Abstract

The purpose of this research was to determine the effect of adding cilembu sweet potato starch (1-6 %) and storage time (2, 4, 6 weeks) on physicochemical and microbiology of synbiotic yoghurt ice cream. The research methodology used was experiment laboratory. The first experiment was designed by Completely Randomized Design (CRD) using 7 treatments and 4 replications, while second step was designed by CRD using 4 treatments and 4 replications. Data were analized by Analysis of Variance (ANOVA) and continued by Duncan's Multiple Range Test (DMRT). Determination of the best treatment used Effectiveness Index, which has been modified. The result of first step showed the best treatment is the addition of cilembu sweet potato starch 3% with value 5.400 log10 cfu.mL-1 of total LAB, 4.322 of pH, 0.200 g.L-1 of EPS, 40.257 P of viscosity, 35.523 minutes.50g-1 of melting rate, 30.258% of overrun. For second step, the best treatment is 6 weeks stored with value 5.004 log10cfu.mL-1 of total LAB, 4.347 of pH, 0.327 g.L-1 of EPS, 114.928 P of viscosity, 48.828 minutes.50g-1 of melting rate. Abstract

This study aims to determine the effect of the lactation stage on the milk quality of Etawah Peranakan Goats based on pH value, water content, and total microbes in Muda Bakti Barokah Farm. Material used in this research was PE goat fresh milk from 3 different lactation stage i.e. early, mid, and late lactation stages. Completely Randomized Design (CRD) method used in this research, single factor (3 levels of lactation stage) in 15 replication. The research method used a Completely Randomized Design with three treatments and three replications. The data obtained (pH, moisture content, and total microbes) were analyzed by analysis of variance (ANOVA). If there is a significant difference, it is continued with Duncan's Multiple Range Test. The results showed that the lactation stage significantly affected the pH value and moisture content of Etawah crossbreed goat's milk. The total milk microbes of Etawah Peranakan goats during early lactation, mid-lactation, and late lactation ranged from 4.87 – 6.72 CFU/ml. This research concludes that there is a significant effect between early, mid-lactation, and late lactation according to pH values and moisture content. However, it does not affect the total milk microbes of Etawah crossbreed goats

Abstract

Goat milk kefir (GMK) refers to fermented products, generated through fermenting milk with microbial culture called kefir grains. Prior studies have reported the changes in kefir quality properties during aging process in which fermentation continues, resulting in changes of the peptide content. This research aims to investigate the effect of aging time on GMK–peptide characteristics to inhibite triglyceride syntheses on cells model of 3T3-L1. In this study, GMK were stored at 4 ± 1 oC for 0, 2, 4, 6 and 8 weeks, respectively. The protein profile was characterizedby implementing SDS-PAGE. The result of experiment indicated no protein degradation during the 6 weeks of aging period particularly for high molecular weight at 84 kDa, 80 kDa and 65 kDa. The GMK-supernatant from 8 weeks storage was performed by applying ultrafiltration membrane cut off < 30 kDa (UFC8 030.08). GMK-filtrate fractions (GMK-peptide) was collected as peptides. After 8 weeks of aging period, kefir protein profile was found to consist of peptide fractions and amino acid. The proteolytic activity of kefir grain increased linearly along with aging time (0-8 weeks). During aging period, the proteolytic activity of grain kefir released peptides and amino acid. In particular, the antioxidant activities were found significantly different (p<0.05) during aging periods. The antioxidant activities of GMK-peptide increased along with the elevating peptide concentration, from 3.30 % to 55.73%, with derivate by GMK-peptides of 2.75 – 10.39 mg/ml. Obesity associated with adipocyte hypertrophy occurred when TG accumulation.GMK-peptide of 100 mg/ml indicated the lowest TG level (2.00 ± 0.03 mg/dl). This finding was in line with the inhibition of TG synthesis (61.14 ± 3.26 %). However, GMK-peptide contained antioxidant potency due to may be corelated with decreasing TG synthesis.The study thus suggested the important role of kefir to prolong aging in generating higher peptide bioactive as antioxidant and inhibition of TG synthesis of cell model of 3T3-L1

