Abstract

Background: Personal hygiene is the basic principle of foodservice. Poor personal hygiene practices can lead to increase risk of microbial contamination in food. The personal hygiene of Islamic boarding schools’ food handlers are still low related to lack of knowledge. It caused by various factors, such as knowledge, attitudes, education, length of work, and habits on processing foodObjective: To examine the effect of mirroring education on the personal hygiene’s knowledge and attitudes of Islamic boarding school food handlers’ in Jombang.Methods: A pre-experimental study with a pretest-posttest group design. Total sampling were 41 food handlers in Islamic boarding school in Jombang. Data were analyzed by Paired Sample T-test and Wilcoxon test.Results: The age distribution of the respondents were 2,4% as the oldest age (58 years old) and 7,3% as the youngest age (17 years old), 26 respondents (63,4%) had working period <4 years and 22 people (53,7%) with low education. Knowledge and attitude about personal hygiene before and after education were significantly different (p=0, 01), also There were differences in knowledge and attitude about personal hygiene before and one week after education (p=0,01).Conclusion: Mirroring education can improve personal hygiene’s knowledge and attitudes of food handlers.

Abstract

Latar Belakang: ASI eksklusif merupakan salah satu program yang sedang gencar digalakkan oleh bidang kesehatan untuk menurunkan angka morbiditas dan mortalitas pada anak. Di Puskesmas Kedaung Wetan cakupan bayi usia 0 – 6 bulan yang memperoleh ASI eksklusif yaitu 22,1%, angka ini masih di bawah indikator capaian target yaitu 50%. Salah satu penyebabnya yaitu kurangnya pengetahuan tentang pentingnya pemberian ASI eksklusif.Tujuan: Untuk mengetahui pengaruh media edukasi video terhadap pengetahuan ibu hamil tentang ASI eksklusif di wilayah kerja Puskesmas Kedaung Wetan Kota Tangerang.Metode: Penelitian pre-experimental dengan rancangan one-group pretest-posttest without control group. Penelitian ini dilaksanakan pada bulan Desember 2022. Subjek pada penelitian ini yaitu ibu hamil sebanyak 40 orang menggunakan teknik purposive sampling. Analisis data dilakukan dengan uji Wilcoxon.Hasil: Hasil dari 40 responden didapatkan bahwa 29 orang (72,5%) berumur 26 – 35 tahun, 39 orang (97,5%) sebagai ibu rumah tangga, 24 orang (60%) berpendidikan terakhir SD. Berdasarkan hasil uji Wilcoxon, didapatkan bahwa nilai p-value yaitu 0.0001 atau p < 0.05 yaitu terdapat pengaruh pemberian media edukasi video terhadap peningkatan pengetahuan ibu hamil tentang ASI Eksklusif di Wilayah Kerja Puskesmas Kedaung Wetan.Kesimpulan:  Edukasi menggunakan video tentang ASI eksklusif efektif meningkatkan pengetahuan ibu hamil di wilayah kerja Puskesmas Kedaung Wetan Kota Tangerang

Abstract

Layanan makanan rumah sakit berperan penting dalam mendukung pemulihan pasien melalui penyediaan nutrisi yang sesuai. Kepuasan pasien terhadap penyelenggaraan makanan dipengaruhi oleh berbagai faktor, baik dari aspek makanan maupun pelayanan. Tujuan dari penelitian ini adalah untuk mengidentifikasi faktor-faktor penentu yang mempengaruhi tingkat kepuasan pasien terhadap penyelenggaraan makanan di rumah sakit. RSUD Balaraja sebagai rumah sakit tipe B belum pernah melakukan penelitian mengenai kepuasan pasien dalam penyelenggaraan makanan. Penelitian ini menggunakan pendekatan kuanitatif dengan desain  cross sectional.  Teknik purposive sampling digunakan untuk memilih 102 pasien rawat inap. Data dikumpulkan melalui kuesioner, dan dianalisis menggunakan uji chi-square dan regresi logistik. Variabel dependen yang diteliti adalah kepuasan pasien, sedangkan variabel independen meliputi usia pasien, jenis kelamin, lama tinggal, pendidikan, kualitas makanan, aroma, variasi, tekstur, rasa, penyajian, kebersihan peralatan, ketepatan waktu penyajian, suhu makanan, serta sikap dan penampilan pelayan. Temuan  penelitian  menunjukkan  adanya  korelasi signifikan  antara  kepuasan  pasien  dan  kualitas makanan (p= 0.000), penampilan makanan (p= 0.014), aroma makanan (p= 0.002), variasi makanan (p= 0.004), rasa makanan (p= 0.008), kualitas layanan (p= 0.044), serta sikap pramusaji (p= 0.044). Tingkat kepuasan pasien secara signifikan dipengaruhi oleh tiga faktor  yaitu kualitas makanan (OR= 35.698, nilai p= 0.002), rasanya (OR= 9.055, nilai p= 0.018), dan tampilannya (OR= 0.026, nilai p= 0.030). Hasil penelitian ini mendukung tujuan untuk mengidentifikasi faktor yang memengaruhi kepuasan pasien, dengan menunjukkan bahwa kualitas makanan, rasa dan penyajian merupakan fator utama yang berkontribusi secara signifikan.

