Abstract

. The UNICEF report states that the prevalence of stunting in children under the age of five (toddlers) in 2019 reached 21.3%. Toddlers are active consumers where they can choose the food they like. Parenting patterns of feeding toddlers play an important role in their growth and development, because they are closely related to the health and intelligence of children. Inappropriate feeding parenting will have an impact on nutritional deficits so that it will trigger stunting. The purpose of this study was to determine the relationship between feeding parenting and the incidence of stunting. This study is a quantitative study with a cross-sectional research design. Respondents were 48 people, who were selected by purposive sampling technique. The data were processed by statistical tests and analyzed descriptively. The results showed that there were 22.9% of respondents experiencing stunting and most of the respondents had a feeding pattern in the right category (79.2%). The results of the analysis stated that the parenting style of feeding (p < 0.001), family income (p = 0.015), and the mother's last education (p = 0.001) were related to the incidence of stunting. The conclusion of this study is that feeding parenting in the inappropriate category has a risk of stunting 38 times compared to toddlers who are given feeding parenting in the appropriate category (PR = 38,000, 95% CI: 5,494 – 262,851). The results of this study are expected to be an evaluation for parents so that they can pay attention to feeding parenting patterns so that children can grow and develop according to their age stages.

Abstract

Sugarcane ice is a beverage susceptibleto be contaminated with bacteria such as E.coli from the processing stage to the final stage of serving. This study aimed to analyze the sanitary hygiene practices and E. coli content in sugarcane ice sold at 16 Ilir Market, Palembang. The method used was descriptive qualitative through observational research. There were 12 informants selected by purposive sampling and eight samples consisting of 4 samples of sugarcane ice and four samples of water used by the handlers. Laboratory results on sugarcane ice showed that 3 of the four samples tested were positive for E.coli, with 6.9 MPN/100 ml results and 1.1 MPN/100 ml. As for the water used by the handlers, all were detected negative for E.coli. The results showed that two handlers did not always wash their hands before processing sugarcane ice, and all handlers did not use special tools to take sugarcane stalks. 3 out of 4 servers still use water containers from disposable plastic containers, two servers do not have trash bins, and three servers have open sugar cane storage. The conclusion was that sugar cane ice's sanitary hygiene was still not good, and E.coli bacteria were found in sugar cane ice. The advice is that the server must be able to maintain personal hygiene, the cleanliness of the processing equipment used, and the cleanliness of the environment around the selling place to keep it clean.

Abstract

Objective: To evaluate the effectiveness of nutrition education on the understanding and proficiency in interpreting nutrition labels among adolescents aged 16-18 years..Methods: This quantitative study adopted quasi-experimental and control group designs with a pre-test and post-test approach. The sample size included 60 participants, divided into 2 equal groups, receiving education through lecture method and leaflets, respectively. The intertervention was conducted one day in group 1 and group 2, respectively. Sample selection was conducted using a simple random sampling method. Data were collected through a knowledge questionnaire and details on reading ability were obtained using an interpreting ability checklist through pre-tests and post-tests conducted at the same day. The retrieved data were analyzed using the Wilcoxon Signed Rank Test and the Mann-Whitney U Test (α=0.05).Results: Nutrition education is shown to enhance the understanding (p-value=0,026) and proficiency of students in interpreting nutrition facts (p-value=0,064).Conclusion: Nutrition education had a positive impact on the understanding and skill of adolescents in reading nutrition facts. Thus, developing educational materials that can be readily applied in daily life will help consumers in making more nutritionally informed choices when selecting packaged foods.

Abstract

Office workers are one group with a high proportion of hypertension compared to other types of work. Objectives: To determined the proportion of pre-hypertension, hypertension and risk factors for hypertension among employees in Sriwijaya University. Methods: This study used a cross-sectional design at Sriwijaya University, and samples were taken from 4 faculties totaling 152 respondents. Sampling using cluster random sampling technique. Data were collected from September to October 2020. The analysis was carried out in univariate, bivariate and multivariate analysis with logistic regression tests. Results: There were 13.2% of employees had hypertension, 40.8% had pre-hypertension, and the risk factor for hypertension among employees was age (p-value = 0.01; OR = 4.76; CI 1.50 <OR <15, 10) after controlling for the variables of the length of work, marriage status and cholesterol levels. Conclusion: There are more than 50% of employees are in a condition of pre-hypertension and hypertension, with age as the main risk; for this reason, employees who are 45 years old are expected to carry out routine health checks with the facilitation of the university and be able to implement the Dietary Approach to Stop hypertension in employees with pre-hypertension / hypertension.Keywords:  DASH, hypertension, pre-hypertension, the risk factor

