Abstract

Broiler is type of chicken resulted from cross-breeding, selection and genetic engineering from chicken species with high meat productivity. Broiler meat is nutritious, tasty, savory, and tender texture despite its relatively expensive, making this type of meat is consumed by almost any class of society. therefore, it is important to determine the quality of broiler meat. Parameters that can determine the quality are pH and water holding capacity (WHC). The purpose of this research was to compare the quality of chicken broiler meat obtained in Oeba market and Naikoten market, Kupang City with pH measurement in 1 hour, 6 hours, and 24 hours postmortem and water holding capacity (WHC) measurement. The number of samples are 72 samples consisted of 39 samples from Oeba market and 33 others from Naikoten market. Results showed that in Oeba market 41,03% samples of meat indicated good quality, 58,97% samples had DFD quality with average cooking loss rate 27,85% and high WHC. Meanwhile, in Naikoten market it is shown that 60,66% samples had good quality, and 33,34% with average cooking loss rate 30,45% and low WHC. From the result, it can be concluded that chicken broiler from Naikoten market had better quality than any chicken broiler from Oeba market.

Abstract

Cysticercosis is a disease caused by the larvae of Taenia sp. worm which have serious impact to human. One of many caused of cysticercosis is population and maintenance system in a region. TTS is one area that has the highest number of pigs in the province. This study aims to determine the cysticercosis of pig at the slaughterhouse in So’e and to know the relation between cycstisercosis and maintenance system. The study was conducted to 14 pigs. The examination performed on the tongue muscle, masseter muscle and liver. The test were conducted postmortem examination and laboratory test. Laboratry test conducted to identify morphological of skoleks. The changes in the organs of the result of postmortem examination continued to cysticercus identification. And the laboratory result showed that 2 pig positive cysticercosis caused by cysticercosis cellulosae. It can be included that the cysticercosis connected with maintenance system. However, the cysticercosis of pig in So’e still required program by relevant agencies to eradicate this disease.

Abstract

Food is the main and important source of the human needs stay alive. Good food is a food that free from all the type of contaminations. Based on the origin of the food, there is to type of food; food from animal origin and vegetable origin. Egg is one of the food from animal origin, which has high nutritional value, but easily damaged if not handled well, threfore egg must be handled with special treatment to extend the consumption period. Purpose of this research is to review the liquid smoke to determine the effect The purpose of this study was to determine the effect of liquid smoke to the eggs storage period were observed through microbial contamination, yolk index, egg white index and haugh unit and air sac. The egg samples used is 54 eggs of chicken with the age of 0 days and tests were conducted at the Laboratory of Animal Disease and Veterinary Public Health The Universty of Nusa Cendana, Kupang. The study design used is a randomized block design, where samples are divided into 3 group, control group, the Group immediately spray with liquid smoke and topical group as soon as with liquid smoke. Results is the used of liquid smoke has effect against future save the eggs seen on the microbiological quality of eggs that is able to maintain the future save of the eggs up to 25 days, but the liquid smoke has no effect on the future save of eggs viewed from the physical eggs either on the indeks yolk, white indeks eggs, haugh unit and air sac.

Abstract

Dendeng is a traditional food results by the public Rote Ndao. The processing is done in the District Lobalain(Rote Ndao). Methods of use of the sugar palm consisting of 4 treatments, KO (without giving sugar palm), K1 (10% concentration of palm sugar), K2 (20% concentration of palm sugar), K3 (30% concentration of palm sugar), K4 (40% concentration palm sugar). 4 times the storage of dendeng with the observation that the 5th day (P1), 10th day (P2), 15th day (P3), 20th day (P4). The quality of dendeng observed included presentations lost water content after processing, testing organoleptic and microbiological quality in terms of Total Plate Count (TPC). The test results of water content during storage of Dendeng showed that, giving palm sugar concentration of 40% in the processing of dendeng, has a water content lower than the palm sugar concentration of 10%, 20% and 30%. During storage from day 5 to day 15, the water content with giving Dendeng palm sugar concentration of 40%, still meets the SNI. Organoleptic tests show that administration of palm sugar concentration levels in the processing of dendeng affect the quality of appearance, consistency / texture, aroma and taste of Dendeng. During storage in certain storage time of each treatment dendeng change the appearance, consistency or texture, aroma and taste. The test results TPC (Total Plate Count) of Dendeng showed that, giving the concentration of sugar palm sugar palm 40% in the processing of Dendeng, has a value of TPC (Total Plate Count) is lower than the concentration of sugar palm 10%, 20%, and 30 %. During storage, only on day 5 dendeng with palm sugar concentration giving 40% to abide by the TPC (Total Plate Count) of SNI.

