Abstract

This research was aimed to determine the effect type of “ragi” on the fermentation process of cocoa and to determine type of “ragi” that can produce vinegar with the best characteristics. This research used Randomized Block Design (RBD) with four types treatment of “ragi”, these are: without the addition of “ragi”, addition of bread yeast, addition of “tape ragi”, and addition of combination “ragi”. “Ragi” additions were carried out as much as 1% in each treatment. This research was repeated three times, resulting in 12 experimental units. The data was analyzed with Anova test and continued with Duncan test if the treatment had a significant effect (P<0.05) on the observed variable. This research showed that the treatment fermentation addition of tape ragi was the best treatment with characteristic 5.05 pH, 0.88% total acid, 3.33% total soluble solids, 0.59% total sugar and 0% alcohol. Abstract

This study aimed to determine the effect of oven drying temperature on the antioxidant activity of cemcem leaf powder and get the rightest oven drying temperature to produce cemcem leaf powder which had the highest antioxidant activity. The experimental design used was a completely randomized design with a drying temperature treatment consisting of consisting of 4 levels including: 40oC, 50oC, 60oC and 70oC. The treatment was repeated 4 times to obtain 16 experimental units. The data obtained were analyzed using variance analysis, if it had a significant effect then it was continued with the Duncan Multiple Range Test (DMRT). The results showed the drying temperature had a very significant effect (p<0.01) on water content, total phenolic, total flavonoids and antioxidant activity. Drying temperature of 50oC is the best temperature to produce cemcem leaf powder with the highest antioxidant activity of 61.98% with IC50 79.58 ppm, total phenolic 48.03 mg GAE/g powder, total flavonoids 49.11 mg QE/g powder, water content 7.78%.

Abstract

This research was conducted with the aim to know the influence of acid and solvent pH on the extraction of pectin from lemon peel and find the right kind of acid and solvent pH to produce pektin of lemon peel with the best characteristics. The experimental design used in this research was a factorial Completely Randomized Design (CRD), which consisted of two factors. The first factor was a type of acid consisting of chloride acid and citric acid. The second factor was a solvent pH consisting of a pH 1,5; 2; 2,5 and 3. All treatments were repeated twice to obtain 16 units of experiments. The data were analyzed with analysis of variance and followed by Duncan test. The best results showed that extraction using chloride acid and pH of solvent 1,5 resulted in 22,35% of pectin yield, 11, 55% of water content, 22,11% of ash content, 1052,47% of equivalent weight, 10,81% of methoxyl content, 78,07% of galacturonic content, and 78,58% of esterification degree.

Abstract

This study was aimed to determine the effect of soybean fermentation time for producing the best characteristics of sere kedele. The Completely Randomized Design (CRD) was used for analysis the data resulted by 5 period of fermentation time (12, 18, 24, 30 and 36 h) as a treatment with 3 repetition. The results showed that fermentation time was significantly effected (P<0,05) to water, protein, fat, and carbohydrate content, except to ash content, and all sensory properties of sere kedele (color, taste, flavor, texture, and overall acceptance). The best characteristic of sere kedele was obtained by fermentation for 30 hours, with 9.07% of moisture content, 5.42% of ash content, 28.25% of protein content, 26.29% of fat content, and 30.97% of carbohydrate levels and sensory properties were 5.40 (rather like) for color, 5.40 (rather like) for aroma, 5.70 (like) for sense, 5.15 (rather like) for texture and overall acceptance of 5.20 (rather like) based on proximate analysis (water, ash, protein, fat, carbohydrate) and sensory properties.

Abstract

This research aimed to determine the effect of maceration time on the antioxidant activity of pegagan leaf extract and to determine the best maceration time with highest antioxidant activity of pegagan leaf extract. The experimental design used was Completely Randomized Design with maceration time duration there were 18, 24, 30, 36, 42, and 48 hours. All of the treatment repeated three times to obtained 18 units of experiments. The data analyzed by analyze of variance, if the treatment had a significant effect followed by The Duncan Test. The results showed that the maceration time treatment had a significant effect on yield, total phenolik, total flavonoid, total tannin and antioxidant activity of pegagan leaf extract. The 24 hour maceration time was the best treatment with antioxidant activity 66.67%, IC50 632.82 ppm, a yield of 24.30%, a total phenolik of 57.85 mgGAE / g, a total flavonoid of 105.28 mgQE / g. total tannin 54.09 mgTAE / g.

Abstract

The purpose of study were to find the optimum ratio of wheat flour with red rice bran to produce the best characteristics of dry noodle. The Completely Randomized Design was used in the research with treatment that is the ratio of flour with red rice bran which consist of 6 levels: 100%:0%; 95%:5%; 90%:10%; 85%:15%; 80%:20%; 75%:25%. The treatment was repeated 3 times to obtain 18 units of experiment. The data obtained were analyzed by variance and if the treatment had an effect on the observed variable then continued with Duncan Multiple Range Test (DMRT) test. The ratio of flour to red rice bran significantly influenced moisture, ash , fat, protein, carbohydrate, curde fiber content, inhibitor concentration (IC50), water absorption, color (scoring test), flavor (hedonic test), texture (hedonic test and scoring), taste (hedonic test) as well as overall acceptance (hedonic test) dry noodle.The ratio of wheat flour and red rice bran flour (80%:20%) produces dry noodle with the best characteristics namely: 10.67% moisture content, ash content 2.91%, 1.09% fat content, 13.52% protein content, 71.80 % carbohydrate content, 4.15% crude fiber content, IC50 149.35 mg/ml, water absorption 223.23%, dark red color and rather liked color, rather liked flavor, elastic and rather liked texture, rather liked taste and rather liked overall acceptability.

