Abstract

In the national industrial sector, good and competent workers are needed, so it is necessary to increase worker productivity so that a company can compete with other companies. Productivity is a comparison between output and input relating to a person's ability to complete work based on the specified time. Factors that influence work productivity are the physical condition or nutritional status of a worker. Education can increase knowledge, attitudes and healthy living behavior. Providing nutrition education can be done using various media such as auditive, visual and audiovisual media. The aim of this research is to determine the effect of nutritional education media (brochures, videos & fans) on increasing knowledge and attitudes towards balanced nutrition on worker productivity. Quasi experimental research with a pretest and post-test group design. The sampling technique uses simple random sampling. The research sample consisted of 30 respondents. The results of the Paired Sample T-test show the influence of nutrition education media on increasing knowledge and attitudes about balanced nutrition on the productivity of PT. Based on the results of the paired sample t-test, it is known that there is a significant influence of providing nutrition education (brochures, videos and fans) on increasing knowledge and attitudes towards balanced nutrition on worker productivity.

Abstract

Sleep health is important for the overall health and quality of life of workers. Workers with sleep disorders experience various physical and mental health problems, including abnormal vital signs, mood disorders, poor quality of life, frequent workplace injuries, and even premature death. The main objective of this study is to determine the effect of educational media on sleep quality and work fatigue in workers. This study uses a Quasi Experimental research form. With a design using a Pre-Post Test Design. The sample in this study were employees at Konveksi Elnino and PT. X which is engaged in paper manufacturing with a total of 36 respondents. The results of the study on 36 respondents showed that the age of respondents ranged from 23-32 years as many as 20 respondents (55.35%) and 33-49 years as many as 16 respondents (44.65%). Workers aged 15-64 years are included in productive age workers, who are considered capable of producing goods and services in the production process. Productive age can affect worker performance because with increasing age, the degenerative process in body organs decreases so that workers are more easily tired. Based on statistical tests, there was an increase in knowledge and attitudes in Calendar Media (2D) and Hand Fan Media (Innovation), while in Youtube Video Shorts Media (3D), there was no increase in knowledge and attitudes.

Abstract

Microbial fibrinolytic enzymes are commonly found in various fermented foods of both plant and animal origin. While extensive studies have been conducted in Japan, Korea, and China, research in Indonesia remains limited despite its rich diversity of fermented foods. Moromi, an intermediate product of soy sauce fermentation, contains Subtilisin-K2, an enzyme proven in vitro to degrade fibrin and fibrinogen, indicating potential antithrombotic activity. This study investigated the antithrombotic properties of Subtilisin-K2 using bioinformatic approaches, including molecular docking (HADDOCK) and molecular dynamics (GROMACS). Subtilisin-K2 exhibited strong binding affinities with fibrin, fibrinogen, PAI-1, PAI-2, and α-antiplasmin, with Gibbs free energy values of –19.4, –15.6, –15.7, –18.2, and –13.3 kcal/mol, respectively. Molecular dynamics confirmed the stability of these complexes. These findings suggest that Subtilisin-K2 from Indonesian moromi exhibits significant bioactivity, underscoring the potential of Indonesian fermented products as valuable sources of functional enzymes, especially as antithrombotic potential.

Abstract

Food safety is an essential aspect of the restaurant industry, which heavily relies on employees’ knowledge and attitudes in implementing proper procedures. Awareness of food safety not only influences the quality of the food served but also affects consumer health and the restaurant’s reputation. This study aims to evaluate the effectiveness of three educational media—2D posters, 3D animated videos, and applicative media (Food Safety Puzzle)—in improving the knowledge and attitudes of restaurant employees, who in this case are culinary students on duty at the restaurant, regarding food safety. The method used was an experimental design with Wilcoxon Signed Rank Test analysis to assess changes in respondents’ knowledge and attitudes before and after the educational intervention. The results showed that all educational media successfully improved employees’ knowledge significantly. Specifically, 100% of respondents achieved an “Excellent” level of knowledge after using the 2D poster. Additionally, the applicative media (Food Safety Puzzle) had the greatest impact on attitudes, with 60% of respondents reaching the “Excellent” category after the educational session. In conclusion, a multifaceted approach in delivering food safety education proved effective in enhancing the knowledge and attitudes of restaurant employees. Therefore, it is recommended that restaurants implement various educational media in their training programs. Further research is also needed to explore the long-term effects of food safety education programs to ensure that employees consistently apply the knowledge gained in their daily practices.

