aimed to determine the proportion of kersen leaf extract and soursop leaf extract that were most widely accepted/preferred by panelists from the 5 treatments given (P1 = 100 ml:0 ml, P2 = 75ml:25 ml, P3 = 50ml:50 ml, P4 = 25 ml:75 ml, P5 = 0ml:100 ml). The second stage or main research aims to determine the chemical quality (antioxidant activity) in the selected treatment. Results: The results of the organoleptic test showed that all hedonic categories, namely aroma, color and taste except for texture, had significant differences at p <0.05. The best proportion was obtained in the P2 treatment, namely the proportion of 75ml DK : 25ml DS. The P2 treatment increased the antioxidant activity of yogurt, which was 52.33ppm compared to the control yogurt, which had an antioxidant activity of 73.78ppm. Conclusions: There is an effect of the proportion of kersen leaf extract and soursop leaf extract on the antioxidant activity and acceptability of yogurt except texture.

Abstract

Cocoyam (Xanthosoma sagittifolium) is a tuber that can provide complex carbohydrates. This study aimed to look at the physicochemical (carbohydrate, protein, fat, crude fiber, ash content, and water content) and sensory analysis of cocoyam steamed brownies as an alternative snack for people with diabetes. This study used an completely randomized design (CRD) with four treatments and three replications using wheat flour and cocoyam flour formulations P0 (100%:0%), P1 (60%:40%), P2 (40%:60%), and P3 (0%:100%). Sensory characteristics were determined using 35 consumer panellists and physicochemical values were determined using proximate. The results of this study show that the highest water content was 2,65%, ash content 23,97 grams in treatment P3, and the highest protein content was 19,64 grams, fat content 17,89 grams, and carbohydrate 19,64 grams in treatment P1. The results of statistical analysis showed that cocoyam flour substitution effect on carbohydrate content (p<0.001), ash content (p=0.008), and water content (p<0.001), but no effect on protein content (p=0.791), fat content (p=0,288), or crude fiber content (p=0,366). The results of sensory analysis showed that P1 was the best treatment with panelists preference level values for color 3,17; aroma 3,0; taste 3,43; texture 2,60 and the results of statistical analysis showed that there was an effect of cocoyam flour substitution on sensory characteristics of steamed brownies, such as colour (p<0.001), aroma (p=0.012), texture (p<0.001), and taste (p<0.001). Cocoyam steamed brownies have a low carbohydrate content of 19.64 g and a high crude fiber content of 21.41 g, the first treatment, brownies (P1), can be used as an alternative snack for people with diabetes.

Abstract

Hipertensi merupakan masalah kesehatan utama pada populasi lansia yang memerlukan pendekatan pengelolaan komprehensif. Penelitian ini bertujuan menganalisis pengaruh intervensi diet rendah garam dan pemberian jus mentimun terhadap perubahan tekanan darah lansia penderita hipertensi. Metode penelitian menggunakan desain pra-eksperimental dengan pendekatan one group pretest-posttest yang melibatkan 14 responden lansia berusia 60 tahun ke atas di wilayah kerja UPT Puskesmas Pulau Kupang. Responden dibagi menjadi dua kelompok, yaitu kelompok yang menerima jus mentimun 200 ml dua kali sehari dan kelompok yang menjalani diet rendah garam dengan asupan natrium maksimal 2.000 mg per hari, kedua intervensi dilakukan selama tujuh hari berturut-turut. Pengukuran tekanan darah dilakukan sebelum dan sesudah intervensi menggunakan tensimeter digital. Analisis data menggunakan uji paired sample t-test dan independent sample t-test dengan tingkat kepercayaan 95%. Hasil penelitian menunjukkan penurunan bermakna pada kedua kelompok intervensi dengan nilai p kurang dari 0,001. Kelompok jus mentimun mengalami penurunan rerata tekanan darah dari 179,57 mmHg menjadi 159,29 mmHg, sedangkan kelompok diet rendah garam turun dari 188,00 mmHg menjadi 145,00 mmHg. Perbandingan antarkelompok menunjukkan diet rendah garam lebih efektif menurunkan tekanan darah dibandingkan jus mentimun dengan nilai p sebesar 0,001. Penelitian ini menyimpulkan bahwa diet rendah garam dan jus mentimun terbukti efektif sebagai intervensi nonfarmakologis dalam menurunkan tekanan darah lansia, dengan diet rendah garam menunjukkan efektivitas lebih optimal.

