Abstract

Sandfish (Holothuria scabra) is a type of sea cucumber with high economic value. Sandfish are potentially used as food, pharmaceutical, and cosmetic ingredients. This research aimed to determine the effects of sun and oven drying on the physicochemical composition of sandfish collected from Pesawaran Waters, Lampung, Indonesia. The physicochemical composition includes the proximate composition, saponin content, collagen content, and metabolite profiles. The sea cucumbers were divided into two groups; the first group was boiled for 30 minutes, whereas the second group was unboiled. The sea cucumbers were oven-dried (temperature 60 °C for 24 h) and sun-dried (3 days from 08:00 a.m. until 5:00 p.m.). Fresh sandfish (without drying) were used as control samples. The dried and fresh sandfish were analyzed for their proximate composition (moisture, ash, fat, protein, and carbohydrates) and collagen content. The dried and fresh sandfish were extracted by maceration using ethanol. The extract was analyzed for its saponin content and metabolite profiles. The results showed no significant differences (p0.05) between oven-dried and sun-dried sandfish regarding their proximate composition and collagen content. However, the saponin content in boiled sandfish extract was significantly different (p0.05) from the saponin content in sandfish extract that was unboiled. The highest saponin content of all treatments was in the boiling and oven-drying treatment (N1P2), i.e., 7.418 mg quillaja/10mg extract. The Fourier Transform Infrared (FTIR) profile indicated that the functional groups in the sandfish extract did not change during the drying process. The findings indicate that oven and sun drying do not negatively affect the physicochemical composition of the sandfish, especially its bioactive compounds, i.e., saponin and collagen.

Abstract

Coffee is one of important agricultural commodities in Indonesia, contributing as an income source for farmers and a major export revenue. The specialty coffee industry has begun to utilize microorganisms (starter) in the fermentation process, including the honey process, to obtain a distinctive flavour. However, the use of various starters in this process produces coffee bean with similar color, making it difficult to determine the authenticity of the type of starter used. This research aims to classify arabica coffee beans processed with different types of starters using multi-channel spectral sensor to ensure product quality and authenticity. This research used arabica coffee beans, in the form of green beans, processed with three types of starters, namely Saccharomyces cerevisiae, Lactobacillus sp, and Rhizopus oryzae. Multi-channel spectral sensor was used to acquire the spectra data of coffee sample processed with different starters. The data was then analysed using multivariate analysis based on Partial Least Square – Discriminant Analysis (PLS-DA). In the calibration stage, PLS-DA model built using de-trending pre-treatment was able to predict the type of starter very well, with accuracy, sensitivity, specificity, and precision values, reaching 97%, 95%, 96%, 95%, respectively. This result is also confirmed during validation stage where the built PLS-DA model could predict the type of starter with accuracy, sensitivity, specificity, and precision values, reaching 100%.

Abstract

Abstract

This study aims to analyze how village leadership synergy can be a determining factor in facing development challenges in Papua. Using a qualitative approach and case study method, this study explores village leadership patterns, obstacles faced, and strategies that can be applied to strengthen inclusive and sustainable village development. The results of the study indicate that strong, collaborative, and community-based village leadership can increase development effectiveness. However, challenges such as limited infrastructure, less than optimal coordination, and human resource capacity that needs to be improved are still the main obstacles. Therefore, a more comprehensive strategy is needed, including increasing leadership training, more efficient budget allocation, and stronger support from local governments and related institutions. With closer cooperation between village heads, traditional leaders, and other stakeholders, development in Papua can run more effectively and sustainably. Community-based approaches and community empowerment must be the main priorities in village development policies. By actively involving the community in the planning and implementation process of development programs, it is hoped that the results achieved can be more in line with local needs and increase the sense of ownership and responsibility of the community towards the development of their village.
