Abstract

Fish oil production in Indonesia is not only directly sourced from fish raw materials, but also could beprocessed from by-products of canning and fish meal through purification process. The result of purificationwith one process was not satisfy yet for the parameter oxidation quality. Therefore, fish oil from by-productsof fish meal needs to be purified more intensively, such as stratified purification. The aim of this study wasto improve the quality of fish oil from by-product through stratified purification. The multilevel purificationof once purification (P1), twice purification (P2), and three times purification (P3) gives varying results onphysical properties, oxidation parameters, and fatty acid profiles. The color of the brightest fish oil was foundin sample P2, the lowest density was found in sample P3 (0.63 g /cm3), the highest yield was in P1 sample(44.42%), FFA was lowest in P3 sample (0.37%), The lowest PV was in the P1 sample (25.59 meq / kg),the lowest TOTOX was in the P1 sample (48.11 meq / kg), and the highest PUFA content in the fatty acidcomposition was found in sample P2 (37.02%). Purified sardine oil from by-products of fish meal conductedby three-stage purification, which parameters have met the criteria of IFOS 2014 standards, while for PV,AnV, and TOTOX parameters have met IFOMA standards.

Abstract

ABSTRACT. The objetive of this study was to evaluate the effect offeeding with multimicronutrients fortified foods on anemia status and weight gain ofpregnan womrql. This study was carried out in three sub-districts in Bogor, i. e.: Leuwiliang, Leuwisadeng and Ciampea. A double blind randomized control trial was assigned on this study. About 210 pregnant women from these sub-districts were selected for this study and devided into 2groups, (1) 70 pregnant women received fortified foods with multi-micronutrients i.e. iron, iodine, zinc, folic acid, vitamin C, and vitamin A, and (2) 70 pregnant mothers received nonfortifiedfoods, each for 6 mounths. Product chosen as intervention carrier consisted of vermicelli, milk, and biscuit. Distribution ofproducts were carried out every week to thetarget pregnant women. The results of the study showed: (a) intervention could reduce prevalence ofanemia as much as 28% compared with placebo (b) Intervention affected the micronutrients consumption andfulfilled: iron 55,5% RDA, vitamin A 65% RDA, vitamin C 126% RDA, folat 15,3% RDA, zinc 26,7% RDA, iodium 26,3%, (c) intervention didn'tinfluence weight gain during pregnancy.

Abstract

Indonesia placed the fourth biggest diabetics in the world after India, China, and the USA with prevalence amounting to 8.6% of the population. Diabetes is an abnormal carbohydrate metabolism. Therefore, nutrition plays a key role in the management of the disease. This study aimed to find hypoglycemic sweet potatoes and appropriate processing to create low glycemic foods. Eight Indonesian sweet potato varieties/clones were used in this experiment, i.e. Kidal, Sukuh, Sari, Ungu, Jago, BB00105.10, B0464, and BB00106.18. Samples were firstly analyzed for their physicochemical and nutritional properties, which then followed by evaluation of their hypoglycemic responses. The selected variety was processed into three different basic processing methods, i.e. boiling, baking, and frying, and then their glycemic indexes (GI) were evaluated. Result showed that among eight sweet potato varieties/clones studied, BB00105.10 clone indicated the best hypoglycemic response. The highest hypoglycemic activity was supported with the highest resistant starch content (3.8%), protein content (5.47%), and low starch digestibility (51.4%). The sweet potato tubers contained medium to high amylose (24.94%). Processing methods influenced the GI value of foods. Fried sweet potatoes had the lowest GI (47), followed by the boiled one (GI = 62) and the baked one (GI = 80).