Abstract

Broiler chicken is a type of poultry that has a very fast growth rate, and it can be harvested at the age of 5 weeks. Meanwhile, to improve development and promote good health, commercial feed contains antibiotics that are often given by farmers as additives which can kill microbes. Therefore, lactic acid bacteria can be classified as probiotic and also serve as an alternative to be added to feed because of their effectiveness in low acid or pH. In fact, they kill the pathogenic microorganism Escherichia coli that causes colibacillosis. Therefore, this study aimed to determine the effect of adding lactic acid bacteria in local formulation or commercial feeds on the profile of Escherichia coli the digestive tract of broiler chicken. The literatures used for this study were obtained from searching and collection of various reference sources using Mendeley and Google Scholar applications. Based on literature study with several literature, it was found that the provision of liquid lactic acid bacteria and solid probiotics mixed with commercial or local feed formualtion can reduce the number of Escherichia coli. Furthermore, it increases body weight gain, egg production and availabilty of metabolic energy, cause high fiber digestion, as well as improve feed consumption and conversion. In addition, it increases intestinal villi in the duodenum, jejenum and ileum, as well as dilate villi in the ileum.

Abstract

Anisakiasis is a disease caused by Anisakis sp. and classified as a dangerous zoonosis. The main source of infection in humans is consuming raw fish containing Anisakis sp. Larvae. Various diagnostic techniques are being developed to detect the incidence of anisakiasis. Diagnostic techniques currently used are the Rapid test and the molecular test. Molecular techniques have recently been developed as effective tools not only for the diagnosis of individual cases but also for the taxonomic and evolutionary study of anisakis nematodes. This literature study aims to determine the methods and work procedures as well as the level of accuracy of the various methods used to detect Anisakis sp .. Reference sources are taken in the form of articles, theses, journals, and e-books related to the title of the literature study being explored. via Google Scholar and with the help of the Mendeley app. Based on a review of literature studies, it can be seen that the method used to detect Anisakis sp. with a low level of accuracy namely KIT, LAMP Assay and SEM, while the methods with a high level of accuracy are PCR-RFLP and RT-PCR and the most effective methods are used to detect Anisakis sp. are PCR-RFLP and RT-PCR because the processing time is fast and can provide accurate results.

Abstract

Antibiotics are one type of antimicrobial that is often used by farmers because of several benefits as therapeutic agents, prophylactic agents, to as feed additives to support livestock growth, especially with meat products (Antibiotic Growth Promoters or AGP). The study was to find out how knowledges and attitudes towards antibiotics affect the practice of using antibiotics by farmer, conducted on cattle farmers in 3 sub-districts in Kupang City, namely Alak, Maulafa, and Kelapa Lima sub-districts. The sampling technique was carried out using a purposive technique where the samples taken had certain criteria namely had been raising cattle for more than 1 year. Sampling was done by knowing in advance the population of the Head of Family (KK) from the three sub-districts, namely as many as 14,924 families, then using an error of 10% obtained a sample of 99 families as respondents.Data analysis was carried out using Pearson correlation to see the relationship between knowledge and attitudes towards the practice of using antibiotics, it was found that there was a significant relationship between knowledge towards attitudes and practice at P < 0.01, and attitudes towards practice at P < 0.01. While the results of the path analysis show that there is an indirect relationship between knowledge and practice through attitudes of 0.388, and a direct relationship between attitudes towards practice of 0.690.

