Abstract

This study analyses the risk of tofu production at the Saudara Jaya Tofu Factory using the Failure Mode and Effect Analysis (FMEA) method with the aim of identifying potential failures and calculating the Risk Priority Number (RPN) value based on severity, frequency of occurrence, and detection. The results of the study found 17 risks in the tofu production process with 5 highest priority risks, namely the mixing of good and bad quality soya beans, improper dosage of vinegar, negligence in managing soaking time, inappropriate tofu size, and less dense tofu. To minimise these risks, several mitigation measures are proposed, including the selection of quality raw material suppliers, the use of soybean sorting machines, the creation of written SOPs, the use of timers for soaking, and the replacement of cutting tools and presses with more efficient ones. The implementation of these mitigations is expected to improve the quality and efficiency of tofu production as well as customer satisfaction.

Abstract

In the coffee industry, product quality is a key factor in competing in the international market. The Teaching Factory (TEFA) at Polije faces challenges in maintaining quality consistency and meeting international standards. This study aims to implement Anaerobic Carbonic Maceration (ACM) technology in the coffee fermentation process at TEFA Polije to enhance the quality of the produced coffee. The methods used include technical training for workers on the operation and maintenance of ACM technology, the application of strict quality protocols, and the optimization of the logistics system from raw material management to product distribution. Data were collected through sensory evaluation and interviews with workers. The results indicate that the implementation of ACM technology significantly improves the coffee’s aroma and flavor profile, as well as the consistency of bean texture, aligning with international standards. The evaluation shows that 80% of workers were able to operate the technology correctly, and 75% of the products met premium standards after implementation. The conclusion of this study is that ACM technology is effective in improving the quality of TEFA Polije coffee while also creating opportunities for expansion into the international market.

Abstract

Aim: This study aims to analyze the value chain and measure the added value generated by a small-scale goat milk processing enterprise (Kefir Jember) in producing goat milk kefir drinks and kefir facial masks.Method: A descriptive quantitative method was applied, using value chain analysis and the modified Hayami method to evaluate the economic contributions of primary and supporting activities. Data collection involved direct observation, structured interviews with open-ended questionnaires, and analysis of production and financial records.Findings: The findings reveal that Kefir Jember successfully integrates key primary activities, such as sourcing, production, and marketing, along with supporting activities including infrastructure, human resource training, and simple technology use. The added value calculation demonstrated significant profitability, especially for kefir facial masks, which generated substantially higher added value compared to kefir drinks. These results highlight the economic benefits of diversifying goat milk products into innovative health and cosmetic items.Significance: The study provides valuable insights for micro-scale agro-enterprises on how strategic value chain management and product diversification can significantly enhance profitability. Practically, these findings could guide similar small-scale businesses in improving operational efficiency, product competitiveness, and sustainable economic growth.

Abstract

Background: Agroindustrial enterprises play a vital role in strengthening rural economies and creating value-added agricultural products. In Indonesia, small and medium enterprises (SMEs) producing processed fruit snacks, such as jackfruit chips, face persistent challenges related to resource management, production efficiency, and fluctuating market demand. Addressing these issues requires systematic tools for evaluation and decision-making. Aims: This study aims to assess the business feasibility of UD Matrix Jaya, an agroindustrial enterprise producing jackfruit chips, and to propose strategic development recommendations through the integration of a Decision Support System (DSS). Methods: A mixed-method descriptive design was employed, combining financial and non-financial feasibility analyses. Primary data were collected through interviews and structured questionnaires with business owners, while secondary data were obtained from company records. The DSS-UMKM v.2.0 framework was utilized to evaluate six dimensions: legal, marketing, production, management and human resources, environmental, and financial aspects. Results: Findings reveal that legal, production, and environmental aspects achieved a moderate level of feasibility, while marketing scored high. Conversely, management and human resources were rated low. Financial analysis demonstrated viability with positive Net Present Value (NPV), Internal Rate of Return (IRR) exceeding the discount rate, and a feasible Payback Period (PP). Overall, the DSS evaluation confirmed that the enterprise is suitable for further development. Conclusion: The integration of DSS provides a structured mechanism for SMEs to overcome multidimensional challenges in agroindustry. For UD Matrix Jaya, strategic priorities include strengthening managerial capacity, enhancing workforce quality, and optimizing production processes alongside marketing innovation. These measures are expected to improve competitiveness, ensure sustainability, and serve as a model for similar enterprises in emerging economies. By bridging technological decision-making tools with agroindustrial development, this research contributes to advancing sustainable agribusiness practices and supports policy directions toward empowering rural-based SMEs in Indonesia.

