Abstract

The food insecurity problem is closely related to poverty. One of the communities belonging to the lower middle class in Indonesia is Fishermans. Stunting toddler is one of the chronic nutritional problems caused by low access to and affordability of food. Food and nutrition security is a unity, where nutrition is a very important element in improving the life quality of the population. The purpose of this study was to analyze the relationship between family characteristics, toddler characteristics, and food security with the incidence of stunting in toddlers. This research is included in the cross-sectional study design. The research sample was 87 fisherman households in the Ngemplakrejo Village, Pasuruan City, which were randomly selected using simple random sampling. Data were analyzed using chi-square correlation tests. The results showed that the stunting prevalence was still high at 43.7%. In addition, families in the category of severe food insecurity were also found, namely 16.1%. Based on the study results, there was a relationship between household food expenditure (p=0.027), birth body length (p=0.027), exclusive breastfeeding history (p=0.034) and household food security (p=0.000) with stunting in toddlers. The conclusion of this study is stunting in toddlers can occur due to factors such as family characteristics, toddler characteristics, and food security. This study recommends increasing in food security by paying attention to the adequacy of family food needs through coping strategy, household expenditure by prioritizing toddler nutrition and increasing household food security by providing training and skills in diversification of catch products and productive businesses.

Abstract

Population studies reported that most of the world's population consume an amount of potassium that falls below the recommended intake levels. The most prominent source of potassium are fruits, vegetables, and nuts. However, there is still limited study that shows spices and herbs (SH) contain high potassium. Potassium is a nutrient that is intimately linked to diet quality; however, the cooking process of SH frequently results in a reduction of its nutrient. This study is a literature review based on an electronic database concerning the nutritional content and the effect of cooking on the content of macromineral’s in SH. The data presented in this study were derived from Indonesian and United States food composition databases. The study found that SH mostly contains potassium in the category of medium to very high, as well as low sodium. The highest potassium content is found in turmeric, which is 2,080 mg/100 g. SH have long been used for culinary and medicinal purposes that require cooking methods, although the cooking process (dry heat cooking and moist heat cooking) affects the micromineral content in SH, especially moist heat cooking (steaming, blanching, and boiling), which significantly reduces potassium content. A comprehensive review of the extant literature in the field has confirmed that SH contains high potassium content and cooking process can decrease its potassium content. It is necessary to conduct further experimental research to prove potassium content of SH and the effect of other cooking processes on macromineral content in SH.

Abstract

Sleep quality has an important role in health. High school students can to maintain good concentration , because it needed in learning process. Therefore, the student must know to keep good sleep of quality. The initial survey showed that most of the students at SMA Muhamaddiyah 10 Surabaya had poor sleep quality (60%). The purpose of this community service activity is to transfer knowledge about sleep mechanisms and sleep stages. The activity method is an initial survey about sleep quality, the second step is to conduct a pre test. The third step is promotion in the form of material presentations and discussions. The next step is to hold a quiz whose contents are the results of a survey about student problems that interfere with sleep quality and the ways students choose to overcome them. The final step is to do an evaluation in the form of a post test. The number of students from SMA Muhamadyah 10 Surabaya was 20 students who were involved in the activity. Students in this activity were very enthusiastic about discussing the sleep problems they experienced. The evaluation results showed a change in knowledge about sleep quality. The results of the pre-test showed that knowledge of the questions that were answered correctly between 75% - 85% increased after giving the material to 85% - 100%.

