Processing Performance and Economic Feasibility Profile of Jambal Roti Salted Fish in Pangandaran, West Java Septian, Ananda Dwi; Iwang Gumilar; Nora Akbarsyah; Ine Maulina

Abstract

Pangandaran's abundant fishery resources require proper processing to prevent rapid spoilage, making preservation through jambal roti salted fish production crucial for both food security and local livelihoods. Jambal roti salted fish production has become a crucial economic activity for coastal communities in Pangandaran. This study aims to analyze the processing performance and economic feasibility of jambal roti salted fish production in Pangandaran, West Java. The study employed Good Manufacturing Practices (GMP), Sanitation Standard Operating Procedures (SSOP), and Hazard Analysis and Critical Control Point (HACCP) for processing performance analysis, while Cost-Benefit Analysis (CBA) was used for economic feasibility assessment. The results showed that the enterprise is economically viable, with a monthly profit of IDR 4.940.278 and a profitability rate of 15.44%. Additional economic indicators include a BCR of 1.18, payback period of 0.23 years, BEP (Q) of 54.19 kg/month, BEP (IDR) of IDR 4.142.927/month, and a production cost per unit of IDR 67.649/kg. However, the technical performance evaluation indicated only 47% compliance with GMP, SSOP, and HACCP standards, suggesting substantial room for improvement in food safety practices. In conclusion, while jambal roti production in Pangandaran is economically feasible, improvements in processing performance are necessary to ensure better food safety compliance and sustainability.

Abstract

Rajungan (Portunus pelagicus Linnaeus, 1758) merupakan komoditas perikanan memiliki nilai komersial tinggi.Berdasarkan Data Statistik Perikanan tahun 2017, bahwa Kabupaten Cirebon merupakan salah satu pusat produksi rajungan terbesar di Jawa Barat. Jaring kejer (gillnet) dan bubu lipat merupakan alat tangkap yang utama untuk menangkap rajungan. Penelitian di Tempat Pendaratan Ikan Gebang Mekar, Cirebon pada bulan September-Oktober 2019 bertujuan untuk mendapatkan data dan informasi alat tangkap yang selektif dan efisien untuk menangkap rajungan. Data primer yang digunakan untuk analisis adalah ukuran lebar karapas dan bobot individu rajungan, dilengkapi dengan wawancara dengan nelayan dan informan kunci. Hasil penelitian menunjukkan jaring kejer dengan messize 3,5 inci memiliki selektivitas lebih tinggi dibandingkan bubu lipat. Rajungan hasil tangkapan jaring kejer rata-rata memiliki lebar karapas 14 cm dan bubu lipat pada lebar karapas 13 cm. Hal ini sudah sesuai dengan Peraturan Menteri Kelautan dan Perikanan Republik Indonesia nomor 56/PERMEN-KP/2016, yaitu rajungan yang diperbolehkan ditangkap memiliki lebar karapas lebih dari 10 cm. Pengelolaan perikanan rajungan yang rasional melalui penentuan selektivitas alat tangkap diperlukan untuk menciptakan kondisi perikanan berkelanjutan.Blue swimming crab (Portunus pelagicus Linnaeus, 1758)/BSC is a critical economically valuable fishery commodity and high commercial value. Based on the Fishery Statistics Data in 2017, Cirebon Regency is one of the largest BSC fishing centers in West Java. Gillnet (locally: jaring kejer) and collapsible crab net are commonly used by fishermen to catch crabs. The research was conducted on September-October 2019 at Fish Landing Place Gebang Mekar Cirebon, aimed to get data and information on fishing gears that are more selective and efficient for catching BSC. Data primarily used in this research were carapace width and individual weight of BSC, and interviews of some fishermen and key informants to complete data and information needed. The result showed that gillnets with a mesh size of 3.5 inches were more selective than collapsible crab traps. A carapace width of 14 cm dominated the mean of BSC caught by gillnet, and a collapsible crab net of 13 cm. This was in accordance with Indonesian Minister of Maritime Affairs and Fisheries Regulation number 56/PERMEN-KP/2016 where catching BSC was allowed with carapace width more than 10 cm. The rational management for BSC through selectivity fishing gear used needed to create better conditions for sustainable fisheries.