Abstract

Prevalensi penyakit degeneratif seperti diabetes melitus (DM) terjadi akibat perubahan gaya hidup masyarakat. Saat ini, jumlah penderita DM di Indonesia sekitar 14 juta jiwa. Diet pangan ber-indeks glikemik (IG) rendah akan membantu dalam  pencegahan primer dan pengendalian DM. Penelitian ini bertujuan untuk mengevaluasi penurunan IG beras dan perubahan mutu gizinya akibat proses pratanak. Prinsip proses pratanak yaitu perendaman gabah di dalam air (60ºC, 4 jam), pengukusan (20 menit), pengeringan I (100ºC, k.a. 18-20%) dan pengeringan II (60ºC, k.a. ≤ 12%). Hasil penelitian menunjukkan proses pratanak dapat meningkatkan kadar amilosa (15,44-26,32% menjadi 19,35-27,23%) dan serat pangan (4,67-7,57% menjadi 8,19-10,27%), tetapi menurunkan daya cerna pati in vitro (62,21-78,63% menjadi 36,40-49,74%). Proses pratanak menunjukkan hasil positif untuk memproduksi beras IG rendah, karena kemampuannya dalam menurunkan IG (54,43-97,29 menjadi 44,22- 76,32). Reducing glycemic index on some rice varieties using parboiled processing.Degenerative diseases such as diabetes mellitus (DM) become prevalence to the people' health due to the changing of lifestyles. Nowadays, the number of Indonesian diabetics around 14 million people. Diet of low glycemic index (GI) foods will assist in primarly production and controlling of DM. This research was aimed to evaluate reducing of GI rice and its nutritional quality changing due to parboiled processing. The basic process of parboiled rice i.e. rough rice steeping in waters (60·e, 4 h), steaming (20 minutes). drying I (100 °C. m.c. 18-20%) and drying II (60·e. m.c. d" 12%). Result showed that_parboiled processing increased rice amylose (15.44-26.32% to 19.35-27.23%) and dietary fiber content (4.67-7.57% to 8.19-10.27%), but reduced in in vitro starch digestibility (62.21-78.63% to 36.40-49.74%). Parboiled processing shared positive result in providing low GI rice, because of its capability in reducing GI (54.43-97.29 to 44.22-76.32).

Abstract

Soy protein isolate (SPI) is the purest form of protein from soybean with minimum protein content of 90%. Due to its high protein content, SPI is commonly used in food processing for improving the quality of food products, including infant formula. The use of SPI in infant formula is mainly designed for infant who cannot tolerate cow’s milk-based formula. This report reviews the benefit of using SPI in soy-based infant formula rather than soymilk from whole soybean itself. It will also review the technology of soy protein isolation which can result SPI for high quality infant formula, including the reducing of unfavourable ingredients which will ensure the safety of soy protein-based infant formula.

Abstract

Soy protein isolate (SPI) is obtained by extracting the soluble protein and removing non-protein material such as fat and carbohydrates. Because of this process, it has a neutral flavor and cause less flatulence than soy flours. Furthermore, SPI has higher Protein Digestibility Corrected Amino Acid Score (PDCAAS) compared to soymilk, which is 100% and 92.6% respectively.

Abstract

The aims of this study were to observe phytochemical components contained in waterlily seeds and its ethyl acetate extract; and to observe their antibacterial activities on rats that were intervened with diarrhea-causing bacteria (Enterophatogenic E. coli K1.1, EPEC). Treatment was given on the Sprague Dawley male rats (weighing 140 ± 5 g) for 28 days. Male rats were fed a basal diet (grup control) or the same diet containing 18.7 g/100g of waterlily’s seed flour or the same diet containing 6 g/100 g of FOS or a basal diet with 17.8 mg/ml waterlily’s seeds extract (orally route) for 2,3 or 4 weeks. After 2 weeks treatment feedings, rats were orally infected with 0.3 ml of 106 CFU/ml E. coli in a week. Cecal contents were collected at the end of each time period.The biological activity of treatment was observed by observing body weight, daily feed intake, feed effi ciency, total microorganisms, total E. coli and total lactic acid bacteria from the cecum contents of rats and histological picture of the small intestine of rats. The results showed that water lily seed contain alkaloids, fl avonoids, steroids, glycosides, tannins, saponins, and triterpenoids, whereas ethyl acetate extract of water lily seed contain alkaloids, fl avonoids, tannins, glycosides, saponins and triterpenoid. Substitution treatment with waterlily seed in rations affect to total E. coli in the cecum, both after EPEC intervention and after the intervention stopped. While the provision of waterlily seed extracts affect to total E. coli in the cecum after the intervention stopped. The feed effi ciency in group substituted with waterlily seed was higher than the control and its extract (P <0.05). Substitution treatment of waterlily seed and the extract could prevent damage to the intestinal villi resulting from enterophatogenic E.coli attack. The results of this study indicated that both waterlily seed and its extract contain active compounds that could prevent and inhibit the growth of E. coli causing diarrhea in rats.ABSTRAKPenelitian ini bertujuan untuk mengetahui komponen Þ tokimia yang terdapat pada biji teratai dan ekstrak etil asetat bijiteratai dan mengetahui aktivitas antibakterinya terhadap E.coli penyebab diare (E.coli Enteropatogenik K1.1, EPECK1.1) pada tikus percobaan. Perlakuan diberikan pada tikus jantan jenis Sprague Dawley (berat 140 ±5 g) selama28 hari. Tikus percobaan dibagi menjadi 4 grup yaitu, grup 1, kontrol (mendapatkan ransum standar), grup 2 yangmendapat ransum yang disubstitusi tepung biji teratai (18,7 g/100 g), grup 3 yang mendapat ransum yang disubstitusiFOS (fruktooligosakarida, 6 g/100 g), dan grup 4 yang mendapat ransum standar dan ekstrak etil asetat biji teratai(17,8 mg/ml). Setelah 2 minggu perlakuan ransum, tikus percobaan diintervensi secara oral dengan 0,3 ml dari 106CFU/ml EPEC K1.1 selama 1 minggu sehingga diare. Aktivitas biologis ransum perlakuan diamati dengan mengamatibobot badan, konsumsi ransum per hari, eÞ siensi ransum, total mikroba, total E.coli dan total bakteri asam laktatdari isi sekum tikus percobaan. Hasil penelitian menunjukkan bahwa biji teratai mengandung alkaloid, ß avonoid,steroid, glikosida, tanin, saponin, dan triterpenoid, sedangkan ekstrak etil asetat biji teratai mengandung alkaloid,ß avonoid, tanin, glikosida, saponin dan triterpenoid. Substitusi biji teratai pada ransum mampu menurunkan totalE.coli isi sekum, baik setelah intervensi maupun setelah intervensi EPEC dihentikan. Sementara pemberian ekstrakbiji teratai mampu menurunkan total E.coli isi sekum setelah intervensi dihentikan. EÞ siensi ransum pada grup yangdisubstitusi biji teratai lebih tinggi dibandingkan kontrol dan ekstrak biji teratai (P<0.05). Perlakuan substitusi bijiteratai, dan pemberian ekstrak biji teratai dapat mencegah kerusakan pada vili usus halus akibat dari serangan E.colienteropatogenik. Berdasarkan penelitian ini, baik bjii teratai maupun ekstrak biji teratai mengandung senyawa aktifyang mampu mencegah dan menghambat pertumbuhan E.coli penyebab diare.Kata kunci: Biji teratai, Enterophatogenic Escherichia coli, ekstrak etil asetat, antibakteri, diare.

