Abstract

Hospital nutrition services are an integral component of improving the quality of patient health. This descriptive observational study aims to evaluate the achievement of Minimum Service Standards (MSS) for nutrition at RSUD Dr. H. Slamet Martodirdjo Pamekasan, specifically focusing on the accuracy of diet types, timeliness of food distribution, and patient food waste. Data were collected over a single menu cycle (10 days) from November 24 to December 4, 2025, involving 44 patients per day. Research instruments included observation sheets and the Comstock visual method, with data analyzed based on the Decree of the Minister of Health (Kepmenkes) No. 129 of 2008. The results indicated that the timeliness of food distribution reached 96% and the accuracy of diet types reached 100%, both of which met the MSS requirements (≥ 90% and 100%, respectively). However, the average patient food waste was 25%, which does not yet meet the maximum standard of ≤ 20%. In conclusion, while logistical aspects have fulfilled the established standards, the hospital needs to conduct further evaluations regarding food flavor factors and patients' clinical conditions to reduce food waste in accordance with the applicable standards.

Abstract

Complementary feeding plays a vital role in meeting the nutritional needs of infants and toddlers. However, food safety remains a concern, particularly for homemade commercial complementary foods. This study aimed to assess the microbiological quality and hygiene sanitation practices of homemade commercial complementary foods vendors in the service area of Karangandong Public Health Center, Gresik. A quantitative descriptive approach with a cross-sectional design was employed. Four homemade commercial complementary foods samples were collected from different vendors and tested for Total Plate Count (TPC) and Escherichia coli contamination. Observations and interviews were also conducted to evaluate the vendors' hygiene and sanitation practices. The results showed that three out of four homemade commercial complementary foods samples exceeded the maximum limit for microbial contamination (1 × 10² CFU/g). Two of the four samples tested positive for Escherichia coli contamination. The hygiene and sanitation practices of the vendors showed several non-conformities, categorized as minor, major, and critical. In conclusion, most homemade commercial MP-ASI products in this study did not meet established microbiological safety standards and reflected hygiene and sanitation practices that require improvement.

Abstract

Picky eating behavior is a common feeding problem among preschool-aged children. Children who exhibit picky eating tendencies often reject various types of food, especially new or unfamiliar ones, placing them at risk of an imbalanced intake of macronutrients such as energy, protein, fat, and carbohydrates. Inadequate nutritional intake over the long term may negatively impact a child's nutritional status and growth. This study aims to examine the relationship between picky eating behavior and the adequacy of macronutrient intake including energy, protein, fat, and carbohydrates and nutritional status among preschool children at Lab School 1 Kindergarten, State University of Surabaya. This research utilized a quantitative design with a cross-sectional approach. The study population consisted of 60 preschool children aged 4–6 years (48–73 months), selected using total sampling. After applying inclusion and exclusion criteria, a total of 37 respondents were included. Data were collected using the Child Eating Behavior Questionnaire (CEBQ) to assess picky eating behavior, interviews with the Semi-Quantitative Food Frequency Questionnaire (SQ-FFQ) to evaluate macronutrient intake, and anthropometric measurements to determine nutritional status. Data analysis was conducted using the Spearman Rank correlation test. The results showed a significant relationship between picky eating behavior and energy intake (p=0.002; r=0.495), fat intake (p=0.002; r=0.502), carbohydrate intake (p=0.006; r=0.443), and nutritional status (p=0.002; r=-0.493) among preschool children at Lab School 1 Unesa. However, no significant relationship was found between picky eating behavior and protein intake (p=0.064; r=0.307).

Abstract

Minimum service standards are about the quality of basic services which are an obligatory matter for the region that every citizen has the right to obtain at a minimum. So each hospital can implement and fulfill services in accordance with the minimum service standards that have been set. Nutrition services in hospitals can be said to be of quality if they have met 3 indicators related to minimum standards of service in nutrition services, where these are accuracy of food distribution (≥ 90%), accuracy of diet (100%), food waste (≤ 20%) (Ministry of Health , 2008). This study aims to determine the timeliness of food distribution to patients, determine the accuracy of the type of diet to patients and food waste to patients in the Asoka ward of Syarifah Ambami Rato Ebu Regional Hospital. The type of research used is descriptive quantitative with a cross sectional research design. This research was conducted in November at Syarifah Ambami Rato Ebu Bangkalan Regional Hospital. The subjects in this study were 169 inpatients in the Asoka room for 10 days. The data collection technique was carried out using the observation method. Observations consist of data on the timeliness of food distribution, data on the accuracy of the diet and data on patient food waste. The data analysis technique used is univariate. The results of the research stated that the average results for the timeliness of food distribution were 74%, the accuracy of the type of diet was 100% and the food waste was 27%. Thus, it can be interpreted that the indicator of timeliness of distribution of food and food waste has not yet reached the SPM success indicator, while the accuracy of the type of diet has reached the SPM success indicator.

