Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh pemberian probiotik kering starbio dalam ransum terhadap karakteristik karkas babi Landrace persilangan. Penelitian dilakukan selama 5 minggu di peternakan babi milik Bapak Ir. I Wayan Sana. Babi yang digunakan dalam penelitian adalah ternak babi jantan kastrasi fase finisher yang berjumlah 24 ekor. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL), dengan dua perlakuan terdiri dari TS yaitu penambahan probiotik kering starbio 0% dari total ransum yang diberikan dan DS yaitu penambahan probiotik kering starbio 0,25% dari total ransum yang diberikan. Variable yang diamati dalam penelitian ini adalah bobot potong, berat karkas, persentase karkas, panjang karkas, luas UDMR (Urat Daging Mata Rusuk), tebal lemak punggung dan fleshing index. Data yang diperoleh dianalisis menggunakan Two Independent Sample T Test. Hasil penelitian menunjukan bahwa pengaruh pemberian probiotik kering starbio dalam ransum terhadap karakteristik karkas babi Landrace persilangan menghasilkan bobot karkas, panjang karkas dan luas UDMR berbeda nyata (P<0,05) sedangkan untuk bobot potong, persentase karkas, tebal lemak punggung dan fleshing index tidak berbeda nyata (P>0.05). Dari hasil penelitian ini dapat disimpulkan bahwa penambahan starbio 0,25% dalam pakan komersial dapat meningkatkan bobot karkas, panjang karkas dan luas UDMR (urat daging mata rusuk) babi Lanrdrace persilangan fase finisher dan dapat disarankan kepada petani peternak untuk menambahkan starbio kedalam pakan ternak babi pada fase finisher yang dipelihara, karena penambahan starbio kedalam pakan dapat meningkatkan bobot karkas, panjang karkas dan luas UDMR (urat daging mata rusuk) pada babi Lanrdrace  persilangan.

Abstract

The study which aims at observing on the quality of local rabbit meat which was given concentrates at different levels with the basic feed of the waste of carrot leaves was conducted in Dajan Peken Village, Tabanan District, Tabanan Regency and nurtured for 12 weeks. A randomized group design with five replication was applied in this study. The rabbits were allocated randomly into four treatments, i.e. the rabbits were supplemented with control ration of carrot leaves (R0), control ration that was concentrated 15g /head /day (R1) control ration that was concentrated 30 g/head /day (R2) and control ration that was concentrated 45 g/ head /day (R3). The carrot leaves and water were given continuously (ad_libitum). The variables which were observed in terms of; meat color, Ph value of the meat, the water holding capacity, the cooking loss and the drip loss. This study showed that R3 treatment caused significant differences in terms of meat color, Ph value of the meat and water holding capacity (P <0.05) compared to the treatments R0, R1, and R2. The results were not significantly different (P> 0.05) indicated by the test results of cooking loss and drip loss. In order to sum up, based on the results of this study, a conclusion can be made in which it shows that the quality of local rabbit meat given with the basic feed of the waste of carrot leaves which was supplemented with 45 g/ head/ day of concentrate was found having the best meat quality compared to rabbits without concentrate supplementation, in concentrate supplementation 15 g/ head/ day and 30 g/ head/ day. Abstract

A research has been carried out to determine the effect of wine waste usage as feed to local male rabbit (Lepus nigricollis) internal non carcass for 16 weeks in Tejakula Village, Buleleng Regency. The animal used in this research were 18 local male rabbit age 5 – 6 weeks. The randomized block design with three treatments and six blocks as replicates. The treatments were fed ration without wine waste as control diets (P0), fed ration containing 5% wine waste (P1), and fed ration containing 10% wine waste (P2). The variables observed in this research were percentage of lungs, heart, liver, kidney, and digestive tract. The results showed that the rabbit fed ration containing wine waste until level 10% has not significant different (P>0,05) on internal non carcass of local male rabbit. Abstract

