Abstract

Emulsifiers are used in bakery industries to improve the quality and characteristics of products. Mono and diacylglycerol (MDAG) which can be produced from fully hydrogenated palm stearin (FHPS) is an emulsifier that can be applied in bakery products such as doughnut and bread. The objective of this study was to evaluate the effect of adding MDAG from FHPS as an emulsifier on dough characteristics, moisture content, extensibility and sensory quality of doughnut. Two concentrations of MDAG from FHPS in the formulation of doughnut were applied; i.e concentration 0.2% MDAG from FHPS and concentration 0.3% MDAG from FHPS. The results showed that the characteristics of dough with the emulsifier MDAG had smoth, not sticky, soft, easily molded and yellowish color. The dough became moist and air bubbles that form on the dough less. The moisture content of doughnut with the addition of MDAG ranged from 26.77% to 26.92%. MDAG from FHPS is capable to improve the extensibility and sensory quality of doughnut than that of the commercial emulsifier and control. Doughnut with the addition of 0.3% MDAG from FHPS as emulsifier had light brown skin color, rather glossy, uniform spread of skin color, and symmetrical spherical shape. The doughnut also had white crumb, good crumb matrix, fresh aroma, sweet avors, no wheat avor, smooth texture, not tough and easy to swallow.

Abstract

In Indonesia, soybean (Glycine max L.) is used as main ingredients in the processing of soya milk. Soya milk is produced by soaking of soybeans, wet milling, filtering the soy slurry. Different soybean varieties may affect to the chemical composition and sensory of soya milk, such as protein content, total solid and beany flavor attribute. This research objective was to study the effect of different soybean varieties obtained from American Soybean Association (ASA), International Marketing (New IP, IP 1 year old of storage, US, Argentina and Indonesia) to soya milk’s quality (chemical and sensory properties). Soybeans contained 8.67-9.95% of water, 5.15-5.36% of ash, 30.33-36.49% of protein and 15.91-25.11% of fat. The water content of soya milk ranged from 94.06 to 97.03%, while the protein content reached up to 3.00%. The highest yield, total solid and total solid recovery soya milk production was resulted from IP soybean that reaches up to 760%, 5.94% and 49.62%. The highest fat content of soya milk was 1.94%. The highest protein recovery of soya milk was resulted from Argentine soybean which was equal to 66.99%. The best variety of soybean for soymilk making is US soybean especially due to its lowest characteristics beany flavor as compared to that of soymilk from other varieties of soybean tested. Soymilk from US soybean also provide highest viscosity among all soymilk tested. However, US soybean provide the less yield of soymilk as compared to that of IP soybean 1 year old (IP soybean after one year storage).

Abstract

The utilization of sago starch is very low in Indonesia while sago is the starch producing plant which grows abundantly in Indonesia. In order to increase sago starch applications, such modification is needed. This research was aimed to conduct cross-linked modification upon the sago starch, thus evaluate its physicochemical characteristics. Cross-linked modifications included by varying phosphoryl chloride (POCl3) concentrations (i.e., 0–0.050%) and the reacting times (i.e, 0–60 minutes). Cross-linked modifi-cation yielded in a lower paste clarity, solubility, and swelling power and could increase peak viscosity, holding viscosity, final viscosity, setback, breakdown, gelatinization temperature, gel strength, amylose content, and gelatinization enthalpy. It is found that some granules of cross-linked starch lost its maltose cross property. Concentration of POCl3 was very influential to the change of modified starch characteristics, and the highest level of modification was achieved by 0.050% POCl3.

Abstract

Stunting is an important sign of chronic malnutrition that exists in early life with greater infection risk and with many long-term effects, including the need for physical work. Stunting is a problem for the Indonesian people to produce a generation that has global competitiveness. In general, this study aims to determine the effect of food consumption on the adequacy and balance of nutrition between stunted and normal children in 5 provinces in Indonesia. Specifically, this study aims to (1) lassify toddlers based on height according to age in the stunting and normal categories, (2) get a profile of stunting and normal toddler food consumption, (3) analyze data on nutrient intake and food contribution in the stunting group and normal, (4) analyze data on the adequacy and balance of nutrition from food intake in stunting and normal children under five in 5 provinces in Indonesia. This study used secondary data of food consumption data from SKMI 2014 and anthropometric data from Riskesdas 2013 of West Java, Central Java, East Java, West Nusa Tenggara and East Nusa Tenggara provinces. There were 2,039 samples from 5 provinces, 38.4% of them were stunting toddlers. Food consumption of toddlers with normal height was higher than stunting toddlers for eggs and egg products and lower for sugars. Intake of calcium and vitamin A in normal toddlers was significantly higher than stunting toddlers and lower for vitamin C. Both stunting and normal children groups showed deficiency, sufficiency and excess in nutrient intake. Imbalance nutrient intake for both stunting and normal children reached 100%.