Abstract

Lactobacillus sp. F213 (LbF213) is a lactic acid bacteria (LAB) that has the potential as a probiotic because it can provide health effects for those who consume it, so it is necessary to make efforts to increase the application of LbF213 in the field of food processing. This study aims to determine the effect of sucrose concentration on the characteristics of fermented soursop juice with LbF213 isolates and get the right concentration of sucrose to produce fermented soursop juice with the best characteristics. The experimental design used was Randomized Block Design with sucrose treatment of 0%, 3%, 6%, 9%, and 12%. Each treatment was repeated 3 times to obtain 15 experimental units. LAB total was analyzed descriptively and the other variables were analyzed by ANOVA and if there was an influence between treatments continued with Duncan test. The results showed that sucrose treatment affected total sugar, taste (hedonic), sour taste and sweet taste (score), overall acceptance (hedonic). The 6% sucrose treatment produced the best fermented soursop juice with a total LAB 1,27 x 1010 cfu/ml, total sugar 12.91%, total acid 1.57%, pH 3.83, color and aroma rather liked, with a slight taste sour and rather sweet liked, and overall acceptance liked. Abstract

This research aimed to determine the effect of temperature and drying time on antioxidant activity of starfruit leaf herbal tea bags and to obtain the best drying temperature and time that can produce starfruit leaf herbal tea with the best antioxidant activity. This research was conducted by using experimental design with Complete Randomized Design factorial pattern of two factors which are drying temperature (50oC, 60oC, 70oC) and drying time (120 minutes, 180 minutes, 240 minutes). There were 9 treatment combinations, each treatment combination was repeated 2 times so that the number of treatment combinations was 18 experimental units. The data obtained were analyzed by analysis of variance. If the treatment had a significant effect, it would be followed by the Duncan Multiple Range Test. The results showed that interaction beetwen drying temperature and time treatment had a very significant effect on antioxidant activity, total phenol, total flavonoids, water content of starfruit leaf herbal tea, and bitter flavor, and had no significant effect) on color, aroma, taste and overall acceptance. The drying temperature of 50oC with a drying time of 120 minutes was the best temperature and drying time to produce herbal tea bags of starfruit leaves with an antioxidant activity of 87.8049% and based on the IC50 value of 10595.95 ppm, water content of 9.53%, the total phenol content was 1.38 mg GAE / g, the total flavonoid level was 0.94 mg QE / g, and sensory properties of color (liked), aroma (slight liked), flavor (slight bitter, slight liked) and overall acceptance (slightly liked).

Abstract

This research was conducted to determine the effect of temperature and time of extraction wuluh starfruit leaves on antioxidant activity using the ultrasonic assisted extraction method and to get the right temperature and time to produce extracts of wuluh starfruit leaf extract had highest antioxidant activity. Experiment used in this study is a Completely Randomized Design of factorial pattern with two factors, namely temperature and time. The first factor is the extraction temperature consisting of 3 levels, namely 30°C, 40°C, and 50°C. The second factor is the extraction time consisting of 3 levels, namely 10 minutes, 20 minutes, and 30 minutes. The research was repeated twice for obtaining 18 experimental units. The parameters observed in this study included yield, total phenol, total flavonoids, total tannin and antioxidant activity. The data obtained were analyzed by variance and if the treatment had significant effect followed by Duncan test. The results showed that the treatment of temperature and extraction time had a significant effect (P<0.05) on total phenol, total flavonoids, total tannin and antioxidant activity, but no significant effect (P>0.05) on yield. The best results showed a temperature of 40°C with a time of 20 minutes having the highest antioxidant activity based on the percentage of free radical inhibition of 89.66% with an IC50 value of 25.74 mg/L, a yield of 15.49%, a total phenol of 437.79 mgGAE/g extract, total flavonoids was 393.00 mgQE/g extract, and total tannins was 402.27 mgTAE/g. Abstract

This study aims to determine the effect of solvent types on antioxidant activity of lemon peel (Citrus limon (Linn.) Burm F.) extract and to obtain the right solvent types with the highest antioxidant activity of lemon peel extract. The experimental design used in this research was a completely randomized design with the treatment of solvent types (aquades, acetone 70%, ethanol 70% and methanol 70%). The treatment was repeated four times to obtain 16 units of the experiment. Data were analyzed with analysis of variance (ANOVA) and followed by Duncan test. The result showed that the best treatment was obtained extract with ethanol 70% solvent with antioxidant activity was 52.72% and the IC50 value 471.33 mg/L, followed by yield was 37.68%, vitamin C was 227.90 mg AAE/g extract and total flavonoid was 7.14 mg QE/g extract.