Penelitian ini bertujuan untuk mengetahui tingkat cemaran mikroba pada daging babi bali dan babi landrace. Penelitian ini dilaksanakan di Rumah Pemotong Hewan (RPH) tradisional serta di Laboratorium Teknologi Hasil Ternak (THT) dan Mikrobiologi Fakultas Peternakan Universitas Udayana selama 2 bulan. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan 2 sampel daging babi segar. Data yang diperoleh kemudian dianalisis dengan T-test. Hasil penelitian menunjukan bahwa tingkat cemaran Total Plate Count (TPC) daging babi babi berbeda nyata (P<0,05) lebih tinggi 79,01% dibandingkan daging babi landrace. Cemaran Coliform dan Escerichia coli daging babi bali berbeda tidak nyata (P>0,05) dibandingkan daging babi landrace, namun secara kuantitatif daging babi bali memiliki tingkat cemaran Coliform dan Escerichia coli lebih tinggi dengan perbedaan persentase berturut-turut yaitu, 28,57% dan 91,30% dibandingkan babi landrace. Berdasarkan hasil penelitian tingkat cemaran mikroba daging babi bali lebih tinggi dibandingkan dengan cemaran mikroba daging babi landrace.

Abstract

Penelitian menggunakan rancangan kelompok teracak lengkap (randomized complete block design ),dengan tiga  perlakuan ransum dan empat  blok. Penelitian ini menggunakan 12 ekor sapi dengan bobot badan 262±11,27 kg. Sapi Bali di alokasikan secara acak  kedalam tiga perlakuan, yaitu sapi-sapi yang mendapat perlakuan kontrol RKMBI0 yaitu konsentrat molamix tanpa minyak ikan lemuru, RKMBI5 konsentrat-molamix berminyak ikan lemuru 5%, RKMBI10 konsentrat-molamix berminyak ikan lemuru 10%. Rumput gajah diberikan secara ad libitum yang dipotong dengan mesin chopper pada semua perlakuan dan konsentrat diberikan 3 kg/hari/ekor dengan dicampur bersama rumput. Hasil penelitian ini menunjukkan bahwa, persentase tertinggi potongan non karkas internal bagian hati terdapat pada perlakuan RKMBI10 yaitu 1,70%, diikuti RKMBI5 1,59%, dan RKMBI0 yaitu 1,50% berbeda tidak nyata. Begitu juga untuk potongan non karkas internal lainnya ginjal,limpa paru-paru, dan jantung menunjukkan hasil yang berbeda tidak nyata (P>0,05) Berdasarkan hasil penelitian dapat disimpulkan bahwa peningkatan pemberian suplementasi minyak ikan lemuru dalam kosentrat molamix tidak memberikan pengaruh yang nyata terhadap potongan non karkas internal sapi bali.

Abstract

This study aims to find out the comparative quality of organoleptic pork from landrace pigs that are fed to landfill (TPA) waste with meat from landrace pigs fed by commercial feed. The research was conducted in the Laboratory of Animal Product Technology and Microbiology Faculty of Animal Husbandry, Agrokomplek Building of Udayana University. This study used Completely Randomized Design (CRD) with a comparison of two different meat samples. Data analysis was performed by using Mann-Whitney Non-Parametric analysis with the help of SPSS 24. Organoleptic variables observed in this study include color, aroma, texture, tenderness, taste and overall acceptance. The treatment consisted of meat from landrace pigs fed on landfill waste with meat from landrace pigs fed by commercial feed. From the result of the research, it is found that panelist's favorite level of color, texture, tenderness and meat flavor of landfill pigs are fed significantly (P<0.05) with pigs given commercial feed. While the panelist's favorite level of landrace pigs aroma given by landfill-based waste feed was statistically not significantly different (P>0.05) with commercially fed pigs. Based on the results of this study it can be concluded that meat from landrace pigs fed on landfill waste has lower organoleptic quality compared to meat from landrace pigs fed by commercial feed. Abstract

This study aims to determine differences in the organoleptic quality of balinese pork with landrace pork, This research was conducted in Slaughter House Traditional andthen in Livestock Product Technology Laboratory and Microbiology, Faculty of Animal Husbandry Universitas Udayana for two months. The study design is completely randomized design (CRD) with a ratio 2 samples of meat that has been fried and 38 semi-trained panelists. The results showed preference level panelist on the color and texture of landrace pork significantly (P<0,05) higher than balinese pork, while the preference level panelist on the aroma, flavor and overall acceptance of bali pork significantly (P<0,05) higher than the landrace pork. Abstract