Abstract

Mangosteen peel extract is manufactured as nutraceutical with high antioxidant properties. The industry does not process the flesh of the mangosteen fruit yet. The aim of this research was to study the formulation of ready to drink (RTD) mangosteen fruit juice and the stability of its product during storage. The RTD was processed with a hot fill protocol. The organoleptic liking rate of three fruit juice formulas was 5.36 to 5.74 on a scale of 7. The selected formula consisted of fruit pulp and water in the ratio of 1:2.33 or 300:700 g, sugar 70 g, dark red synthetic colorant 0.0680 g, artificial mangosteen flavoring 2.0 g, CMC 0.25 g, ascorbic acid 0.25 g, and sodium benzoate 0.10 gin the total weight of the mangosteen fruit juice of 1 000 g. The physicochemical characteristics (pH, viscosity and total soluble solid) of mangosteen fruit juice decreased during storage. The microbiological characteristic of raw mangosteen pulp and its RTD complied with BSN standard (2014) for fruit juice products.

Abstract

The 3-monochloropropane-1.2-diol ester (3-MCPDE) and glycidyl ester (GE) are chemical contaminants detected in vegetable oils and food products containing vegetable oils including formula products. This study aimed to assess the exposure and risk of 3-MCPDE and GE from infants formula products in Indonesia. Prediction of 3-MCPDE and GE levels of formula products was carried out probabilistically using data levels of 3-MCPDE and GE vegetable oil. Estimated daily intake (EDI) of 3-MCPDE and GE of formula products were obtained by multiplying the predicted data by consumption data while risk assessment is done by comparing EDI value with toxicology reference value. The predicted values of 3-MCPDE and GE levels of formula products ranged from 213.60-285.65 and 772.89-922.73 μg/kg. The exposure value of 3-MCPDE and GE of formula products based on Individual Food Consumption Survey (IFCS) was 1.53-2.40 and 5.54-7.11 μg/kgbw/day, while based on serving consumption was 3.31-6.68 and 10.88-21.62 μg/kgbw/day. Results of risk assessment indicated that 3-MCPDE was above 100% (health risk) in exception that of the age group 6-12 months based on IFCS with a value of 76.98-84.34%, the average GE with the T25 margin of exposure (MoE) was 1838-471 which was below 25.000. EFSA defined MoE T25 at 25.000 as GE's low risk to health.

Abstract

Ice cream is a low temperature food product that rarely uses cheese as alternative flavor variant. This research is aimed to obtain ice cream formula with the addition of soft cheeses (cream cheese, ricotta and camembert). The basic formulation trial used the mixture of sugar (10%, 13%), skim powder (9%, 10%), milk fat (12%, 14%), and cream cheese (10, 12, 14%). The second formula trial After that, the formula trial used cream cheese, ricotta and camembert cheese as much as 7, 9 and 11% respectively into the ice cream mixture. The most acceptable formula was based on hedonic ranking and hedonic rating analysis for sample meets the proximate composition. The most acceptable formulation was composed of 12% milk fat, 9% skim powder, and 10% sugar. The trial treatment by adding 10% and 12% cream cheese yielded 70-80% overrun and the melting time. The best ice cream cheese formulation was composed of cream cheese 9%, ricotta 9% and camembert 11%. There was a significant difference in term of taste, aroma, and texture of ice cream in exception of ice cream colour. Hedonic rating showed that 9% ice cream with cream cheese was the most acceptable in term of taste, aroma and colour. These three formulas met the minimum requirements for fat content and total sugar according to the quality standard of ice cream (SNI 01-3713-1995) but it did not meet the protein standard.

Abstract

Bangun-bangun [Plectranthus amboinicus] is a functional vegetable that is used as lactagogue. This research was aimed to provide information of the effect of organic fertilizer on shoot, total phenolic, and anthocyanin production of bangun-bangun. This experiment was conducted at Bogor Agricultural University, Leuwikopo experimental station (Indonesia), from December 2012 to February 2013. The experiment was laid out in randomized block design with single factor with five combination of organic fertilizer treatments (combination of cow manure 12.3 t ha-1, rock phosphate 1.5 t ha-1, rice-hull ash 5.5 t ha-1) with three replications. The result showed that application of organic fertilizer increased of shoot production. Application of 12.3 t ha-1 cow manure + 1.5 t ha-1 rock phosphate + 5.5 t ha-1 rice-hull ash produced shoot dry weight ha-1 (57.33%) and metabolite production ha-1 (total phenolic 12.06%, anthocyanin 41.73%) higher than no fertilizing (P > 0.05). Application of cow manure + rock phosphate produced the lowest shoot dry weight ha-1 and metabolite production ha-1. The result of this research suggested that nitrogen, phosphorus, and potassium were needed on shoot production of bangun-bangun.