Abstract

Salah satu permasalahan dengan meningkatnya jumlah pendudukmenyebabkan fenomena alih fungsi lahan pertanian tidak bisadihindarkan. Penelitian ini bertujuan untuk menggali lebih dalam danmencari tahu dengan mengumpulkan bukti ilmiah bagaimana dampakalih fungsi lahan terhadap pendapatan petani di kabupaten Jember.Metode yang digunakan adalah deskiptif kuantitatif dan dianalisisdengan aplikasi statistik termasuk salah satunya adalah uji t sampelberpasangan (t-paired test). Hasilnya adalah rata-rata pendapatan totalpetani sebelum dan sesudah alih fungsi lahan terjadi perubahan dariRp. 2.134.583,33 menjadi Rp. 2.625.799,87. Secara keseluruhanberdasarkan hasil penelitian terjadinya alih fungsi lahan berpengaruhpositif terhadap pendapatan total petani. Hal ini terjadi karena lahanyang dialih fungsikan oleh petani responden di Kabupaten Jemberadalah lahan yang kecil dibawah 0.5 hektar dan bukan merupakanlahan produktif, sehingga hasil penjualan dapat dimanfaatkan untukusaha tani yang lebih luas atau berpindah menjadi wiraswasta ataupedagang.

Abstract

Inovasi di perlukan dalam segala bidang termasuk didalamnya olahanagribisnis perikanan. Tujuan Penelitian ini menginovasikan sebuahproduk abon ikan cakalang dengan penambahan abon jantung pisang.Sampel penelitian ini menggunakan 30 panelis dengan rentan umur25-40 tahun dengan sampel kosentrasi penambahan jantung pisangsebesar 0%, 30%, 50%,70%. Instrument yang digunakan dalampenelitian ini adalah koesioner. Analisis data secara univarit danbivarit (One Way Anova dan Friedman dengan alfa sebesar 0,05).Hasil penelitian ini di dapat bahwa abon ikan cakalang denganpenambahan jantung pisang sebesar 30% memberikan tingkatkesukaan kepada panelis lebih besar dengan rata- rata sebesar 4,04%dari pada abon tanpa jantung dan abon jantung pisang sebesar 50%dan 70%. Hasil uji normalitas dengan Friedman test di dapat bahwaada pengaruh kosentrasi penambahan jantung pisang terhadap aspekwarna, rasa, tekstur dan aroma abon ikan cakalang.

Abstract

Tanaman Obat keluarga atau Toga memiliki khasiat yang sudah terujibaik secara medis maupun herbal dapat membantu menyembuhkanberbagai penyakit dari yang ringan hingga penyakit berat. Bahkanpada dunia moderenisasi ini, banyak masyarakat yang mengubah polahidupnya lebih alami dengan mengkonsumsi bahan- bahan herbal.Berangkat dari pemikiran tersebut, maka kami melakukan pengabdiandi desa Gebang Tunggul dengan sasaran ibu- ibu rumah tangga yangtidak bekerja dan ingin memulai usaha. Metode pelatihan yangdilakukan yaitu dengan pendekatan langsung dan pelatihannyamenggunakan interaksi dua arah, dimana saat proses pelatihan, daripembahasan materi hingga praktek lapangan ibu- ibu terlibat langsungdalam pengolahan tanaman obat keluarga menjadi salah satu produkyang memiliki nilai jual Pelatihan dan pengemaan tanaman toga ini diharapkan mampu membantu ibu- ibu rumah tangga memberikanlapangan kerja baru sebagai alternative home industry dari tanamanobat keluarga yan mereka miliki. Hasil dari kegiatan pengabdiankepada masyarakat ini dinilai berhasil dengan begitu antusiasnyapeserta pengabdian kepada masyarakat mengikuti dan mengadopsicara pengemasan dengan baik serta tingkat antusiasme mereka dalammemasarkan produk mereka berupa produk tanaman herbal kering danbubuk.

