Abstract

Penelitian evaluasi pembelajaran ini bertujuan untuk membedakan penerapan model-model pembelajaran pada mata kuliah Pembinaan Kompetensi mengajar di Prodi TP FIP UNJ. Penelitian evaluasi ini mengacu pada model penelitian evaluasi formatif dan hasilnya dilakukan dengan analisis data kategorik menggunakan uji Friedman.. Adapun model pembelajaran yang diteliti adaalah Probelem Based Learning, Cooperative Learning, Contextual Teaching and Learning dan Discovery-Inquiry Learning. Penelitian ini dilkukan dengan melibatkan 15 mahasiswa S1 TP Fakultas Ilmu Pendidikan UNJ. Hasil penelitian tentang persepsi mahasiswa terhadap implementasi model-model pembelajaran dipero;eh hasil: model Problem Based Learning [PBL] mendapat skor tertimggi 1.299 [Rerata 86,6], model Cooperatif Learning [CL] mendapat skor 1.278 [rerata 85,2, model Contextual Teaching and Learning [CTL] mendapat skor 1.280 [rerata 85,3] dan model Discovery-Inquiry Learning [DIL] mendapat skor terendah 1.276 [rerata 85,1]. Berdasarkan hasil uji Friedman nilai c2r = 1,92 dan c2r table = 7,8 pada db = 3 dan a=5%, maka tidak terdapat perbedaan pengaruh perlakuan Model Pembelajaran Probelem Based Learning, Cooperative Learning, Contextual Teaching and Learning dan Discovery-Inquiry Learning. pada pembelajaran mata kuliah Pembinaan Kompetensi Mengajar. Dengan demikiian dapat disimpulkan bahwa Ho diterima dan H1 ditolak.

Abstract

21st century skills, often referred to as 6C, are not only learning objectives but also the foundation for creating individuals who can compete globally. In response to these needs, various innovative learning approaches have begun to be applied in the education system. One of them is Project Based Learning (PjBL). Based on these reasons, this study aims to analyze the trend of project based learning models in improving 6C skills. This study uses the Systematic Literature Review (SLR) method with the PRISMA method. Data collection was carried out by analyzing 500 related articles found on Google Scholar. After the selection process is complete, the data collected will be presented in narrative form. The results of this study underline that Project-Based Learning (PjBL) is an effective learning method to support skill development, both in academic and non-academic aspects. Although there are a number of challenges in its implementation, the advantages of PjBL in encouraging motivation, increasing engagement, and shaping student character make it a feasible approach to be implemented widely at various levels of education. The implication of this finding is the need for integration of PjBL into the education curriculum with adequate training support for educators so that this method can be applied optimally and have a positive impact on the quality of learning.

Abstract

This study evaluates the effectiveness of digital learning media in improving numeracy literacy using a meta-analytic approach. A total of 21 relevant studies were analyzed to determine the effect sizes of various digital media, including augmented reality, website-based learning, and gamification, across different educational levels. The findings indicate that digital learning media significantly enhance students' numeracy skills, with an average effect size of 0.845. Factors such as instructional methods, material complexity, intervention duration, and types of digital media influenced the level of effectiveness. Website-based media exhibited the highest effectiveness (d = 1.48), while audiovisual and gamified media contributed positively to non-cognitive learning outcomes. This study underscores the importance of integrating digital media to advance students' numeracy literacy in the era of technology.

Abstract

Penelitian ini dilakukan untuk menganalisis pengaruh substitusi puree umbi kimpul dalam pembuatan kue lumpur kentang terhadap uji daya terima konsumen. Kimpul merupakan salah satu jenis umbi yang sampai saat ini kegunaannya masih jarang dimanfaatkan, maka dengan adanya inovasi produk kue lumpur kentang menggunakan puree kimpul diharapkan dapat dimanfaatkan secara optimal sebagai bahan pangan alternatif dan dapat meningkatkan nilai konsumsi umbi kimpul yang memiliki banyak manfaat bagi tubuh. Penelitian ini dilakukan di Laboratorium Pastry & Bakery Program Studi Pendidikan Tata Boga, Fakultas Teknik, Universitas Negeri Jakarta, yang dimulai sejak bulan Juni 2022 hingga Oktober 2023. Metode yang digunakan pada penelitian ini adalah metode eksperimen. Sampel penelitian yang digunakan adalah kue lumpur kentang substitusi puree kimpul dengan 3 perlakuan persentase berbeda yaitu sebesar 30%, 40% dan 50%, kemudian dilakukan uji daya terima konsumen kepada 30 orang panelis agak terlatih yang menilai keseluruhan aspek pada uji penilaian. Penilaian meliputi aspek warna, tekstur, aroma, rasa dan kekenyalan. Berdasarkan hasil uji hipotesis statistik uji daya terima konsumen dengan uji Friedman menunjukan terdapat 6 aspek yang tidak terdapat pengaruh dan tidak terdapat perbedaan nyata yaitu aspek warna bagian luar, tekstur keliling luar bawah, tekstur bagian dalam, aroma, rasa gurih dan kekenyalan dan terdapat 3 aspek yang menunjukan terdapat pengaruh atau terdapat perbedaan nyata dan dilanjutkan dengan uji Tuckey’s yaitu pada aspek warna bagian dalam, tekstur bagian atas dan rasa manis. Data hasil penilaian panelis dianalisis dengan menggunakan uji friedman pada taraf signifikan ? = 0.05. Berdasarkan hasil penelitian pada uji Tuckey’s terhadap tingkat kesukaan produk yang ditinjau dari aspek aspek warna bagian dalam, tekstur bagian atas dan rasa manis, produk yang paling disukai oleh konsumen adalah kue lumpur kentang substitusi puree kimpul 40%.

