Abstract

Diabetes mellitus (DM) is a non – communicable disease due to hyperglycemia, impaired insulin secrection, or impaired insulin performance. The purpose of this study was to determine whether the steeping of star fruit leaves (Averrhoa bilimbi L.) affects lowering blood glucose levels. This type of research is an experiment groups. This study used 30 mice weighing 20-30 grams, 8 weeks old, divided into 5 groups, namely negative and positive controls, as well as treatment groups with doses 250, 500, and 500 mg/kg BW, with a period of intervention for 14 days through given oral. Statistical analysis was performed using the Paired T-test, One-Way ANOVA test, and Post Hoc LSD test. The results of the Paired T-test test showed a significant value in the opposing group, doses of 250 mg/kg BW, 500 mg/kg BW, and 750 mg/kg BW of 0,000 (p<0,05). The One-Way ANOVA test showed a significant value of 0,000 (p<0,05) which means there is a significant difference in the decrease in blood glucose levels, that the Post Hoc LSD test showed that the treatment group with a dose of 250, 500, and 750 mg/kg BW was effective in reducing fasting blood glucose levels by showing a significant difference of 0,000 (p<0,05). These results indicate that there is an effecf of decreasing blood glucose levels on the 25th day in the treatment group given steeped bean leaves.

Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh formulasi tepung labu kuning terhadap karakteristik organoleptik, tekstur, dan komposisi proksimat produk jepa. Penelitian menggunakan Rancangan Acak Lengkap (RAL) dengan enam perlakuan formulasi tepung sagu dan tepung labu kuning. Parameter yang dianalisis meliputi uji organoleptik dan analisis proksimat. Hasil penelitian menunjukkan bahwa penambahan tepung labu kuning memberikan pengaruh sangat nyata terhadap warna, aroma, tekstur, dan rasa jepa berdasarkan uji hedonik dan deskriptif. Perlakuan terbaik diperoleh pada formulasi L5 (tepung sagu 50% : tepung labu kuning 50%). Analisis proksimat jepa terpilih menunjukkan kadar air sebesar 27,47%, abu 2,22%, lemak 3,62%, protein 4,27%, dan karbohidrat 62,42%. Hasil ini membuktikan bahwa formulasi tepung sagu 50% dan tepung labu kuning 50% memberikan pengaruh nyata dalam memperbaiki tekstur jepa menjadi lebih lunak.

Abstract

One of the local food potentials in the Woitombo Village area, Mowewe District, East Kolaka Regency is the sago plant. Opportunities for utilizing local sago food processing in this area are still lacking, while the potential for this processing can support food security and nutritious eating programs in the area. The lack of knowledge and skills of the local community is the cause of not utilizing the local food potential of sago. Based on this, the service team will provide training and assistance to women who are members of a Dasawisma group, with the aim of increasing women's capacity through processing local sago food in the area using the socialization, counseling and training stages in local sago food processing, which can support the sustainable development of sago plants in supporting food security and nutritious eating programs in the area. The result of this activity is that the women who took part in the activity gained knowledge and skills in processing local sago food, with a very enthusiastic attitude in the activity and at the end of the training activity were able to make and produce local sago food preparations, namely processing wet sago into sago flour and then processing the sago flour into sinonggi (a traditional specialty food) and sago plates (traditional cakes).
