Abstract

Background: Telang flower (Clitoria ternatea L.) is a plant with a high antioxidant content that can be used as a functional drink in tea. That can be fermented to produce Kombucha, which is rich in antioxidants and organic acids. Objectives: This study aimed to develop a formula for Telang flower kombucha and evaluate its organoleptic properties. Methods:  In a Completely Randomized Design (CRD) experiment, this research was conducted at the Food Processing Laboratory of the Bachelor of Nutrition Study Program, Faculty of Medicine and Health, Universitas Muhammadiyah Jakarta, from December to March 2023. Sugar was added to the fermentation process at varied concentrations (20%, 30%, and 40% w/v), while Telang flower tea was the control. Fifty-two untrained panellists participated in the hedonic quality evaluation, which included the evaluation of color, aroma, taste, and overall preference. The data were examined with the Kruskal-Wallis and Mann-Whitney tests.Results: The sensory evaluation demonstrated statistically significant (p=0,000) differences in color, aroma, and taste between the control and the three sugar-added treatments. Kombucha's color and aroma characteristics with 20% and 30% sugar additions were significantly different (p<0,05). However, the taste characteristics were not significantly different. The color of Kombucha with 20% and 40% sugar additions were not significantly different, nor was the aroma with 30% and 40% sugar additions. According to the hedonic test analysis results, panellists preferred adding 40% sugar over other treatments. Hence this formula was selected for this study. Conclusion: Telang flower kombucha's organoleptic properties are strongly influenced by the fermentation process and the amount of added sugar. Further research is needed to explore its bioactive compounds and health benefits.

Abstract

The accumulation of free radical production impacts on the development of degenerative diseases which are the highest cause of morbidity and mortality in the world. Biofortification of purple okra in the form of encapsulated extract has the potential as a nutraceutical through the role of antioxidants. This study aimed to analyze the potential of encapsulated purple okra extract as a nutraceutical by determining physical-chemical characteristics, microbial and heavy metals contamination, antioxidant capacity, total flavonoids, and quercetin. This was a laboratory experimental study on purple okra which was extracted using the maceration method. The results of physical-chemical characteristics showed that purple okra extract has the form of dry powder, greenish-brown color, odor characteristic of okra extract (caramel-like), and sour taste with yield of 4%, pH of 4.8, undetectable solvent residue, water content of 13.5%, total ash content of 10.4%, and disintegration time of 1.25 minutes. The results of microbial contamination showed a total plate count of 3.1 102 CFU g⁻¹, yeast and mold count, E. coli, S. aureus negative CFU g⁻¹, and Salmonella spp negative CFU 10g⁻¹. The results of heavy metal contamination showed that As, Pb, Cd, and Hg were not detected every mg Kg⁻¹. The results of antioxidant capacity, total flavonoids, and suspected quercetin derivatives showed a value of 84.88%, 81.32 mg QE g⁻¹, and 4.91 mg g⁻¹. These bioactive components act as free radical scavengers in helping to prevent chain reactions. Encapsulated purple okra extract has shown its potential as a nutraceutical that helps prevent degenerative diseases.

