Abstract

The Fisherman's Village Tourism is a popular destination for local residents in Palu City. This tourist spot is home to many micro, small, and medium enterprises (MSMEs). One such MSME is Tabaro Dange, a traditional Palu dish. This research employed qualitative methods, employing in-depth interviews and literature review. The potential for Tabaro Dange MSMEs is significant in creating employment opportunities for the community, particularly in Palu City. Challenges faced by entrepreneurs include adverse weather conditions and competition from modern food chains.

Abstract

This study aims to analyze entrepreneurial practices in local culinary Micro, Small, and Medium Enterprises (MSMEs), namely Mercon Tantan, amidst the rapid development of the food industry in Indonesia. MSMEs are the main foundation of the national economy with a significant contribution to job creation and economic growth. Mercon Tantan is a manifestation of innovation that raises the theme of the typical spicy dish "mercon," successfully attracting attention, especially the younger generation, through menu variations, levels of spiciness, and intense flavor profiles. The results of interviews indicate that the main challenges faced by Mercon Tantan are the rampant competition with similar vendors and the need for innovation to meet the public's desire for more contemporary products.

Abstract

Penelitian ini membahas kedudukan Dange sebagai salah satu kuliner tradisional khas Sulawesi Tengah dalam konteks peluang dan tantangan pelestariannya di era globalisasi. Dange tidak hanya berfungsi sebagai makanan, tetapi juga sebagai identitas budaya masyarakat lokal yang diwariskan secara turun-temurun. Penelitian ini dilakukan menggunakan metode deskriptif kualitatif dengan teknik pengumpulan data berupa wawancara terhadap pelaku usaha dan konsumen, serta pengembangan analisis SWOT untuk melihat faktor internal maupun eksternal yang mempengaruhi eksistensi Dange. Hasil penelitian menunjukkan bahwa Dange memiliki cita rasa yang unik, bahan baku yang mudah diperoleh, dan nilai historis yang tinggi sehingga berpotensi menjadi daya tarik wisata kuliner unggulan daerah. Namun, tantangan muncul dari minimnya promosi, proses pengolahan yang masih tradisional, serta perubahan pola konsumsi generasi muda yang lebih tertarik pada makanan modern. Melalui inovasi produk, pengemasan yang lebih praktis, serta optimalisasi pemasaran digital, Dange berpeluang untuk berkembang dan dikenal lebih luas. Dengan demikian, diperlukan upaya kolaboratif antar masyarakat, pelaku UMKM, pemerintah daerah, dan generasi muda agar Dange tetap lestari sebagai warisan budaya kuliner Sulawesi Tengah di tengah arus modernisasi global.

Abstract

This study aims to analyze the utilization of apple extract as a raw material for food and beverage products in Batu City, Malang, using a qualitative approach. Batu City has strong potential for developing apple-based extract products, supported by the availability of high-quality apples, the tourism sector, and the distinctive added value of apple extract. However, MSME actors face several challenges, such as simple production technology, inconsistent quality and sanitation standards, limited packaging, and suboptimal digital marketing. Dependence on tourism and fluctuations in apple prices also pose threats to business sustainability. Opportunities for developing apple-extract products are considerable, including diversification into fermented beverages, jams, sauces, and dessert-based products, supported by government initiatives through training and production capacity improvement. SWOT analysis shows that effective development strategies include leveraging internal strengths and external opportunities, addressing weaknesses through innovation and training, and mitigating threats through strategic planning. Overall, apple extract is a valuable local resource that can support MSME economic growth and strengthen Batu City’s identity as an apple-based agro-tourism city, with successful development relying on innovation, improved production standards, packaging, and appropriate marketing strategies.

Abstract

This study examines the contribution of micro, small, and medium enterprises (MSMEs) in apple chip processing to local economic development in Batu City, Malang. Batu City, a major apple-producing region in Indonesia, has high prospects for developing apple-based processed products, including apple chips. The study was conducted using a qualitative descriptive method involving interviews, field observations, and documentation. The research findings revealed that the apple chip business has a significant impact on absorbing local workers, increasing residents' incomes, and establishing the image of a regional specialty product. These MSMEs also encourage creativity in product development, improving packaging design, and expanding distribution networks through digital platforms as a form of transformation towards a creative economy. However, there are obstacles such as limited access to capital, weak business management skills, and high competition in the market. The study's conclusions confirm that apple chip MSMEs play a crucial role in advancing the creative economy in Batu City. Therefore, government intervention is needed in the form of training programs, assistance with marketing access, and the development of policies that strengthen the MSME ecosystem for sustainable local economic growth.
