Abstract

The yuzu product development process in general was related to the level of consumer preference or acceptance which could not be separated from the sensory aspect. The purpose of this study was to obtain a map of the sensory profile characteristics of the ideal product, to identify the sensory and emotional profile characteristics, as well as to observe the correlation between sensory attributes and preference for yuzu drink based on consumer perceptions. The methods used included consumer surveys, ideal profile methods, and check-all-that-apply (CATA) as consumer-based methods. The consumer survey involved 108 respondents to assess general consumer preferences. The sensory evaluation panel consisted of 47 consumer panelists. The samples for sensory evaluation included 4 commercial yuzu beverage products available in Jakarta. The results of ideal profile mapping for yuzu beverage products with codes A, B, C, and D indicated that product A closely matched the ideal sensory profile, with sensory attributes of sweetness, acidity, freshness, citrus, and bitterness. The yuzu drink samples with codes A and C provided the same distinctive sensory attributes both in the mouth and upon swallowing, with their respective distinctive attributes being sweetness and freshness. The sweetness and freshness were correlated with consumer preferences (overall liking) when the product was in the mouth, and the freshness was correlated with preferences when the product was swallowed. The emotional profile mapping results revealed that consumers favored products associated with the "pleasure" emotion as found in product A and "relaxing" emotion as found in product D.

Abstract

Chicken opor, a seasoned dish made with chicken, spices, and coconut milk, has the potential to be developed into a practical and shelf-stable food product using proper preservation technology. Besides utilizing retort pouch packaging, a key factor in processing sterile chicken opor is ensuring an effective sterilization process. This study aimed to evaluate the thermal adequacy of the sterilization process for chicken opor produced by PT XYZ and to assess consumer acceptance of its sensory attributes. The product was packaged in 300 g retort pouches, with 44 units filling the sterilization basket. Heat distribution was tested using 30 temperature sensors, and heat penetration was assessed with 15 sensors placed at various locations in a 50 L pressure cooker. Sensory evaluation was conducted with 75 panelists using a hedonic rating scale. The results showed that heat distribution within the pressure cooker was uniform. The thermal adequacy, necessary to meet the commercial sterility standard, was achieved with a 70 minutes sterilization process after reaching the maximum temperature of 110 °C, yielding a minimum F0 value of 4.8 minutes. The hedonic rating test indicated moderate to high acceptance of PT XYZ's sterilized chicken opor among the panelists.

Abstract

The roundness quality of small meatballs, called Bakso Unyil, produced by PT X has been considered non-uniform and in-competitive. Hence, roundness quality improvement has been becoming one of the priorities for increasing consumer acceptance. This research aims to identify the causes of the poor quality of Unyil Meatballs roundness and find a solution. The improvement methods were: identification of the causes of low quality of roundness (Plan), improvement trials based on alternative solution (Do), and implementation of corrective actions (Action). A total of 60 meatballs samples were taken from three batches (for each batch of 20 samples). Ishikawa Diagram, and histogram were conducted and analysed. Implementation of alternative solutions to improve roundness quality that have been carried out as follows: 1). adjusting the amount of dough in mixing step, 2). the installation of temperature measuring equipment in the preheater, 3). Usage standardization of ice, 4). improvement of phosphate and salt mixing techniques, 5). removal of baking powder, and 6). turn of blades in mixing cake. Result showed that those improvements were not only improve the roundness quality of Unyil meatballs but also improve the smoothness and reducing wrinkle conditions on the surface of Unyil meatballs

Abstract

IKM X merupakan industri yang memproduksi tiga jenis bakso, yaitu Bakso Super Polos (BSP), Unyil, dan sari baso (SB) yang memiliki mutu di bawah kompetitor. Perbaikan mutu sensori dapat dilakukan untuk meningkatkan mutu dan daya saing produknya. Penelitian ini dilakukan melalui reformulasi bahan pada ketiga jenis bakso dengan acuan produk benchmark. Reformulasi terfokus pada komponen bumbu (garam, beef flavor, dan bawang putih) dan tidak mengubah proporsi daging, pati, dan bahan lainnya. Analisis yang dilakukan adalah uji organoleptik (uji ranking hedonik, dan uji beda dari kontrol) dan analisis proksimat. Hasil penelitian menunjukkan, formula terpilih bakso BSP adalah kadar garam, beef flavor, dan bawang putih berturut-turut 2.5%; 0.5%; 5% dari total bobot daging dan pati, Bakso Unyil 3.0%; 1.5%; 5% dan Bakso SB 2.5%; 0.5%; 3.5%. Bakso BSP dan SB belum dapat menyamai mutu sensori produk benchmark, sedangkan Bakso Unyil telah menyamai mutu sensori produk benchmark (rasa dan aroma). Hasil penelitian ini menunjukkan bahwa Bakso Unyil dapat lebih bersaing dengan produk pesaing dan telah memenuhi persyaratan SNI

Abstract

Mandala Presto is one of the milkfish processing businesses in Bogor Regency. The business started producing soft-boned milkfish without packaging in 2011. Collaborating with 35 street vendors, they sold soft-boned milkfish in traditional markets and through door-to-door sales. In 2018, the owner changed the business model to focus on hygienic vacuum-packaged soft-boned milkfish. The aims of this study were (1) to identify internal and external factors influencing the development of Mandala Presto's soft-boned milkfish business, (2) to develop the implementation of Mandala Presto's soft-boned milkfish business model canvas for its business strategy, and (3) to determine the prioritized strategy choices from the nine elements of the business model canvas to enhance the growth of Mandala Presto's soft-boned milkfish business. The method used was the business model canvas to map the condition of Mandala Presto, followed by descriptive and quantitative analysis including the internal factor evaluation (IFE) matrix, external factor evaluation (EFE) matrix, internal-external (IE) matrix, strengths, weaknesses, opportunities, and threats (SWOT) matrix, and analytical hierarchy process (AHP) for business model improvement. The IFE calculation result is 3.32, and the EFE calculation result is 2.79, which are mapped in the IE matrix in cell IV, indicating that the business is in a growing and developing position. The priority strategy determination with AHP focuses on four elements of the business model canvas: key partners, key activities, channels, and key resources.

