Abstract

Masalah obesitas pada anak disebabkan beberapa faktor yaitu masalah asupan zat gizi, genetik, kurangya aktivitas fisik dan faktor lain. Prevalensi obesitas di Indonesia diperkirakan akan terus meningkat terutama di daerah perkotaan berkaitan dengan adanya perubahan pola hidup dan kebiasaan makan masyarakat Indonesia. Tujuan penelitian ini yaitu untuk menganalisis perbedaan durasi tidur, asupan energi dan zat gizi makro pada anak obesitas dan non obesitas. Metode Penelitian ini menggunakan desain cross sectional yang dilaksanakan pada bulan Januari hingga Februari 2020. Penelitian dilakukan di SD Islam Al Azhar 1 di Jakarta Selatan. Jumlah sampel dalam penelitian ini diperolah berdasarkan total sampling. Penelitian ini dibagi menjadi dua kelompok yaitu kelompok obesitas dan non obesitas. Jumlah sampel pada kelompok obesitas yaitu 26 responden dan 22 responden pada kelompok non obesitas. Data dianalisis menggunakan SPSS 23, uji statsitik yang digunakan yaitu independent t-test. Hasil penelitian menunjukkan bahwa bahwa tidak terdapat  perbedaan yang signifikan durasi tidur antara kelompok obesitas dan non obesitas (p>0.05). Terdapat perbedaan asupan energi dan karbohidrat antara kelompok obesitas dan non obesitas (p<0.05). Tidak terdapat perbedaan asupan lemak dan protein antara kelompok obesitas dan non obesitas (p>0.05). Kesimpulan penelitian ini yaitu asupan energi dan karbohidrat lebih tinggi secara signifikan pada kelompok obesitas dibandingkan kelompok non obesitas. Kata Kunci : obesitas, asupan energi, durasi tidur, karbohidrat, protein

Abstract

This study aimed to examine the historical and cultural values of dangke as a traditional food, its potential as a source of animal protein, and the methods of its preparation and presentation. This qualitative descriptive study used in-depth interviews with key informants, focus group discussions with primary and supporting informants, and observation to collect data. The findings of this study indicate that dangke, which was originally made from buffalo milk and enriched with enzymes from papaya sap, reflects the culinary heritage of the Massenrempulu tribe in Enrekang Regency, South Sulawesi. However, the limited supply of buffalo milk has led to the modification of dangke using cow's milk in some parts of Enrekang. Historically, dangke has been served with rice or "pulu mandoti" to guests since the colonial era. The origin of the term "dangke" itself has roots in the Dutch language, possibly from the expression "dank je wel" (thank you) used by Dutch soldiers after tasting this delicious dish. In addition, previous studies have shown that dangke has a high protein content, making it a valuable food source to support the diversification of animal protein sources. In conclusion, dangke has a high cultural value for the people of Enrekang and is a traditional food with high nutritional value, especially in terms of protein content.

Abstract

Anemia during pregnancy remains a significant global health concern, affecting a substantial portion of the worldwide population. The prevalence of anemia is particularly high among pregnant women, especially in developing countries like Indonesia. Anemia during pregnancy can lead to severe complications for both mother and fetus, including increased mortality risk, premature birth, low birth weight, and cognitive impairment. Purpose: This study aimed to identify factors contributing to anemia, specifically examining food intake and pregnancy characteristics. A cross-sectional study was conducted from June to September 2023 at Parung Panjang Health Center, Bogor Regency, involving 135 pregnant women. Data collection included hemoglobin measurements using an easy touch device and nutritional intake assessment through SQ-FFQ interviews. Analysis was performed using SPSS version 23 with chi-square testing. The study revealed significant correlations between parity, intake of calcium, and vitamin C with anemia status (p<0.05). Most participants were in their third trimester, predominantly unemployed, and had low education levels. There was no significant association between nutrition status, age, family income and infection story with anemia status (p>0.05). While the majority of women had adequate iron intake, no significant association was found between iron intake and anemia status (p>0.05). The study identified parity, intake of calcium, and vitamin C as significant factors associated with anemia in pregnant women. These findings emphasize the importance of comprehensive nutritional support and monitoring during pregnancy, particularly focusing on adequate micronutrient intake and considering parity status in anemia prevention strategies.