Abstract

Nowadays, stunting remains the most talked-about childhood growth issue. Preventing stunting in children requires a well-balanced diet rich in nutrients. A close-knit approach to the community through cadres is necessary to identify health needs and to motivate the adoption of balanced diet as a healthy lifestyle. Good health services can only be produced by cadres who possess the necessary knowledge and attitudes in the performance of their jobs. As a result, ongoing education is required. This community service project aims to raise cadre awareness of initiatives to stop toddler stunting. The Panunggangan Health Center in Tangerang City served as the location for this program. As a result of this activity, the cadre mothers' knowledge increased by 20.6% between before and after the activity. Also, our team's approach to counseling involves giving cadre moms in Panunggangan, Tangerang City, more knowledge through the use of the presenting method, which has an N-Gain value of 56.81%.

Abstract

Anemia remains a public health problem in Indonesia, with a prevalence of 23.7%. The government has implemented a prevention program by providing Iron–Folic Acid (IFA) supplements to adolescent girls and women of reproductive age, with coverage in DKI Jakarta reaching 63.5%. This study aimed to analyze the relationships among anemia knowledge, anemia perception, and teacher support with adherence to IFA consumption among adolescent girls. A cross-sectional design was employed, involving 55 students aged 16–18 years from SMA Muhammadiyah 15 Jakarta who were selected through purposive sampling. Data were collected using questionnaires that assessed knowledge, perceptions, teacher support, and adherence to IFA. Adherence was measured using the Morisky Medication Adherence Scale (MMAS-8). Chi-square analysis showed that anemia perception was significantly associated with IFA adherence (p = 0.003; OR = 9.394), whereas anemia knowledge (p = 0.272) and teacher support (p = 1.000) were not. These findings indicate that anemia perception plays a key role in determining adherence to IFA, whereas knowledge and teacher support do not. Programs that enhance adolescents’ perception of anemia risk and consequences are needed to improve adherence. School-based education should be more engaging and relevant, and although teacher support was not significant, schools still play an important role in providing a supportive environment for implementing the IFA consumption program.

Abstract

ABSTRACTBackground: 1Stunting is a condition of growth failure in children due to chronic nutrient deficiencies for a long time, especially during the first 1000 days of life. The results of the Indonesian Nutrition Status Survey (SSGI) also showed a decrease in the stunting rate from 27.7% in 2019 to 21.6% in 2023. The 2022 SSGI data recorded that 18.7% of children in Bogor Regency were still stunted. The current reduction in stunting is still far from the target of the 2020-2024 National Medium-Term Development Plan, where the number of stunted children in Indonesia is only 14%. Children are classified as stunted if the length/height z-score-for-age is <-2 SD. Stunting can occur due to poor gastrointestinal conditions. Prebiotics and probiotics play an important role in helping to maintain gastrointestinal health. Objective: The purpose of this study was to analyze the relationship between the consumption of prebiotic and probiotic food sources and the z-score of height/length for age. Materials and Methods: This cross-sectional study included 100 children aged 6-59 months in the stunting locus village of Bogor Regency. Height/length data were obtained using a stadiometer and infantometer. Assessment of food consumption of prebiotic and probiotic sources was conducted through interviews using the Semi Quantitative-Food Frequency Questionnaire form. Bivariate test used Pearson correlation test and multivariate test used multiple linear regression test.Results: The data showed that 48% of children were stunted, and 52% were normal. Bivariate test showed correlations of food consumption of prebiotic sources (r =0.274, p=0.006) and probiotics (r=0.264, p=0.008) with height/length z-score. Multivariate test results showed that consumption of prebiotic sources influenced length/height z-score for age (β=0.007, 95%CI: 0.002-0.011, p=0.003). Conclusion: Consumption of prebiotic food sources in children can improve the z-score of height-for-age.Keywords : Consumption; height; probiotics; prebiotics; stunting

Abstract

Dispepsia fungsional merupakan gangguan pencernaan yang umum terjadi, terutama pada mahasiswa tingkat akhir yang rentan mengalami stres akademik dan memiliki kebiasaan konsumsi makanan atau minuman yang dapat mengiritasi saluran pencernaan. Studi pendahuluan menunjukkan prevalensi dispepsia sebesar 68% pada mahasiswa tingkat akhir di Fakultas Ilmu Kesehatan Universitas Esa Unggul, Jakarta Barat. Penelitian ini bertujuan mengetahui hubungan antara intensitas konsumsi kopi, perilaku mindful eating, dan tingkat stres akademik dengan gejala dispepsia fungsional pada mahasiswa tingkat akhir. Penelitian menggunakan desain cross-sectional dengan melibatkan 105 mahasiswa tingkat akhir Fakultas Ilmu Kesehatan Universitas Esa Unggul yang dipilih melalui teknik proportionate stratified random sampling. Data gejala dispepsia fungsional, perilaku mindful eating, dan tingkat stres akademik diperoleh melalui kuesioner, sedangkan data intensitas konsumsi kopi diperoleh melalui wawancara menggunakan formulir SQ-FFQ. Analisis dilakukan secara univariat dan bivariat menggunakan uji chi-square. Hasil penelitian menunjukkan terdapat hubungan antara intensitas konsumsi kopi (p = 0,000) dan tingkat stres akademik (p = 0,002) dengan gejala dispepsia fungsional, namun tidak terdapat hubungan antara perilaku mindful eating dengan gejala dispepsia fungsional (p = 0,095). Mayoritas responden berusia 22 tahun, berjenis kelamin perempuan, mengalami gejala dispepsia fungsional (70,5%), memiliki intensitas konsumsi kopi tinggi (52,4%), perilaku mindful eating kategori mindful (55,2%), dan tingkat stres akademik sedang (50,5%). Kata Kunci: Dispepsia; Konsumsi Kopi; Mindful Eating; Stres Akademik.
