Abstract

The high incidence of malnutrition among children under five in Indonesia underscores the critical need for timely and comprehensive interventions to mitigate its impact. One of the factors contributing to malnutrition in toddlers is a lack of balanced nutrition in complementary food (CF). Fishery commodities such as tuna and seaweed have great potential to be developed into instant complementary food porridge for complementary feeding because they contain amino acids and essential fatty acids that toddlers need for brain and eye development. This research aimed to determine the best formulation for instant MPASI porridge made from toro tuna fish and seaweed flour based on organoleptic assessment, fatty acid profile, and amino acid profile. The complementary food porridge with toro tuna  and seaweed flour consists of four treatments, namely 94%:6%, 88%:12%, 82%:18%, and 76%:24%. The parameters analyzed included sensory tests (appearance, color, taste, and texture), fatty acid profile, and amino acid profile. Based on the research results, the differences in the formula of toro tuna and seaweed flour influence the panelists' level of preference for appearance, smell, and taste parameters. Organoleptic evaluation selected the formula with a ratio of 82%:18% as the best. The dominant fatty acids include palmitic acid (SFA) at 33.68%, oleic acid (MUFA) at 45.95%, and linoleic acid (PUFA) at 1.34%. The dominant essential amino acid is leucine at 1.28%, and the dominant non-essential amino acid is glutamic acid at 1.37%. Toro tuna and seaweed flour can be utilized in the production of instant complementary feeding porridge.

Abstract

Stunting is the nutritional status based on the index of PB/U or TB/U where in anthropometric standards of research on the nutritional status of children, the measurement results are in the Threshold of (z-scrore) <-2 SD to -3 SD (short/stunted). Indonesian has a fairly high prevelance of Stunting. One of the causes is inadequate nutrition during the growth period. Rating fish can provide protein and micronutrient nutrition to supportchildern's growth and development. The purpose of this study was to determine the relationship between fish consumption Rates, processing methods and Stunting prevalence. This research is a type of case control study. With research subjects 117 families (78 non-stunted families and 39 stunted families). The research was conducted in the village of Kuta Blang, Samadua district, South Aceh district in September-October. Statistical analysisi using Chi-square test. From this study, it was found that there was no relationship between the number of fish consumption (p=309) and theprvalence of Stunting and there was a significant relationship between how to process (cook) fish and the prevelance of Stunting (p=0,002).Keywords: fish consumption; how to process; stuntingKeywords: fish consumption; how to process; stunting

Abstract

Fish cracker production training in Ujong Drien Village, West Aceh Regency, was chosen because the location of the village is along the coast of West Aceh. The absence of small industries or MSMEs in the fish processing sector is proof of the need for this training program. By utilizing the potential of local natural resources, this activity can contribute to the community's economic growth. The aim of this training activity is to equip local communities with knowledge, skills, and motivation, thereby enabling them to develop fish cracker production as a sustainable source of livelihood. This is expected to have a positive impact on the economic welfare of the village. The training process consists of four stages, namely community situation analysis, problem identification, recipe testing, and field implementation. The main results of this program are that participants are able to prepare raw materials and process them according to hygienic standards, participants are able to produce fish crackers according to the correct procedures, and participants are able to produce fish crackers that are tasty and have a crunchy texture.

Abstract

Rumpon dikabupaten aceh jaya, terdapat berbagai permasalahan adat terutamanya dengan sering hilangnya rumpon, pengambilan hasil rumpon tanpa sepengetahuan pemiliknya jika diletakkan di laut, untuk mengatasi permasalah yang ada penulis mencoba untuk melakukan pengapdian tentang perancangan rumpon dan juga disertakan qanun atau hukum adat yang dikontrol penuh oleh panglima laot setempat, sehingga memudahkan panglima laot untuk kedepannya dalam pengelolaan rumpon.Tujuan dari pengapdian ini antara lain menerapkan inovasi rumpon ataktor ijuk untuk meingkatkan hasil tangkapan nelayan beserta dengan penegakan qanun atau hokum adat dalam pengelolaan rumpon. Metode yang digunakan dalam kegiatan pendampingan dan edukasi nelayan dalam penerapan pembuatan rumpon untuk masyarakat nelayan Desa Gle Jong Kabupaten Aceh jaya atau Lhok Kuala Daya antara lain dilakukan Focus Discusi Group (FGD), Pelatihan pembuatan, Pendampingan. Kegiatan program yang dilakukan dengan bermitra nelayan ini melibatkan banyak pihak, mulai dari DKP, panglima laot kabupaten, panglima loat lhok dan para nelayan disetiap kecamatan yang ada di Kabupaten Aceh. Hal yang urgen didiskusikan adalah mencari alternatif yang paling efektif dalam inovasi rumpon berbasis pengelolaa adat secara sustainable.Pengabdian yang telah dilaksanakan dapat menambah ketrampilan teknis untuk nelayan dalam pembuatan rumpon atraktor ijuk dan juga mengukuhkan qanun/hukum adat terhadap pengelolan rumpon sehingga peran dari Panglima Laot semakin berperan. Keberhasilan kegiatan pengabdian masyarakat ini diharapkan masyarakat nelayan tidak terjadi lagi permasalahan terhadap pengelolaan dan mendapatkan ilmu inovasi rumpon untuk dapat diimplimentasikan oleh masyarakat nelayan dengan meningkatkan hasil tangkapannya