Abstract

Dysmenorrhea is pain during menstruation experienced by women of childbearing age. Risk factors that can cause dysmenorrhea include age of menarche, family history, duration and menstrual cycle, stress, physical activity, nutritional status, and nutrient intake. Some nutrients that are related to the incidence of dysmenorrhea include fat, calcium, and magnesium. This study aims to determine the relationship between fat, calcium, magnesium, and physical activity intake with the severity of dysmenorrhea in students of the Faculty of Sport and Health Sciences, Surabaya State University. This study used a cross-sectional approach. The sampling technique used stratified random sampling with a total of 119 samples. Data collection used the NRS (Numeric Rating Scale) questionnaire for the incidence of dysmenorrhea, SQ-FFQ (Semi Quantitative Food Frequency) for fat, calcium, and magnesium intake, and IPAQ-SF (International Physical Activity Questionnaire-Short Form) for physical activity. The results showed that students of the Faculty of Sport and Health Sciences, Surabaya State University had low fat intake (79%), low calcium intake (58%), normal magnesium intake (47,9%), heavy physical activity (47,1%) and mild dysmenorrhea pain (40,3%). Data analysis using the Spearman Rank test showed a value of p = 0.000 (fat), p = 0.023 (calcium), p = 0.023 (magnesium), and p = 0.039 (physical activity). Based on the results of the study, it can be concluded that there is a significant relationship between fat, calcium, magnesium, and physical activity intake with the severity of dysmenorrhea (p <0.05).

Abstract

Abstract: Food safety is an essential aspect of ensuring the quality and health of food products, particularly for vocational students who will become future workers in the culinary industry. Understanding and maintaining positive attitudes toward hygiene and sanitation should be developed during the learning process to build appropriate food safety practices. This community service program aimed to strengthen students’ knowledge and attitudes regarding hygiene and sanitation through Good Processed Food Production Methods (CPPOB) education using a CPPOB Snakes and Ladders interactive learning media. The activity involved 52 culinary students of SMKN 4 Madiun, consisting of 10 males and 42 females. The program was conducted in three stages: interactive material delivery, discussion and Q&A sessions, and an educational game session. Evaluation was carried out using pre-test and post-test to measure changes in knowledge and attitudes. The results showed an increase in the average knowledge score from 93 to 99 and attitude score from 88 to 93 after the intervention. These findings indicate that interactive educational media effectively enhance students’ conceptual understanding and foster positive attitudes toward hygiene and sanitation practices. This program can serve as an innovative learning model to improve vocational students’ competencies in culinary education. Keywords: CPPOB; education; hygiene and sanitation; snakes and ladders media; culinary students Abstrak: Keamanan pangan merupakan aspek penting dalam menjamin mutu dan kesehatan produk makanan, khususnya bagi siswa kejuruan yang akan menjadi tenaga kerja di bidang kuliner. Pemahaman dan sikap positif terhadap higiene dan sanitasi perlu ditanamkan sejak masa pendidikan agar terbentuk perilaku kerja yang sesuai dengan prinsip keamanan pangan. Kegiatan pengabdian kepada masyarakat ini bertujuan untuk meningkatkan pengetahuan dan membentuk sikap positif siswa jurusan kuliner SMKN 4 Madiun melalui edukasi Cara Produksi Pangan Olahan yang Baik (CPPOB) berbasis media permainan ular tangga. Kegiatan diikuti oleh 52 siswa, terdiri atas 10 laki-laki dan 42 perempuan. Pelaksanaan dilakukan melalui tiga tahap, yaitu penyampaian materi interaktif, sesi diskusi dan tanya jawab, serta permainan edukatif. Evaluasi menggunakan pre-test dan post-test untuk mengukur perubahan pengetahuan dan sikap siswa. Hasil menunjukkan adanya peningkatan rata-rata skor pengetahuan dari 93 menjadi 99, serta sikap dari 88 menjadi 93 setelah edukasi. Peningkatan ini menunjukkan bahwa penggunaan media edukatif interaktif efektif dalam memperkuat pemahaman konsep sekaligus membentuk sikap positif siswa terhadap penerapan higiene dan sanitasi pangan. Kegiatan ini dapat menjadi model pembelajaran inovatif bagi sekolah kejuruan dalam meningkatkan kompetensi siswa di bidang kuliner. Abstract