Abstract

ABSTRAK. Mutu produk seasoning whey kefir sangat dipengaruhi oleh kualitas bahan baku, proses pengolahan, proses fermentasi dan waktu penyimpanan. Perubahan nilai gizi dapat terjadi karena proses penyimpanan yang akan mempercepat kerusakan terhadap produk seasoning whey kefir. Penelitian ini bertujuan untuk mengetahui pengaruh waktu penyimpanan terhadap total asam laktat, pH, kadar protein, Total Plate Count (TPC), dan Angka Kapang Khamir (AKK). Metode penelitian yang digunakan adalah eksperimen laboratorium dengan pola Rancangan Acak Lengkap (RAL) dengan 5 perlakuan dan 6 ulangan. Perlakuan yang dicobakan yaitu waktu penyimpanan 0 hari (P0), 7 hari (P1), 14 hari (P2), 21 hari (P3) dan 28 hari (P4). Analisis data menggunakan Analysis of Variance (ANOVA). Hasil analisis menunjukkan bahwa perlakuan waktu penyimpanan memberikan perbedaan yang sangat nyata (P0,01) terhadap total asam laktat, pH, kadar protein, Total Plate Count (TPC), dan Angka Kapang Khamir (AKK). Disimpulkan bahwa penggunaan seasoning whey kefir dapat bertahan dan layak untuk dikonsumsi selama 14 hari penyimpanan pada suhu refrigerator (0-4C) dengan nilai total asam laktat 1,12%, pH 4,30, kadar protein 1,06%, Total Plate Count (TPC) 3,73 log cfu/ml dan Angka Kapang Khamir (AKK) 2,92 log cfu/ml. (The effect of storage period on the physical, chemical and microbiological qualities) ABSTRACT. Seasoning whey kefir quality is strongly in fluenced by raw materials, processing, fermentation and storage. Changes in nutritional value may occur due to prolonge storage which will accelerate deterioration of seasoning whey kefir. This study aims to determine the effect of storage period on total lactic acid, pH, protein content, Total Plate Count (TPC), mold and yeast. The research method used was a laboratory experiment with a Completely Randomized Design (CRD) consisting of 5 treatment and 6 replications. The treatment tested was storage period 0 days (P0), 7 days (P1), 14 days (P2), 21 days (P3) and 28 days (P4) on whey kefir seasoning. The data were analyzed using Analysis of Variance (ANOVA). The result showed that as the storage period gave a very significant difference (P0.01) to total lactic acid, pH, protein content, Total Plate Count (TPC), mold and yeast. The use of whey kefir seasoning can last and are suitable for consumption during a period of 7-14 days of storage at refrigerator temperature (0-4C) with the total value of lactic acid 1,12%, pH 4,30, protein content 1,06%, Total Plate Count (TPC) 3,73 log cfu/ml, mold and yeast 2,92 log cfu/ml.

Abstract

Objective: The purpose of this study was to determine the character of ice cream made from goat’s milk kefir (GMK) combined with mono-acylglycerol (MAG).Methods: GMK was produced by pasteurized goat’s milk (85oC for 15 s) and 2% kefir grain. Ice cream mix (ICM) was produced by GMK, MAG (T0= 0%, T1= 0.25%; T2= 0.50%; T3= 0.75%), 4% sucrose, and 0.1% salt. The results of observations processed using Analysis of Variance (ANOVA) and Duncan’s Multiple Range Test (DMRT) if there were a significant difference between treatments.Results: Es puter (EP) made from GMK in combination with MAG has a distinctive character against T0 (control). The use of GMK decreases the pH value, thereby increasing the lactic acid and ethanol content which brings out the acidity of the product (p<0.05). In addition, increasing MAG concentration can improve the EP’s overrun to make the product more melt resistant (p<0.05). The use of GMK combined with MAG can support the viability of lactic acid bacteria (LAB) and yeast through storage in the freezer. The number of viable LAB and yeast meets WHO standards to obtained health benefit from consuming probiotic ice cream.Conclusions: To conclude, EP made from GMK in combination with 0.50% MAG was proved to be the best treatment.