Abstract

Perikanan tangkap menjadi komoditi industri laut yang saat ini masih didominasi di seluruh nusantara. Bahkan, indonesia menjadi salah satu negara eksportir perikanan pelagis dan demersal di dunia. Aceh memiliki potensi perikanan tangkap yang besar yang mampu memproduksi perikanan tangkap mencapai 230 ribu ton per tahunnya. Namun pengelolaan perikanan tangkap di Aceh masih sangat rendah sehingga produksi perikanan tangkap umumnya hanya didominasi oleh beberapa nelayan besar saja. Pelaksanaan kegiatan penguatan pengelolaan rumpon ijuk untuk pengendalian inflasi komoditas perikanan di Kabupaten Aceh Barat dilakukan dengan tujuan: 1) Sosialisasi program kepada multi stakeholders; 2) Menyelaraskan persepsi dan sinkronisasi program terkait dengan multi stakeholders; 3) Kesepakatan berbagai pihak terkait dalam pengelolaan rumpon ijuk; dan 4) Terbentuknya aturan pengelolaan rumpon ijuk berbasis komunal melalui lembaga adat laot di Kabupaten Aceh Barat. Kegiatan dilakukan pada empat lokasi Lhok Panglima Laot yang berbeda meliputi Lhok Meureubo, Lhok Padang Seurahet, Lhok Suak Seumaseh dan Lhok Bubon. Adapun kegiatan yang dilakukan meliputi Kegiatan Pra Kick Off, Kegiatan Capacity Building Untuk Nelayan Penerima Program, FGD Pengelolaan Rumpon Di Lhok Meureubo, FGD Pengelolaan Rumpon Di Lhok Padang Seurahet, Lhok Bubon, dan Lhok Suak Seumaseh, Pembuatan Draft Qanun Pengelolaan Rumpon Secara Komunal Berbasis Lembaga Adat Laot, FGD Pengelolaan Rumpon Di Kabupaten Aceh Barat, FGD Pengelolaan Rumpon Ijuk Di Kabupaten Aceh Barat: Sinergi Qanun Rumpon Dan Keterlibatan Berbagai Stakeholders Perikanan Tangkap, High Level Meeting (HLM) Tim Pengendalian Inflasi Daerah (TPID) Dan Tim Percepatan Dan Perluasan Digitalisasi Daerah (TP2DD), Pemasangan Rumpon Ijuk Di Perairan Lhok Meureubo, Lhok Padang Seurahet, Lhok Suak Seumaseh dan Lhok Bubon. Berdasarkan kegiatan yang telah dilaksanakan terhadap nelayan. dapat disimpulkan bahwa penguatan dan pengelolaan kelompok nelayan dapat dilakukan secara sistematis.

Abstract

Kualitas produk menjadi syarat penting bagi industri yang bergerak di bidang pangan, termasuk industri pada taraf usaha mikro, kecil, dan menengah (UMKM). Produk UMKM yang bermutu dapat meningkatkan kemampuan berkompetisi di pasar, seperti peningkatan jangkauan pemasaran. Penerapan mutu yang baik, diawali dengan penerapan kelayakan dasar (prasyarat program) yang meliputi Good Manufacturing Practice (GMP) dan Sanitation Standard Operating Procedures (SSOP). Jenis penelitian yang dilakukan, yaitu penelitian kualitatif melalui kegiatan observasi dan penelitian eksperimen melalui pengujian di laboratorium. Tahapan penelitian terdiri dari evaluasi penerapan kelayakan dasar, tahapan kedua pengambilan sampel produk UMKM, dan tahapan ketiga, yaitu pengujian cemaran mikroorganisme. Hasil evaluasi penerapan kelayakan dasar menunjukkan UMKM 1, 2 dan 3 memperoleh tingkat penerapan C yang terdiri dari jumlah penyimpangan mayor 6, serius 3 dan kritis nihil pada UMKM 1 dan 2 serta penyimpangan mayor 6, serius 4 dan kritis nihil pada UMKM 3. UMKM 4 memperoleh tingkat penerapan D dengan jumlah penyimpangan mayor 7, serius 2 dan kritis 1. Hasil analisis cemaran mikroba parameter ALT sebanyak <2.500 koloni/g, parameter E. coli dan Salmonella negatif (-) pada keempat produk UMKM. UMKM 1, 2, 3, dan 4 memenuhi persyaratan SNI 7388:2009 pada parameter cemaran mikroba. Berdasarkan hasil yang diperoleh, dapat disimpulkan keempat UMKM belum menerapkan kelayakan dengan baik, namun cemaran mikroba pada produk yang dihasilkan di bawah ambang batas SNI.