Abstract

Background: Nutritional anemia is a condition where the hemoglobin level in the blood is below normal. Anemia education is very important because there are still many young women who do not know about anemia. This activity aims to increase knowledge about balanced nutrition and anemia among young women in Menanti Village. Methods: This activity is in collaboration with the Head of Menanti Village, Kec. Kelekar Muara Enim Regency with a total of 36 participants, using lecture and discussion methods. The activities carried out are measuring knowledge and providing education using the lecture method. Results: Nutrition and anemia education activities in Menanti Village, Kelekar District, Muara Enim Regency were carried out on Tuesday 11 June 2024 for 36 young women. Conclusion: Community service activities by lecturers at the FKM Nutrition Study Program at Sriwijaya University in the form of nutritional education regarding anemia in young women using leaflets as a medium increase female students' knowledge regarding anemia. Knowledge about applying the principles of balanced nutrition is one of the efforts to prevent anemia from an early age in adolescents.

Abstract

In the community environment, there are many insects that need to be controlled even though they cannot be completely controlled, one of which is flies. Poor sanitation conditionscan affect the presence of disease causing flies. Fly control can be done by physial-mechanical methods such as flytraps and baits to attract flies. The research method used is True Experiment with a post test only control group design design. In this study, 8 fly traps were used and were yellow in color. The baits used in this study were plantain, papaya and sweet fragrant mango. Placement of fly traps in this study at garbage dump (Tempat Pembuangan Sampah/TPS) and wet stall (Los Basah). The results showed that there was a significant difference in the number of flies with variations in bait trapped in the fly trap (p-value > 0.05). Banana bait was able to catch an average of 29 flies, papaya bait with an average of 18, and 12 mango baits. It can be concluded that banana fruit bait is the bait that catches the most flies compared to the other 2 baits and the bait that catches the least flies is flytrap without bait. Keyword : Flytrap, Flies, Fruit bait

Abstract

Abstrak Kasus Diare selalu menjadi sepuluh besar penyakit yang selalu muncul di tiap puskesmas. Salah satu penyebabnya adalah kurangnya hygiene dari penjamah makanan. Beberapa studi menyebutkan bahwa penjamah makanan beranggapan tangan yang bersih adalah yang tidak terlihat kotor saja. Pemikiran seperti ini menjadi kekhawatiran pemerintah atas kondisi kesehatan masyarakat. Padahal kuman-kuman tak terlihat yang ada ditangan masih bisa menempel disana. Untuk memperbaiki anggapan yang keliru tentang tangan yang bersih hanya dari kasat mata, maka perlu dilakukan edukasi dengan konsep Emo-Demo agar masyarakat menjadi lebih paham tentang pentingnya cuci tangan pakai sabun (CTPS). Tujuan dari program pengabdian kepada masyarakat (PKM) ini adalah untuk meningkatkan pengetahuan dan kesadaran penjamah makanan dalam menerapkan kebiasaan CTPS. Metode PKM yang diterapkan berupa penyuluhan dan emo-demo disertai dengan evalusai melalui pre-test dan post-test.  Sasarannya ibu rumah tangga di Desa Babatan Saudagar, Kecamatan Pemulutan, Kabupaten Ogan Ilir. Hasil PKM ini menunjukkan bahwa pengetahuan tentang CTPS sebelum dan setelah penyuluhan terdapat peningkatan. konsep emo-demo juga membuat responden lebih memahami tentang pentingnya CTPS meskipun tangan terlihat bersih. Praktik baik dan pengetahuan yang meningkat diharapkan menjadi solusi untuk mengurangi kasus diare pada tingkat rumah tangga dan Indonesia pada umumnya. Kata kunci: Emo Demo; cuci tangan; pengetahuan; penjamah makanan. Abstract Diarrhea cases are always in the top ten diseases that always appear in every health center. One of the causes is the lack of hygiene of food handlers. Several studies have stated that food handlers assume that clean hands are those that do not look dirty. This kind of thinking is a concern for the government regarding the health conditions of the community. In fact, invisible germs on the hands can still stick there. To correct the mistaken assumption that hands are clean only from the naked eye, it is necessary to conduct education with the Emo-Demo concept so that the community becomes more aware of the importance of washing hands with soap (CTPS). The purpose of this community service program (PKM) is to increase the knowledge and awareness of food handlers in implementing CTPS habits. The PKM method applied is in the form of counseling and emo-demo accompanied by evaluation through pre-test and post-test. The target is housewives in Babatan Saudagar Village, Pemulutan District, Ogan Ilir Regency. The results of this PKM show that knowledge about CTPS before and after counseling has increased. The emo-demo concept also makes respondents more aware of the importance of CTPS even though hands look clean. Good practices and increased knowledge are expected to be a solution to reduce diarrhea cases at the household level and generally in Indonesia. Keywords: Emo-Demo; handwash; knowledge; food handler.

