Abstract

Background: High calories intake from snacks with low nutritional value will contribute to increase the prevalence of obesity and diabetes. Nutritional strategies to prevent hyperglycemia are controlling blood glucose levels, restrict calories and carbohydrate intake. Sago starch (Metroxylon sp.), tempe and black rice contains ingredients such as dietary fiber, resistant starch, amylose and low glycemic index. Modified snack bar using these ingredients can produce attractive products and provide the beneficial nutrients.Objectives: To determine a snack bar formulation made from sago starch, tempe and black rice and analyze physicochemical characteristics and glycemic index value of the product.Methods: This study used a completely randomized design analyzing three different proportions of sago starch and tempe, namely F1 (2:1), F2 (1.5:1), and F3 (1:1) with two replications for each formula. The Selected formula was determined based on consumer acceptability by semi-trained panelists using 9-point hedonic scale, physicochemical properties, nutrient content, and glycemic index value. Results: The Selected formula (F3) was potentially used as functional food as indicated by high level of dietary fiber (11.05%), 8.8 % resistant starch, in vitro starch digestibility (14.02%), the highest amylose-amylopectin ratio (60.1% : 39.9%), low glycemic index (40) and low glycemic load (5.4). The F3 formula produced a slow increase and peak point of blood glucose response of 107.5 mg/dl at minute 30th lower than the administration of anhydrous glucose with peak point of blood glucose levels of 143.4 mg/dl.Conclusion: The F3 formula with the proportion of sago starch and tempe (1:1) had low glycemic index and was categorized as high-fiber food with high level of resistant starch. Therefore, this product has the potency as functional snack alternative for diabetes patients.

Abstract

The objectives of this study are to determine the substitution level of defatted rice bran flour substituted to wheat flour, to know the impact of defatted rice bran flour substitution to physical,  chemical and organoleptic characteristics of simulated chips, and to compare defatted rice bran flour with whole rice bran flour as substituted raw material in making of simulated chips to physical, chemical, and organoleptic characteristics.  The substitution of defatted rice bran increased content of water, ash, protein and fiber, but fat, carbohydrate and energy decreased compare with control simulated chips (a = 0.05).  Organoleptic test of simulated chips with some levels of defatted rice bran flour substitution showed that acceptance of panelist  to color has mode ranged from not like to like; mode of aroma ranged from neutral to like; and both of taste and crispiness has mode ranged from not like to like.  Percentage of panelist that accepted simulated chips color in some level of defatted rice bran flour substitution ranged from 20% to 96.7%, aroma 76.7% to 90%, taste 50% to 100% and crispiness 53.3% to 100%.  The substitution of defatted rice bran flour will decrease acceptance of panelist to color, aroma, taste and crispiness (a = 0,05).  Simulated chips substituted by defatted rice bran flour and whole rice bran flour shows that the content of water, ashes, carbohydrate, energy, insoluble dietary fiber and total dietary fiber of simulated chips were not significantly difference (a = 0.05), but there was a significantly difference for fat and soluble dietary fiber. The organoleptic test showed that the color, aroma and taste of simulated chips were not significantly difference, but there was a significantly difference for crispiness (a = 0,05).

Abstract

The major purpose of this research was to analyze sanitation and hygiene at TPB - IPB Dormitory’s Canteens. Microbiological analysis (sanitation analysis) was done on chef’s hands and some utensils (eating plate, serving plate, and chopping board). There were a lot of Staphylococcusfound in food handler’s hands (19-57 CFU). This research showed that there was no tendency which was the worst canteen from the three canteens at boy’s dormitory or girl’s dormitory. The statistical analysis showed that the location of the canteen and kind of utensils influenced the total Enterobacter. The chef’s hands of C1 and A3 canteens contained E. coli bacteria, but the other chef’s hands, did not. Eating plate, serving plate, and chopping board from Canteens A3 and C1 were not safe due to the number of microbes they had (1.08x102-3.6x102 CFU/cm2). All utensils at canteen A1 were safe. C2’s and C3’s chopping boards were not safe, but their eating plate and serving plate were safe.