Abstract

Buah merah (Pandanus conoideus) merupakan tanaman endemik Papua, sebagai sumber minyak makan yang kaya karotenoid dengan keragaman klon yang tinggi. Penelitian ini bertujuan untuk menentukan keragaman sifat fisik buah dan tanaman dari 9 klon buah merah, serta rendemen minyaknya. Hasil penelitian ini menunjukkan bahwa buah utuh atau cepallum dari buah merah terdiri atas empulur/pedicel (51-61%), bulir/drupa (39-49%), biji (27-36%) dan daging buah (10-17%).  Keragaman sifat fisik cepallum antar klon terutama terlihat pada warna kuning-oranye atau merah-merah tua, berbentuk silinder meruncing, terdiri dari ukuran pendek (<50 cm), sedang (40-60 cm) dan panjang (>60 cm). Empulur setiap klon buah merah bervariasi pada warna (putih atau kuning), berbentuk silinder meruncing dengan ukuran yang bervariasi. Bulir berwarna kuning-oranye atau merah-merah tua, berbentuk persegi banyak dengan ukuran yang bervariasi. Sedangkan sifat fisik tanaman bervariasi antara klon, terutama pada tinggi tanaman dan batang utama, serta panjang cabang tanaman dan jarak antar cabang. Penentuan rendemen minyak buah merah berbasis berat total bulir (5,7-8,7% berat basah, bb atau 7,7-18,3% berat kering, bk) lebih rendah dari basis berat total daging buah (19,7-27,4% bb atau 31,9-54,5% bk). Hasil Principle component analysis berdasarkan karakteristik fisik buah dan tanamannya, ke-9 klon buah merah terdistribusi dalam empat kuadran menurut lokasi budidaya yaitu Distrik Minyambou (dataran tinggi) di kuadran I, Distrik Koya, Jayapura (dataran rendah) di kuadran II, dan Kebun Percobaan UNIPA, Manokwari (dataran rendah) kuadran III dan IV.

Abstract

Bahan pangan organik memiliki kandungan gizi dan komponen fungsional yang lebih tinggi dibanding non-organik serta tidak mengandung residu kimia dan logam berat. Kacang merah dan kedelai merupakan sumber protein nabati yang kaya serat pangan dan senyawa fungsional serta memiliki Indeks Glikemik rendah. Pati jagung berperan dalam memperbaiki sifat tekstural dan reologi produk pangan. Penelitian ini ditujukan untuk : 1) mengkaji karakteristik tepung komposit organik berbasis kacang merah, kedelai, dan jagung sebagai bahan pensubstitusi terigu dalam pembuatan cake; 2) mengkaji sifat fisikokimia dan sensori cake yang dihasilkan. Rasio tepung komposit organik kacang merah : kedelai : jagung yaitu 65% : 25% : 10%. Proporsi tepung komposit organik sebagai pensubstitusi terigu yaitu 0-100%. Hasil penelitian menunjukkan bahwa : 1) Tepung komposit organik memiliki kadar protein, lemak, dan serat pangan yang lebih tinggi dibanding terigu, sedangkan kadar karbohidrat dan patinya lebih rendah. Komposisi tersebut menyebabkan kemampuannya mengikat air yang tinggi pada suhu ruang dibanding terigu; sedangkan terigu memiliki kemampuan gelatinisasi (yang dilihat dari profil pasta dan viskositas) yang lebih baik; 2) Semakin tinggi proporsi substitusi terigu pada pembuatan cake menyebabkan peningkatan kadar air, abu, protein, dan serat pangan; sedangkan kadar karbohidratnya menurun. Secara sensori, terjadi penurunan pada tingkat kelembutan, kesukaan terhadap aroma, rasa, penerimaan secara keseluruhan; serta peningkatan pada intensitas warna. Substitusi terigu tidak berpengaruh besar pada sifat tekstural cake (kekerasan, elastisitas, dan daya kohesif); 3) Substitusi terigu dengan tepung komposit organik berbasis kacang-kacangan seperti kacang merah dan kedelai dapat dilakukan untuk memperbaiki nilai gizi cake terutama protein hingga taraf 50%, dan untuk meningkatkan penerimaan konsumen, produk cake dapat dikembangkan menjadi muffin.