Abstract

Corn noodle was a form of food diversification, especially food that usually used wheat flour as its raw material. The objective of this research was to study the effects of guar gum, alum, and water addition on physical properties of extruded wet corn noodle. It was made by mixing wet and dried flours, steaming dough, pressing it using an paste extruder, and steaming the noodles. The alum, guar gum, and water concentrations were 0% and 0.01%; 0%, 1%, and 2%; and 60%, 70%, and 80%, respectively. The physical analysis of wet corn noodle were color, elongation, hardness, adhesiveness, and cooking loss analysis. The analysis showed that wet corn noodles have a reddish yellow color with °Hue of 83.21° - 86.42°. The statistical analysis showed that the higher the guar gum concentration led to the lower the hardness and cooking loss of wet corn noodle, while the greater the elongation. Alum addition increased the hardness and elongation of wet corn noodles, while it decreased the adhesiveness.

Abstract

The drying process of corn noodles was an effort to increase the shelf life and it was a form of noodles diversification. The objective of this research was to study and analyze the effect of guar gum addition on the physical quality of the extruded dry corn noodle made from a mixture of wet and dry corn flour. Manufacturing dry corn noodles was conducted using wet corn noodles from a mixture of wet and dry corn flour, which was then dried in a tray dryer at a temperature of 60-70 °C for 1 - 1.5 hours. The treatments used were a combination of alum levels of 0.01%; moisture content of 80% (dry base); and guar gum concentration of 0%, 1%, and 2%. Physical properties of dry corn noodles included rehydration time, hardness, adhesiveness, suppleness, elongation, and cooking loss. The results showed that the optimum rehydration time for dry corn noodles was about 9 minutes. The addition of guar gum to the physical qualities of dry corn noodles tended not to be significant statistically, but as a score, an increase in guar gum levels tended to increase the elongation of dry corn noodles. While, increasing levels of guar gum tended to reduce the stickiness and cooking loss levels of them.

Abstract

The aim of this training is to increase the knowledge and skills of partners, in this case the group of opak craftsmen, farmer groups and teenagers from the Al-Barokah Mosque, located in the Waqf Village, Sukaratu Village, Majasari Pandeglang District, Banten, in implementing marketing of opak products using information technology-based marketing. online (e-commerce). The methods used in this training are: socialization, application of information technology, online-based marketing training and assistance (e-commerce), evaluation and monitoring. The results of this training show that the target partners: opak craftsmen groups, farmer groups and mosque youth, 50% can implement online marketing (e-commerce) through social media (WA, Facebook, Instagram), waqf opak websites and increase opak sales by around 50% - 80 %

Abstract

Community service activities in the national combination program were conducted in Waqf Village, Sukaratu Village, and Majasari Pandeglang District, targeting partner groups of opak food craftsmen and waqf farmer groups. The problem with fostered partners is that no one needs to be able to implement business management, online marketing, or apply innovative technology in standard production processes. Community service in the national service program aims to increase the knowledge and skills of fostered partners in implementing business management, online-based marketing, and technological innovation in the production process. Activity methods include the socialization of national programs, the application of technology in the production process, training, mentoring, and evaluation. The results of this activity show that the two fostered partners can apply business management, online marketing (e-commerce), and the application of packaging technology with nitrogen injection as well as the application of production with solar dome dryers to dry opaque patches, which is very helpful during the rainy season, can still production. There was an increase in the business of the two fostered partners to reach 80%.

Abstract

This study was conducted to identify the availability of instant noodle products with and without the Healthier Choice (HC) logo that reflects Indonesian instant noodles nutrition labelling uptake by the food industry as well as to investigate the logo’s effectiveness in influencing customers to choose healthier noodle products and consumers’ perception and behavior toward the HC logo. Quantitative research consists of a market survey on HC logo usage in 120 instant noodle variants with different brands and an online consumer survey with a voluntary sampling technique involving 458 consumers aged 18‒68 years residing in Jakarta. Nutritional information data (total fat, saturated fat, sodium and sugar) in two groups of products (HC and without HC (WHC) groups) was analyzed using t-test, while the consumer survey data was analyzed using t-test and ANOVA. The confidence level used in statistical analysis was 95%. Of only eleven products that featured the HC logo on the packaging, one did not fulfill the criteria. The t-test showed no significant differences between products “without HC logo” and “with HC logo” groups in all nutrition content except for sodium. The HC logo showed significant difference in effectiveness for different gender and age groups, it was better for women than man, and older (43−58 and 59−68) more effective than younger (16−26 and 27−42). The consumer perception and behavior was more affected the age group 43−58 and 59−68 than 16−26 and 27−42, the level of education group in elementary, junior, and senior high school also post graduate group more influenced than pre-university and bachelor, consumption pattern moderate and frequent better than seldom consumption. Further, the consumer behavior also more influenced all income level group except >IDR20 million group.