Abstract

Latar belakang: Terapi pengganti ginjal dengan CAPD cenderung mengalami Protein Energy Wasting (PEW). Namun dilain sisi, pasien CAPD cenderung mengalami kelebihan absorsi dekstros yang terdapat pada cairan dialisat. Terapi CAPD dapat dilakukan secara mandiri sehingga tidak memerlukan kunjungan rumah sakit setiap saat. Oleh karena itu media website dapat digunakan sebagai alternatif untuk pasien CAPD. Edukasi gizi melalui “CREATININ” website akan memberikan informasi untuk meningkatkan pengetahuan kesehatan yang memicu sikap patuh terhadap diet ginjal.  Tujuan: Penelitian ini bertujuan untuk mengembangkan media dan menganalisis pengaruh “CREATININ” website terhadap pengetahuan dan sikap. Metode: Desain penelitian quasi-experimental dengan one group pre post test. Pemilihan responden menggunakan purposive sampling. Subjek terdiri dari 13 pasien CAPD. Edukasi diet ginjal dengan media “CREATININ” website dilakukan secara daring melalui video cofference (zoom meeting), dan diberikan edukasi selama 14 hari. Instrumen yang digunakan merupakan kuesioner yang sebelumnya sudah divalidasi. Analisis bivariat menggunakan uji t-test dependen dan uji wilcoxon. Hasil: Studi ini menunjukkan peningkatan pengetahuan pada saat post test 1 (p = 0.012) dan post test 2 (p = 0.043) serta terdapat perbedaan sikap saat post test 1 (0,000) dan post test 2 (0.0003). Simpulan:  Edukasi gizi menggunakan “CREATININ” website dapat meningkatkan pengetahuan dan sikap terkait diet ginjal pada pasien CAPD.

Abstract

Chronic Energy Deficiency (CED) in pregnant women remains a substantial problem in developing countries, including Indonesia, year by year. The main cause of CED is insufficient intake during pregnancy. One effective solution is providing additional food, such as supplementary feeding (pemberian makanan tambahan/PMT), to pregnant women. It is important to develop innovative PMT options that can serve as alternatives to combat CED. This research aimed to replace traditional ingredients with catfish and Mocaf flour for sensory testing and to evaluate the shelf life of dry noodles as an alternative PMT for pregnant women with CED. The study used a laboratory experimental approach with a Completely Randomized Design (CRD) .  This study tested four formulations combining mocaf, catfish, and wheat flour: F0 (0%:0%:100%), F1 (20%:5%:70%), F2 (30%:10%:60%), and F3 (35%:15%:50%). Sensory evaluation analysis used a Likert Scale, with 25 semi-trained panellists, with scale of 1-4. Data were analyzed using ANOVA followed by Duncan’s post hoc test with SPSS version 23. The results indicated that the substitution significantly affected color preference (p < 0.05). The optimal formulation was F2, with 10% catfish flour and 30% Mocaf flour. Most variables, such as taste, aroma, and texture, suggest that F2 is preferred more than the other formulas. Based on the results of the nutritional value calculations for the selected Formula F2, it has nutritional content including energy of 399.63 kcal, carbohydrates of 56.15 g, fat of 10.10 g, and protein of 21.03 g.  The developed dry noodle prototype is a promising nutrient-enriched food product.

Abstract

Desa Kabasiran menghadapi tantangan berkurangnya lahan pertanian akibat transisi menjadi kawasan pemukiman padat, yang meningkatkan ketergantungan warga pada suplai pangan luar.  Kegiatan ini bertujuan membekali 13 kader desa dengan keterampilan teknis hidroponik guna memaksimalkan lahan sempit secara produktif dan mandiri. Menggunakan metode Community Development partisipatif, kegiatan ini dilaksanakan selama dua bulan melalui empat tahapan utama: koordinasi, edukasi materi, praktik perakitan instalasi, serta pendampingan budidaya hingga panen. Materi pelatihan mencakup manajemen nutrisi, teknik penyemaian pada rockwool, hingga kontrol kualitas air. Evaluasi dilakukan melalui Pre-test dan Post-test yang bertujuan untuk mengukur peningkatan pemahaman kader sebelum dan sesudah pelatihan. Hasil evaluasi menunjukkan peningkatan pengetahuan kader yang signifikan dari 47% menjadi 93%. Secara fisik, lahan 3x3 meter yang semula tidak produktif berhasil dioptimalkan menjadi 225 lubang tanam sayuran hijau. Kader kini mampu mengelola nutrisi AB Mix secara mandiri dengan menjaga parameter pH dan EC sesuai kebutuhan tanaman. Dampak sosial nyata terlihat dari distribusi hasil panen kepada ibu hamil dan balita sebagai upaya mendukung pencegahan stunting dan perbaikan gizi masyarakat setempat. Program ini merekomendasikan pendampingan berkelanjutan untuk menjamin kemandirian pangan tingkat rumah tangga yang sehat dan hemat biaya.