Abstract

Background Probiotic banana milk is a product containing potassium from Ambon Banana developed to address gastrointestinal motility issues in surgical patients. However, two important parameters to be considered for surgical patients are viscosity and energy density.Objectives: To analyze the viscosity and energy density of probiotic banana milk and its potential as a nutritional intervention for surgical patients.Methods: This study employed an experimental design with a Completely Randomized Design (CRD) with 3 treatments and 3 replications in laboratory test. The treatment in this study was to differentiate the proportion between Green Ambon Bananas (Musa acuminata colla) and starter before cooking, which was divided into 3 formulations. Viscosity measurement was assessed using a digital viscometer NDJ-5 (Vevor, Shanghai, China) according to the manufacturer's recommendations. The energy density of probiotic banana milk was measured using the energy ratio formula [kcal] to weight (g). Energy density data were analyzed using ANOVA test.Results: The results showed that both the highest viscosity and density were in F3 (1630 m.pa.s with 0,35 kcal/g) and the lowest was in F1 (472 m.pa.s with 0,31 kcal/g). The ANOVA test showed a difference in energy density in the three formulations with a p-value of 0,003. The results of the post-hoc test showed that there was a difference between each formulation (F1 and F2; F1 and F3; F2 and F3).Conclusion: Sample F3 has the highest viscosity and energy density compared to F1 and F2, so it has the highest potential to be given to pre-and post-surgical patients to help speed up the recovery process.

Abstract

Sanitasi penjamah makanan merupakan aspek krusial dalam pengendalian risiko kontaminasi silang dan penyebaran penyakit bawaan makanan, terutama di rumah sakit. Penelitian ini bertujuan untuk menganalisis hubungan pengetahuan dengan sikap sanitasi pada penjamah makanan di Unit Gizi Rumah Sakit di Indonesia. Desain penelitian ini adalah studi kuantitatif dengan pendekatan cross-sectional, dilaksanakan pada Desember 2024 di Kemenkes RS Mohammad Hoesin Palembang dengan 94 responden yang dipilih melalui total sampling sesuai kriteria inklusi Data dikumpulkan menggunakan kuesioner adaptasi instrumen terdahulu, diuji validitas (r > 0,361) dan reliabilitas (Cronbach’s Alpha > 0,7). Pengisian kuesioner dilakukan secara self-administered. Hubungan diuji menggunakan Spearman rank karena data tidak normal. Hasil menunjukkan responden memiliki pengetahuan (94,7%) dan sikap (93,6%) kategori baik. Terdapat hubungan signifikan antara pengetahuan dan sikap sanitasi (p-value < 0,001; ρ = 0,444), dengan arah hubungan positif. Hal ini menunjukkan bahwa semakin tinggi pengetahuan penjamah makanan, semakin baik sikap sanitasi. Kesimpulan penelitian ini menunjukkan bahwa pengetahuan yang baik berkontribusi terhadap terbentuknya sikap positif terhadap sanitasi

Abstract

The global prevalence of obesity has doubled over the past four decades, regardless of sex, age, ethnicity, or socioeconomic status. A low-calorie diet is an effective weight loss strategy for individuals who are overweight or obese. This study aimed to examine the effect of using a low-calorie diet disc on changes in nutrition knowledge among employees at the Head Office of the Directorate General of Taxes. A quasi-experimental design with a pre- and post-test control group was employed. The sample consisted of 100 employees, divided into a treatment group (n=50) who received a lecture using the diet disc as a medium, and a control group (n=50) who received education using PowerPoint slides. Data were analyzed using the Wilcoxon rank test followed by the Mann–Whitney U test. The results showed a significant difference in nutrition knowledge scores before and after the intervention in both groups (p<0.05), as well as a significant difference between the intervention and control groups (p<0.05), with an average increase of 35.4 points in the intervention group and 27.7 points in the control group, resulting in a final difference of 9.5 points between the groups. This study recommends that the Head Office of the Directorate General of Taxes conduct regular weekly low-calorie diet education sessions led by community nutritionists specializing in promotive and preventive health, to promote healthier and higher-quality staff.