Abstract

Broiler chicken is one of the primary protein sources for humans, where the need for broiler chickens is increasing from year to year. For this reason, innovation is needed in producing complete feed for broiler chickens using local resources from NTT, namely Moringa. Moringa is very good given as feed for broiler chickens because Moringa contains essential nutrients needed for the growth and development of broiler chickens. Besides Moringa, many lactic acid bacteria to animal feed will be able to increase the absorption of nutrients from feed because it can suppress the growth of pathogenic bacteria, which can be seen from the picture of erythrocytes and platelets. The purpose was to analyze the effect of lactic acid bacteria isolated lontar palm sap on the erythrocyte and thrombocyte profile in broiler chickens. The feed was given as much as 3 kg per day with the administration time in the morning and evening. The provision of feed containing Moringa and lactic acid bacteria isolates lontar palm sap to broiler chickens did not statistically show a significant difference between the control group and the treatment group. But descriptively, it can be seen that on day ten, the erythrocyte value in the treatment group was higher than in the control group. In contrast, on day 21, the erythrocyte value in the treatment group was lower than in the control group. Provision of feed containing Moringa and lactic acid bacteria isolates palm sap to broiler chickens did not statistically show an effect but descriptively showed a difference in the average platelet value. The average platelet value in the treatment group was higher than in the control group. Further research needs to be done with a larger sample size related to Moringa as feed for broiler chickens.

Abstract

This study aims to determine the level of understanding and application of hygiene and sanitation of pork and chicken sellers in 5 traditional markets in Kupang City as well as butchers of pork and chickens in Oeba slaughterhouse, Slaughterhouses, Poultry slaughterhouse in Naikoten and home industry in oeba. A total of 100 respondents of pork and chicken sellers and 60 slaughterers of pig and chicken were taken as research samples by questionnaire and interview method. The data collected were analyzed descriptively. The level of understanding of hygiene and sanitation of the pig-slaughterer is 80% good, 10% enough, 10% bad and the application is 60% good, 40% enough while for the understanding of the butchers, the value of 66.7% is good, 23.3% is enough and 10% is bad and the application is obtained value 33.3% good, 66.7% is enough. Among the pig and chicken slaughterers the best level of understanding and application is the butcher of pigs. Levels of understanding of pork sellers on hygiene and sanitation obtained 44% good, 54% enough. 2% bad and the application 32% good, 68% enough while for understanding chicken seller got 48% good, 52% enough with its application 76% good, 24% enough. Chicken meat seller have a better understanding and application of pork sellers. Good understanding affects one's application at work. The results obtained show the level of understanding and application of hygiene and sanitation of pork and chicken sellers and butchers of pigs and chickens in Kupang City.

Abstract

Meat is one of the livestock products that cannot be separated from the needs of human life. The biggest possibility of bacterial contamination can occur in slaughterhouse (RPH). One of the bacteria that can contaminate meat is Escherichia coli. Escherichia coli (E. coli) is a bacterium that normally lives in the digestive tract of animals and humans. In general, E. coli is considered a normal flora in the digestive tract of animals (cows) that can contaminate meat and the environment around the slaughterhouse during the slaughter process. Beef which was contaminated initially accompanied by improper cooking process is a source of infection from several cases of food poisoning, including those caused by STEC. So that it is necessary to increase food safety for foods that come from animals such as beef or the processed of products to be able to guarantee the quality of food that will be consumed by the community and can prevent Foodborn disease. The sampling method was carried out using a purposive sampling method. Isolation and identification of bacteria was carried out on Eosin Methylene Blue Agar (EMBA) media, and then continued with other tests to confirm the positive Escherichia coli bacteria. On Eosin Methylene Blue Agar (EMBA) media, positive colonies of Escherichia coli are metallic green with black spots in the middle. Eosyn Methylene Blue Agar is a differential medium used to distinguish E. coli from other Enterobactericeae. The sample used was beef taken in Oeba RPH Kupang City when the slaughter was in progress. Samples taken were 41 beef samples in Oeba RPH. The results showed that from 41 beef samples, 4 positive samples of Escherichia coli (9,75%).