Abstract

Perguruan tinggi sebagai tempat insan akademik berkiprah saat ini mengalami berbagai tantangan dan ancaman yang dapat mengganggu fungsinya sebagai pusat pengembangan ilmu pengetahuan dan teknologi (iptek), serta menjadi penjaga keberlanjutan peradaban dan moralitas insan akademik agar tidak terdistorsi dan tererosi. Kemajuan teknologi (khususnya teknologi informasi), dekadensi moral global, tekanan ekonomi, orientasi praktis dan fokus pada pencapaian jangka pendek, perubahan paradigma pendidikan serta iklim ketidakpastian, menjadikan nilai-nilai tradisional perguruan tinggi terancam tergeser menjadi mesin penghasil tenaga kerja semata. Perguruan tinggi, yang seharusnya berperan sebagai benteng terakhir penjaga nilai-nilai akademik, serta sebagai agen perubahan (agent of change) yang berorientasi pada nilai kebaikan dan penjaga nilai moral (guardian of value), perlu jati diri insan akademik yang unggul, sehingga peran dan fungsi perguruan tinggi dapat tetap dipertahankan. Untuk memberikan pertimbangan dalam upaya menjaga tersebut, Policy Brief ini disusun melalui serangkaian proses diskusi anggota tim PAH Jati Diri Insan Akademik dan proses FGD yang melibatkan narasumber internal dan eksternal IPB. Policy Brief ini diakhiri dengan rekomendasi yang dapat diusulkan kepada penyelenggara pendidikan tinggi Indonesia agar fungsi perguruan tinggi dan insan akademik dapat tetap terjaga

Abstract

Langerhans Cell Histiocytosis (LCH) merupakan kondisi idiopatik yang ditandai dengan proliferasi sel langerhans yang abnormal. Gizi buruk yang disebabkan oleh penyakit berdampak terhadap kehilangan zat gizi secara abnormal, peningkatkan pengeluaran energi, atau penurunan nafsu makan. Kasus adalah seorang anak laki-laki berusia 2 tahun yang didiagnosis malnutrisi berat setelah menderita LCH setahun yang lalu. Asupan makanan SMRS tidak adekuat (65% RDA), dan status gizi buruk (Z-Skor LiLA/U <-3SD). Hasil asesmen menunjukkan adanya anemia, hipoalbuminemia dan diare. Terdapat kehilangan masa lemak dan otot, muka terlihat lebih tua, baggy pant yang sesuai dengan kondisi marasmus. Diberikan formula yang mengandung protein terhidrolisis ekstensif 8x75 mL dari, namun karena diare memburuk sehingga diberikan TPN karena dicurigai terjadi malabsorbsi. Hasil monitoring dan evaluasi menunjukkan asupan masih tidak adekuat namun cenderung meningkat, frekuensi diare menurun menjadi 2 kali sehari dan masih terlihat tanda klinis malnutrisi. Walaupun belum mencapai tujuan intervensi namun kondisi pasien lebih baik dibandingkan sebelum intervensi.

Abstract

Vitamin D deficiency is not only caused by disease, but also by insufficient intake. Insufficient vitamin D levels are associated with an increased incidence of allergies. This study aimed to determine the relationship between the source of vitamin D intake and the frequency of allergies in adult women in Bogor City. This research used a cross-sectional design involving 395 women aged 19-49 years and domiciled in Bogor City from August-November 2023. The sampling technique used was purposive sampling based on inclusion criteria. Data collection was carried out by filling out a questionnaire. Bivariate data were analyzed using chi-square. The results of the study show that consumption of vitamin D has a significant effect on the incidence of allergies, where people who consume vitamin D are less at risk of developing allergies (allergic and not allergic) (0.021) and is supported by the statement that the frequency of administration of vitamin D apparently influences the risk of not experiencing allergies ( 0.033). The results showed that intake of other sources of vitamin D: fish (p=0.359), cod liver oil supplements (p=0.106), milk enriched with vitamin D (p=0.844), dairy products enriched with vitamin D (p=0.503) , is not significantly related to the frequency of allergic events. The conclusion is regular consumption of vitamin D supplements can help reduce the frequency of allergies. Further research on the effects of immunomodulation and allergy prevention with experimental approaches is needed. Future research suggestions should investigate the optimal dose of vitamin D supplements for allergy prevention.