Abstract

 The objective of this study was to analyze the relationship between milk and calcium intake with body height and bone density of adolescent. The study applied a cross sectional design to 246 senior high school students in Bogor. The subject aged 16-17 years old were selected purposively. Milk and calsium intake was derived from the food intake data collected by applying a semi-FFQ method for a week. Bone density (stiffness index) was measured by densitometer of achilles insight. The results of the study showed that the mean intake of milk was 170.7±136.3 ml/day with average frequency 6 times/week, and mean intake of calcium was 250.0±212.6 mg/day with contribution of milk was 44.0%. The mean stiffness index of subjects was 97.5±18.3; and the mean stiffness index of boys (104.4±18.9) was significantly higher than girls (92.9±16.3). The calcium intake of milk and calcium intake of calsium-rich foods of non milk was not correlated with the bone density and body height; but milk intake,  frequency and  length of milk intake were correlated with body height and bone density. This implies the important of milk intake in bone density and  linear growth of adolescent.

Abstract

The limitation in both human and natural resources lead the Local Government of West Lampung to make a priority in budget allocation. The study was aimed to: 1) identify the policy, programs, and activities related to food security at each government institution,2) evaluate the performance among related institution in food security program and activities implementation, and 3) to develop recommendation for food security program and activities improvement. Secondary data were used to address the mentioned objectives. Role of each institution in food security improvement have been defined including the budget allocation. Content analysis from the regional strategic plan shows that there were programs and activities for each sector directed to improve food and nutrition security. However parts of the written plan haven’t been implemented yet. Performance analysis from those which have been implemented indicates that most of the program and activities were achieving the target. Rice production exceeded the target, infrastructure improved, and food prices stable. Intake of animal food and tubers are lower than nutrition norms of desirable dietary pattern (PPH). The prevalence of under-nutrition was considered low.

Abstract

Diabetes mellitus is degeneratif disease with high prevalence that happens in many countries. Several studies had been done to control diabetes by using green tea, mullberry leaf  tea, and their mixture. The aim of this research was to analyze the influence of the administration green tea, mullbery leaf tea, and their mixtures to blood glucose level of diabetic rats both during 120 minutes after administration. This research had four phases, first to determine the best mullberry leaf tea, second to fourth phases respectively, determine turnover of blood glucose level on normal rats; attempt during 120 minutes on diabetic rats.  The result of research during 120 minutes have showed that blood glucose level on diabetic rats which were administered by green tea, mullberry leaf tea and their mixture is significantly difference with diabetic rats which were administered by water. Blood glucose level at baseline increased at 30th minutes and showed the difference significantly and then until 60th and 120th minutes and relatively stable. During 120 minutes after feed consumption, inhibition of blood glucose level occured increasingly on diabetic rats which were administered by green tea, mullberry leaf tea, and their mixture compared to diabetic rats which were administered by water.

Abstract

Food habit strongly predicts individual nutritional status. It is largely influenced by family food habit and family socioeconomic, partly by nutrition education learning in the school.  Objectives of this study were to analyze elementary school children eating habit and examine whether it relates to family socioeconomic and nutritional status.One hundred elementary school children, and their mother, from one school in urban Bogor were chosen purposively according to SIBERMAS Program criteria (i.e. grade 4th and 5th, morning school, having UKS program and not havingcanteen). Self administered, structured pre-coded questionnaire were used to collect the data. Nutritional status was assessed using weight and height, and body mass index for age (BAZ) and height for age (HAZ) were then calculated using AnthroPlus software developed by WHO (2009). School children were 8-11 years old (mean 9.37 + 0.66 years), more girls (54%), and mostly had normal nutritional status using both indexes (72% for BAZ and 95% for HAZ). School children were commonly from middle class as indicated by father education (sarjana) and mother (senior high school).  Almost all school children (99%) knew breakfast was important and 81% of them ate breakfast. Only 32% school children brought lunch box everyday although 92% stated their habit to bring lunch box to school. Buying snack in school was also common among school children. Generally school children ate rice 3 times a day (2.95 + 0.97) with fish, meat, chicken (2.47 + 1.14), tempe and tofu (2.22 + 1.10), vegetables (2.25 + 0.76) and fruits (2.37 + 1.31). There was a tendency overweight and obese school children eat more rice although statistically not significant.  On average, school children drank milk more than twice daily (2.34 + 0.98), plain water more than 7 glasses daily (7.34 + 4.10), exercise 3 times weekly (3.02 + 2.16) and no difference were observed between nutritional status and family socioeconomics. School children food habit were strongly supported by mother behavior especially in providing breakfast, lunch box and guiding their children in choosing snack food. School children from middle class in urban Bogor had relatively good food habits which weresupported by mother behavior. This study found no relationship between family socioeconomic and nutritional status on school children food habit.