Abstract

Anemia merupakan masalah kesehatan masyarakat yang signifikan pada remaja putri. Data UPTD Puskesmas Tabukan Tahun 2025 menunjukkan bahwa prevalensi anemia pada remaja putri kelas 7 dan kelas 10 mencapai 55,17%, sehingga diperlukan kajian terhadap faktor penyebabnya. Penelitian ini bertujuan mengetahui hubungan pengetahuan gizi dan pola konsumsi sayuran dengan kejadian anemia pada remaja putri di wilayah kerja UPTD Puskesmas Tabukan. Penelitian menggunakan desain observasional analitik dengan pendekatan cross-sectional. Populasi berjumlah 144 remaja putri, dan sebanyak 116 sampel dipilih melalui simple random sampling. Data pengetahuan gizi dikumpulkan menggunakan kuesioner, pola konsumsi sayuran menggunakan SQ-FFQ, serta kadar hemoglobin diukur dengan Hb meter. Hasil analisis univariat menunjukkan bahwa sebagian besar responden berusia 13–15 tahun (55,2%), memiliki pengetahuan gizi kategori kurang (42,2%), dan pola konsumsi sayuran yang juga kurang (59,5%). Prevalensi anemia cukup tinggi, yaitu 55,2%. Analisis bivariat dengan uji Chi-Square (p<0,05) menunjukkan adanya hubungan signifikan antara pengetahuan gizi dengan kejadian anemia (p=0,001), serta hubungan signifikan antara pola konsumsi sayuran dengan kejadian anemia (p=0,003). Diperlukan edukasi gizi dan promosi konsumsi sayuran secara berkelanjutan untuk menurunkan prevalensi anemia pada remaja putri.

Abstract

Wasting merupakan salah satu bentuk malnutrisi akut pada balita yang masih menjadi masalah kesehatan masyarakat, terutama pada usia 6–23 bulan. Praktik pemberian Makanan Pendamping ASI (MP-ASI) yang tidak sesuai serta ketidaklengkapan imunisasi dasar diduga berperan dalam meningkatkan risiko terjadinya wasting pada balita. Penelitian ini bertujuan untuk menganalisis hubungan praktik pemberian MP-ASI dan kelengkapan imunisasi dasar dengan kejadian wasting pada balita usia 6–23 bulan di wilayah kerja Puskesmas Martapura Timur. Penelitian ini merupakan penelitian observasional analitik dengan desain cross-sectional. Populasi penelitian adalah seluruh balita usia 6–23 bulan di wilayah kerja Puskesmas Martapura Timur. Sampel sebanyak 78 balita terdiri dari 39 balita wasting (kasus) dan 39 balita dengan status gizi normal (kontrol) yang dipilih menggunakan teknik purposive sampling. Data dikumpulkan melalui pengukuran antropometri, wawancara menggunakan kuesioner terkait praktik MP-ASI, serta penelusuran buku KIA dan rekam medis untuk status imunisasi dasar. Analisis data dilakukan secara univariat dan bivariat menggunakan uji chi-square dengan tingkat kemaknaan p < 0,05. Hasil penelitian menunjukkan bahwa sebagian besar balita wasting menerima MP-ASI yang tidak sesuai (79,5%) dan memiliki status imunisasi dasar tidak lengkap (71,8%). Terdapat hubungan yang signifikan antara praktik pemberian MP-ASI dan kejadian wasting (p = 0,001; OR = 2,1), serta antara kelengkapan imunisasi dasar dan kejadian wasting (p = 0,001; OR = 1,9). Praktik pemberian MP-ASI yang tidak sesuai dan ketidaklengkapan imunisasi dasar berhubungan signifikan dengan kejadian wasting pada balita usia 6–23 bulan.

