Abstract

Stunting is a condition of failure to thrive in two-year-old babies due to chronic malnutrition. A short height characterizes babies experiencing stunting compared to other babies their age. One of the districts in Aceh Province with high stunting cases is Simuelue, with a prevalence reaching 35.7% in 2017. Various factors influence stunting, including nutrition and food quality. This service activity aims to increase public knowledge about the diversification of processed fish products and increase interest in eating fish, contributing to reducing stunting. The activity was carried out in two stages. The first is a campaign to enjoy eating fish using the socialization method. The campaign begins with socializing material about the benefits of eating fish, and introducing the types of fish. This activity ended with distributing processed fish meat products, namely nuggets. The second stage is the diversification of processing products using the workshop method. The workshop begins with explaining the steps for making a product, and then participants are divided into groups and make the product with their group. At each stage of the activity, a pre-test and post-test are given. The post-test results showed that understanding of product diversification and popularity increased after this activity.

Abstract

Ikan kambing-kambing (Canthidermis maculata) merupakan ikan demersal yang potensial. Salah satu produk olahan dari ikan kambing-kambing adalah ikan asin. Tujuan dari penelitian ini adalah menentukan perubahan mutu ikan asin selama penyimpanan. Perlakuan pada penelitian ini adalah pengemasan vakum dan tanpa vakum, serta penyimpanan selama 3 bulan. Pengolahan data peanyimpanan ikan asin menggunakan sample t-test. Parameter yang diamati adalah kadar air, aktivitas air (aw) dan total mikroba (TPC) selama 3 bulan. Pada bulan ke 0, nilai kadar air, Aw dan TPC pada kemasan vakum masing-masing 32.30±0.39%; 0.723±0.00; 3.34±0.00 log cfu/g dan nilai kadar air, Aw dan TPC pada kemasan tanpa vakum masing-masing 32.30±0.39%; 0.723±0.00; 3.34±0.00 log cfu/g. Pada bulan ke 3, nilai kadar air, Aw dan TPC pada kemasan vakum masing-masing 31.95±0.18% , 0.710±0.00 dan negatife, serta nilai kadar air, Aw dan TPC pada kemasan tanpa vakum masing-masing 31.29±0.41%; 0.702±0.02; 4.14±0.00 log cfu/g. Abstract

The purpose of this study was to determine the effect of sunti acid on the ALT and mold as an antimicrobial in keumamah loin. The research is experimental and uses a completely randomized design (CRD) with 4 treatments and 3 replications. Treatment 1 was soaking in sunti acid suspension as much as 10% (F1), as much as 20% (F2), as much as 30% (F3), and without immersion (F0). The parameters observed were ALT and mold. The results of these two studies were analyzed using one way analysis of variance (ANOVA) and continued with Duncan's test. The results showed that the highest ALT was in F0 (7.51x105CFU/mL) and the lowest was in sample F3 (6.36x105CFU/mL), then the highest mold value was in sample F0 (7.68x105CFU/mL), and the lowest was in F3 (6.46x105CFU/mL). The difference in the concentration of sunti acid suspension had a significant effect on the ALT and mold on keumamah loin at the 95% confidence interval

Abstract

Penangkapan dan Tingkat reproduksi yang rendah merupakan ancaman terbesar bagi populasi hiu dan pari (selanjutnya disebut sebagai elasmobranch), hampir sepertiga jenis dalam status terancam. Populasi pari mengalami tekanan yang lebih tinggi dibanding hiu, khususnya di kawasan Asia Tenggara. Meskipun begitu, Indonesia merupakan salah satu negara dengan pendaratan hiu dan pari yang dominan bagin ditingkat global maupun regional. Kondisi tersebut dapat dicegah dengan pengelolaan perikanan untuk menjamin berkelanjutan populasi pari. Salah satu informasi yang diperlukan adalah pemetaan penangkapan dan musim penangkapan sebagai indikasi habitat kritis pari. Tujuan penelitian adalah menyediakan informasi jenis, jumlah, ukuran dan sebaran daerah penangkapan pari saat musim barat. Penelitian ini dilaksanakan bulan Desember 2022 hingga Februari 2023 di PPI Ujong Baroh, Aceh Barat. Informasi dikumpulkan dengan survei onboard perikanan jaring insang tetap dan pukat hela, enumerasi di lokasi pendaratan dan pemetaan sebaran daerah penangkapan. Sebanyak 2.232 individual pari didaratkan selama periode studi. Pendaratan didominasi 10 jenis yakni Maculabatis macrura (91,44%), Neotrygon caeruleopunctata (2,11%), Taeniurops meyeni (1,97%), Gymnura zonura (1,88%), Pateobatis uarnacoides (0,94%), Himantura undulata (0,63%), Rhynchobatus australiae (0,45%), Aetomylaenus nichofii (0,45%), Himantura leoparda australiae (0,09%) dan Mobula kuhlii australiae (0,04%). Pari yang didaratkan umumnya belum matang gonad 94,08%. Daerah penangkapan pari umumnya berjarak 2.16 mil  atau nmil dari PPI Ujung Baroh.

