Abstract

Kebar grass (Biophytum petersianum Klotzsch.) has long been known by the locals of West Papua as medicinal plant that improves fertility. The objectives of this research were to identify and determine the antioxidant activity of kebar grass crude extract through conventional method and to analyze for its antioxidant activity. Extraction method used was conventional method, performed by mixing dry kebar grass with water and boiled until the volume shrunk to 1/3 of initial volume. Analized parameters were crude extract yield, qualitative phytochemical, total phenol and antioxidant activity. Research result showed extract crude yield value of 18.32±0.01%. Qualitative phytochemical contents were dominated by flavonoid, tannin, and saponin. Total phenolic content (TPC) of crude extract was 147±1.24 mgGAE/gdw (0.688±0.01 mgGAE/gfw). Crude extract antioxidant parameter was measured as the value of inhibition, AEAC, TEAC, and IC50 where each value respectively was as followed 42.0±0.047%, 69.93±2.19 mgAE/gdw (8.30±0.26 mgAE/gfw), 65.70±1.54 mgTE/gdw (7.80±0.18 mgTE/gfw) and 0.129±0.003 mgdw (257.75±4.90 mg/L). The contribution of kebar grass TPC content to antioxidant activity is 47.38% (equal to ascorbic acid) and 44.51% (equal to trolox) which means that almost half of kebar grass crude extract’s phenolic compound act as antioxidant. The results of this research can show that the kebar grass has potential as a source of multiple antioxidants, which acts as an analogue of vitamin C and vitamin E.  The antioxidant activity of the kebar grass extract can be the scientific basis for the use of kebar grass as a medicinal plant for infertility problems (curative) and as a functional food ingredient for antioxidant sources that prevent a decrease in reproductive performance (preventive).

Five shallot varieties namely ‘Bauji’, ‘Bantaeng’, ‘Tuk Tuk’, ‘Rubaru’, and ‘Palasa’ were examined for their leaf pigment, total phenolic content, leaf tissue nutrient analysis, and green shallot production. The experiment was conducted in in Cikabayan greenhouse, IPB University, Dermaga, Bogor, arranged in a randomized complete block design with single factor (variety) and three replications. The observations were carried out three times in the maximum vegetative period, consisting of 20, 30, and 40 days after planting. The result showed that ‘Palasa’ had the highest leaf pigment content, such as chlorophyll a, chlorophyll b, total chlorophyll, and carotenoid, while the anthocyanin content fluctuated between the varieties and observation times. ‘Palasa’ also had the highest sulfur content in the leaf tissues. On the contrary, ‘Palasa’ had the lowest production compared to other the varieties. Meanwhile, ‘Bantaeng’ had the highest green shallot production, total nitrogen, and total phosphorus content in the leaf tissues. Total phenolic content fluctuated in the five varieties and observation times. The highest total phenolic content was in ‘Tuk Tuk’, observed 20 days after planting. The principal component analysis (PCA) showed that the five shallot varieties formed three clusters. The first was ‘Palasa’, the second cluster was ‘Bauji’, ‘Tuk Tuk’, and ‘Rubaru’, while the third cluster was ‘Bantaeng’. ‘Palasa’ had the highest content of leaf pigment, while Bantaeng had the highest leaf production. Leaf pigment and total phenolic content changed along with the increasing plant age in all varieties.

Abstract

Eucheuma spinosum is a potential algal producing carrageenan in Indonesia. The aim of this resaerach is to define characteristic of carrageenanproduced by the algae harvested from Sumenep waters Madura. The carrageenanwas extracted in 1 : 50 value of Ca(OH)2 at 90-950C for 3 hours. The extract wasprecipated in 1:1 volume of 96% etanol, dried and graund. Parameters taste wereyields, moisture, sulfat, ash, acid insoluble ash, gel strenght, viscocity andmoleculer structure. The result indicated that the yield, moisture, sulphat, ash, acidinsolube ash, gel strenght, viscocity and muscular structure was 34.85%, 11.09 %,ash content 26.32 %, acid insoluble ash 0.3%, kadar sulfat content 27.76%, gelstrenght 43.70 gf respectually. The carrageenan was found to have virtuallyidentical FTIR of iota-karagenan

Abstract

This study aimed to evaluate the effect of maltodextrin combination with different encapsulation materials in the encapsulation of red palm oil by spray drying, in order to maximize encapsulation efficiency and retention of β-carotene. Maltodextrin was combined with xanthan gum (XG), gum arabic (GA), sodium caseinate (SC). The study was designed using a block randomized design with ten treatments and three replicates. The use of different combinations of encapsulation materials in this study had a significant effect (p<0.05) on the characteristic of encapsulates. The best encapsulation efficiency and β-carotene retention were obtained with MD:XG at a combination of 99.7:0.3%, while the lowest encapsulation efficiency and β-carotene retention were obtained for MD:SC. Combination of MD:XG produced encapsulate with 1.03% of surface oil, 92.40% of oil retention, 72.05% of encapsulation efficiency, and 72.65% of β-caroten retention. The mixtures of different encapsulation materials influenced encapsulate morphology. The MD:SC encapsulate had higher dents and folds on encapsulate surface, whereas the combination of MD:XG resulted in a smoother surface of the encapsulate.