Abstract

Freshwater scarcity remains a critical challenge in small island regions, particularly in archipelagic countries such as Indonesia, where seawater is abundant but access to clean freshwater is limited. Tunda Island, located in Serang Regency, Banten Province, exemplifies this condition, as local communities primarily depend on rainwater harvesting and shallow groundwater sources to meet daily water demands. This study aims to evaluate a modified reverse osmosis (RO) desalination system integrated with coconut shell–based activated carbon as an adsorptive pretreatment medium for seawater desalination. The coconut shell adsorbent was employed to enhance pretreatment efficiency and improve the overall performance of the RO system. Seawater samples collected from Tunda Island were processed through the integrated system, and the quality of the treated water was evaluated according to the Indonesian Ministry of Health standards. Key parameters analyzed included Chemical Oxygen Demand (COD), Biological Oxygen Demand (BOD), Total Dissolved Solids (TDS), Total Suspended Solids (TSS), pH, color, and temperature. The results demonstrated that the treated water achieved COD of 120.10 mg/L, BOD of 10.5 mg/L, TSS of 3.76 mg/L, TDS of 117.245 ppm, pH of 7.30, clear color, and a temperature of 27°C, indicating compliance with applicable water quality standards. These findings confirm that the integration of coconut shell–based activated carbon with reverse osmosis effectively improves desalination performance and produces freshwater suitable for domestic use.

Abstract

Latar Belakang: Kejadian status gizi berlebih pada usia remaja meningkat dan dapat memicu masalah kesehatan pada usia dewasa jika tidak ditangani sejak dini. Pemicu kejadian overweight dan obesitas pada remaja disebabkan beberapa faktor antara lain pengetahuan kurang mengenai gizi dan perilaku makan yang kurang baik. Overweight dan obesitas merupakan kondisi dimana tubuh seseorang mengalami zat gizi yang berlebih. Tujuan: Penelitian ini bertujuan untuk mengetahui adanya pengaruh tingkat pengetahuan remaja mengenai overweight dan obesitas menggunakan media edukasi yang dapat memberi manfaat bagi pengetahuan remaja. Metode: literatur review dengan cara mencari artikel jurnal melalui Google Scholar dan database Science and Technology Index (SINTA) yang sudah diseleksi sesuai dengan tema overweight dan obesitas. Hasil: Hasil literatur didapatkan bahwa adanya pengaruh penggunaan media edukasi gizi terhadap pengetahuan remaja mengenai overweight dan obesitas. Pembahasan: Media cetak maupun media audio visual memberikan sarana informatif bagi remaja saat ini. Adanya media sebagai sarana dalam pembelajaran sangat dibutuhkan guna kualitas yang baik dalam pembelajaran. Kesimpulan: Dari hasil analisis yang di dapat terkait media cetak maupun media audio visual dapat meningkatkan pengetahuan remaja.