Abstract

Introduction: The prevalence of obesity in Indonesia reached 21.8% in 2018 and increased by 6.4% compared to 2013. Low physical activity is known as a risk factor of obesity. College students’ activities are closely related to use of screen time. Aims: To identify the activities of screen time for assignments and non-assignments on weekdays and weekends among college student and analyze its relationship with body mass index (BMI).  Methods: This study was conducted in 2018 with a cross sectional design among undergraduate students at the Faculty of Public Health, Universitas Airlangga, Indonesia, conducted in 2018. The screen time questionnaire was adapted from Sedentary Behavior Questionnaire. The correlation between screen time duration and BMI was analysed by Spearman test. Results: The female subjects were dominant (81.1%) and 28.4% of subjects as overweight-obese. The screen time duration in non-assignment activity on weekends has a positive correlation with the nutritional status of health college students (p 0.000, r 0.49), particularly duration of social networking sites and listening to music were more significant in obese than normal. The use of smartphones takes a high part, approximately 4 hours 20 minutes both on weekdays and on weekends. Conclusion: The screen time duration in non-assignment activity on weekend was associated to nutritional status of health college students. Health college students are encouraged to reduce screen time for non-assignment activities on weekends and to use wisely several smartphone applications or social networking sites to control body weight and achieve a balanced nutritional status.

Abstract

Macronutrient intake, including carbohydrates, protein and fat, plays an important role in supporting athlete performance and overall health. Previous research has shown that proper nutrition has the potential to improve athletes' endurance and fitness. However, mixed results raise questions about the real relationship between nutrient intake and athlete fitness. This study aimed to analyze the effect of macronutrient intake on athletes' fitness and endurance in Indonesian,  sports teams. This study applied an analytic descriptive design with a population of athletes from various sports in Indonesia. Data were obtained through literature study method. Data analysis was performed statistically to evaluate the relationship between variables. The study showed that there was no significant relationship between carbohydrate, protein, and fat intake and athletes' fitness level, with p values of 0.407 for carbohydrate, 0.523 for protein, and 0.208 for fat, respectively. These results suggest that although macronutrients are important, other factors also need to be considered. These findings emphasize the need to consider other factors, such as training patterns and psychological conditions, in an effort to improve athletes' fitness and performance, in addition to attention to macronutrient intake.

Abstract

This study explores factors influencing the eating habits of on-campus university students. A qualitative research design using semi-structured interviews was involving eight students residing in on-campus accommodation. Thematic analysis followed Braun and Clarke’s reflexive model and identified four main themes, namely limited food variety, convenience, health-consciousness and financial constraints. Meanwhile, food presentation was identified as a sub-theme of the limited food variety theme. Students reported limited food variety due to minimal dining options, leading to repetitive diets and dissatisfaction. Convenience was a key factor, with students choosing foods that were affordable and readily available. Some made health-conscious decisions to reduce unhealthy food intake but simultaneously increased consumption of protein-rich foods like red meat and full-fat dairy—potentially leading to high saturated fat and calorie intake. Financial constraints also played a role, with students often selecting inexpensive, less nutritious options. Hence, food presentation emerged as an important sub-theme and influence, with students showing a preference for colourful and visually appealing meals, regardless of nutritional quality. The findings highlight the need for universities to enhance food variety, accessibility, and affordability. Institutions could collaborate with food vendors to provide rotating menus and coordinate with zakat centres to support students financially through subsidised meals. Food and nutrition education should also be implemented to help students make informed dietary choices. Future research should include a more diverse student population to build a broader understanding of these issues.

Abstract

Introduction: Elderly exhibit an increased for health complications, including obesity and hypertension (HT).. Obesity has been demonstrated to increase the risk of HT and the mechanism is also often influenced by gender. Aims: The study aimed to analyze the association between obesity and hypertension among elderly in nursing home stratified by gender. Methods: A cross-sectional study was conducted on a sample of 54 elderly subjects in nursing home. A sphygmomanometer was used to assess blood pressure (BIA) and a Bioelectrical Impedance Analysis (BIA) to determine nutritional status includingbody mass index (BMI), body fat (BF), visceral fat (VF), and subcutaneous fat (SF). Analysis of data was performed using an independent t-test and Pearson correlation test. Results: Mean age of respondents was 71.28 ± 8.21, dominated by women (75.9%), and 27.8% had hypertension. Dietary intake indicate excess sodium intake, while potassium, calcium, magnesium, vitamin D, vegetables, and fruits intake remain low. All indicators of nutritional status assessment differ significantly by gender except BMI. However, the present study found that BMI is the only variable associated with systolic BP (p=0.023). Stratified by gender, it was found that BW, BMI, and VF in women were related to systolic BP (p=0.022; p=0.015; p=0.040; respectively), and no such relationship was observed in men. Conclusion: It is proven that obesity and hypertension were more prevalent among elderly women. It is imperative to check nutritional statusfor preventive action for other diseases, including hypertension.