Abstract

Protein from fish is needed by the human body because it is relatively easy to digest. Policies to support the availability of marine resources as a source of animal protein play an important role in improving diets so as to prevent disruption of children's growth. Children are the forerunners of the nation's next generation. The formation of children's qualities since school will influence the quality of Human Resources (HR) when they reach productive age. School-aged children are a group that requires attention when consuming food and nutrients. Optimal growth and development of school-aged children depends on providing nutrition with good quality and quantity. The level of fish consumption in fishing families is influenced by several things, namely income, number of family members, perception of the price of fish, tastes, and also the level of education, or perhaps also the level of knowledge regarding the benefits of consuming fish. It is hoped that various types of interesting processed fish products can increase fish consumption patterns in the community, especially among children who are growing up. On this basis, it is necessary to hold a GEMARIKAN campaign (Movement to Promote Fish Eating) in schools, especially elementary schools. This activity aims to provide education about the benefits of consuming fish, and shift snacks to processed fish products, which are healthy and beneficial for children's growth and development.

Abstract

Stunting adalah status gizi yang didasarkan pada indeks PB/U atau TB/U dimana dalam standar antropometri penilaian status gizi anak, hasil pengukuran tersebut berada pada ambang batas (Z-Score) <-2 SD sampai dengan -3 SD (pendek/stunted) dan <-3 SD (sangat pendek /severely stunted). Stunting merupakan masalah kurang gizi kronis yang disebabkan oleh asupan gizi yang kurang dalam waktu cukup lama akibat pemberian makanan yang tidak sesuai dengan kebutuhan gizi. Tujuan dari penelitian ini adalah untuk mengetahui hubungan angka konsumsi ikan dan teknik pengolahan ikan dengan kejadian stunting. Penelitian ini dilaksanakan pada bulan September hingga November 2021 di Desa Tanah Bara, Kecamatan Gunung Meriah, Kabupaten Aceh Singkil. Data yang diperoleh dianalisis menggunakan uji Chi-square. Hasil penelitian menunjukan terdapat hubungan erat antara angka konsumsi ikan per minggu dengan kejadian stunting (p=0,000), jenis ikan yang dikonsumsi berdasarkan habitat dengan kejadian stunting (p=0,014) dan teknik pengolahan ikan dengan kejadian stunting (p=0,001) Di Desa Tanah Bara, Kecamatan Gunung Meriah, Kabupaten Aceh Singkil. Namun pendapatan tidak terdapat hubungan erat dengan kejadian stunting (p=0,303) Di Desa Tanah Bara Kecamatan Gunung Meriah Kabupaten Aceh Singkil.

Abstract

The quality of the catch can be seen from the fish storage container used to maintain its temperature. An insulated storage area can maintain ice resistance during the operation of fishing gear, as well as during the transportation of the catch to the fish landing site. Generally, fishermen use fish storage containers made of fiber with insulation in the form of polyurethane. Some fish storage containers are made from polystyrene-insulated styrofoam. This research aims to determine how optimal cooling is using coconut fiber and sugar cane bagasse insulation. The method used in this research was an experimental method using a Completely Randomized Design (CRD) with one control (Styrofoam cooler box), two treatments (Coconut fiber insulated cooler box and sugarcane bagasse), and three repetitions. The dimensions of the coolbox are the same as those on the market, namely 42 cm x 26 cm x 23 cm and a thickness of 2 cm. The lowest temperature of the coolbox made from coconut fiber insulation, 17.7 °C, was reached after the 70th minute. The bagasse was only able to reach the lowest temperature of 19.4°C, achieved in the 60th minute. Temperature stability in the coconut fiber coolbox reached 2 hours 10 minutes (130 minutes) from 80-200 minutes, while the bagasse coolbox reached 3 hours 40 minutes (220 minutes) from 70-280 minutes.

Abstract

Vanname shrimp is one of the commodity products that have high economic value in Indonesia and abroad. This study aims to determine the right time to give rice bran fermentation in improving the quality and growth of vannamei shrimp. The study used an experimental method with 4 treatments that were repeated as many as 3 replicates. The treatments tested were P1 giving bran fermentation on day 0 before stocking, P2 giving bran fermentation on day 10 after stocking, P3 giving bran fermentation on day 20 after stocking, and P4 giving bran fermentation on day 30 after stocking. The results of the treatment showed a significant effect on absolute length growth, absolute weight growth, and daily growth rate. Meanwhile, survival and feed conversion ratio did not have significant differences, as well as water quality. In general, water quality was not affected by the treatments given. The highest absolute length growth was produced in the P3 of 4.1 ± 0.01cm, while the lowest absolute length growth was obtained in the P1 with a result of 3.6 ± 0.0. The highest absolute weight growth was obtained in the P3 with the results of 2.61 ± 0.01gr, while the lowest absolute weight growth was produced in the P1 of 2.13 ± 0.03gr. Similarly, the highest daily growth rate was produced in the P3 with the results of 3.6 ± 0.0. Keywords: Vanname shrimp, fermentation, rice bran, water quality, growth