Abstract

Latar Belakang: Obesitas atau overweight merupakan salah satu kejadian malnutrisi kelebihan berat badan yang masih sering ditemui. Pengetahuan edukasi gizi yang masih kurang menyebabkan terjadinya kesalahan dalam pemilihan makanan yang mejadi salah satu faktor penyebab banyaknya kasus obesitas, sehingga diperlukan konseling gizi untuk melakukan intervensi penurunan berat badan serta pemberian edukasi secara lebih mendalam sebagai upaya penurunan angka obesitas. Tujuan: Penelitian ini bertujuan untuk mengetahui pengaruh konseling gizi terhadap pemilihan makanan setelah dilakukan konseling yang sesuai dengan pedoman gizi seimbang. Metode: Bahan dalam literasi ini merupakan sekumpulan artikel dengan Science and Technology Index (SINTA) 1 sampai 5 dikumpulkan dengan menggunakan mesin pencari seperti Googlescholar, dan Sciencedirect. Metode yang digunakan adalah literature review dengan pengumpulan beberapa artikel yang berkaitan. Hasil: Terjadi penurunan tingkat asupan makanan setelah dilakukan konseling. Namun terdapat penurunan nilai asupan serat setelah konseling yang disebabkan karena adanya faktor eksternal yang sulit untuk dikendalikan. Kesimpulan: Terdapat pengaruh dari konseling gizi terhadap pemilihan makanan remaja obsitas.

Abstract

Latar Belakang: Suatu kondisi yang dialami seseorang ketika kadar hemoglobin (Hb) di dalam darah kurang dari batas normal disebut dengan anemia. Prevalensi anemia pada remaja putri kelompok usia 15-24 tahun di Indonesia sebesar 27,2% sementara pada remaja putra sebesar 20,3%. Angka kejadian anemia pada remaja putri lebih tinggi daripada remaja laki-laki sebab remaja putri mengalami menstruasi dan sedang dalam masa pertumbuhan sehingga membutuhkan asupan zat gizi yang lebih tinggi. Diperlukan suatu upaya pencegahan dan penanggulangan anemia untuk meningkatkan pengetahuan remaja, terutama remaja putri, mengenai anemia melalui pemanfaatan media dalam edukasi gizi. Tujuan: Penulisan literature review ini bertujuan untuk mengetahui pengaruh pemanfaatan media edukasi gizi dalam meningkatkan pengetahuan remaja putri mengenai anemia. Metode: Penulisan ini menggunakan metode literature review. Artikel ilmiah ditemukan melalui mesin pencari Google Scholar dengan kata kunci “anemia”, “media edukasi gizi”, dan “remaja putri”. Artikel ilmiah terindeks Sinta 1-5 dengan rentan waktu publikasi antara tahun 2018-2021. Hasil: Terdapat peningkatan pengetahuan gizi pada remaja putri setelah diberikan intervensi. Kesimpulan: Pemberian edukasi gizi melalui media berupa kartu games, media animasi, komik, dan video blog (vlog) berpengaruh terhadap peningkatan pengetahuan remaja putri terkait anemia.

Abstract

Latar Belakang: Anemia adalah suatu keadaan dimana kadar hemoglobin dalam tubuh kurang dari normal. Pengetahuan edukasi gizi yang masih kurang menyebabkan terjadinya kesalahan dalam pemilihan makanan yang mejadi salah satu faktor penyebab banyaknya kasus anemia, sehingga diperlukan edukasi gizi yang menarik untuk melakukan intervensi pemberian edukasi melalui media pembelajaran secara lebih mendalam sebagai upaya penurunan angka anemia. Tujuan: Penelitian ini bertujuan untuk mengetahui pengaruh media edukasi gizi terhadap pemilihan makanan setelah dilakukan intervensi yang sesuai dengan pedoman gizi seimbang. Metode: Bahan dalam literasi ini merupakan sekumpulan artikel dengan menggunakan mesin pencari Googlescholar. Metode yang digunakan adalah literature review dengan pengumpulan beberapa artikel yang berkaitan. Hasil: Terjadi peningkatan pengetahuan gizi setelah dilakukan intervensi. Namun belum terjadi peningkatan perilaku disebabkan karena adanya faktor eksternal yang sulit untuk dikendalikan. Kesimpulan: Terdapat pengaruh dari edukasi gizi melalui media menarik dan inovatif terhadap peningkatan pengetahuan gizi remaja putri.