Abstract

ABSTRAK Latar Belakang: Diabetes melitus tipe 2 (DMT2) adalah gangguan metabolik yang ditandai dengan peningkatan kadar glukosa darah, mempengaruhi kualitas sumber daya manusia, dan meningkatkan biaya perawatan kesehatan. DMT2 juga merupakan komorbiditas COVID-19 . Tujuan: untuk menguji hubungan antara kepatuhan diet, asupan vitamin C, aktivitas fisik, dan edukasi gizi dengan kontrol glukosa darah pada pasien DMT2. Metode: Studi observasional analitik dengan desain potong lintang dari bulan Maret hingga April 2021 di Rumah Sakit Idaman Banjarbaru. Sebanyak 40 pasien dipilih dari 90 populasi yang memenuhi syarat. Pengambilan sampel secara non-probabilitas. Data primer dikumpulkan melalui wawancara, sedangkan data sekunder diperoleh dari rekam medis. Gula darah puasa dikategorikan sebagai terkontrol (<125 mg/dl) atau tidak terkontrol (≥126 mg/dl). Data dianalisis menggunakan uji chi-square dengan tingkat kepercayaan 95%. Hasil: Penelitian ini menunjukkan bahwa sebagian besar responden berusia 46–55 tahun (40%), perempuan (80%), dan ibu rumah tangga (52,5%). Mayoritas tidak mematuhi rekomendasi diet (60%), memiliki asupan vitamin C yang rendah (47,5%), melakukan aktivitas fisik ringan (37,5%), dan telah menerima edukasi gizi (55%). Gula darah yang tidak terkontrol diamati pada 67,5% peserta. Asosiasi signifikan ditemukan antara kepatuhan diet (p=0,000), asupan vitamin C (p=0,001), aktivitas fisik (p=0,002), dan edukasi gizi (p=0,001) dengan kadar glukosa darah. Rasio odds menunjukkan bahwa pendidikan gizi dan aktivitas fisik memiliki pengaruh terkuat. Kesimpulan: Kepatuhan diet, asupan vitamin C, aktivitas fisik, dan edukasi gizi berkorelasi signifikan dengan kontrol glukosa darah pada pasien DMT2.   ABSTRACT Background: Type 2 diabetes mellitus (T2DM) is a metabolic disorder marked by elevated blood glucose levels, affecting human resource quality and increasing healthcare costs. T2DM is also a known comorbidity of COVID-19. Objective: This study aimed to examine the relationship between dietary compliance, vitamin C intake, physical activity, and nutrition education with blood glucose control among T2DM patients. Methods: An analytic observational study with a cross-sectional design was conducted from March to April 2021 at Idaman Hospital, Banjarbaru. A total of 40 patients were selected from 90 eligible participants using non-probability sampling. Primary data were collected through interviews, while secondary data were obtained from medical records. Fasting blood glucose was categorized as controlled (<125 mg/dl) or uncontrolled (≥126 mg/dl). Data were analyzed using chi-square tests with a 95% confidence level. Results: showed that most respondents were aged 46–55 years (40%), female (80%), and housewives (52.5%). The majority did not adhere to dietary recommendations (60%), had low vitamin C intake (47.5%), engaged in light physical activity (37.5%), and had received nutrition education (55%). Uncontrolled blood glucose was observed in 67.5% of participants. Significant associations were found between dietary compliance (p=0.000), vitamin C intake (p=0.001), physical activity (p=0.002), and nutrition education (p=0.001) with blood glucose levels. Odds ratios indicated that nutrition education and physical activity had the strongest influence. Conclusion: Dietary compliance, vitamin C intake, physical activity, and nutrition education significantly correlate with blood glucose control in T2DM patients.