This study aims to find out the effect of marination with different concentrations using a wuluh starfruit (averrhoa bilimbi) solution on the total plate count and physical quality of Balinese beef. This study was conducted in September 2020 - October 2020 at the Laboratory of Animal Product Technology and Microbiology, Faculty of Animal Husbandry, Udayana University. The study was conducted using a completely randomized design (CRD) with 4 treatments and 4 repetitions. The four treatments were: the beef was marinated using only distilled water (P0), the beef was marinated using wuluh starfruit solution with a concentration of 20% (P1), the beef was marinated using wuluh starfruit solution with a concentration of 40% (P2), and the beef was marinated using wuluh starfruit solution with a concentration of 60% (P3). The variables observed were total plate count and physical quality of beef including, pH, color, water holding capacity, cooking loss, and raw loss. The results showed that Balinese beef marinated using the wuluh starfruit solution with a concentration of 0, 20%, 40% and 60% obtained the total plate count was 6.5 x 106 cfu / g - 3.3 x 105 cfu / g; pH value was 5.06 - 3.45; colors was 2.00-1.00; DIA was 27.44% - 22.88%; cooking loss was 31.45% - 37.29%; raw loss was 12.80% - 16.82%. The best results based on the total plate count value was the P3 treatment with a solution concentration of 60%, whereas when viewed from the physical quality of the beef, the P0 treatment marinated without wuluh starfruit solution obtained the best results. Abstract

This research aims to know the effect of mixture of lysine, methionine supplementation and kolin in corn and pollard against primal cut carcass piece of bali boar. The research was conducted in BanjarBatuParas, Padang Sambian kaja village, West of Denpasar with long research of 12 weeks. Pigs were used in this research amount is 9 bali boar with average initial weight 13.11 kg. The design used in this study was a Design Randomized Complete with 3 treatments and 3 replicates. The treatment is given a bali boar rations without supplementation lysine, methionine and kolin (P0), bali boar given rations with a mixture of lysine, methionine supplementation and kolin 0.5% level (P1) and bali boar given rations with supplementation a mixture of lysine, methionine and kolin with level 1% (P2). The variables observed in this research is the primal cut carcass piece which covers the jowl, boston, loin, ham, picnic soldier and bacon belly. The results of this research show that the existence of the effect on the pieces of primal cut carcass of bali boar. Based on the results of the study it can be concluded that the provision of ration with aminovite supplementation (lysine, methionine and choline) was 0.5% and 1% significantly in increasing the primal percentage of carcasses of jowl and loin. But at the jowl portion of the primal carcass, 0.5% aminovite supplementation produced a higher percentage than 1% aminovite supplementation. Supplementation of 1% aminovite significantly increased the primal cut of the ham carcass. Key words: bali boar, primalcarcass, supplementation, aminovit

Abstract

The study was carried out to determine differences in nutrients content of Balinese pork with landrace pork conducted at Traditional Animal Slaughter House and Laboratory of Livestock Product Technology and Microbiology, Faculty of Animal Husbandry University of Udayana for two months. This study used a completely randomized design (CRD) using balinese pork reared traditionallyand landrace pork reared intensivelyas  treatments.The meat in the LD (Longisimusdorsi) musclesfrom these pigs of both breeds was taken as a sample. The variables measured were the levels of protein, fat, carbohydrates, moisture and ash content. The data were obtained and analyzed by Two Independent Sample T-test. The results showed that protein and carbohydrate of landrace pork were significantly (P<0.05) higher than balinesepork. The fat content of balinesepork was significantly (P<0.05) higher than landracepork, Overthere moisture and ash content of balineseand landraceporkmeat were not significantly different. The results of this study concluded that the nutrients content of landrace pork were better than the nutrients content of balinesepork because it had higher protein and carbohydrates, as well as having a lower fat content than balinese pork.