Abstract

Program pengabdian kepada masyarakat ini telah selesai dilaksanakan,alasan memilih kegiatan ini adalah bahwa semakin banyaknya jumlahpetani lele di Kecamatan Umbulsari menyebabkan pasokan lele melimpah,sehingga harga lele di petani sangat murah dan tidak bisa untukmencukupi biaya operasionalnya. Metode yang dilakukan adalahmengajarkan keterampilan mengolah lele menjadi bakso dan nuggetkepada para petani lele. Selain itu juga diajarkan mengenai dasar-dasarmanajemen bisnis dan pemasaran sebagai pengetahuan pendukung dalammengembangkan suatu bisnis. Hasilnya adalah kegiatan penyuluhan danpelatihan membuat olahan pangan dari ikan lele telah berhasildilaksanakan dan dengan cepat dapat diadopsi oleh para pesertapelatihan dalam hal ini adalah petani lele Desa Gunungsari KecamatanUmbulsari. Produk olahan ikan lele yang telah di produksi terbuktimampu meningkatkan nilai tambah (value added) pada ikan lele mentahyang sebelumnya dihargai murah oleh tengkulak.

Abstract

Village livestock waste presents both an environmental burden and an underutilized resource capable of strengthening rural livelihoods when transformed into marketable organic fertilizer. This study develops a community-based circular agribusiness model that integrates market validation, pricing analysis, and value-chain coordination to improve the commercial feasibility of waste-to-fertilizer initiatives in rural Indonesia. A convergent mixed-methods design was implemented, combining a Price Sensitivity Meter survey with Cost–Volume–Profit and Break-Even Point calculations, supported by a simplified Value Chain Analysis involving farmers, processors, kiosks, and local cooperative actors. Data were collected from 60 small-scale livestock households, 150 fertilizer users, and 12–15 key informants across Arjasa District. Findings indicate an acceptable price range of IDR 40,000–80,000 per 25-kg bag, with an optimal price point near IDR 60,000. At this level, contribution margins remain positive across direct, cooperative, and kiosk channels, with the break-even requirement estimated at 180–230 bags per month. The value-chain assessment reveals constraints related to moisture variability, inconsistent granulometry, and high last-mile distribution costs. Proposed coordination measures include minimum quality standards, scheduled collection and delivery routes, and simple offtake agreements with a 3–5% quality-based incentive. Together, these elements form a replicable empowerment-oriented model that enhances income stability, reduces waste, and supports community-driven resource governance. The study demonstrates that circular agribusiness, when anchored in market evidence and locally manageable coordination mechanisms, can contribute to socio-economic resilience and strengthen community participation in sustainable rural development

Abstract

This study investigates how women’s economic roles and access to finance shape social resilience and economic innovation in coastal communities. Focusing on 55 households in Puger District, Indonesia, the research adopts an explanatory survey design using a structured questionnaire to measure women’s roles, access to finance, social resilience, and economic innovation on a five-point Likert scale. Descriptive statistics show that women play a strong role in household and community economies, while access to finance and innovation remain at moderate levels. Multiple linear regression reveals that women’s roles and access to finance both have significant positive effects on social resilience, alongside education and income. A second model demonstrates that women’s roles, access to finance, and social resilience jointly and significantly predict economic innovation, with social resilience emerging as a particularly strong determinant. These findings suggest that women’s participation and inclusive financial services are not only crucial for short-term welfare, but also for building the adaptive capacity and innovation needed to transform coastal livelihoods. The study recommends gender-responsive financial schemes and institutional support that strengthen social networks, collective learning, and experimentation as strategic pathways for enhancing resilience and innovation in coastal areas.