Abstract

This study aims to evaluate the survival rate and oxygen consumption level of gourami fry with different stocking densities. The method used in this study was an experimental method with 4 treatments repeated 3 times. Each treatment was given a clove oil anesthetic dose of 0.05 ml/L. Treatment P1=20 head/L, P2=25 head/L, P3=30 head/L, and P4=35 head/L. The results of this treatment have a significant effect on the survival of gourami seeds and the level of oxygen consumption of gourami seeds. The highest survival rate for gourami fish seeds was in the P4=35 fish/L treatment with a value of 76%, then continued with the P3=30 fish/L treatment with a total value of 73%, and the P1=20 fish/L treatment with a total value of 48%. Meanwhile, P2=25 fish/L obtained the lowest survival value, namely 44%. The highest level of oxygen consumption (TKO) was obtained in the P4=35 head/L treatment, namely 1.13, while the lowest value was obtained in the P2=25 head/L treatment with a total value of 0.77. Based on the results of the research that has been carried out, it can be concluded that the best stocking density for gourami fish seeds with closed wet transportation treatment given clove oil anesthesia is 35 fish/L because it obtains a high survival value.

Abstract

Food bars are compact, bar-shaped food products with high nutritional value and potential to meet human nutritional needs. The development of food bars represents an effort to create functional food products that contribute to human health. This study aimed to determine the optimal food bar formulation based on hedonic evaluation and to investigate the sensory, physical, and chemical characteristics of the resulting products. Three formulations were prepared: F1 (15 g tilapia fish flour and 10 g seaweed flour), F2 (12.5 g tilapia fish flour and 12.5 g seaweed flour), and F3 (10 g tilapia fish flour and 15 g seaweed flour). The quality evaluation of the food bars included hedonic testing, bulk density analysis, and proximate analysis. The hedonic test results indicated that formulation F1 obtained scores of 3 for texture, 3 for color, 2 for taste, and 3 for aroma; formulation F2 obtained scores of 3 for texture, 3 for color, 2 for taste, and 3 for aroma; whereas formulation F3 obtained scores of 3 for texture, 4 for color, 3 for taste, and 3 for aroma. The bulk density values were 0.54 g/mL for F1, 0.54 g/mL for F2, and 0.53 g/mL for F3. Proximate analysis showed that formulation F1 contained 33.67% moisture, 54.67% ash, 29.67% protein, 32.00% fat, and 22.67% carbohydrates. Formulation F2 contained 41.67% moisture, 54.67% ash, 29.33% protein, 34.33% fat, and 37.00% carbohydrates, while formulation F3 contained 37.67% moisture, 53.67% ash, 29.33% protein, 34.00% fat, and 44.00% carbohydrates. Based on the hedonic evaluation, formulation F3 (10 g tilapia fish flour and 15 g seaweed flour) was identified as the best formulation. Panelists’ acceptance of texture, taste, and aroma was categorized as slightly disliked, while color was categorized as liked.

Trap fishing gear offers several advantages, including high selectivity, the ability to keep fish alive, and support for sustainable fisheries. The productivity of catches around coral reefs and fish aggregating devices (FADs) is important to study in order to evaluate fish diversity in deeper waters across biological, genetic, species, and ecological levels. Such assessments are crucial for environmental conservation and for management based on diversity and dominance indices. This study aimed to determine the productivity, diversity, and dominant species composition of trap catches in two fishing grounds (FGs): coral reef areas and FAD zones at Lhok Kuala Daya, Aceh Jaya. The research employed an experimental fishing method, conducting five fishing operations in each zone. The overall diversity index of trap catches in Lhok Kuala Daya was 1.26, indicating a moderate level of diversity. The diversity index for catches around coral reefs was 1.15, while around FADs it was 1.58. The overall dominance index value of trap catches was 2.74, with dominance values of 0.74 in coral reef areas and 2.00 in FAD zones.