Abstract

ABSTRACTThe objective of this research was to study antioxidant activity in pegagan sago cookies with various concentrations of pegagan powder. This research was conducted in two stages which was preliminary and main research. Preliminary research included making of pegagan powder, cookies formula, and organoleptic test. Primary research included formulation and making cookies with various concentrations of pegagan powder, physico-chemical properties observations, antioxidant activity and organoleptic test. The method used in this research was Complete Randomized Design with the factor was pegagan powder concentration. Pegagan powder concentration used in this research were 0%, 5.5%, 6.5%, and 7.5%. The determination of selected products made by considering the results of organoleptic test, antioxidant activity, and total amount of phenol. The selected cookies was the 7.5% cookies which had antioxidant activity as much as 15.2% and equivalent to 140 mg of vitamin C and 905.4 mg phenols in 100 g of cookies. The result of variance analysis showed that addition of pegagan with various concentrations did not significantly affect the antioxidant activity and total phenol of cookies (p<0.05).Keywords: antioxidant, cookies, pegagan, sago, total phenolABSTRAKTujuan penelitian adalah mempelajari aktivitas antioksidan cookies sagu pegagan dengan berbagai konsentrasi serbuk pegagan. Penelitian dilakukan dalam dua tahapan, yaitu penelitian pendahuluan dan utama. Penelitian pendahuluan mencakup pembuatan serbuk pegagan, formula cookies dan uji organoleptik. Penelitian utama terdiri atas formulasi dan pembuatan cookies dengan berbagai konsentrasi serbuk pegagan, pengamatan sifat fisiko-kimia, aktivitas antioksidan, dan uji organoleptik. Rancangan percobaan yang digunakan adalah Rancangan Acak Lengkap dengan faktor konsentrasi serbuk pegagan pada pembuatan cookies dengan empat taraf yaitu 0%, 5,5%, 6,5%, dan 7,5%. Penentuan produk terpilih dilakukan dengan mempertimbangkan hasil uji organoleptik, aktivitas antioksidan, dan total fenol cookies. Cookies sagu pegagan yang terpilih adalah cookies 7,5% yang memiliki aktivitas antioksidan sebanyak 15,2% dan kekuatannya setara dengan 140 mg vitamin C/100 g cookies serta mengandung 905,4 mg total fenol dalam 100 g cookies. Hasil sidik ragam menunjukkan bahwa penambahan pegagan dengan berbagai konsentrasi tidak berpengaruh nyata terhadap aktivitas antioksidan dan total fenol cookies (p>0,05).Kata kunci: antioksidan, cookies, pegagan, sagu, total fenol

Abstract

This study aimed to find a functional food formulas (FFF) based on local food as breakfast product, that can be accepted organoleptically, nutritious, and contain antioxidants for overweight/obese adolescents. This study was laboratory experiment, randomized complete design and using five level of one factor of treatment (proportion of carrot: pumpkin were F1 7.14%:19.64%; F2 8.93%:17.86%; F3 10.71%:16.07%; F4 12.50%:14.29%; and F5 14.29%:12.50%). The result showed that 80-100% of semi-trained panelis accepted all FFFs (F1, F2, F3, F4, and F5) organoleptically. There was a significant effect of level of treatment (F1, F2, F3, F4, and F5) on the color, flavor, and overall of FFFs (p<0.05). Product F5 had the highest percentage of acceptance and the average value than other products. F5 consisted of 30.36% orange sweet potato, 28.57% red beans, 8.93% fermented soybean (tempeh), 14.29% carrot, 12.50% pumpkin, 3.75% sugar, and 1.79% cornstarch. Each portion of F5 product could contribute about 20% of the recommended energy and protein adequacy for adolescents, and it’s contain 4.02 mg of β-carotene and antioxidant activity 38.54 mg/100 g (AEAC). The total microbe content of F5 was 9.6 x 102 coloni/g, still below the threshold for a type of processed product, so that these products are safe to eat. The resulting product has the potential as a functional food because of the content of β-carotene and it's antioxidant activity and can be considered as a breakfast product for overweight/obese adolescents.Keywords: adolescent, functional food, local food, obese, overweight