Abstract

Kepok banana peel puree is used in making American cookies as an effort to utilize local food. The research was conducted to analyze the effect of the formulation using kepok banana peel puree in the manufacture of American cookies on consumer acceptance. This research was conducted at the Pastry and Bakery Processing Laboratory, Culinary Education Study Program, Faculty of Engineering, Jakarta State University. The method used in this research is the experimental method. The research sample was American cookies with the use of kepok banana skin puree with a percentage of 10%, 20% and 30%. Then it was tested on 25 slightly trained panelists who assessed aspects of color, aroma, taste, inner texture, outer texture, crumb, and shape. In this research, it is expected to obtain modifications of American cookies with kepok banana peel puree which are preferred and rich in fiber and can optimize the utilization of kepok banana peels as a functional local food. From the results of the Friedman test, the best treatment is the result of the kepok banana peel puree formulation as much as 20%.

Abstract

The innovation of making bubble with the addition of beet puree can be one way to improve the quality of texture, taste and nutrition of bubble. To get a chewy bubble texture, it require a long boiling time to cook through inside. One way to reduce this weakness is to use beetroot as the raw material for bubble. Beetroot have a high starch content which causes increased elasticity in the dough. The starch contained in beets really helps the starch gelatinization process. The method used is an experimental method with three types of treatment, which bubble with the addition of 60%, 80% and 100% beet puree. The validity test conducted using organoleptic tests on five expert panelists with six aspects, that is color, chocolate aroma, beet aroma, sweetness, beet taste and texture. Based on the results of the analysis, bubble with the addition of 60% beet puree is superior in various aspects of assessment so it is concluded that bubble with the addition of 60% beet puree is the product with the best organoleptic quality. Physical test is done by measuring the weight and diameter of the bubble before and after boiling with 3 repetitions. The analysis results showed that the average bubble weight is 457.3 mg, while the average bubble diameter is 8.74 mm. Consumer acceptence test was conducted using hedonic test (favorability test) on 30 panelists. The results of the favorability test showed that bubble with the addition of 100% beet puree was most liked. Analysis result show that the addition of beet puree to bubble has no real effect or difference.

Abstract

Penelitian ini bertujuan untuk menganalisis pengaruh substitusi tepung labu kuning (Cucurbita moschata Duchesne) terhadap mutu sensoris dan kualitas fisik jan hagel cookies. Penelitian dilaksanakan pada bulan September 2024 – April 2025 di Laboratorium Pastry dan Bakery Program Studi Pendidikan Tata Boga, Fakultas Teknik, Universitas Negeri Jakarta. Metode yang digunakan dalam penelitian ini adalah eksperimen kuantitatif dengan sampel penelitian berupa jan hagel cookies substitusi tepung labu kuning persentase 10%, 20%, dan 30%. Uji mutu sensoris dilakukan oleh 45 orang panelis agak terlatih berdasarkan aspek warna bagian atas, warna bagian bawah, aroma kayu manis, aroma labu kuning, rasa manis, rasa labu kuning, dan tekstur, sedangkan uji kualitas fisik dilakukan dengan 3 kali pengulangan terhadap aspek baking loss menggunakan timbangan digital. Berdasarkan hasil uji hipotesis statistik mutu sensoris dengan uji Kruskal-Wallis menunjukkan bahwa tidak terdapat pengaruh jan hagel cookies substitusi tepung labu kuning persentase 10%, 20%, dan 30% terhadap mutu sensoris pada seluruh aspek. Hasil uji hipotesis statistik kualitas fisik dengan uji Anova menunjukkan bahwa terdapat pengaruh signifikan terhadap baking loss, sehingga dilanjutkan dengan uji Duncan. Kesimpulan dari hasil penelitian menunjukkan bahwa tingkat substitusi 30% direkomendasikan sebagai formula terbaik karena mampu memaksimalkan pemanfaatan tepung labu kuning sebagai bahan lokal potensial, sehingga berpeluang dikembangkan menjadi produk Jan Hagel Cookies yang memiliki nilai fungsional tinggi dan inovatif.