Abstract

Hypercholesterolemia condition was reported can decrease activities of antioxidant superoxidedismutase, catalase, and glutathione peroxide. This study was conducted to observe the role of seaweed(Eucheuma cottonii) powder in increasing the level of antioxidant cooper, zinc-superoxide dismutase (Cu,Zn-SOD) in kidney tissues of hypercholesterolemic rats. Twenty male Wistar rats were used in this study.Those rats were divided into four groups ; (1) Negative control group (A), (2) and (3) werehypercholesterolemic groups that were treated with 5% (B), and 10% (C) of seaweed powder, and (4)Hypercholesterolemic group as positive control (D). The treatment was carried out for 35 days.Hypercholesterolemia condition (>130 mg/dl), except for group A, was achieved by feeding the rat withcommercial diet containing 1% cholesterol and drinking water ad libitum for 40 days. Serum total cholesterolwas analyzed both before and after treatment. Rat kidneys were taken at the end of treatment, andprocessed by using paraffin embedding standard method. The tissues were then stained usingimmunohistochemical technique to Cu,Zn-SOD. The results showed the seaweed powder decreased serumtotal cholesterol, increased caecum cholesterol, repaired alteration of kidney tissues, and increased thelevel of antioxidant Cu,Zn-SOD in the kidney of hypercholesterolemic rats. Dietary fibers and antioxidantactivity of 10% seaweed powder was better than the of 5%.

Abstract

The objective of this study was to observe the effect of functional synbiotics yoghurt (made ofindigenous probiotic + oligofructosaccharides) in rats that were infected with Enteropathogenic Escherichiacoli (EPEC), and to detect its effect on hematological status. A total of 25 male Sprague Dawley rats wereused in this study and divided into five treatment groups: (i) negative-control; (ii) positive-control; (iii)synbiotic yoghurt; (iv) synbiotic yoghurt + EPEC; and (v) conventional prebiotic yoghurt. Yoghurt (109 cfu/mL lactic acid bacteria) was given orally using feeding tube at day one until day 4. At day 8 – day 14animals were infected with EPEC (107 cfu/mL) orally using feeding tube; at day 22 blood samples werecollected for hematology analysis (erythrocytes, hematocrit (Hct), hemoglobulin (Hb), platelets, andleucocytes). Post infection with the EPEC diarrhea was developed in rats both in the control positivegroups and in the synbiotic yoghurt + EPEC group. Animals in the positive-control group had a significantlyhigher thrombocytes and leucocytes counts and Hct compared to that in animals in the other groups(P<0.01). Whereas there were no significant effect on the erythrocytes counts and Hb (P>0.05). The treatmentwith synbiotic yoghurt, in both synbiotic yoghurt only and synbiotic yoghurt + EPEC groups significantlyreduced the platelets and leucocytes counts and Hct of rats