Abstract

This study aims to examine the antihyperglycemic effect of white tea (Camellia sinensis) and Moringa oleifera when administered as a single component and as mixture in streptozotocin-induced diabetic rats. The study design was experimental. The first step was to analyze epigallocathecingallat (EGCG) content as standard with High Performance Liquid Chromatography (HPLC) method. The second step was intervention in Sprague dawley rats induced by streptozotocin 40 mg/kgBW. Intervention held for 21 days with given white tea (WT), M. oleifera (MO), mixture of white tea and M. oleifera (WT+MO) and green tea (GT) as positive control with reference dose 100 mg/kgBW EGCG. Rats blood glucose and body weight were measured. The results are WT having the highest content of EGCG (4.46%). MO and WT+MO only have 2.42% and 2.46% of EGCG while GT as control is the lowest (1.29%). Measurements of blood glucose and body weight in group that given WT or MO as single component showed no significant difference with control negative group (p>0.05). Blood glucose decreased significantly in group WT+MO (p<0.05). Administration of WT+MO was able to maintain a stable body weight during the intervention period (p>0.05). The combination of white tea and M. oleifera has better ability as an antihiperglycemic agent compared to single component.

Abstract

ABSTRACT Street foods have an important role in contributing school children energy and nutriens need. Nationally, there is a serious problem on the safety of street food near schoool, therefore an effort is needed to overcome the problem. The objective of this study was to develop a simple model to solve the safety problem of street food near school. The study was conducted in two steps. The first step was done in 10 primary schools to determine the problem and to define the method of problem solving. One school with the worst food safety problem was selected as area of research. The second step was to implement the defined method into the selected primary school. Descriptive and inferensia analysis were applied in this study. Based on street food safety risk evaluation, the defined methods are nutrition extension and assistance to street food vendors in primary school SDN "D". Food vendors at SDN “D” were mostly (88.9%) male, with age between 18-40 years old. Their education background was elementary school (44.7%) and classified as poor (55.6%). Knowledge, attitudes, and practices of most food vendors after nutrition extention and assistance are better than before. Pearson correlation test showed a positive significant correlation between knowledge and food safety attitudes (p <0.05). Meanwhile, there is no significant correlation between nutrition knowledge and attitude (p> 0.05), nutrition and food safety knowledge, with food safety practice (p> 0.05), and nutrition and food safety attitude with food safety practices (p> 0.05). Overall, the nutrition and food safety extension and assistance have been effective in improving knowledge, attitudes and practices of the food vendor but it needed more extensive and periodical assistance to sustain the impatct. Secara nasional ada persoalan serius terhadap masalah keamanan makanan jajanan anak sekolah dasar sehingga perlu diupayakan cara mengatasinya. Penelitian ini bertujuan untuk mengembangkan model sederhana upaya mengatasi masalah keamanan makanan jajanan anak sekolah. Penelitian dilakukan dalam dua tahap. Tahap pertama dilakukan di 10 sekolah dasar (SD) untuk menentukan masalah dan upaya yang akan dilakukan. Satu SD dengan masalah keamanan makanan jajanan yang terparah kemudian ditentukan sebagai lokasi. Pada tahap kedua, upaya yang telah dirumuskan, diterapkan pada SD terpilih. Data diolah secara deskriptif dan inferensia. Berdasarkan tinjauan terhadap resiko ketidakamanan makanan jajanan, upaya yang dilakukan adalah penyuluhan gizi dan pendampingan pada SDN “D”. Penjual makanan di SDN "D" sebagian besar laki-laki (88,9%) dengan kisaran usia 18-40 tahun, berpendidikan SD (44,7%) dan tergolong miskin (55,6%). Pengetahuan, sikap, dan praktek sebagian besar penjual makanan setelah dilakukannya pendampingan lebih baik daripada sebelumnya. Uji korelasi Pearson menunjukkan hubungan yang positif nyata antara pengetahuan dan sikap keamanan pangan (p <0,05). Sementara itu. tidak ada hubungan antara pengetahuan dengan sikap gizi (p> 0,05), pengetahuan gizi dan keamanan pangan dengan praktik keamanan pangan (p> 0,05), dan sikap gizi dan keamanan pangan dengan praktik keamanan pangan (p> 0,05). Secara keseluruhan penyuluhan sudah efektif meningkatkan pengetahuan, sikap dan praktek penjual makanan tentang gizi dan keamanan pangan namun diperlukan pendampingan yang lebih intensif dan berkala untuk menjamin keberlanjutannya. Abstract