Abstract

Background: The Global prevalence of sarcopenia was estimated as 10% to 27% among Non-Alcoholic Fatty Liver Disease (NAFLD) patients. Objectives: To investigate the association between nutritional status and sarcopenia among NAFLD patients. Methods: The study was conducted between January 2024 and June 2024 and included 218 study participants. The social and demographic profile, dietary habits, fatigue, and 24-hour recall dietary intake were assessed using the interview cum questionnaire. Bio Impendence Analysis (BIA) and a hand grip dynamometer were used to assess the MM and MS. Functional capacity was analysed using the 6-Minute Walk Test (6MWT). Results: The relationship between relative risk factors and sarcopenia showed that male had a Relative Risk Ratio (RRR)=4.048 (95% CI: 1.073-15.275), overweight RRR=5.929 (95% CI: 1.42-24.763), Muscle Mass (MM) RRR=0.857 (95% CI: 0.741-0.99), Muscle Strength (MS) RRR=0.809 (95% CI: 0.729-0.898), Neutrophil-to-Lymphocyte Ratio (NLR) RRR=0.254 (95% CI: 0.069-0.933), moderate fatigue RRR=0.313 (95% CI: 0.107-0.921), 6MWT RRR=0.989 (95% CI: 0.981-0.996). Conclusions: A reduction in MM, MS, and physical performance had shown a significant association with sarcopenia, indicating the reduction in these factors can lead to an increase in sarcopenia. Tailoring the intervention to increase the MM, strength, and physical performance can help in reducing the progression of  sarcopenia and disease outcomes.

Abstract

Background: Nearly the entire global population consumes excessive sodium. A food in sodium is salty snacks. Excessive sodium consumption can cause health problems such as hypertension, heart disease, stroke, and obesity. Salty snacks are popular and are frequently consumed and favored by the public. Objectives: To identify various commercial salty snack products and analyze their sodium content as well as their contribution to daily sodium and salt intake. Methods: The study was conducted through a survey of 32 commercial salty snacks produced in Indonesia and labeled with nutrition information. Products were collected from three supermarkets in East Surabaya—Superindo, Indomaret, and Alfamart, using a convenience sampling method. The survey was only conducted on small or medium packages of each product brand and variant so was limited. Results: A total of 32 salty snack products were identified and categorized into chips, light snacks, sticks and crackers, and nuts. The highest sodium content was 1394,4 mg per 100 g found in the sticks and crackers, which accounted for 50% of the daily sodium requirement. The average sodium content in other categories ranged around 500 mg, fulfilling 20-30% of the daily sodium. Conclusions: Commercial salty snack products are widely available in the market and generally contain high sodium levels. Attention to nutritional labeling, particularly sodium content, is essential in managing daily sodium and salt intake. In addition, the implementation of regulations or legislation regarding sodium labeling restrictions on salty snack products in Indonesia is necessary.

Abstract

Introduction: Student mental well-being was a concern prior to the COVID-19 pandemic. During COVID-19, mental health problems increased due to heightened anxiety and concern. Family and friends' support plays a crucial role in maintaining students' mental health. This study examines the impact of social support on students' mental well-being during the pandemic. Methods: This analytic observational study employed a cross-sectional design with a total of 400 active student participants. Psychometric instruments used in this study were the Sallis Social Support Scale and the short version of the Warwick-Edinburgh Mental Well-Being Scale (WEMWBS-7). Data were analyzed using Spearman correlation to determine the relationship between family and friends' support and students' mental well-being. Results: There was no significant relationship between family support and students’ mental well-being. However, only support from friends showed a statistically significant positive relationship with students' mental well-being (r = 0.176, p = 0.001), while support from family was not significantly associated (p = 0.073). Conclusion: Social support from friends played a crucial role in maintaining students' mental well-being during COVID-19. Encouraging peer support, such as reminding each other to complete tasks, can positively influence mental health.