Abstract

Recently, many foods were identified contain high antioxidant substances such as tomatoes and rice bran. The objectives of this research were to observe their total antioxidant activity values and the effect of intervention of high-antioxidant beverages (tomato juice and rice bran beverage) to total antioxidant activity on breast cyst women patient’s blood serum. Subject consumed each of the beverages for 14 days. Blood samples were taken before the intervention, at the end of tomato juice intervention period and at the end of rice bran beverage intervention period. Total antioxidant activity on serum was determined by DPPH method. The ascorbic acid equivalent antioxidant capacity (AEAC) of rice bran greater than tomato juice is 28.74 mg/100g and 1.87 mg/100g respectively. The total antioxidant activity on serum was decreasing after tomato juice intervention (p>0.05) but the decreasing of it was significantly shown after rice bran intervention (p<0.05).

Abstract

This research aims to analyze underlying factors affecting child malnutrition at Timor Tengah Utara district, NTT. The design was a cross-sectional study. Sample of this study was household that have underfive years old children residing in the areas of Plan International. Data was collected by using structured questionnaire, focus group discussion and in-depth interview. Nutritional status was measured using anthropometric measurement with weight and height indicators and child consumption was recorded using 24 hours food’s recall. Result showed that in three villages prevalence of malnourished children was high, which were 6.0% classified as severe underweight, 15.3% severe stunting and 0.7% severe wasting. There was no significant difference in term of nutritional status. Child malnutrition was influenced by low access to nutrition and health information, low nutrition knowledge and practices, and low family income.

Abstract

ABSTRACTThis study was conducted to evaluate the effect of tempe that were made from Genetically Modified (GM) and non-GM soybean on protein quality, malondialdehide (MDA) levels, intracellular antioxidant superoxide dismutase (SOD) activity in the liver and kidneys, as well as spermatozoa profile of experimental rats. Fourty five Sprague Dawley rats divided into eight treatment grups and one control, fed with tempe and soybean from GM and non-GM at 10% and 20% concentrations for 90 days. The results showed that there was no significant difference in term of protein quality, tempe made from GM soybean is substantially equivalent with tempe made from non-GM soybean. Results showed that group which was given ration of 10% protein from conventional soybean had lower liver and kidney MDA levels as compared to GM tempe 10% and 20% groups, but was not significant compared to conventional soybean 20% and casein 10% groups. While the value of liver and kidney SOD activity were not significantly different (p>0.05) between the groups of rats. There was no significant differences among the spermatozoa profiles treatment groups and control and they were within normal condition. Results of protein quality, MDA, SOD, and spermatozoa profile showed that tempe made from GM soybean was substantially equivalent with the non-GM soybean.Keywords: GM soybean, MDA, non-GM tempe, SOD, spermatozoa profileABSTRAKTujuan penelitian ini adalah untuk mengevaluasi pengaruh tempe Pangan Rekayasa Genetik (PRG) dan non-PRG meliputi kualitas protein, kadar malondialdehida (MDA) hati dan ginjal, aktivitas superoksida dismutase (SOD) hati dan ginjal, dan profil spermatozoa pada tikus percobaan. Sebanyak 45 tikus terbagi ke dalam delapan perlakuan dan satu kontrol yang diberikan perlakuan dengan ransum tempe dan kedelai, baik PRG maupun non-PRG, dengan konsentrasi 10% dan 20% selama 90 hari. Hasil percobaan menunjukkan bahwa tidak ada perbedaan yang signifikan dalam kualitas protein, tempe PRG memiliki nilai yang sama dengan tempe non-PRG. Tikus yang diberi ransum 10% protein kedelai non-PRG mempunyai nilai MDA hati dan ginjal yang lebih rendah dibandingkan dengan tempe PRG 10% dan 20%, tetapi tidak signifikan dengan kelompok kedelai non-PRG 20% dan kasein 10%. Sementara itu, nilai SOD hati dan ginjal tidak signifikan antar grup perlakuan (p>0,05). Tidak ada perbedaan yang signifikan pada profil spermatozoa antar perlakuan. Hasil dari kualitas protein, MDA, SOD, dan profil spermatozoa menunjukkan bahwa kedelai dan tempe PRG memiliki kesamaan substansial dengan kedelai dan tempe non-PRG.Kata kunci: MDA, profil spermatozoa, SOD, tempe kedelai PRG, tempe kedelai non-PRG