Wasting in children aged 6-24 months remains a nutritional problem that requires attention because it can hinder their growth and development. This study aims to analyze differences in maternal nutritional knowledge and complementary feeding intake in wasting and non-wasting children aged 6-24 months in the Ganting Community Health Center, Gedangan, Sidoarjo. The study used an observational analytical quantitative design with a matched case-control approach. The study population was children aged 6–24 months and their mothers. The sample consisted of 66 respondents, namely 33 wasting children and 33 non-wasting children, selected through purposive sampling and individual matching based on age and sex. Data were collected using a maternal nutritional knowledge questionnaire, a single 24-hour dietary recall, and anthropometric measurements. Data analysis was performed univariate analysis and bivariate analysis using the McNemar test and the Odds Ratio (OR) with a 95% confidence level. The results showed a significant difference in maternal nutritional knowledge (p=0.003; OR=5.66) and fulfillment of the Minimum Acceptable Diet (MAD) (p=0.019; OR=3.75) between the wasting and non-wasting groups. This study found, low maternal nutritional knowledge and failure to meet the Minimum Acceptable Diet (MAD) was associated with an increased risk of wasting among children aged 6-24 months

Abstract

Stunting is a condition of growth failure that occurs in toddlers due to chronic malnutrition that occurs in the First 1000 Days of Life (HPK), starting from the formation of the fetus until the child is 24 months old. Factors that influence the incidence of stunting are direct factors (food consumption, history of infectious diseases, breastfeeding practices, food availability) and indirect factors (economic conditions, health services, education level, social and cultural aspects). This study aims to determine the pattern of complementary feeding (MPASI) and history of infectious diseases, as well as differences in the pattern of complementary feeding (MP-ASI) and history of infectious diseases in stunted and non-stunted children in the work area of ​​Ganting Health Center, Gedangan District, Sidoarjo Regency. This study uses a quantitative approach with a 1:1 case control design paired by age and sex. The sample of this study was 60 children, consisting of 30 stunted children as the case group and 30 non-stunted children as the control group taken using a purposive sampling technique. Data collection on complementary feeding (MPASI) patterns was conducted using the Child Feeding Questionnaire (CFQ) and infectious disease history was obtained through interviews using a questionnaire. Data analysis used the McNemar test. The results of this study showed a significant difference in complementary feeding (MPASI) patterns (p = 0.035) and infectious disease history (p = 0.022) in stunted and non-stunted children in the working area of ​​the Ganting Health Center, Gedangan District, Sidoarjo Regency

Abstract

Pengabdian kepada Masyarakat ini dilatarbelakangi oleh kondisi saat ini yang menunjukkan anak-anak merasa lebih nyaman bermain dengan gawai daripada berkegiatan lain. Gawai mempunyai beberapa macam fitur dan permainan yang menarik dari sisi audio visual. Padahal berbagai cerita mengenai asal mula nama desa, cerita rakyat, dan beberapa cerita lain ikut mewarnai Desa Doudo. Hal ini perlu dikenalkan kepada anak-anak melalui membacakan cerita atau mendongeng. Dua hal itu merupakan kegiatan yang tampaknya sepele, tetapi sangat berarti bagi perkembangan jiwa seseorang, khususnya anak. Pada sisi lain, membacakan cerita dan mendongeng dapat mengajarkan nilai-nilai karakter secara lebih terarah. Oleh sebab itu, pengabdian ini bertujuan untuk memberikan wawasan dan pengetahuan tentang pentingnya penguatan literasi melalui pembacaan cerita dan/atau mendongeng sehingga dapat meningkatkan keterampilan membacakan cerita dan mendongeng masyarakat Doudo. Metode yang digunakan adalah pelatihan dan praktik dengan sasaran para ibu. Hasil pengabdian menunjukkan bahwa cerita dapat menumbuhkan kegembiraan. Selain itu terjadi peningkatan keterampilan dari yang semula belum pernah membacakan cerita, melalui praktik kemudian tumbuh keinginan membacakan cerita. Yang semula mendongeng dengan suara datar menjadi lebih memainkan peran. Membacakan cerita dan mendongeng sebenarnya dapat dilakukan siapa saja (perempuan atau laki-laki) dari beragam usia.

Abstract

Abstract “Kerupuk Puli” or commonly referred to as “LEMPENG” are one type of cracker originating from the residency of Madiun. These crackers come from rice and use garlic as a flavoring. The savory taste and crunchy texture make the number of people who consume these crackers increase. In bu Iis’ business, the most conspicuous problem is in the cutting process. Cutting this dough is a production stage that requires precision, accuracy, and hygiene. Bu Iis' business still uses manual or human hands and a knife to cut so that the speed and accuracy of the size and cleanliness when cutting the cracker dough is not guaranteed. To overcome this problem, Bu Iis' business must get a touch of appropriate technology in the form of a cracker dough cutting machine. The cracker cutter is done manually, in 1 minute only about 10 slices of crackers are produced. But when done using a cracker cutting machine, it can produce 30 pieces of crackers per minute. With the help of this tool, the production process for cutting cracker dough can be done faster, so as to increase the production capacity of crackers.