Abstract

Sea snail gonggong is an icon of Tanjungpinang-Riau Islands Province. It is a favorite seafood item in Riau Islands Province, and is high economic value but not known widely yet. Until now, sea snail gonggong has been highly exploited but the research on this snail is very limited. The aim of this study was to morphology and molecular characterization of Bintan gonggong snail (Strombus sp.) as a species validation. Bintan gonggong snail included thick-shelled gonggong and thin-shelled gonggong. Morphology identifcation of species Bintan gonggong snail was based on morphometric variability. Molecular identifcation used partial Histone-H3, MEGA version 6.06, and bioinformatics analysis. The result showed that the morphological identifcation of thick-shelled and thin-shelled gonggong based on shell width, the lip thickness, and total weight signifcantly different, but other variables (i.e shell length, shell depth, aperture length, and gonggong weight) were not signifcantly different (p<0.05). Resulted of a molecular identifcation with phylogenetic analysis that the thin-shelled and thick-shelled Bintan gonggong snails were 1 species and a genetic distance of 1%. They were not species Strombus canarium, Strombus vitatus, and Strombus epidromis. Bintan gonggong snails were Strombus turturella (Leavistrombus turturella). DNA sequences of Bintan gonggong have been registered in Gen-Bank with registration numbers MH348131 (thinshelled gonggong) and MH348132 (thick-shelled gonggong).

Abstract

The study was conducted to analyze the association between food consumption and physical activity with blood cholesterol level. The study design was cross sectional located in the District and the Municipality of Bogor. Subjects in this study were 64 adult men and women aged 25—60 years. Stepwise regression test results indicate that the intake of protein, carbohydrate and cholesterol did not significantly affected blood cholesterol levels. Physical activity level and gender significantly affected blood cholesterol levels (p<0.05). Dietary fiber intake and fat intake significantly affected blood cholesterol levels (p<0.10).

Abstract

Dry fractionation will produce a fraction of olein and stearin with different composition of high melting and low melting as well the distribution of triacylglycerol (TAG) in the form of trisaturated (St3), disaturated (St2U) and monosaturated (StU2). This research aimed to study the effect of critical cooling rate and crystallization temperature on the composition and profile of TAG changes as well the melting properties of the fractionated coconut oil products. Coconut oilwas heated at 70°C then cooledat differentcooling rate to reach various crystalization temperatures. The oil was then stirred at 15rpm and allowed to crystallize at different period of time, and finally fractionated by vacuum filtration using Whatman #40 paper. Fractionation temperatures were the same as crystalization temperatures. The results showed that the critical cooling rate was proportional to the solid-like to liquid-like ratio, the content of St3 and SFC profile of olein fraction but inversely proportional to the content of St2U and StU2 TAG. Interval crystallization temperature between 21.30 and 21.73 °C produced the S/L ratio, the content of St3 TAG and SFC profiles of olein fractions lower and the content of St2U and StU2 TAG higher than the temperature interval below or above it. Coconut oil fractionation more effective in higher crystallization temperature or lower critical cooling rate. In these cooling treatments, St3 TAG which has high melting pointwould be concentrated at stearin fraction, while St2U and StU2 TAG and MCTwould be at olein fraction. Therefore, it will increase melting properties of stearin fraction and decrease olein fraction.

Abstract

Chlorophyll has long been used as a green colorant for food and non-food applications. One source of chlorophyll is suji (Dracaena angustifolia (Medik.) Roxb.) leaf. The suji leaf chlorophyll has advantages and unique characteristics compared to the other chlorophyll sources that potential to be developed as a natural colorant. However, chlorophyll is easily degraded due to enzymatic and environmental factors. During processing and storage, the chlorophyll structure changes to its derivative compounds which are no longer green. Several attempts have been done to maintain the quality of the green color and quantity of chlorophyll contained in suji leaves. The formation of metallo-chlorophyll and development of suji leaf powder colorant have not been able to match the quality and quantity of its extract. These constraints become a challenge in the development of suji leaves as a natural colorant.

Abstract

Controlling oxidation in natural and processed foods is a difficult aspect of food preservation, even in low-fat foods. Lipid oxidation not only produces undesirable characteristic such as odors and flavor, but also decreases the nutritional quality and safety of foods by formation of secondary reaction products during cooking and processing. Protection of foods against lipid oxidation usually involves exclusion of oxygen by packing in vacuum or inert gases and/or the addition of antioxidants. The Maillard reaction is a complex reaction. A variety of by products, intermediates and brown pigmens (melanoidins) are produced, which may contribute to the flavor, antioxidative activity and color of food. The oxidative browning of soy sauce is considered to have a different mechanism from those of ascorbic acid, polyphenols and furfural, because the amount of these compounds in soy sauce is very small. Maillard reaction products of soy sauce were fractionated into high and low molecular weight compounds by ultrafiltration. Oxidative stability was evaluated in refined soybean oil containing compounds in soy sauce and butylated hydroxytoluene (BHT). Oils were oxidized at 1100C and analyzed by the rancimat method and TBA determination. The high molecular compounds (MW ?100 kDa) of soy sauce was found to be more inhibitory on the oxidation of soybean oil with protective index being 2.43. Characteristic of the UV-Vis absorption was 360 – 406 nm and the IR spectra indicated the presence of –OH...O groups of ?-diketon or combinated C=R=R groups.
