Abstract

One of the main qualities of food is seen from the biological safety aspect, such as being free from Pathogenic microorganisms. Staphylococcus aureus is a pathogenic bacterium that can contaminate food ingredients come from the skin of food handlers. S. aureus produces enterotoxins that have a poisoning in consumers. The preliminary observationstated that there were still many food handlers in the Mataram University canteen who did not pay attention to hand hygiene and personal sanitation. This study aims to determine the bacterial contamination of S. aureus swabbed from the hands of food handlers in the Mataram University cafetaria. The method was used in this research is descriptive observational. The research consisted of two stages, namely isolation and biochemical identification. The isolation stage resulted 10 culturable bacterial isolates. All bacteria were able to ferment mannitol on Mannitol Salt Then, the biochemical test identification resulted that all isolates had a positive catalase test, a positive slide coagulase test, Gram-positive, and staphylococci cell. The TSIA test resulted A/A or (acid)/(acid) which indicated that all isolates were able to use diverse carbon sources from sucrose, lactose, glucose. Moreover, other test as sulfur, indole and motility tests were negative. Therefore, all isolates in this study are classified as S. aureus. This research is also a promotive and preventive effort for the campus in implementing hygiene and sanitation for food handlers in the cafetaria.

Abstract

The prevalence of antibiotic resistance is a serious global health problem and a threat to human health. Staphylococcus aureus is a Gram-positive bacterium that can cause various infections in humans, such as skin infections, sepsis, endocarditis, osteomyelitis, and toxins that cause food poisoning. One way to overcome the problem of antibiotic resistance is to use Lactic Acid Bacteria (LAB). LAB has many benefits, including being able to function in food fermentation, produce antimicrobial compounds, and act as probiotics. This study aims to determine the inhibitory effect of LAB from baby feces as a natural antibacterial agent against S. aureus. The method used in this study was the agar well diffusion method. The number of LAB isolates used was 8 consisting of seven cocci and two bacilli forms and also used 2 controls, namely, negative control NaCl 0.9% and Positive Control Ciprofloxacin. This study consisted of six stages including media preparation, preparation of test bacteria, sample preparation, making suspensions of S. aureus and LAB, making Mcfarland solution, and antibacterial testing using the agar well diffusion method for 3 repetitions of the treatment. The results obtained showed that all LAB isolates were able to produce an inhibition zone against Staphylococcus aureus bacteria with the results of the isolates in diameter 01A 10-5 (7.67mm), 01A 10-6(2) (6mm), 03A10-7(1) (6.67mm), 01F 10-6(2) (2mm), 01F10-7(2) (1.67mm), 02AF10-7(1) (4.33mm), 03AF10-7(2) (4mm), 04AF10-7 (3.67mm). Based on the results of the Mann-Whitney test, it was found that all LAB isolates had significant differences from the positive control Ciprofloxacin. So it can be seen that LAB from baby feces is less effective in replacing antibiotics.

Abstract

Antimicrobial Resistance (AMR) is a global problem that causes increased morbidity, mortality, and healthcare costs. AMR arises from the irrational use of antibiotics in medicine and agriculture. This study aims to determine the profile of Gram-negative ESBL bacteria living in the cecum of broiler chickens. This study is a descriptive exploratory study using 5 chicken cecum samples taken from the Pagesangan market in Mataram city. The obtained bacteria were calculated by placing them on Macconkey agar media to count bacterial colonies. The results of this study showed that 20.1% of bacteria in the chicken cecum could grow on Macconkey media mixed with cefotaxime. Meanwhile, on Macconkey media without cefotaxime, 79.9% were obtained. Based on macroscopic, microscopic, and biochemical characteristics, it was found that the gram-negative bacteria obtained were Escherichia coli. In sensitivity tests, it was found that the bacteria were resistant to tetracycline (100%) and ampicillin (100%), and 25% were resistant to chloramphenicol. The conclusion is that gram-negative bacteria found in the cecum of broiler chickens, such as Escherichia coli, are resistant to several antibiotics. These bacteria are resistant to cefotaxime (20.1%), chloramphenicol (25%), tetracycline (100%), and ampicillin (100%).

Abstract

Community service activities were carried out in Sesaot Village, Narmada District, West Lombok Regency, which is known as a banana production center with a fairly large production volume on Lombok Island. One of the processing groups is Usaha Waroh Maju Bersama, which is engaged in the production of banana-based souvenirs, such as banana chips, banana sale, and various other processed products. However, this processing activity produces banana peel waste that has so far been thrown away. In fact, banana peels contain phytochemical compounds such as saponins and flavonoids that have the potential to be used as antibacterial agents. This community service aims to provide assistance to Usaha Waroh Maju Bersama to process banana peel and lime waste into antibacterial dishwashing soap. This activity was carried out on Friday, August 8, 2025. The service method used was mentoring through demonstrations. This activity was attended by 11 participants, all of whom were women, the majority aged 26-50 years. The educational background of the participants varied, dominated by junior high and high school graduates. The evaluation results showed a positive response: 81.8% of participants strongly agreed that the material was easy to understand, 90.9% considered the resource person to have delivered the material clearly, and 72.7% felt the practice was easy to follow. No participants disagreed, so it can be concluded that the activity was effective. Participants said that the steps for making soap were quite simple, practical, and easy to apply at home. Most participants expressed a desire to participate in follow-up activities with different topics such as making skin care products from natural ingredients or utilizing other fruit waste. This community service activity succeeded in increasing community skills and awareness in processing banana peel waste into healthy, environmentally friendly, and economically valuable household products.

Abstract

Infectious diseases are diseases caused by bacteria. Several bacterial infectious diseases include bacteria that cause skin infections such as Staphylococcus aureus, Staphylococcus epidermidis, Propionibacterium acnes and Streptococcus pyogene, nosocomial pneumonia infections of the urinary tract by Pseudomonas aeruginosa and Klebsiella pneumoniae that cause Healthcare-Acquired Infections (HAIs). The drugs usually used to treat bacterial infections are antibiotics. Along with the increase in cases of infection, there is also an increase in the use of antibiotics. Widespread or irrational use of antibiotics can cause resistance, so alternatives are needed to overcome them. One plant that has potential as an antibacterial agent is the leaves of Chinese Ketepeng (Cassia alata L.). Chinese ketepeng leaves contain phytochemical compounds, namely flavonoids, saponins, tannins, alkaloids and phenols. Therefore, this literature review aims to determine the potential of Chinese Ketepeng (Cassia alata L.) leaf extract as an antibacterial agent. The method used is the Systematic Literature Review method by collecting data through databases such as Publish or Perish, PubMed, and Google Scholar. The search method uses the keywords "Chinese Ketepeng Plant", "Skin infection", "Antibacterial", "Disc diffusion", "Well diffusion", "Staphylococcus aureus", "Staphylococcus epidermidis", "Klebsiella pneumonia", "Shigella dysentriae", ”Propionibacterium acnes”, “Streptococcus sobrinus”, and “Pseudomonas aerugenosa”. The results of this review article show that ke tepeng china leaf extract is proven to have potential as an antibacterial agent which is characterized by the presence of an inhibition zone formed. The phytochemical content in Chinese ketepeng leaves such as flavonoids, saponins, tannins, alkaloids and phenols are thought to be antimicrobial. The difference in the diameter of the inhibition zone formed is influenced by the concentration of the extract, the type of solvent and the type of test microorganisms used. The types of solvents used are ethanol and methanol which are extracted by sonication and maceration.