ABSTRACT Vitamin A deficiency (VAD) is an important cause of blindness and premature death. Vitamin A also plays an important role on growth and immune function.  Red palm oil is the richest naturally occurring source of β-carotene, a carotenoid that the human body can convert into usable vitamin A (retinol). This research was to evaluate the effect of feeding red palm oil enriched brown sugar on improving body weight and serum retinol level of vitamin A depletion Sprague-Dawley rats. Twenty four of six weeks old-male Sprague Dawley rats were used. After 2 weeks of adaptation period, rats were given vitamin A deficient diet (modified  AIN-93M) for 10 weeks, and then divided into 3 groups and received for 2 weeks the different treatment as repletion period: 1) RPO group which received red palm oil enriched brown sugar (1.5 mL/d), 2) CPO group which received crude palm oil enriched brown sugar (1.5 mL/d) and 3) and RE group which received retinyl palmitate (0.6 mL/d) . Each treatment contains approximately 40 µg beta carotene/day. Intervention by feeding brown sugar enriched with RPO and CPO for 2 weeks can increase the body weight of rats by 3.54 percent and 5.23 percent, respectively, which is markedly better than the group that was given retynil palmitat (9.38%) (p<0.05). However, an increase in serum retinol concentrations in all group showed no significant differences (p>0.05). Consumption of brown sugar enriched with RPO or CPO enhances body weight and serum retinol concentration of vitamin A deficient rats. Keywords: brown sugar, red palm oil, serum retinol, vitamin A deficiency, rats  ABSTRAK Kurang vitamin A (KVA) merupakan penyebab utama kebutaan dan kematian dini.  Vitamin A juga berperan pada perkembangan dan fungsi imun.  Minyak sawit merah merupakan sumber β-karoten, dimana tubuh dapat merubahnya menjadi retinol.  Tujuan penelitian untuk mengevaluasi efek pemberian gula kelapa yang diperkaya minyak sawit merah terhadap peningkatan berat badan dan kadar serum retinol tikus Sprague-Dawley defisien vitamin A.  Digunakan 24 ekor tikus jantan usia 6 minggu.  Setelah 2 minggu masa adaptasi, tikus diberi diet bebas vitamin A selama 10 minggu, selanjutnya dibagi menjadi 3 kelompok, yaitu 1) RPO, menerima larutan gula yang diperkaya dengan RPO (1,5 ml/hari), 2) CPO, menerima larutan gula yang diperkaya CPO (1,5 ml/hari)), dan 3) RE, yaitu kelompok yang mendapatkan retynil palmitat dalam minyak sebagai kelompok kontrol positif (0,6 ml/hari). Masing-masing perlakuan mengandung beta karoten setara 7 RE per hari.  Intervensi selama 2 minggu dengan memberikan gula kelapa yang diperkaya RPO maupun CPO mampu  meningkatkan berat badan tikus masing-masing 3,54 persen dan 5,23 persen yang secara nyata lebih baik  dibandingkan kelompok yang diberi retynil palmitat (-9,38%) (p<0,05). Disisi lain, peningkatan konsentrasi serum retinol pada semua kelompok tidak menunjukkan perbedaan yang nyata (p>0,05).  Konsumsi gula kelapa yang diperkaya RPO maupun CPO meningkatkan berat badan dan memperbaiki konsentrasi serum retinol tikus defisien vitamin A.