Abstract

Child malnutrition is a crucial public health problem worldwide. Parenting style plays a significant role in children's nutritional status, particularly in meeting their nutritional needs. Low-income families tend to have limited access to nutritious food, increasing the risk of malnutrition. The aim of this study was to analyze the relationship between parenting patterns and family income with the incidence of malnutrition in toddlers aged 12-59 months in the working area of ​​the Sungai Turak Public Health Center. This research is an analytical observational study with a cross-sectional design and quantitative methods. This research was conducted in the Sungai Turak Public Health Center from August to December 2025. The study population was 826 toddlers. The sample was taken using Proportionate Stratified Random Sampling with 99 respondents. Data analysis used the chi-square test. The incidence of malnutrition in toddlers was 43 people (43.4%). 8 people (8.1%) had poor parenting patterns. 88 people (88.9%) had family incomes below the minimum wage (UMK) of Rp. 3,496,195. There was a correlations between maternal parenting patterns (p=0.020, PR=10.694), family income (p=0.021, PR=9.130) and the incidence of malnutrition in toddlers aged 12-59 months. There is a correlations between parenting style and family income and malnutrition in toddlers aged 12-59 months in the working area of the Sungai Turak Public Health Center. Parents are encouraged to increase their knowledge about nutritional issues that can affect toddlers and the long-term impact of malnutrition.

Abstract

Background: Malnutrition is a complex condition involving interactions between underlying diseases, metabolic alterations, and inadequate nutritional intake, thereby requiring early management to prevent health deterioration. The self-screening tool in the “IDAMAN GIZI” application improves the early detection of malnutrition risk, reduces the burden on healthcare workers, and empowers patients.”.Objectives: This study assessed the validity of a self-screening instrument for malnutrition implemented within the “IDAMAN GIZI” mobile application for outpatients at RSD Idaman Banjarbaru City, Indonesia.Methods: This study used the CVI assessed by four media and four subject matter experts, along with the face validity index (FVI) by ten respondents. The study was conducted at RSD Idaman Banjarbaru from August to December 2025. Quantitative data from the assessment questionnaires were analyzed using the item content validity index (I-CVI), scale content validity index (S-CVI), and Cohen’s kappa reliability test. Qualitative data in the form of comments and suggestions were thematically analyzed to improve the instrument.Results: Based on the assessment by experts, the I-CVI, S-CVI, and overall content validity index (CVI) scores were all 1. Furthermore, the FVI scores provided by the respondents were I-FVI before (P0) = 1 and I-FVI after (P1) = 1, with S-FVI/Ave = 0.99 and S-FVI/UA = 0.86.Conclusion: The validity assessment of the “IDAMAN GIZI” self-screening instrument indicates that it is valid for wide-scale implementation. Further research is warranted to develop secure data storage features, a monitoring dashboard for nutrition professionals, and integration with national health programs to enhance the detection of regional malnutrition.

Abstract

Children’s mental-emotional development involves the interaction between physiological maturation and the psychological mechanisms that process and control emotions. This study aims to determine the relationship between exclusive breastfeeding and parenting patterns with the mental and emotional development of early childhood in the Guntung Manggis Health Center working area in 2021. This analytical observational study utilized a cross-sectional design. The sample comprised 92 children aged 3 to 6 years, selected through simple random sampling. Data were analyzed using Spearman Rank correlation. The analysis revealed a significant relationship between exclusive breastfeeding, mental-emotional development (ρ = 0.0), parenting patterns, and mental-emotional development (ρ = 0.00). Specifically, exclusive breastfeeding was associated with improved mental-emotional development in 65% of the sample, and positive parenting patterns were linked to enhanced development in 72% of the cases. The findings suggest that exclusive breastfeeding and positive parenting patterns support optimal mental and emotional development in early childhood. It is recommended that mothers provide exclusive breastfeeding and adopt positive parenting strategies to foster better developmental outcomes for their children.