Abstract

Rendang products can provide a considerable contribution to each marketing institution involved. The study aims to analyze the value of and marketing margin and farmer's share for producers of the beef-based rendang industry in Payakumbuh City. The research was conducted in 2022 in the central area of the rendang industry in West Sumatra, namely Payakumbuh City. The study involved twelve rendang industries that produce rendang using beef. Data were analyzed using the marketing margin and farmer's share (Fs) formulas to determine the value received by each marketing margin and the share received by rendang producers. The result showed that the average value of marketing margin based on the number of rendang variants produced (one variant, two variants, and three variants) showed that three rendang variants produced were able to provide the highest marketing margin value of 75.21%, compared to marketing margin of two rendang variants (72.85%), and one rendang variant (59.18%). Meanwhile, marketing margins based on the type of rendang variants produced are rendang sliced (74.41%), rendang suir (75.26%), and rendang tumbuak (73.48%) with Fs value by sequentially are 13.76%, 14.28%, and 13.58%.

Abstract

Maltodextrin has the drawback of increasing the glycemic index (GI), which is considered healthy during the digestion process. The incorporation of inulin, a prebiotic agent, addresses these issues while offering additional health benefits. This study aimed to characterize inulin-enriched honey powder produced via spray drying with varying ratios (100%, 75%, 50%, and 25%) of inulin and maltodextrin as carriers for potential application as a sugar substitute for prebiotic biscuit formulations. Chemical properties, including pH, moisture content, hydroxymethylfurfural (HMF) content, diastase activity, and the sugar profile, were analysed. The results revealed that formulations containing 50% inulin presented optimal characteristics, such as a balanced pH, minimal HMF levels, and favourable sugar profiles (e.g., glucose, maltose, fructose-to-glucose and glucose-to-moisture ratios). These findings suggest that inulin-enriched honey powder with balanced carrier ratios could serve as an innovative sugar substitute, contributing to the development of healthier prebiotic biscuits. Future studies should explore functional properties, including the prebiotic potential of inulin-enriched honey powder, which impacts biscuit rheology and consumer acceptability.

Abstract

Ice cream from goat milk kefir is lower lactose than cow milk kefir. Combining goat milk kefir with red dragon fruit in ice cream formulations can improve the quality of the product. This study aims to determine the sensory characteristics, total solid, total flavonoid, and antioxidant activity of goat kefir-based ice cream flavored red dragon fruit as quality evaluation. The study used a completely randomized design with 4 treatments and 3 replications. The treatment was the ratio of goat kefir and dragon fruit, including 40:60, 50:50, 60:40, and 70:30 in the ice cream mixture. 30 panelists participated in the organoleptic test. Total solid testing referred to SNI 01-3713-1995. Determination of total flavonoid content was carried out by forming AlCl3 complexes spectrophotometrically and assaying antioxidant activity used 2.2-diphenyl-1-picrylhydrazyl (DPPH) method. The results showed that there was no significant difference in the organoleptic test for taste, color, and texture. The results of the total solids test showed that the higher the addition of goat kefir to ice cream, the lower the total solids produced. While the addition of goat kefir increased the total flavonoids in ice cream. The antioxidant activity with the best formulation of 50:50 was categorized as moderate level, which is 136.59 ppm.

Abstract

The effect of Maringa oleifera flour addition on protein, moisture content, ash, fat content, texture, water holding capacity, organoleptic and color L*, a*, b in chicken meat dimsum. The treatments used were without the addition of moringa flour as a control and the addition of moringa flour 1%, 2%, and 3%. The variables measured were protein, moisture content, ash, fat content, texture, water holding capacity, organoleptic and color L*, a*, b*. The results showed that the treatment gave a significant effect (p < 0.05) on protein, moisture content and water holding capacity, gave a highly significant effect (p < 0.01) on ash content, organoleptic color, aroma, and taste, gave no significant effect (p > 0.05) on fat content, texture and texture organoleptic. The results of color testing L*, a*, b* has a highly significant effect (p < 0.01) on brightness (L*), a significant effect (p < 0.05) on redness (a*) and no significant effect (p > 0.05) on yellowness (b*). It can be concluded that the addition of moringa leaf flour at 3% in chicken meat dimsum gives the best results in terms of protein content of 13.45%, moisture content of 60,20%, ash content of 1,53%, fat content of 1,66%, texture of 5.15 N, water holding capacity 31%, organoleptic values of color 1.4, aroma 1.56, taste 2.05, and texture 3.1 and color lightness (L*) 54,25%, redness (a*) 0,97%, and yellowness (b*) 17,62%. The research suggestion is to use moringa leaf flour at 3% for good result in chemical qualities and use moringa leaf flour at 1% for good result in physical qualities.