Abstract

In this study, the factors causing differences in students' abilities were focused on the intelligence factor used by the school to place students in the Science and Social Studies specialization group. This difference in placement was based on cognitive ability, and student interest carried out by the school. Schools still consider the division of the second major to be more critical based on moderate to low levels of cognitive abilities, so students are in the social studies class group, while moderate to high cognitive abilities are in the science class group. Citizenship education subjects are divided into two groups, where the groups have been divided based on students' cognitive abilities. In this group condition, the two social studies and science class groups should have a different impact on student learning outcomes. Is the justification that the Social Studies class group, which is grouped based on medium to low cognitive abilities, has lower student end-of-semester exam results than the Science class group, or is it the other way around? This research is included in the quasi-experimental research with a purposive sampling technique. This research was conducted on class XII high school students majoring in science and social studies. Data collection techniques for learning outcomes use good descriptions to measure knowledge or skills. The data analysis technique used is non-parametric (Mann-Whitney U Test). The results of the research show that the learning outcomes of students majoring in civic education in social studies are lower than those majoring in natural sciences, or the learning outcomes of students majoring in natural sciences are higher in citizenship education than students majoring in social studies.

Abstract

An assignment model in education refers to the framework or approach used to design, structure, and deliver tasks or assignments to students. This study explores the effectiveness of Project-Based Learning (PBL) in enhancing student understanding and proficiency. Over the course of a semester, 210 students in Universitas Negeri Jakarta from various disciplines were engaged in this research. Data were collected through assessment tests for two group of assignment model, namely PBL and Individual. The results showed that PBL significantly improves student understanding by promoting critical thinking, collaboration, and real-world application of knowledge. Students who participated in PBL showed greater retention of information and were more adept at applying concepts in practical scenarios compared to those who engaged in individual assignment models. These findings suggest that incorporating PBL into the curriculum can result in substantial improvements in student learning outcomes, making it a valuable pedagogical approach for educators

Abstract

Transformasi pendidikan di era digital saat ini ditandai dengan penetrasi kecerdasan buatan (Artificial Intelligence/AI) yang masif melalui model personalisasi pembelajaran, namun perkembangan ini sering kali hanya menitikberatkan pada aspek teknis tanpa landasan filosofis yang kokoh. Penelitian ini bertujuan untuk membedah implementasi AI dalam dunia pendidikan melalui tinjauan mendalam pada dimensi ontologi, epistemologi, dan aksiologi, serta mengaitkannya dengan regulasi pendidikan di Indonesia. Metode penelitian yang digunakan adalah kualitatif dengan pendekatan studi kepustakaan yang bersifat deskriptif-analitis, di mana data dikumpulkan dari berbagai literatur kebijakan dan teori filsafat untuk kemudian disintesis menggunakan analisis isi. Hasil penelitian menunjukkan bahwa secara ontologis, AI mengubah hakikat interaksi pedagogis menjadi hubungan termediasi data yang berisiko mereduksi eksistensi kemanusiaan. Secara epistemologis, terjadi pergeseran otoritas kebenaran dari guru ke algoritma yang menuntut penguatan literasi kritis peserta didik dalam memvalidasi informasi. Secara aksiologi, tantangan utama muncul pada degradasi integritas akademik dan nilai etis akibat prioritas efisiensi mekanistik. Kesimpulan penelitian menegaskan bahwa personalisasi pembelajaran berbasis AI harus dikembalikan pada hakikatnya sebagai alat untuk memanusiakan manusia, selaras dengan semangat Merdeka Belajar dan Profil Pelajar Pancasila. Sinkronisasi antara kecanggihan teknologi dan nilai karakter bangsa menjadi syarat mutlak agar pendidikan tetap berfungsi sebagai proses pembentukan akhlak mulia, bukan sekadar pemrosesan data kognitif. Penekanan pada pedagogi hati dan etika digital direkomendasikan sebagai pilar utama dalam menghadapi disrupsi teknologi di masa depan.
